Ga. Counties Receive
Disaster Designations
Secretary of Agriculture Dan Glickman has notified the Georgia Department of Agriculture that 99 coun ties in the state have been declared pri mary agricultural disaster areas due to hard freezes in February and March, with an additional 55 counties qualifying as contiguous, according to Commissioner of Agriculture Tommy Irvin.
The counties were designated primary disaster areas after the U.S. Department of Agriculture determined that the areas had suffered significant production losses caused by the cold weather, which occurred from February 1 through March 29, 1996. Among the crops most dam aged by the weather were peaches, canola, Vidalia onions, blueberries and greens.
The declaration makes family-sized farms in both primary and contiguous counties eligible to be considered for low-interest emergency loans from the

Okra: The South's Best-Kept Secret
The Georgia Department of Agriculture is playing a big part in the 1996 Centennial Olympic Games where equestrian competition has begun at the Georgia International Horse Park in Conyers, Ga. (front entrance shown in photo at right). In photo above, Department monitors Mary Lynne Johnson, left, and Ann Genovese are shown checking a drag cloth for ticks as part of the piroplasmosis control program at the quarantine facility at the horse park. Also shown is Classic Touch of Germany, who won the gold medal in the show jumping competition in the 1992 Barcelona Summer Olympics and is an alternate in this summer's games. (Market Bulletin Staff Photos)
Okra has been a staple in Southern diets for generations, but now people everywhere are finding out what they've been missing.
For years, okra has been a main ingredient at picnics, family reunions and dinners at home. Whether mixed in a gumbo, served with tomatoes, or fried, okra is a great-tasting Southern specialty.
Okra contains many of the nutrients essential to good health. It's a good source of fiber, vitamin C, calcium and potassium. A 1/2 cup serving contains 31 calories.
Okra is available in Georgia from June to November, making it the perfect vegetable for summer or fall meals. Georgia's okra production is concentrat ed in the southern part of the state. Georgia offers an ideal climate for grow ing okra with its consistently warm and humid conditions.
A Buyer's Guide to Okra Okra is the immature seed pod of the okra plant. Look for pods that are tender; tips should bend with very slight pres sure. Pods should be under 4 1/2 inches long, bright green and free from blemish es and decay. Fresh okra bruises easily, so handle with care. If refrigerated, okra will keep for up to ten days. To enjoy okra year-round, try

Ways to Save Water Good Yields Shown by No-Tilling Vegetable Crops
In Your Landscape
Water use typically increases in the . summer months, and with rainfall scarce
in many parts of the state this year, it is important to use this valuable resource wisely. Following are some suggestions that will allow you to water your land scape conservatively.
* Water only when it is necessary. Wait for signs of stress on your lawn and shrubs before watering. When stressed due to lack of water, lawns will turn a dull bluish green, and the new growth on shrubs will wilt.
* Mulch your plants to conserve water. Three to five inches of mulch material such as pine straw, leaves or pine bark will help to retain soil moisture. Fine-textured mulches, such as mini-bark nuggets, will trap moisture in the soil bet ter than coarsely-textured materials.
* Water at night to conserve water. If you water during the hot, summer days, you will lose much of your water due to evaporation. Try to water between 9 p.m. and 9 a.m.

Vegetable growers using no-till tech niques cain get crop yields as high as those who plow their fields, according to University of Georgia researcher Scott NeSmith, a horticulturist with the Georgia Experiment Station in Griffin.
"For most vegetable farmers in north Georgia, uncertainty about the effects of no-till on yields and weed control has outweighed the soil conservation bene fits," NeSmith said.
Results of his study on summer squash and snap beans, however, may encourage growers to reconsider no-till practices.
NeSmith's research shows that the two crops produce equally high yields with both no-till and traditional cultivation.
He said this kind of work historically has been done with com and soybeans. "The same volume of research has not been done for vegetable crops," he said.
Because many vegetable farms in north Georgia are on steep slopes of mountainous land, soil erosion is a partic ular concern.
No-till has proven benefits for soil and water conservation. "It keeps the soil sur face covered and prevents erosion and
ran-off," NeSmith said. However, some of the problems, such
as adequate weed control, haven't been solved yet. Few herbicides are approved for vegetable crops, and most growers rely on tilling to control weeds. NeSmith hand-weeded his test plots.
NeSmith said he is still looking for the ideal cover crop for vegetables ~ possi bly a perennial or a fast-growing fall crop that frost would kill but would keep the soil covered through the winter.
The study didn't consider the potential problems of soil compaction with no-till, or of insect pressures that might be increased by winter cover crops.

