A VARIETY OF PICKLES

Pickling season is with us again and
- ali housewives enjoy filling jars with
good pickles, relished at all. times with
" either meat or vegetable dishes,
: There are so many good recipes for
~ eucumber pickles that I shali not go
into details aS to how to pickle them
Hut will say tnat if you wish the vines
to continue,in bexring for a longs sea-
son the cucumbers must be cut from
them regularly and always early morn-
ing or jate aiternoon, because cutting
them during the heat of the day will
surely ruin the vines. This same rule
applies to melons, too.
in making pickles of any kind use
the purest vinegar you can obtain.
Many jars. of pickles spoil because of
adulterated vinegar. One good help
toward prevention of fermentation: is
mot to seal jars tightly at first and
drain off and reheat to boiling point
the second and third days, then seal
tightly. Be careful to avoid long boil-
ing of vinegar because it detracts from
_ its. strength.
For sour pickles of any kind a good
preparation is made of 1-4 cupful salt,
a dash of cayenne pepper, I ounce of
ginger (if liked) one ounce of black
pepper, a Sood size onion finely sliced;
_ mixed with one-half gallon of pure
eider vinegar. Allow this to boil to-
gether a very short time and pour
while hot over the vegetables or truit
in the jars.
- . When I wish to make sweet pickles
i simply vary the spices, add sugar to
Suit my taste and-boil.the preparation
a little longer because the syrup must
be thicker. it it is fruit pickles I add
fruit, boil syrup a little longer because
it has been made thinner by the water
contained in the fruit.
__, Sweet apples make delicious pickles.
- Select ripe, hard apples, pare, core and
quarter. tor a peck of apples mix. 1-2
gallon of vinegar with six cupfuls
Sugar and heat togethr. Add un-
ground spices to suit your taste, tying
_them together in a muslin bag. Put
ae apples in and stew slowly until tender
= then remove t6 jars, Boil vinegar mix-
ture awhile longer then pour over the

._ Watermelon rinds are rather expen-
Sive pickles but are fine when rightly
_ prepared. To each. quart of vinegar
es used add six supfuls of brown sugar
and whatever spices liked, tied in mus-

two or three hours in salt water, then
well drain. Pour off and reheat vine-

: Those who lke fiery, hot relishes
: will like the pepper catsup, which is so
ee @asily made. Use either green or red
pods and onions to flavor. Boil in
Vinegar until perfectly tender, cool and
rub through a sieve. Pour in bottles
filling them not quite full, add a little
Vinegar, hot or cold. The catsup will
Settle leaving the vinegar as a cover-
> ing. Cork and set away in a_ cool
<place. For my sweet tomato pickles
I slice one gallon of green tomatoes,
sprinkle with 1-3 cupful salt ang put
in a muslin bag to drain over night.
Then add 4 cupfuls water, 3 cuptuls
vinegar and boil together for a short
time. Drain off the vinegar and add
fo the tomatoes 2 pounds of vinegar,
4 sliced onions and 1. tablespoonful
each of cloves, mustard and cinnamon.
Cook slowly for one-half hour and keep

in stone jar in a cool, dark place.

GROW MORE HAY; PULL LESS
J FODDER

Pulling fodder, stripping the leaves
off corn, is generall regarded and has
been proved to be a wasteful practice.
the yield of the corn grain is nearly
always reduced enough*to offset the

has had the work of pulling the fodder
for his pains. Specialists of the Flo-
ida Agricultural Extension Service
are urging farmers of northern and
western Florida to grow more hay for
forage and pull less fodder,

Jtl yis a goog time in which to plant
cowpeas for hay. Peas planted durng
the rany season will reach the right
stage for hay after the. rainy season
is over, and can thus be harvested with
less danger of loss throught rains. Cow-

peas make an excellent hay crop, if |

cured properly, and are relished by live-
stock. They also protect and enrich
the land during the summer.

Brabham and Iron are among the
best varities, especially where the land
is infested with nematodes, which cause
root-knot. <

The peas may be sowed broadcast or
planted in rows and given a cultivation
dr two to keep down weeds. Seed are
rather scarce and the price high, so
the row method, which will require less
seed, is to be recommended.

Lots of grasses that would make good
hay are allowed to go to waste in Klor-
ida every year, and at the. same time
thousands of dollars are sent into otier
states to purchase hay grown there.
Wherever .grass is. thick enough on
the land and. grows high enough to
justify cutting, it should be cut, for
hay,. Grass, should be cut when most
of the plants are in bloom, as at this
stage it is low in indigestible matter
and-has a laxitive effect upon animals.
When it is more mature it _is more
woody and not as easily digested.Pro-

LOOK OUT AFTER THE LITTLE
THINGS

July, When most of the crop work is
finished, is an ideal month to attend
to the little things about the place that
need attention. A number of odd@ jobs
which should not be overlooked during
che month are suggested here:

t: Repair fences, doors, gates, door-
.teps, broken or fallen parts of screens,
broken parts of farm machinery, etc.

