SHELLING PECANS

Pecans may be shelled as unbroken halves by
dampening immediately before cracking, says Miss
Nelle Thrash, Extension food preservation specialist.
One method is to double a towel or clean bag, spread
it flat and cover with pecans three layers deep.
Spread the towel over the pecans and dampen
thoroughly, allowing nuts to remain overnight be-
fore cracking. A faster method is to place enough
water in a pressure cooker to cover the rack in the
bottom. Fill with pecans and steam under five

pounds of pressure for 10 minutes.
