LABORATORY REPORT
The July Monthly Bulletin is devoted entirely to the results
of analysis of milk and its products These analyses were
made during the months of May and June consisting of more
than 500 samples Mr G S Fowler did the analytical work
that appears in this bulletin
MILK AND ITS PRODUCTS
It has been noticeable throughout Georgia especially in the
past year that consumers of milk are demanding more and
more a clean wholesome milk The dairyman who can and
does supply clean milk is gaining new customers sells more
milk and in many cases sells his milk at a higher price because
the consumer is willing to pay more for pure clean milk The
dairyman who sells a dirty unwholesome milk is slowly
losing customers and is not making much if any profit This
is a statement of fact Now is the time to improve your milk
for the public is now looking for a clean good milk
Now here is a business proposition which will interest every
progressive dairyman How can I increase my business make
more money sell more people good milk and at the same time
not spend more money on equipment The answer is Pro
duce a clean milk cool it at once to a temperature below 5oF
the cooler the betterand keep it cold until it reaches the con
sumer That is all For if you do this you will in time gain
the reputation of having the best or as good as any milk in
town and you will have more customers than you can supply
DEFINITIONS AND STANDARDS
a Milk
Milk is the fresh clean lacteal secretion obtained by the
complete milking of one or more healthy cows properly fed
and kept excluding that obtained within fifteen days beforeand ten days after calving and contains not less than eight
and onehalf 85 per cent of solids not fat and not less than
three and onequarter 325 per cent of milk fat
b Cream
Cream is that portion of milk rich in milk fat which rises
to the surface of milk on standing or is separated from it by
centrifugal force is fresh and clean and contains not less than
eighteen 18 per cent of milk fat
c Ice Creams
1 Ice cream is a frozen product made from cream and
sugar with or without a natural flavoring and contains not
less than eight 8 per cent of milk fat
2 Fruit or chocolate ice cream is a frozen product made
from cream sugar and sound clean mature fruits and con
tains not less than eight 8 per cent of milk fat
3 Nut ice cream is a frozen product made from cream
sugar and sound nonrancid nuts and contains not less than
eight 8 per cent of milk fat
VARIATION FROM STANDARD
It not infrequently happens that milk tested in the labora
tory either falls below 325 per cent or rises above 6 per cent
Aside from fraudulent skimming of milk these irregularities
are commonly due to improper mixtures Dairymen frequently
fail to understand that too high percentage of fat is just as
truly an indication of improper methods as is too low a per
centage Either may be the result of an improper mixture
one sample being taken from top of a can after standing and
the other from the bottom Only thoroughly mixed milk
should be sold or used for sampling Dairymen should be
careful therefore thoroughly to mix the milk before bottling
or if it is sold directly from the can it should be stirred from
the bottom to the top of the can before each sample is removed
REFRACTOMETER TEST
The purpose of this test is to determine the presence of wateradded to milk either intentionally or accidentally and the test
can not be manipulated by the dishonest dealer as canthe spe
cific gravity test As carried out in our laboratories the lowest
reading by the refractometer consistent with pure milk is 3650
Any reading below this indicates added water In interpreting
this test it is well for a dairy owner to remember that occasion
ally water may be accidentally left in milk cans and to bear in
mind also that sometimes workmen add water to milk for the
purpose of increasing the apparent yield without the knowledge
of the owner
VISIBLE DIRT
Milk should always be clean In reports from the State Lab
oratory the report of slight dirt is not infrequent The term
slight dirt means that a few visible specks of dirt are found by
filtering the milk through cotton
Dirty MilkAlthough no dirt at all should be present it fre
quently happens that milk produced under good conditions will
occasionally show slight dirt and a single report of this sort has
little significance If the report slight dirt comes back con
stantly however it indicates undue carelessness If the milk is
reported dirt present dirty or very dirty it always in
dicates that something is wrong in the handling of the milk
and in such cases attention should be given to remove the
cause of the trouble All dirt can not be strained out of milk
and the only remedy is to prevent the dirt from getting into
the milk rather than by trying to remove it
Sources of DirtThe chief sources of dirt are 1 Unclean
cows with manure dried on their flanks 2 Dirt or dust in the
air of the milking room or any room in which the milk or the
empty cans may stand exposed to the air 3 Unclean pails and
unclean hands of the milker
Rules for Avoiding DirtTo avoid dirt the following rules
are commonly sufficient
1 Use a covered milk pail which has only a small opening
for the entrance of the milk These pails are on the market and
are the most important single device for reducing the amount of
dirt that gets into milk2 See that the air of the milking room is clean and pure
To prevent dust the cows should not be fed before or during
milking
3 Keep the cows clean by proper washing and brushing of
the flanks It is more important to keep the cow clean than the
horse though the contrary is usually the custom Since the
largest part of the dirt comes from the filth attached to the cow
it may be mostly avoided if the cow is kept clean and the milk
pail covered
4 After milking cover the milk with a cover which will
allow no dirt to enter
Attention to these details will quickly remove the difficulty