2. Put the plows and other imple-
ments under shelter. Scrape the dirt
off. the metal parts of the plow ane
cover with a coat of grease or oil.

3. Tighten bolts and nuts and get
che machinery and implements in readi-
ness for use when needed.

4. During the rainy season is a gocd
time to start a permanent pasture.
Berfuuda, carpet grass, an lespedeza
are hard to beat. Rootstocks of Ber-
muda may be set now.

5. Provide plenty of shade and fresh
water for the hogs during the hot sum-
mer. :

6. Keep the spring pigs growing, SO
they will be ready for market in late
August or September.

7. Keep the peanuts free from grass
and weeds until the ground is well COV-
ered with vines and the nuts begin to
set. If close planting has been, prac-
ticed, the crop will take care of itself
after that. :

8 Pen or sell the cockerels and roost-
ers and produce infertile eggs. They
are not so apt to spoil during the hot
oe your intended exhibits for the

man who starts early has an advantage

his exbibit at the last minute.

HOW TO GROW PLENTY OF HAY
AND FORAGE

Hay is about the easiest and cheapest



and also the most important crop
Southern farmers can raise. Within

the past few years we have adopted two
hay crops which can be made to sup
ply our hay needs at very low cost. of
production. These crops are soybeans
and Sudan grass. In the Coastal Plains
region we have a third crop of recent
adoption, the velvet bean. All over
the South we have have the old stand-
bys, cowpeas and sorghum.

This gives us five important forage
crops for sowing now. These five hay
crops are just what we need in an
emergency such as has arisen from last
wearys drouth and now that the, time
to so wthem has come, lets see what
we can do in the way of growing ali
our hay needs for the 15 to 18 months.

Three of these are nitrogen-gathering

and protein-carrying legumes, and two
(sorghum and Sudan grass) are among
the best annual grass hays to be found.
They yield heavily, mature quickiy, and
are rich in carbohydrates,
_ Now as to the time and manner of
Sowing soybeans, cowpeas, velvet beans;
Sudan grass, and sorshum for hay or
pastureage;. They may be sowed or
drilled: from the time danger of frost
is past on until late July. Of course
the methods of growing these crops
are commonly known; but as emergency
crops and for getting the seed in the
ground this month or early May, the
time required for sowing an acre and
the cost.are very low. On most farms
there is land enough for producing
more hay. Most of this land can be
gotten into good seedbed condition by
breaking and harrowing, or. by disking
and harrowing without breaking, Lana
that now has a crop on it, that wil
mature by July will produce a good
crop of hay from soybeans, cowpeas,
sorghum, or Sudan grass. Soybeans
cowpeas, and velvet beans can be sow-
ed in the drills with corn or in the corn
middles. This will increase the forage
from an,acre of corn by about half
and improve the land. Sr

BRIGHT OUTLOOK FOR HOG
INDUSTRY

The future outlook is rather encour-

pigs. The hog market has advanced
to the highest point since 1920, and
with. the exception of the war years,
has set a record for May. and June.
Nearl yeverybody has been mistaken
regarding the supply of hogs this year,
Which is cne cause of existing high
prices, and with only moderate stocks
of meats in cold storage favors good
prices during the summer ang early
fall at least.

During the first five months of 1926
the hog receipts at 10 big markeis
were 2,401,829, or 18-12 per cent iess
than. for the same period in 1925.

The demand for feeder pigs has been
greater than the supply. At present
only about one order out of 10 can be
filled, even at \prices above killing
hogs. On top of this, the spring pig
crop in some of the Corn Belt states
is reported lighter than expected, due
to losses of yoeng pigs. ;

Since 1920 there has been an estimat-
ed decrease of 13 per .cent, in the hog
population in the United States. The
greatest decrease in hogs has been in
the Southeastern states. In many sec-
tions there are not enough hogs to sup-
ply local demand. This all looks good
to the hog producer, especially when
the report comes from North Carolina
that a car of hogs sold on the Eastern
market for $2,100 and that one man
who fed 30 of these hogs, made over
$100 a month above feed cost.

With this bright outlook it is not
believed that the farmers of the South
will go into hog raising but rather
they will grow into economic hog pro
duction? and thus prevent a recurrence
of the hcg slump, such as we had fol-
lowing the close of the war.

With the climatic and soil conditions
the ease with which forage and feed
erops can be grown through these
Southeastern tsates anq with the trans-
portation and market facilities, there
is no reasOngg;why a permanent. safe.
economical swine industry Should not
be developed in the South. . :

Selecting the best grade or purebred
sows, breeding them to purebred boars
to farrow in the spring. and in the fall,
giving attention at .farrowing time
keeping them supplied with grain, feed



and forage crops, that they may be