LIMA BEAN CASSEROLE
2
cups water
4
cups fresh, shelled baby lima beans
4
slices bacon
2
tablespoons all-purpose flour
3
tablespoons brown sugar
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 1/2 teaspoons dry mustard
1 1/2 tablespoons lemon juice
1/2 cup breadcrumbs
2
tablespoons butter, melted
1/2 cup (2 ounces) shredded Cheddar cheese
Bring water to a boil in medium saucepan. Add lima beans; return to a boil. Reduce heat, and simmer until tender (about 20 minutes); drain reserving 1 cup liquid. Place lima beans in a lightly-greased 8-inch square baking dish; set aside. Cook bacon in large skillet until crisp, remove bacon, reserving 2 table spoons drippings in skillet. Crumble bacon and set aside.
Preheat oven to 350 degrees. Heat bacon drippings in skillet; add flour, stir ring until smooth. Cook 1 minute, stirring constantly. Gradually add reserved bean liquid; cook over medium heat, stirring constantly, until mixture is thick ened. Stir in brown sugar and next four ingredients. Pour sauce over beans. Combine breadcrumbs and butter; sprinkle over top.
Bake for 25 minutes; sprinkle with cheese. Bake 5 more minutes or until cheese melts. Sprinkle crumbled bacon over top. Yields 6 servings.

Following is the first offour "What Is " columns highlighting plants chosen as 1996 Gold Medal Winners by the Georgia Plant Selections Committee. This commit tee, composed of green industry profes sionals and university faculty, identifies superior but underused plants and pro motes their production, sale and use. Plants designated as Gold Medal Winners are those that: adapt well to Georgia's varied soils and climates, have unique seasonal interest, are easy to maintain, are fairly free of natural pests, are durable, and are easy for producers to propagate. The 1996 Winners are Purple Wave Petunia, Hummingbird Clethra, wild indigo, andfour superior crape myr tles (Lipan, Sioux, Tonto and Yuma).
Purple Wave is a new petunia hybrid that is really unique. Not only is it the most vigorous petunia on the market, but it also is the lowest-growing and fartherest-spreading petunia on the market. Purple wave is tolerant of heat and is loaded with flowers. According to Dr. Paul Thomas, a horticulturist specializing in floriculture with the University of Georgia Extension Service, the plant has so many flowers that many folks take a second look to see if it is real. In addition to its heat tolerance, Purple Wave rebounds quickly after long rainy spells.
A royal, rose-purple flowering annu al, Purple Wave's velvet flowers last a long time. As it adds new blossoms, the entire area becomes a carpet of color.
Like most petunias, Purple Wave requires full sun to be at its best. In shady areas the petunia grows more slowly and has fewer blooms, but it survives nicely.
Purple Wave requires a good bit of space. For instance, a single, well-grown plant can cover four square feet by sum mer's end.
The plant also requires a steady source of fertilizer. Unlike most bedding plants. Purple Wave grows fast the entire summer, therefore using up nitrogen quickly. For best results, Dr. Thomas rec ommends using 10-10-10 at planting and following with a liquid fertilizer at rec ommended rates every two weeks. "Really soak the bed when you liquidfeed," notes Thomas. "Granular fertilizer applied when the plant is in full bloom will damage most of the blossoms."

