Egg Producers Support Commission Georgia egg producers have voted once again in favor of continuing the Georgia Agricultural Commodity Commission for Eggs. The program was approved for another three year period by an 83 percent majority, based on the total number of eligible votes cast. A total of 88 votes were cast, with 67 voting in favor; 14 voting ag- ainst; and 7 votes ineligible. Although there are approximately 600 egg producers in Georgia, only 186 were qualified to vote in the 1980 referendum, which was held during the period of January 7 through Midnight February 5. With the passage of the referendum, the Georgia Egg Commission will continue its program of promotion, education and research which (Our guest columnist this week is Robert N. Since that time, Georgia egg producers have voted every three years in favor of the Commission's continuing. Funds for the program are derived from a producer assessment of 2 cents for every 30 dozen eggs packed. As Executive Director, I would like to thank all the producers who voted in the referendum ... not just those who voted "YES," but those who voted "NO," as well ... as apathy is our worst enemy, whether in a vote for the President of the United States or in a referendum. To those producers who did vote "For" the program to continue, I pledge to continue the efforts of our staff promoting your product. To those who voted "Against" the program, we pledge to work even harder during the coming three years to gain your confidence and support. Referendums for three of Georgia's Agricultural Commodity Commissions have been completed and the votes tabulated. Three other Commissions are just beginning their referendums. Tobacco, Peaches Sweet Potatoes Reaffirmation referendums now are being conducted for the Agricultural Commodity Commissions for Tobacco, Sweet Potatoes and Peaches. Producers of record were mailed ballots at the beginning of the 30-day referendum periods. To be counted all ballots must be postmarked by midnight on the last date of the referendum. The referendum deadlines are: Tobacco midnight, March 20, 1980 Sweet Potatoes midnight, March 1, 1980 Peaches midnight, March 14, 1980 Producers who might not have received a ballot can receive one by contacting the Commodities Promotion Division, Georgia Department of Agriculture, Capital Square, Atlanta, GA 30334, telephone (404) 6563678. Work Available For Tobacco Graders The Agricultural Marketing Service (AMS) has openings for parttime employment for Agricultural Commodity Graders (Tobacco), GS 1980-5. Maximum employment would not exceed four months per year. No written test is required for appointment. Applicants will be rated on a scale of 70 to 100 based on the extent and quality of their experience and training as described in their appli- (Continued On Page 11) The contest is sponsored annually by the National Broiler Council with the Georgia cook-off co-ordinated by the Georgia Poultry Federation and Georgia Poultry Processors Association. This is a special year for Georgia as the national contest will be held in Atlanta on August 5-7 at the Georgia World Congress Center. State winners will compete at the national cook-off for cash prizes amounting to $20,000. To enter the contest you do not need an entry blank. Just write your name, address and phone number on the front page of your recipe. You may send in more than one recipe but each must be on a separate sheet of paper and should include your name and address. The recipe should be for approximately four servings using a broilerfryer chicken. Do not include the garnish in your recipe. Judging will be based on four features: simplicity, appeal, taste and appearance. All entries become the property of the National Chicken Cooking Contest. If your answer is something you would prefer not to admit in public or, at best, mumble under your breath, these recipes for Fruit Whip and Rich Custard Sauce are for you. When you find that those egg whites your really were going to mix into your scrambled eggs are still sitting there in the refrigerator, it's time for Fruit Whip. In less than two minutes this delicious and nutritious dessert can be in your refrigerator chilling for dinner. Simply blend those egg whites with some gelatin, your choice of fruit and a touch of lemon juice for a tasty treat. Though Fruit Whip looks devastatingly fattening, it's an extremely low-cal dessert. (Just how low in calories depends on the fruit you prefer to use.) If it's egg yolks you've forgotten about, mix a batch of Rich Custard Sauce. This recipe has unlimited uses. Try it over pound or sponge cake; layer it with fruit for a gorgeous parfait; top shortcake, fruitcake or steamed pudding with it. You can even turn it into a refreshing, energy-boosting beverage by adding apple, orange, grapefruit or cranberry juice! Coincidentally, these recipes are terrific together. Why wait until you have extra egg yolks or whites? Try both re- cipes for a fantastic dessert combination. Fruit Whip 4 to 6 servings 1 envelope unfavored gekrtin 1/2 cup boiling water 2 tablespoons lemon juice 1 package (10 oz.) frozen 5 egg whites sweetened fruit Empty gelatin into blender container. Pour in water and lemon juice. Cover and blend at medium speed until gelatin is dissolved, about 45 seconds. Break fruit into pieces by rapping package against counter edge. Add half of fruit. Cover and blend at medium speed 10 seconds. Add remaining fruit. Cover and blend an additional 10 seconds. Add egg whites. Cover and blend until well com- bined, about 20 seconds. Pour into serving dishes and chill several hours. Serve alone or topped with Rich Custard Sauce* or whipped topping. Variation: Substitute 4 ounces ready-to-eat prunes (about 12 prunes) for frozen fruit. Rich Custard Sauce Makes 11/3 cups 4 egg yolks 1/4 cup sugar 1/8 teaspoon salt 1 1/4 cups milk 1/2 teaspoon lemon or vanilla extract In small heavy saucepan beat egg yolks slightly. Add sugar and salt and mix until well blended. Gradually stir in milk. Cook over low heat, stirring constantly, until mix- ture thickens and just coats a metal spoon. Stir in lemon extract. Cool immediately by placing pan in bowl of ice or cold water and stirring for a few minutes. Cover with plastic wrap and refrigerate several hours until thoroughly chilled.
