The State Milk Control Board can
help in this situation by allowing high-

Milk cows that are fed protein feeds

can not compete on-a per quart basis
with cows that depend on pastures for
their feed.

Pasteurization Over Played

The idea of pasteurizing all milk has 2

been largely over played. Records in
the office of the State Chemist show
that milk carrying the lowest bacteria
count, is in some cases milk that has

not been pasteurized. On the other -
hand, milk that has been pasteurized
in some cases. carry high bacteria
count. It is a question of sanitation
and temperature control. Milk that is

not good without pasteurization is
never too good after it is pasteurized,

Unfor tunately the practice of stan-
darizing milk by the large distributors
has made it necessary for many small
producers to engage in the same prae-
tice in order to exist.

The ladies clubs, newspapers and

others interested in the price of milk

should remember that the price is de-

termined by the quality just as much

as itis determined by the number of
cents. per quart. They should also re-

member that more eases of undulant

fever can be tiaced to other sources

than can be traced to the milk supply.

Also, it is most important to remem-
ber that ice cream does not have the
same protection as whole milk. This
makes it possible for distributors to
use commerical milk produced under

less strict regulations to make ice

cream,

They should also remember that

eanned milk, condensed milk, powdered
milk and other commercial milks are

produced under a much lower sanitary,
condition that the Georgia Law requireg

of Georgia producers.

When the spring increase of milg
production comes on, the distributors |

could, by evaporation, increase the
solids in whole milk and use it for
making ice cream. This would give
added supplies of ice cream just at the
beginning of summer when additional
amounts of ice cream are needed.
