Temperature, Time Called
Most Important Factors
By C. E. BOGGS
Chief, Egg Section
-State Depariment Agriculture
Hens do not lay dirty eggs. Neither |
do they lay stale eggs. When. eggs are
laid they are clean and fresh, grading
about 98 per cent, Grade A.
_ What happens to eggs after they are -
laid makes the difference in their market
price.
Clean fresh eggs are in demand. Ege
buyers usually demand quality eggs and
are willing to pay a premium for them.
A quality product benefits the egg pro-
_ ducer, the egg buyer, and the consumer.
Eggs conforming to the lower B and
C quality grades have lower marketing
qualities resulting in consumer resist-
ance and necessary reductions in price.
TIME AND TEMPERATURE
Time and temperature are the two
factors most important in the control of
ege quality. Of these two factors temper-
ature has the greater effect either in the
preservation or loss of egg quality. Under
properly controlled temperatures and
humidity, egg quality can be maintained
for quite long periods of time.
But, under unfavorable conditions of
high temperature, the drop in egg quality
is so fast that even the industry itself in
many cases fails to recognize the import-
ance. Bearing out the tremendous effect
that high temperatures have on egg qual-
_ity is the following table which shows
how long it takes for quality to fall from
Grade AA to Grade C at the tempera-
tures listed:
3 days at 98.6; 8 days at 77; 23 days
at 60; 65 days at 44; 100 days at 37.
SHOULD BE PRECOOLED
The above table should be convincing
proot of the necessity of temperature con-
trol to preserve egg quality. A temper-
ature control program should begin right
at the nest, with frequent gatherings, es-
vecially during hot weather. Eggs then
should be allowed to precool to get rid
Cotton Damaged By Mites
In North Georgia Counties
z Reports from several North Georgia
counties indicate considerable cotton
plant damage being caused by two-spot-
ted mites and desert mites.
Among counties reporting damage
were Jackson, Bartow, Oconee, Newton
and Peach.
The Extension Service has found no
completely satisfactory insecticide but
suggests one percent Parathion, which
can be ordered already mixed in with
regular cotton dust from the manufac-
turer. Systox spray is probably better
but is very- expensive.
The mites are slightly larger than
a chigger and can easily be seen by the
naked eye. They feed on the underside
of the leaf and cause leaf to lose color.
Severe damage will cause leaf to look
speckld, turn red, and. may even fall off. _
of the natural animal heat of the egg
at time of laying.
This precooling is a must before pack-
ing into cases or cartons. After eggs are
crated and packed, it has been proved
that the keeping of eggs under refriger-.
ation from this point all the way through
to the consumer is economically sound
and will bring added dollar returns for
this quality control. :
After eggs are packed rough handling
by transportation over bumpy roads with
inadequate or faulty transportation equip-
ment is another one of the reasons why
eggs, though ordinarily of high quality,
sometimes reach market at a considerably
lower grade than is necessary.
All of the above factors having to do
_ with quality control, plus efficient cand-
ling, grading and packaging, are the ans-
wer to a better market price and better
consumer. acceptance for the industry,
Insect Damage Is Costly
To Farmers In Georgia
Insects cost Georgians one hundred
million dollars annually in damage to
crops, livestock, forests, buildings, stored
products, and health, according to En-
tomologist C. R. Jordan, of the Extension
Service.
In the past, Georgias average annual
loss of cotton to insect damage amounted
to about $33, 000,0 000.
