Sustainable Cuisine Achievable with Creativity, Drive
Kennesaw State University's dining hall sustainable, diverse, delicious
While many of the buildings on the Kennesaw State University campus seem much the same, one building, The Commons, shares only its faade with the surrounding campus. Underneath, the Commons is as different from the rest of campus--in fact from most buildings in and around Atlanta-- as chalk is from cheese.
The Commons was built only three years ago, and incorporates so much cutting edge technology, both in the building and the cooking, that it stands out from dining halls across the country. A Gold LEED-certified building, one of the largest dining halls in the country to receive this honor, it uses the latest in energy
saving and sustainable technologies. Flax seed-based Marmoleum and recycled concrete floors wind through nine cooking stations, which serve approximately 6,000 guests every day. A visitor may notice there are no cooking odors-- because the ventilation system was specially designed by Gary Coltek, Chef de Cuisine, Director of Culinary & Hospitality Services and Culinary Sustainability Initiatives, and the man behind both the building and the school's cutting-edge approach to food and supply sourcing.

Ag Dept. Announces Speakers, New Details For Georgia Grown Symposium Next Month
How food producers can get their products into retail stores. How agritourism businesses can protect themselves. How to build a marketing plan for an agribusiness. These are just a few of the topics that will be covered at the first Georgia Grown Symposium on Nov. 8-9 in Macon.
The two-day symposium, "Growing Your Business with Georgia Grown," held at the Macon Marriott City Center, will focus on the business of food, fiber and fuel as part of the state's innovative Georgia Grown marketing program linking producers and consumers. Participants can
attend workshops on finance, food safety, contracts and licensing, Farm to School, economic development and agritourism all led by local and national experts.
Commissioner of Agriculture Gary Black will open and close the conference and the Georgia Chamber of Commerce will host a networking reception the night of Nov. 8.

Coltek took his program one step further this year by becoming a Platinum sponsor of the Department of Agriculture's Georgia Grown program.
"We're committed to sourcing our food, labor, everything locally as much as possible," Coltek says. "Georgia Grown, with its focus on putting more local product into the supply chain, is something we wholeheartedly support."
One attractive feature of The Commons is that students can see those locally grown vegetables, meat, herbs and dairy products going from crate to plate.
"The Commons kitchen is completely open," Coltek says. "Students can see their food being cooked. Some 130 countries are represented here at Kennesaw State, and we create diverse menus that remind them of home. In fact, we ask students to get recipes from their families at home, and incorporate those recipes into the menu. We serve goat, lamb, vegetarian, vegan-- we try to meet our students' needs creatively."

This annual agricultural-based trade show, known as "North America's Premier Farm Show"TM, is celebrating its 35th anniversary this year. The Expo, which has a 100-acre exhibit area adjoining a 600-acre working research farm, showcases the latest in farming technology. Sunbelt's permanent home is at Spence Field, 4 miles southeast of U.S. Hwy 319 on Hwy 133.

