In Agriculture
The basic aim of Agricultural Engineering Department is to mechanize farming operations. New machines may be designed and built or existing machines may be modified. Methods of using equipment efficiently are also studied.
For example, a machine has been built which will subsoil under the row,
place fertilizer in a vertical band from surface to subsoil depth, and bed in a single operation. Preliminary results indicate that when used in the fall on the contour, erosion is less, and spring planting may be done under optimum conditions with no fertilizer needed at planting. This reduces planting time by 50 percent and produces good stands. Other fertilizers needed are applied by sidedressing. The department has developed a simple pea and lima bean harvester that is 96% efficient. Although not

equipped with a cleaner, the mixture of peas and leaves may be transported economically and shelled by commercial shelters.
A pimiento pepper harvester now under development has reached a field efficiency of 75% and improvements are planned for next year.
New work involves the development of a peach harvest aid which will allow pickers to ride in comparative comfort. To complement this machine, special peach plantings have been made to produce a tree wall type of growth which will allow machine pruning and increase picker efficiency. A small tree cultivator has been developed for these closely spaced trees.
Other new work planned is the mechanization of nurseries and the improvement of their overall operation through changes in materials handling and time and motion studies.
In cooperation with the College Station at Athens, an oxidation ditch for the disposal of swine wastes has been constructed and operated for 18 months. Although some problems remain, in general the waste disposal has been odorless with good environmental effectiveness.
Another important function of this department is to aid researchers in other fields by the design and construction of specialized equipment. Precision fertilizer and herbicide applicators, pilot plant peach peelers and improved instrumentation have been developed under this area of work.

Curing a ham is a relatively simple process if a few guide lines are followed. Meat-type hogs, those within the weight limits of 180 to 240 pounds, produce the most desirable hams for curing. Hams from meattype hogs have the minimum of fat and maximum of lean desired by most.
REFRIGERATION
Refrigeration or chilling the hog carcass is a must to prevent spoilage during the curing process. Hams must be chilled to 40 degrees F. in-
ternal temperature before the curing process can begin. Temperatures
above 40 degrees F. encourage ham souring bacteria to multiply rapidly resulting in the loss of the entire ham.
It takes 12 to 15 hours to chill a 150 pound hog carcass to the adequate temperature. 32 to 35 degrees F. is a good chilling temperature that will prevent souring bacteria from working. If slaughtering your own hog, wait until the weatherman

Our Seed division advises that peas have been frozen and then used for
seed. However, the chances for damaging the peas are extreme. They advise
storing in moisture proof containers in the refrigerator for protection against
weevils. We have mailed you a pamphlet on storing seed peas which should be
helpful.

I recently read in the MARKET BULLETIN that lime or clorox could be used to kill moss on steps. I live in a densely shaded area and have moss growing on the roof of my house. I would like to know if I can broad cast lime on my roof to kill the moss or would it damage the asphalt roofing. The moss grows in the joints and when removed, leaves holes in the roof. The roof is old but before reroofing 1 would like to find out how to control this.

Our moss man advises the use of copper sulfate, available at your local drugstore or garden shop. Use 50 percent copper sulfate powder at the rate of one ounce to one gallon of water or 90 percent copper sulfate crystals at the rate of one ounce to two gallons of water.

I like flowers which bloom. In the spring of 1970, I planted one of my three vegetable gardens, then dug out two feet of bermuda grass the length of the garden, about 100 feet. I then planted tall marigolds as the first row, because of their beauty.
After my vegetables and marigolds were planted and growing, I read an article somewhere which stated if you would plant a row of marigolds as the first row of your vegetable garden you would not have bugs on your plants. It worked; the marigolds and vegetables were beautiful and no bugs.

Recipes of the Week
SPANISH CARAMEL CUSTARD 3 cups sugar I/ 2 cup boiling water 6 eggs 1 Tbsp. Anisette (optional) 1 tsp. vanilla Dash nutmeg Dash salt 2 cups scalded milk
Melt 1 cup of the sugar in a heavy skillet over low heat, stirring constantly. When mixture is light brown, remove from heat and slowly add boiling water; stir and boil until caramel is dissolved. Pour into 8 custard cups.
Beat eggs until frothy. Add remaining sugar, anisette, vanilla, nutmeg, and salt; beat well. Add milk gradually. Pour mixture into caramel cups. Place cups in a pan of water and bake at 350 degrees F. for 30 to 40 minutes or until custard is set. Cool; then chill in refrigerator. When ready to serve, loosen edges with a spatula and turn mold upside down. The caramel tops the custard. Yield: 8 servings.

Dissolve gelatin in boiling water. Add vinegar and sugar. Chill until syrupy. Fold in pineapple, cheese, and whipped cream. Pour into individual bell shaped molds or use 1 quart mold. Chill until thoroughly set. Unmold on curly endive or other greens. Makes 6-8 servings.

Holly -- Ilex opaca, Croonenberg, a named variety of American holly and the variety associated with Christmas. It is a good berry producer and will grow into a beautiful plant. This variety which grows wild in acid woodland soils is found all over America and is also planted as an ornamental or crop tree in many areas.
It was a pagan custom to "deck the halls with bows of holly" during the winter Saturnalia, but early Christians soon saw in the prickly leaves and blood-red berries a symbol of the crown of thorns that Christ was forced to wear at his crucifixion.
This would seem to make it more appropriate for Easter, so its use at Christmas was probably an accommodation to carry on the traditional pagan custom. This pagan winter festival of the Saturnalia came about a week before Christmas, and an early edict of the church forbids Christians to decorate their houses with evergreens at the same time as do their pagan neighbors; probably giving rise to the superstition still prevalent in England that it is unlucky to bring holly into the house before Christmas Eve.
As a medicinal plant both the berries and the leaves of holly are used. Holly tea is very good and the poor people of the Black Forest region of Germany have used Holly tea as a tasty hot beverage for years -- not only for medicinal purposes but because it is good. To make a good tea you must roast the berries until they are thoroughly dried and quite brown. Crumble them and make exactly as Oriental tea is made. .. and maybe Christmas day we can enjoy our Christmas dinner even more with a cup of appetitestimulating holly tea.