of dirt
BACTERIA
Probably the largest amount of misunderstanding and the
greatest difficulty in interpretation of the analysis of milk at
tends the report uponthe bacteria The following brief ex
planation of these reports will aid in interpreting them
Disease GermsTyphoid fever tuberculosis diphtheria
scarlet fever diarrhoeal diseases and probably tonsilitis may
sometimes be distributed by milk and these germs except
scarlet fever have been found in infected milk However the
detection of these germs in a single sample of milk necessitates
much work extending over a period of many days In view of
the fact that the laboratory must examine large numbers of
samples of milk this detection of specific diseaseproducing
bacteria is not undertaken as a routine procedure Possibly this
may be done some day but at present it is impossible
Most bacteria are harmless some are deadly poisonous and
some are in between or semidangerousmay not affect a
strong man but may hurt a person who is not able to resist
them easilyfor example the infant or invalid Many bacteria
found in cow feces and in dirty milk belong to this middle class
of semidangerous bacteria When kept warm with plenty
of food as in warm milk bacteria multiply rapidly perhaps
as often as once in twenty to thirty minutes If a milk is procluced with only a few of these dangerous or semidangerous
bacteria in it and is allowed to remain warm these bacteria
multiply rapidly as do also the harmless kind After a few
hours then we have a milk which is much more dangerous
than it was at first Cold does not kill bacteria as frost does
a plant Cold simply keeps the bacteria from growing and
multiplying in numbers It is evident then if we keep milk
cold below 5O0F or preferably below 40F the bacteria in
such a milk will not increase greatly in a few hours
Flies must be kept away from and out of milk for flies carry
dirt and bacteria wherever they gofrom the privy to the
milk for example Flies often carry disease germs to milk
which has otherwise been carefully handled It is not enough
to have your milkroom screened but you must also keep the
screen door closed otherwise the money you spent on screen
ing is wasted
Bacteria CountThe number of bacteria present in milk is
the result of a combination of several factors A high bacterial
count will be found if i The milk has become badly con
taminated With filth 2 The milk is kept too warm 3 The
milk is too old A high bacteria count therefore indicates
either excessive contamination excessive temperature or exces
sive age or a combination of these factors There is no way
of telling from laboratory examination which of these factors is
responsible in any individual case but a high bacterial count
is a clear indication of improper methods in producing or hand
ling milk Milk produced under cleanly conditions kept at a
low temperature and promptly delivered will have a low bac
terial count Of the three disturbing factorsdirt tempera
ture and agetemperature ordinarily plays the largest part in
producing a high count The quicker the milk is cooled and
the cooler it is kept the lower the bacterial count
Interpretation of Bacterial CountSince the bacterial count
varies with conditions and with seasons it is difficult to set any
reliable bacteriological standard The following will give a
general idea of how such numbers should be interpretedBacteria Per Cubic Centimeter
Below 10000 indicates very good milk
Between
10000 and 50000 indicates good milk
50000 100000 a fair milk
100000 500000 a unsatisfactorymilk
500000 1000000 a bad milk
1000000 a very bad milk
Over
The bacterial count will vary with the season being higher
in summer than in winter The cause of this is the greater
difficulty of keeping milk cool in summer If care is taken to
keep it sufficiently cool the count should not be any greater in
summer than in winter
The bacterial count will vary with the time elapsing between
milking and delivery to the consumer Within limits of
twentyfour hours however a thorough cooling of milk will
greatly retard the growth of bacteria so that thoroughly cold
milk may he delivered any time within twentyfour hours and
still show a low bacterial count Where a dairy is close to the
consumer so that the milk may be delivered within twelve hours
of the milking there should be no difficulty for a dairyman
who takes ordinary care of his milk in having a bacteria count
below 10000 If the reading is above that it is usually due to
lack of sufficient cooling to unsterilized milk vessels or unclean
methods or to a combination of these factors
Individual and Average CountsIn interpreting bacterial
counts not too much weight should be placed upon a single
bacteriological analysis Slight irregularities in dairy condi
tions sometimes cause an occasional high count in dairies where
the count is usually low Hence a report based upon a single
analysis is occasionally misleading
The dairyman should also remember that there is practically
no difference between a sample of milk reported as containing
8000 and one with 10000 per c c nor any appreciable differ
ence between 100000 and 110000 per c c These differences
though they may seem large to one unfamiliar with bacteriolog
ical methods are within the limits of the errors of our present
methods of testing A sample of milk reported as containingi2ooo bacteria is probably no better than one reported as con
taining 15000 unless these figures are the result of a consider
able series of analyses and represent an average But while
there is practically no difference between these slight numbers
there is a GREAT difference between milk with 10000 and
milk with 100000 bacteria per c c These broad differences
are always of significance as indicating uncleanliness age or
too high temperature
Rules for Lowering Bacterial CountIf the bacterial count
is persistently high it indicates something wrong In attempt