Advertising Guidelines Bulletin Publishes Every Other Week
All advertisements published in the Market Bulletin must relate to the farming/agricultural industry or be a part thereof; any and all item(s) submitted for sale through the BULLETIN must meet at least one of the following criteria: 1) must be produced by the advertiser on his/her own farming operation, 2) must be made by the advertiser from materials on his/her own farming operation, 3) must be owned and used by the advertiser on his/her own farming operation for a period of at least 90 days prior to offering for sale through the BULLETIN. Businesses, corporations, dealerships or other commercial enterprises are not allowed to place classified advertisements in the MARKET BULLETIN. Commercial is defined as intended for mass market; handling large quantities of product for distribution (i.e., more than normal household or farm quantities); supported by advertisement (I.e., advertisement in publications other than the BULLETIN; listed as "business" in telephone directories or "yellow pages", etc.). Other indicators include, but are not limited to, holding business licenses and holding regulatory licenses/permits/registrations. Georgia residents only may advertise in the Market Bulletin with the following exception: out-of-state residents may advertise only in the Out-of-State Wanted category. The editor has the authority to designate the length of ads and the number of ads that may be placed by a family unit in any issue of the BULLETIN. Currently, only one (1) notice may be placed by any family unit in any issue of the BULLETIN. Family unit refers to all individuals sharing the same residence, address or telephone number. Ads must be received no later than designated deadline in order to appear in the following issue. Ads submitted via our website will be scheduled automatically for the next available issue. Ads will be published only once each time submitted unless the advertiser specifies on the notice that the ad is to be published more than once. Ads may be published for two (2) consecutive issues. A new notice must be submitted if the advertiser wants the advertisement to continue more than two issues. Note: Some ad categories are published infrequently and are published only once per submission. Please check ad category headings for publication frequency prior to submitting notice. There is a 20-word limit for advertisements except as noted under category headings (special categories that are published only monthly, quarterly or bi-annually, have a 30word limit). Advertiser's name, town, phone number or name and complete address must be included within the word limit. The Market Bulletin reserves the right to edit notices. Most advertisers include a telephone number in their ads, but mailing address may be published in lieu of phone number. However, it is important that advertisers provide a phone number when submitting ads in the event Bulletin ad personnel need to contact them concerning their ads. Advertisers who do not want a telephone number printed in their ads should note this fact when submitting the notice to the Bulletin. Each notice submitted for publication must be in writing; ads cannot be taken by telephone. Notices may be submitted by U.S. mail, facsimile transmission, or via the Internet through the Market Bulletin website.
Notices sent via mail or fax must be legible, on a single sheet of paper separate from any other notice, and be accompanied by the name of the category and the name, mailing and street address (es) and telephone number of the person submitting the same. Send ads to:

waste. "Unlike other operations of our size, we don't prepare food at the start of a shift to be used in service all day," Coltek says. "By cooking food to order, as needed, we preserve nutritional content and we're able to control production amounts, which is less wasteful. Freshly cooked food just tastes better, too."
Other sustainable practices include trayless service for waste reduction, energy and water conservation. Glass, aluminum, metal cans, plastic, cardboard and even cooking oil are recycled. The Commons generates roughly 30,000 pounds of organic food waste per month, which is collected for composting. The composted soil is used in the onsite vegetable and herb garden, and at the two KSU-operated farms.
"We started our Farm-to-Campus program in spring 2010 with two acres and have now expanded to 45-acres. We use the vegetables we grow in recipes in The Commons," Coltek says. "You can't get more local than that."
The farms, Harmony Hill Farm and Apiary, located in Cartersville, Georgia, and Apple Springs Farm, in Ball Ground, Georgia, comprise 45 acres of vegetables and herbs, 3,000 square feet of greenhouse space, a mushroom garden growing three kinds of shiitake mushrooms, and a 40hive apiary from which the school sources all its honey. The gardens grow heirloom and non-GMO varieties using natural methods of farming.
The Farm-to-Campus program is run by farm manager Robin Taylor, with support from master gardener Michael Blackwell, but student involvement is a high priority.

Environmental Quality Program Applications Due
James E. Tillman, Sr., state conservationist for the USDA Natural Resources Conservation Service (NRCS) in Georgia recently announced that the 2013 Environmental Quality Incentives Program (EQIP) applications are due by November 2, 2012 to be considered for funding in fiscal year 2013.
Applications can be taken at all NRCS offices and USDA Service Centers. EQIP is a voluntary program that funds conservation practices based on stateidentified natural resource concerns, such as forestry, grazing, soil erosion, water conservation and water quality.
There are about 60 EQIP conservation practices including, but not limited to:
pasture and hayland planting, heavy use areas, waste storage facilities, terracing, pest management, tree planting, organic crop assistance, and wildlife habitat management. This list will vary based on locally prioritized conservation practices.
EQIP originally was established under the 1996 Farm Bill. It provides technical and financial assistance to landowners to voluntarily address soil, water and related natural resource concerns on private lands. Conservation plans must be developed for the entire area that will be included in the EQIP contract.