Decoupage for Gifts
When making out your Christmas list, why don't you include a few hand made crafts? This makes YOUR gift more special and interesting.
Recently, Americans have begun to revive a craft which was practiced more than 3000 years ago. This is the art of decoupage which originally meant to cut out. Durable decoupage pieces can be created that will later become
heirlooms.
Materials you will need are: wooden surface, a print, antique glaze, finish coat, thinner, white glue, soft cloth or paper towel, steel wool and brushes.
(1) Prepare wooden surface by sanding to a smooth finish. Wipe dust off with a soft cloth. Stir antiquing glaze thoroughly and brush over the surface, following the grain of the wood. Let dry.
(2) Prepare print by cutting to desired size or tearing border away from print which gives an antique effect. Place print face down on an old surface and sandpaper around back of edges of print to make them thinner and more ragged.
(3) Mix small amount of water with glue to produce a smooth coat. Spread glue over back of print. Position print on wood right side up. With fingers, rub from the center of print toward the edges to remove wrinkles and air bubbles. After adhering print, blot excess glue from around print with damp cloth.
(4) Because some inks are not compatible with decoupage finishes, it is often necessary to seal the print by brushing a coat of white glue thinned with I/ 4 water over the surface of the print brushing out
thoroughly. (5) Stir antiquing well and apply
to article with brush or cloth following grain of the wood. If article is large, antique only one side at a time. Wait five minutes after application. Then

with soft cloth, use many gentle strokes and wipe with grain of the wood. You might want to wipe more glaze off the print leaving glaze around the edges and sides of the article.
(6) Finish the surface by adding the number of finishing coats desired allowing each to dry thoroughly. If you add up to ten to fifteen coats of finish, you produce a smooth surface.
(7) For the final touch-up, rub the surface with a fine steel wool until all appearances of a gloss have disappeared. Buff with a soft cloth.
Remember to let article dry well between each step.

Ham Curing

short cut ham is suitable for curing although the long cut may not dry out as fast as will a short cut.
Frozen ham can be cured after thawing, However, unless it is known how long the hams have been frozen and how long they were held before freezing, frozen hams are not recommended for curing due to the possibility of bacteria contamination.
CURING INGREDIENTS There are many ways hams can be cured successfully and many ingredients that can be used. One of the most successful curing operations contains salt, sugar, and salt peter. The primary curing agent is salt while sugar aids in giving a more desirable color and keeps the ham from becoming too hard during aging. Salt peter (potassium nitrate) will give the lean the bright red color so desirable in a country ham.
A mixture of eight pounds of salt, three pounds of sugar, and three ounces of salt peter are mixed thoroughly and applied immediately after the chilled ham is cut.
This formula uses either granulated or flake salt. The type sugar used makes little difference but granulated white or light brown is easier to mix with the other ingredients and easier to apply to the ham.
APPLYING THE CURE
The ham should be weighed to get the exact amount of cure to be applied. The mixture should be applied at the rate of 1 I/ 4 ounces per pound of ham. One third of the mixture is applied immediately after cutting, then I/ 3 on the third day, and the remaining I/ 3 on the tenth day.
The hams should be thoroughly rubbed at each application, some cure packed in the shank end, and the surplus piled on the cushion of the ham.
Hams are then placed on a shelf (shelf-curing gives the most uniform cure), not over three feet high, under refrigeration at 35 to 40 degrees F.
When temperatures get much above 40 degrees F., ham souring bacteria start to multiply causing spoilage. When temperatures fall below 35 degrees F., salt penetration is decreased.
METHODS OF CURING Salt penetration is fairly slow about seven days per inch of thickness of the ham. For example, a 16 to 18 pound ham is about 5 inches thick and requires 35 days in cure. The following schedule may be used as a guide: 14-16 Ib. ham 2 days per Ib. 18-20 Ib. ham 1 3/ 4 days per Ib. 22-24 Ib. ham 1 I/ 2 days per Ib.
For each day the temperature is below freezing, add another day to the schedule.
SALT EQUALIZATION
At the end of the curing schedule, take hams out of the cure, wash off all excess cure, and put back under chill for salt equalization. Most of the salt is near the surface and will take another 20 to 25 days under refrigeration (40 degrees F. or below) for the cure to spread evenly throughout the ham. As the cure penetrates the ham, moisture is forced out causing approximately eight to nine percent shrinkage.
Spoilage due to unpredictable weather conditions can be prevented by maintaining an average temperature of under 40 degrees F. during the cure and salt equalization. Once a ham is cured, it will not spoil or sour with high temperatures even at 100 degrees F. However, daily high temperatures will cause excessive shrinkage and increase rancidity. Most ham spoilage takes place during curing when salt equalization is not practiced and is not detected until the ham is sliced.
PEWTER SHINE
Pewter serving dishes and pitchers are becoming increasingly popular in Georgia homes, according to home economists with the Cooperative Extension Service. Modern pewter needs a gentle cleansing with soap or detergent suds, a good rinsing and a soft rubbing with an old cloth to keep it polished.