ing to remedy the condition attention should be given to the
following points
1 TemperatureBacteria multiply at temperatures over
6oF with inconceivable rapidity Milk which is clean at the
start and has been received into sterilized vessels if kept for a
few hours over 6o will contain very large numbers of bacteria
On the other hand milk even if received in unclean vessels
and fairly dirty but cooled at once to 400 and kept at this tem
perature may after several hours show a lower bacterial
count than a better sample of milk which had been allowed to
become warm
Quick and efficient cooling is one great essential in the pro
duction of a good milk The use of ice is necessary as the
well waters of Georgia are seldom cold enough to sufficiently
cool milk The sooner milk is cooled after milking to a
temperature below 50F the longer it will keep sweet It is the
growth of bacteria in milk which causes it to sour and bacteria
grow faster in warm than in cold milk
2 Unclean Milk VesselsApart from temperature unsteri
lized milk vessels are probably the greatest factor in producing
a high count It is very difficult to clean milk vessels thor
oughly and almost impossible to sterilize them unless the
dairyman has access to live steam Even after most thorough
washing bacteria will be left in the milk pail which can only
be removed by live steam If the dairyman has no live steam
at hand he should do as well as he can with plenty of boiling
water and take the occasion as frequently as possible to gethis milk vessels sterilised at a neighboring creamery where
live steam is available
3 AgeBacteria increase rapidly with age and under ordi
nary conditions of temperature the best milk in 24 to 48 hours
will show a high bacterial count Hence the delivery of milk
should be as soon as possible
4 DirtBacteria in milk come chiefly from dirt that
enters the milk and other things being equal the larger the
amount of dirt the higher the bacterial count Hence all of the
factors mentioned above for avoiding dirt in milk will tend to
reduce the numbers of bacteria Clean milking rooms clean
vessels clean milkers and clean cows are primary factors in
producing a low bacterial count
Above all things the dairyman must remember that no milk
that is allowed to become warm will show a low bacterial count
no matter how carefully it is produced and distributed
DISEASED COWS
No milk from diseased cows should be mixed with the pub
lic supply Unless a dairyman is indifferent as to being re
sponsible for diarrhoeal troubles among children and for
various serious throat diseases he should sell no milk from
cows with any kind of diseased udders
CARE OF MILK IN THE HOME
How many people blame the dairyman for giving them poor
milk when the fault lies not with the dairyman but with them
selves
The following suggestions as to how to keep milk well are
for anyone who drinks milk at home It is as necessary for
you that the milk delivered to you is kept clean and cold as
that the dairyman produces it carefully
Most milk is delivered to the consumer in capped bottles
Until the cap is removed no more dirt can get into the milk
It remains for you then only to keep the milk cold until the
bottle is opened If your milk is delivered early in the morn
ing you should make some arrangement with the milk man
10to place it in a cool place and not allow it to stand in the hot
sunlight and become warm before it is brought into the home
If the dairyman delivers it clean and cold that ends his re
sponsibility If possible the ice box or refrigerator should be
accessible to the milk man and then he could put milk in it
Another good way is to have an insulated container ready
to receive the milk A covered wooden water pail packed
tightly with newspapers with a hole in the middle large
enough to admit a bottle of milk answers the purpose well
Such a container may be made at home and will keep cold
milk cool for a considerable time So much then for keeping
milk cold during the time elapsed between delivery of milk
and taking it into the house
If milk is to be kept for some few hours before use the
unopened bottle should be placed beside the ice in the refrig
erator Here the milk keeps colder than if the bottle is placed
on top of the ice
When the bottle is to be opened remove from the refriger
ator and wipe off the top of the bottle with a damp cloth be
fore the cap is removed Otherwise the dirt which may have
accumulated on the outside of the top of the bottle gets into
the milk as it is poured from the bottle Remove the amount
of milk needed and replace the cap or invert a clean tumbler
over the bottle and replace the covered bottle in the refriger
ator
It often happens that a refrigerator is not well constructed
and food placed in the food compartments will not be kept
cold Therefore as above stated it is essential that milk be
kept in the ice compartment beside the ice It is a good plan
to have a thermometercost about 25 centsand see that you
keep the milk as cold as possiblepreferably not over 40F
So much for keeping milk cold
in keeping milk is to keep it clean
The other important point
It is necessary to have the
whole of the refrigerator clean It is a good plan to wash
the refrigerator with hot water every two or three weeks
Under no circumstances leave milk where flies have access
to it Flies carry dirt bacteria and often disease germs
11When milk is to be given to a small child or infant one
cannot be too careful in the handling of milk Special pre
cautions should be taken to get a good milk and then keep it
cold and clean Never mix old milk with new milk which
is to be given to an infant
Finally when you have emptied a bottle wash it before you
return it to the dairyman The dairyman is supposed of
course to wash all his bottles before he puts milk into them
but the washing of milk bottles before returning to the dairy
man lessens the possibility of the spread of a milk born epi
demic of disease