"Our program is volunteer-driven," Coltek says. "We offer hands-on experience to students through volunteering, and some professors have even incorporated the farm into their curriculum. Students learn where their food comes from and have really embraced the sustainability efforts of the University as a whole. respondents is the cost of adding color to the publication. Although at one time the addition of 4-color process would have added significantly to printing costs, that is no longer the case. In fact, the cost of using color versus black ink only is negligible, adding only $0.005 to the cost of a single copy. We believe the value color adds to the publication certainly more than offsets this very small expense.
One factor that stands out is the age of our readers; 96 percent of the readership is over 45 years old, with 53 percent being 73 years or older. That indicates that if the Bulletin is to survive long-term, it must continue to serve its loyal, long-term subscribers, but it also must meet the needs of future generations as well. I believe our new online-only option, launched back in June, already is attracting new readers, particularly those who enjoy being able to view the publication on such devices as smartphones and iPads. When viewing the publication online, hot links provided for ads and editorial copy offer instant access to phone numbers, website links and email addresses.
Currently, about 50 percent of the content of an issue is made of editorial
copy (articles, photos, etc.) with the remaining 50 percent comprised of free classified ads. When asked "what is the main reason you read the Market Bulletin," respondents were about evenly split between agricultural/consumer news and advertisements.
In regard to expanding the content of the Bulletin, 30 percent indicated they wanted to see more "Georgia Cooking"

Firewood
All firewood advertised in the Market Bulletin must be cut from the advertiser's personally owned property. In addition, by law, terms such as face cord, rack, pile, truckload, etc., cannot be used to advertise firewood. Advertisers must use the standard unit of measure, the cord, when specifying the amount of firewood for sale.

Stallion Castration Day
Scheduled November 10
The Georgia Equine Rescue League (GERL), the Georgia Department of Agriculture, and the equine veterinarian community will combine to sponsor the Second Annual Georgia Stallion to Gelding Castration Day Saturday, Nov. 10, 2012.
Specific equine veterinarians throughout Georgia will participate by hosting a low-cost castration clinic for $100 per horse. GERL will pay $50, while the owner/client will pay the other $50. Interested horse owners are asked to check the GERL website at www.gerlltd.org for participating veterinarians in local areas.
There also are plans to involve University of Georgia College of Veterinary Medicine students to take part in several clinics. The Unwanted Horse Coalition also partners in this program.
Plans are to sign up 10 to 20 equine veterinarians to participate by hosting a low-cost castration clinic in their area on Nov. 10. According to Patty Livingston, GERL president, it is estimated that one vet can perform an average of six horses per clinic. The league also is requesting free or discounted drugs to further help reduce costs, Ms. Livingston said.
This program was created in January, 2010, and has helped pay for the castration of more than 180 stallions for private individuals. GERL also pays 100 percent of the castration of any stallions the GDA or other law enforcement agencies may impound.
Last year, 12 equine veterinarians across the state participated, and 98 horses were castrated.

Ever since the department launched its
Georgia Grown program in March 2012,
both Georgia grown members and
consumers have inquired about
purchasing merchandise bearing the
Georgia Grown logo. Now there is a
website, www.georgiagrownstore.com,
where program members can order online
Georgia Grown promotional products for
their businesses. Consumers also are able
to purchase Georgia Grown merchandise
through the website.
The online store is operated in
conjunction
with
Langston
Communications, EPM3 and All Points
Fulfillment, which cumulatively
represent more than 20 years of
experience in merchandising and
promotional marketing. All these
businesses are located in Georgia.
Through the online store, Georgia
Grown members can receive discounts for
promotional items depending on their level
of membership.
Commissioner of Agriculture Gary Black noted that the department has a commitment to offering products made within the state. "Our goal is to provide the best quality items made in Georgia," he said. "If that is not an option, they at least will be made in the USA."
For instance, Georgia Grown T-shirts are made by Platinum Sportswear. This company makes more than a million Tshirts annually in its Wilkes County Georgia plant. Georgia Grown caps are made by National Cap and Sportswear. Based in Waycross, Georgia, the company specializes in custom sewing and embroidery.
"We hope our Georgia Grown members will take advantage of the opportunity to use these promotional items to help grow their businesses," Black said. "We also encourage consumers to purchase these products. By proudly wearing your Georgia Grown cap or T-shirt, you will be helping to spread the word about our program and encourage others to look for the Georgia Grown logo when purchasing their food products."
