Many bacteria lal by their ability: to

and others. S

_ The primary requisite of mill from a
health standpoint is not pasteurization.

The primary requisite. is clean, whole-

some milk.

The principal reason for pasteuriza-_

tion is not health but is commercial.
- The primary purpose of. pasteurization

is to keep milk from souring on long ~

hauls from - Wisconsin and New Yorls
to Georgia. \ Pasteurization kills the
_ lactic bacteria. and prevents the malk
from souring,

The fight that Iam coulieine is to
protect the health of the people of At-
lanta by insuring a plentiful supply of

clean milk, Doth pasteurized and raw.

The only. way that a clean, wholesome
Sani of milk can be had is for that

~ near enough to Atlanta so that it can
~ be delivered to the consumer raw with-_

in 24 hours after being milked or with-
in 36 hours as pasteurized after being
milked.

I have noticed enone Son: sey-

~ should be pasteurized,

These doctors know that some of this

tmnilk should be fed to hogs becatse it is.

not fit to pasteurize.

There is not a reputable physician -
in the State of Georgia who will say

that pasteurization of rotten milk will
make Grade A milk out of it.

24,000,000 dead bacteria in a level
teaspoonful of milk, or what has been
milk, is enough to dll grown. people,
Tat is what the
City Ordinance will permit, provided
it has been pasteurized.

I have: before me a detter from one
of the best authorities in the State of
Georgia, from which I quote:

Pasteurization of Milk Only

human consumption rests en four bedrock
principles:

1st.Healthy cows..

2nd.Clean and healthy pales. snd

reasonable environment for the
operation of a dairy.

3rd. Prompt cooling of milk.

4th.When the above factors are not

available or complied with, pas-
teurization is justified.

HEALTHY COWSSince 1911, the Geor-
gia Department of AgricuJture, in co-op-
eration with the United States Bureau of
Animal Industry, has been testing and re-
testing cattle engaged in milk production
for human consumption for tuberculdsis
and contagious abortion (Bangs Disease).
The State of Georgia is now on the federal
accredited list as reasonably free of these
infections.

As far as the purity of the milk supply
is concerned, Mastitis, especially the chron-
ic form, is more detrimental than any other
disease. Therefore, cattle affected with Mas-
titis ought to be eliminated from the milk-
ing herds

Cows afflicted with acute diseases gen-
erally stop lactating; but, even so, no sick
cow has any business in a dairy barn and
her milk, if she gives any, should not be
sold for human consumption.

own standard. Surgical cleanliness
but no hotel, restaurant or housekeeper
would try to, maintain it. And yet, most of-

them are clean within the -general accept-

ance of the term. Z

_A clean person naturally abhors filth
and contamination; his soiled hands feel -

uncomfortable, dirty utensils and filthy
surroundings disgust him. He gets a thrill
out of cleaning up and keeping. clean. Hie
barn, his milk room, his utensils are clean
too. If, by any chance, you hire a dirty in-.
dividual to do your milking, you will find
that even good pay will not make him clean.
He is dirty and apparently not ashamed _
of it.

PROMPT COOLING OF MILK. Nothing
in connection with the production and hand-
ling of milk is of greater importance.

There is no way on earth to commercial-
ly produce sterile milk, nor is that neces-
sary. Under normal fan condition
greatest bacterial invader is the lactic acid
bacteria. If the milk is not promptly cooled .
to 45 degrees Fahrenheit or lower, the lac-
tic acid bacteria multiply rapidly, the millx
sours, is churned and the fat gathered as

butter. The residue, the saturated bacter-
ial solutionknown as buttermilkis one _

of the finest health drinks known to man.
~ Of course, other bacteria at times gain
entrance into the milk. but, if the milk is.
promptly cooled and kept cool, bacteria
multiply very slowly, and with healthy
cows and clean milkers you can safely
eliminate. pathogenic. bacteria_ as part of
the bacterial crop in the milk.

It is not only essential. that the fatten: :

producer and distributor keep the milk
cool, the housewife, hotels and restaurants
must keep the milk properly refrigerated -
until consumed. :
