Support Commission
Georgia egg producers have voted once again in favor of continuing the Georgia Agricultural Commodity Commission for Eggs. The program was approved for another three year period by an 83 percent majority, based on the total number of eligible votes cast.
A total of 88 votes were cast, with 67 voting in favor; 14 voting ag-
ainst; and 7 votes ineligible.
Although there are approximately 600 egg producers in Georgia, only 186 were qualified to vote in the 1980 referendum, which was held during the period of January 7 through Midnight February 5. With the passage of the referendum, the Georgia Egg Commission will continue its program of promotion, education and research which

began in 1961. Since that time, Georgia egg producers have voted every three years in favor of the Commission's continuing. Funds for the program are derived from a producer assessment of 2 cents for every 30 dozen eggs packed.
As Executive Director, I would like to thank all the producers who voted in the referendum ... not just those who voted "YES," but those who voted "NO," as well ... as apathy is our worst enemy, whether in a vote for the President of the United States or in a referendum.
To those producers who did vote "For" the program to continue, I pledge to continue the efforts of our staff promoting your product. To those who voted "Against" the program, we pledge to work even harder during the coming three years to gain your confidence and support.

ACC Commissions
Three down, three to go. Referendums for three of Georgia's Agricultural Commodity Commissions have been completed and the votes tabulated. Three other Commissions are just beginning their referendums.
Tobacco, Peaches Sweet Potatoes
Reaffirmation referendums now are being conducted for the Agricultural Commodity Commissions for Tobacco, Sweet Potatoes and Peaches.
Producers of record were mailed ballots at the beginning of the 30-day referendum periods. To be counted all ballots must be postmarked by midnight on the last date of the referendum. The referendum deadlines are:
Tobacco midnight, March 20, 1980
Sweet Potatoes midnight, March 1, 1980
Peaches midnight, March 14, 1980

Maximum employment would not exceed four months per year. No written test is required for appointment. Applicants will be rated on a scale of 70 to 100 based on the extent and quality of their experience and training as described in their appli-

The contest is sponsored annually by the National Broiler Council with the Georgia cook-off co-ordinated by the Georgia Poultry Federation and Georgia Poultry Processors Association.
This is a special year for Georgia as the national contest will be held in Atlanta on August 5-7 at the Georgia World Congress Center. State winners will compete at the national
cook-off for cash prizes amounting to $20,000.
To enter the contest you do not need an entry blank. Just write your name, address and phone number on
the front page of your recipe. You may send in more than one recipe but each must be on a separate sheet of paper and should include your name and address.
The recipe should be for approximately four servings using a broilerfryer chicken. Do not include the garnish in your recipe.
Judging will be based on four features: simplicity, appeal, taste and appearance. All entries become the property of the National Chicken Cooking Contest.
The deadline for the state contest is March 15. Send entries to Chicken Contest, Box 28158, Central Station, Washington, D.C. 20005.

Each year the Atlanta Farmers Club selects one of its members to honor for continuous and devoted service to Agriculture and the Farmers Club. The winner of the "Over the Years1 ' award for 1979 is Byron Kirkland, President of the Georgia Development Authority.
With summer approaching, now is the time for all dealers of agricultural products to consider Georgia's licensing and bonding law. It requires licensing and bonding of any
dealer who buys agricultural products from Georgia producers, and pays for those products by means other than cash. Persons who pay by cash at the time of purchase are exempted.
Agricultural products referred to in this act include fruits, vegetables, eggs, and pecan nuts.

Dear Editor: If you or any of your readers have instructions for mak-
ing "Old Fashioned Homemade Brown Sugar" using sugar cane juice and cooking it in a large boiler (60 to 80 gallons) I would like to have the recipe.
I think it was put in a large barrel with holes in it to let the molasses drip out. This was cooked in an evaporator.

