These cabbage had been set the last part. of the preceding February and the cool spring rains and dews had made them very firm and crisp. Coming back by the pig pen wit our load we stopped and stripped t outer leaves for the hogs. The outside leaves removed, we found the in ones covered. with glistening dewdrops After this had been done We brought our tub of cabbage on to the hou and grandpa drew several buckets fresh cld water out the well and pour- ed enough over the cabbage to. Grandpa calls the operation pest, i S| The churn dasher is what we use, with this we pound and mall the cab- . bage until it looks almost transparent Grandpa can salt correctly by tast- ing, but to be accurate it is best to use three pounds of salt to one hundred pounds of cabbage. : A two-inch layer of cabbaze was put in the jar and then a little salt Sp: kled over it. Then more cabbage ane anot her skrinkler of salt, and so on ti all the cabbage and salt were used. Farm & Ranch. WHEN DROUTH HITS THE The pasture on the average cotton | farm is at best but a sorry affair and by August or September in average years has but little in it that stock can graze. It naturally follows that the stock go into the winter in poor con- dition, young animals become stunted scrubs, and milk cows have not enough material to make milk of. S This short tage of pasturage in lat summer and fall can be oyercome en tirely or in part by a Bermuda-Japal cloyer pasture that is not grazed from mi&June to August, or overcome sowing stubble or other land in cow- peas, soybeans, Sudan grass, or ghum. This will provide grazing hay or both at just the time of year feed is most n ded and at th during Far mer. se gs We . &: Phursday, August 5, 1926 = A VARIETY OF PICKLES Mrs. L. D. Armour Pickling season is with us again and - ali housewives enjoy filling jars with good pickles, relished at all. times with " either meat or vegetable dishes, : There are so many good recipes for ~ eucumber pickles that I shali not go into details aS to how to pickle them Hut will say tnat if you wish the vines to continue,in bexring for a longs sea- son the cucumbers must be cut from them regularly and always early morn- ing or jate aiternoon, because cutting them during the heat of the day will surely ruin the vines. This same rule applies to melons, too. in making pickles of any kind use the purest vinegar you can obtain. Many jars. of pickles spoil because of adulterated vinegar. One good help toward prevention of fermentation: is mot to seal jars tightly at first and drain off and reheat to boiling point the second and third days, then seal tightly. Be careful to avoid long boil- ing of vinegar because it detracts from _ its. strength. For sour pickles of any kind a good preparation is made of 1-4 cupful salt, a dash of cayenne pepper, I ounce of ginger (if liked) one ounce of black pepper, a Sood size onion finely sliced; _ mixed with one-half gallon of pure eider vinegar. Allow this to boil to- gether a very short time and pour while hot over the vegetables or truit in the jars. - . When I wish to make sweet pickles i simply vary the spices, add sugar to Suit my taste and-boil.the preparation a little longer because the syrup must be thicker. it it is fruit pickles I add fruit, boil syrup a little longer because it has been made thinner by the water contained in the fruit. __, Sweet apples make delicious pickles. - Select ripe, hard apples, pare, core and quarter. tor a peck of apples mix. 1-2 gallon of vinegar with six cupfuls Sugar and heat togethr. Add un- ground spices to suit your taste, tying _them together in a muslin bag. Put ae apples in and stew slowly until tender = then remove t6 jars, Boil vinegar mix- ture awhile longer then pour over the | _ fruit. Pears prepared the. same way 7 make good pickles. . pinch of salt may ee be added if preferred. ._ Watermelon rinds are rather expen- Sive pickles but are fine when rightly _ prepared. To each. quart of vinegar es used add six supfuls of brown sugar and whatever spices liked, tied in mus- in bag. Boil and pour over the pre- Pared rinds, which have been soaked two or three hours in salt water, then well drain. Pour off and reheat vine- gar the second and third days, adding - rinds and boiling for a short while. : Those who lke fiery, hot relishes : will like the pepper catsup, which is so ee @asily made. Use either green or red pods and onions to flavor. Boil in Vinegar until perfectly tender, cool and rub through a sieve. Pour in bottles filling them not quite full, add a little Vinegar, hot or cold. The catsup will Settle leaving the vinegar as a cover- > ing.