EXCITING USES FOR EXTRA EGG YOLKS AND WHITES What do you do with egg yolks or whites left over from a
recipe? If your answer is something you would prefer not to admit in public or, at best, mumble under your breath, these recipes for Fruit Whip and Rich Custard Sauce are for you.
When you find that those egg whites your really were going to mix into your scrambled eggs are still sitting there in the refrigerator, it's time for Fruit Whip. In less than two minutes this delicious and nutritious dessert can be in your refrigerator chilling for dinner. Simply blend those egg whites with some gelatin, your choice of fruit and a touch of lemon juice for a tasty treat. Though Fruit Whip looks devastatingly fattening, it's an extremely low-cal dessert. (Just how low in
calories depends on the fruit you prefer to use.) If it's egg yolks you've forgotten about, mix a batch of
Rich Custard Sauce. This recipe has unlimited uses. Try it
over pound or sponge cake; layer it with fruit for a gorgeous parfait; top shortcake, fruitcake or steamed pudding with it. You can even turn it into a refreshing, energy-boosting beverage by adding apple, orange, grapefruit or cranberry juice!
Coincidentally, these recipes are terrific together. Why wait until you have extra egg yolks or whites? Try both re-
cipes for a fantastic dessert combination.
Fruit Whip 4 to 6 servings
1 envelope unfavored gekrtin 1/2 cup boiling water
2 tablespoons lemon juice
1 package (10 oz.) frozen
5 egg whites
sweetened fruit
Empty gelatin into blender container. Pour in water and
lemon juice. Cover and blend at medium speed until
gelatin is dissolved, about 45 seconds. Break fruit into
pieces by rapping package against counter edge. Add half
of fruit. Cover and blend at medium speed 10 seconds.
Add remaining fruit. Cover and blend an additional 10
seconds. Add egg whites. Cover and blend until well com-
bined, about 20 seconds. Pour into serving dishes and chill
several hours. Serve alone or topped with Rich Custard
Sauce* or whipped topping.
Variation: Substitute 4 ounces ready-to-eat prunes
(about 12 prunes) for frozen fruit.
Rich Custard Sauce Makes 11/3 cups
4 egg yolks
1/4 cup sugar
1/8 teaspoon salt
1 1/4 cups milk
1/2 teaspoon lemon or vanilla
extract
In small heavy saucepan beat egg yolks slightly. Add
sugar and salt and mix until well blended. Gradually stir
in milk. Cook over low heat, stirring constantly, until mix-
ture thickens and just coats a metal spoon. Stir in lemon
extract. Cool immediately by placing pan in bowl of ice or
cold water and stirring for a few minutes. Cover with
plastic wrap and refrigerate several hours until
thoroughly chilled.

Why can't I keep the liver when my hog is slaughtered? M. T. Tifton
According to regulations, when swine are slaughtered in an inspected slaughter house, they must meet the same requirements set for inspected animals. This means that any organ found to be unwholesome or unfit for human consumption is condemned. In Georgia, a high percentage of swine livers are condemned annually for this reason. If your animals are taken to a house which does strictly custom work, they are not inspected and need not comply with these regulations. Clarify any questions before leaving the
animal.

Results of the recently held referendums have been tabulated and the Commodity Commission for Eggs was approved by 82.7 percent of the producers voting, while the Cotton Commission received an approval vote of 84.9 percent, and milk proucers gave a resounding 94 percent favorable vote.
The producer endorsements reaffirms these Commissions for three years.
Members of the Commissigns expressed their appreciation for the support of the producers and pledged to continue the aggressive programs to benefit the farmers. They also reminded the producers that their ideas are welcome and that input is very helpful in the development of programs each year.

Garden
Mr. J. D. Calhoun, Cobb County, starts his corn for the vegetable garden before he plants it. "Soak a towel in lukewarm water and wring it out real good. Spread the seeds on the towel and roll up inside. Put the towel in a pan in a warm place and check it every day to be sure it has not dried out. You might have to add a little water. In a few days the corn seeds will have their first roots which you can plant outside if you're real careful."
There is an old fashioned way to keep your seedlings from damping off according to Katie Halpern, Ware County. "Put some good dirt in a quart jar and lay the jar on its side. Sprinkle the seeds over the dirt and then cover the end of the jar with foil or the screw-on lid. Punch some air holes in it."
According to Ms. Halpern, if you place the jar on top of your refrigerator where it is warm the seeds will sprout in several days and because the sides of the jar condense you need not worry about watering the baby plants.
"After the seeds sprout and the plants are big enough to handle, you can transplant them outdoors," Ms. Halpern advised.
Lots of folks would not dare move a spring-flowering bulb in the spring but you can if you're careful. Dig up a clump with a spading fork, put in a pan with a little cold water hi the bottom.
Dig a larger hole than you need and place a little manure in the new hole and plant the clump. Tamp down the soil and water well.

Use Burn Treatment
For Coastal Bermuda
Burning crop residue is usually discouraged but Extension Agronomist W. H. Sell says burning a sod of Coastal bermuda at just the right time will increase the yield.
Besides increasing yield, burning will help control spring weeds, plant diseases, spittlebug and other insects.
The key to success is burning at the right time. According to Sell, the best time to burn Coastal sod seems to be one week prior to the expected date of the last killing frost. Burning earlier will not produce the good weed control and burning too late reduces yield. Most of the increase yield occurs during June and July.
University of Georgia research workers found that burning increased production by one-half to one ton per acre when good fertilization and other management practices were used.
Burning also controlled weeds equal to or better than an application of 2,4-D for spring weeds. During the three year test period for burning, nitrogen fertilizer was used at the rate of 200 pounds of N per acre with adequate amounts of phosphorus and potassium.
Burning Coastal sod also temporarily destroys the enzyme urease, which breaks down urea fertilizer and causes some nitrogen to be lost as ammonia to the atmosphere. Loss of nitrogen from urea containing fertilizer can be prevented by applying the fertilizer immediately after the sod is burned.

Wild Game Hunting season brings with it wild game for the family table and freezer. Try soaking the meat in a solution of 1 /2 cup vinegar, 1 cup water and 1 teaspoon of salt to draw out blood and partially remove the wild or gamey taste that some people find objectionable. Here are some ideas for using game to create tasty sportsman meals.
Venison Roast
4-lb. venison roast
1 teaspoon salt
1/2 teaspoon black pepper
1 package onion soup mix
1 can condensed mushroom soup 1/2 cup water
Salt and pepper meat; place in foil-lined roasting pan.
Add remaining ingredients. Seal top of pan with foil. Bake
in 350 degrees F oven for 3 hours or until tender. Yield: 8-
10 servings.
Dove Delicious
Split doves down back, draw and clean. Boil doves for 15 minutes. Place inside the dove a slice of butter and one-half slice of a 1/4 inch slice of onion. Salt and pepper to taste. Wrap each dove in foil. Cook for 30 to 45 minutes at 400 degrees F. and serve in foil.
Baked Squirrel
4 squirrels, cleaned and dressed 1 can bouillon
1/4 cup Worcestershire sauce 2 Tablespoons parsley, chopped
2 Tablespoons onion juice
Clove of garlic
Small bay leaf
Salt, seasoned salt and pepper
to taste.
Flour squirrels and brown in roasting pan. Add all
ingredients and bake at 350 degrees F. for 45 minutes.
Reduce temperature and bake slowly for another 45 min-
utes or until tender. Yield: 4 servings.
Smothered Venison Steaks
Pound steaks thoroughly. Season with salt and pepper and roll in flour. Brown in pan to which 1 Tablespoon of grease has been added. In another pan brown 1 medium diced onion, 1/2 medium green bell pepper, 1 slice clove of garlic and pinch of bay leaf. Add mixture to pan with browned steaks along with one cup of water. Simmer slowly until done or about an hour. Add water as needed.

Have you ever seen Danish canned ham and bacon in the store? The hogs that are responsible for making Denmark a well-known exporter of bacon are the Landrace. These hogs were developed in Denmark the last few years of the 19th century.
It was not until the mid 1930's, however, that a shipment of Danish Landrace were imported to the United States.
Characteristically, the Landrace is a white hog with a long body. His ears are large and heavy and the animal looks as meaty as he dresses out to be.

If you want an active hog to rustle behind cattle or harvest and salvage crops, then Tamworths are for you. It is regarded as the most active breed of swine and has the reputation of producing the best bacon.
Tamworths are an English breed of hog, distinctively bacon-type. They are deep-sided meaty hogs. Their appearance is not particularly impressive compared to other hogs since Tamworths have a long neck, long body and long snout. The ears are medium size and are carried erect.
The very practical red coat is desirable to hog breeders as it adds to the ruggedness of the animal.

"Food and Heart Disease" will be among topics discussed in the public food symposium sponsored Thursday, February 28 by the Food Science Club in the University of Georgia College of Agriculture.
The seventh annual "Food and Your Well-Being" symposium will be held in the Georgia Center for Continuing Education, with registration beginning at 8:30 a.m.
Other topics will include food additives, cancer and diet, PDA and labeling and "The Nutrition Dilemma: Separating Fact from Fantasy."
The Food Science club annually presents the food symposium free of charge to the public as a service to the community.

The Cooperative Extension Service, the Consumer Protection Field Force, and many others in the state help us in educating the public by distributing thousands of recipe leaflets and informational brochures each year. We are also assisted in this area by the media, Welcome Wagons, Welcome Centers, agencies and friends of the Commission.
The research program is carried out by the University of Georgia's Poultry Science Department. Current projects underway deal with: a study on phosphorous and calcium; egg component yields; and egg shell quality.

Lease the land to an experienced farmer. But, be sure from the outset of the agreement that all points are covered and clearly defined in a written document.
A good farm lease is a written agreement in which a land owner provides the tenant certain rights that go with the use of the land. In return the land owner receives remuneration in the form of a cash payment or share of production.
Included in the farm lease should be a description of the property and any limits. Both parties' responsibilities should be outlined as they relate to permanent improvements, maintenance, compensation for damages, insurance coverage and conservation practices.
The agreement should also include rent payment procedures and the method to be used in sharing debts and expenses. The agreement should also contain proper language and avenues for settling any "unusual" differences that are not otherwise specifically covered by the lease.
An example of specific provisions of the lease could pertain to whether the landlord will receive a cash payment or a percentage of the profits. In the latter case, the owner shares the risk of a high return in good crop years, a low return in bad years, and a loss in the case of a drought or other disaster.
The document also should be specific as to whether the landlord will provide only the land for a certain percentage of the profit or provide necessary equipment and a portion of the operating capital for a higher percentage of the income.
Experts say agreements like a lease must be firmly outlined in writing before the first dollar is spent ... or, they warn, if problems arise later without such written provisions, the parties involved may find that no legal agreement ever really existed. And, that spells a loss for all concerned.