Sutherland Named to Egg Hall of Fame
James Eugene Sutherland of Forest Park recently was named to the Georgia Egg Commission's Egg Hall of Fame. The announcement honoring Sutherland came during the annual meeting of the Georgia Egg Association held in Young Harris, Ga.
Sutherland has been a part of Georgia's egg industry since he was 12 years old, working with his father. During the 50 years which followed, he has led his company-- Sutherland's Foodservice -- to annual sales of over $50 million and a spot on the top 100 list of Atlanta's pri vate companies.
Sutherland has served on the board of the Georgia Egg Commission since 1975 and as its vice-chairman since 1979. He's past president and current director of the Georgia Egg Association, has served as senior vice-president of the Georgia Poultry Foundation, and is director and
past president of the Georgia Poultry Federation. He was chairman of National Egg Company (today's Southern U.E.P.), and chaired the Georgia Poultry Improvement Association's board.
He's past president of the Atlanta Produce Dealers Association; was a member of the State Veterinary Advisory Board; and serves on the State Board of Industry and Trade. He is a board mem ber and past board chairman of the Georgia Agribusiness Council, and since 1985 has been the chairman of the Agricultural Exposition Authority, which developed and operates the multi-million dollar fair and exposition in Perry, Ga.
The Georgia Egg Commission pre sents the Egg Hall of Fame Award every three years. The award recognizes a per son who has worked to further Georgia's egg industry.
Farmers Should Protect Themselves From Sun
Farmers and gardeners should take a lesson from lifeguards. No, not a swim ming lesson. A lesson in skin care.
Outdoor workers don't usually pay as much attention to skin care products as con stantly oiled sunbathers do. But they should.
More than 700,000 new cases of skin cancer are diagnosed each year, with another 300,000 cases going undiagnosed.
Many of those could have been pre vented with proper skin care and precau tions, according to Gail Hanula, a project coordinator for a cancer education pro gram with the University of Georgia Cooperative Extension Service.
"For every 100 people who die from skin cancer in the general population, 130 to 180 agricultural workers die from skin cancer," Hanula said.
"They obviously are a high-risk group," she added. "Yet they often have less health insurance and less coverage for preventive care."
The main cause of skin cancers in Georgia is overexposure to the sun. So skin protection is an important defense. The body's natural defense against ultra violet rays is a pigment in the skin called melanin.
"Some people have more melanin than others," Hanula said. "The melanin in light brown or tanned skin provides only as much defense as a sunscreen with a sun protection factor (SPF) of 4. The melanin in dark black skin provides as much as SPF 10."
With the summer sun beating down on farm workers, gardeners, athletes and beachcombers alike, Hanula has some simple ways to protect yourself from the sun:
* Stay out of the sun, if you can, dur ing peak hours from 10:30 a.m. to 3 p.m.
* Wear protective clothing. A woven hat with a three-inch brim all the way around, long-sleeve shirts, pants and sun glasses will help.
"I know it's hot outside," she said, "but a white, 100 percent cotton, longsleeve shirt reflects the sun's rays. The shirt also will allow ventilation."
* Wear sunscreen. If you must be out in the sun, wear a sunscreen with an SPF of 15 or higher. Apply it about 30 min utes before you go out. Pay special atten tion to the ears, nose and lips. Apply it regularly.
"You have three choices of sun screen," Hanula said. "Sports sunscreen is designed to take the sting out of sweat ing and wearing sunscreen. `Waterproof provides 80 minutes of protection while sweating or swimming before you need to reapply. And `water-resistant' pro
vides 40 minutes of protection while sweating or swimming."
* Don't work on a tan, eitherTn the sun or in tanning parlors. Short bursts of exposure or burning are linked to malig nant melanomas.
* Anytime you handle pesticides or dangerous chemicals, wear protective equipment and clothes.
"Examine your skin regularly," Hanula said. "Notice any change in skin condition. If you see something peculiar, call your doctor immediately."
A research project called Georgia's Harvesting Healthy Habitats is helping experts learn more about skin cancer among farmers.
It is carried out by the Georgia Department of Human Resources, in cooperation with the UGA Health Communication Center in the Department of Speech Communication.

One-Shot Pond Fertilizer Now Available in Georgia
A new slow-release product this year enables Georgians to apply fertilizer to their pond once for the whole growing season.
According to George Lewis, an aqua culture and fisheries specialist with the University of Georgia Extension Service, the new product is good, but tells people they need to remember it's still just fertil izer. "Alone, it won't do everything a pond needs," he said.
The product is made by Scotts and sold in Georgia only through Gold Kist outlets.
"The only difference between this product and other pond fertilizers is that this is slow-release," Lewis said. "It won't work if a pond needs liming."
Pond owners can carry a water sample to their county extension office to see if the pond needs lime.
The product, Lewis said, won't work in ponds with a lot of water flowing through them, either. "For a pond that normally overflows during the summer, this product isn't a good idea," he said.
This product is recommended for those who like to keep their pond wellmanaged and fertile, but don't like the trouble of fertilizing it.
With its 10-50-0 analysis and slowrelease formula, pond owners can fertil ize their pond once and forget it until next year. A fertilizing platform is not needed. Just suspend the product in the water as the label directs.

Tips Given on Dealing With Orphaned Animals
During the spring and summer, people often find deer, rabbits, birds and other young animals which appear helpless and abandoned. More often, these young ani mals are separated from their parents temporarily, according to the Georgia Department of Natural Resources, Wildlife Resources Division, which urges those who find these young animals to leave them alone -- for their welfare and your own.
Rabbits, for instance, feed their young only two or three times a day and will not return to the nest if humans are nearby. If a nest of young rabbits is accidentally dis turbed, put the grass and fur covering back and leave the area. A rabbit will not aban don young because of human scent if they have been handled briefly and returned to the nest. If you think the rabbit is not caring for her young, cross two twigs over the nest; if they have been moved when you check the nest in 12 to 24 hours, you know the mother has returned. A young rabbit the size of a softball, with bright and alert eyes and its ears standing well, has already left its nest and does not need to be rescued.
A fawn discovered lying in the grass usually has been hidden there by a doe, its mother, for protection. The fawn's primary defense is to remain hidden and motion less. A doe will often leave a fawn hidden in high grasses to protect it from predators. She will remain close by, but may visit only briefly to nurse, thus keeping her scent away from the area.
If you find a fawn, it's best to leave it alone. Leave the area as quickly as possible and do not return to check on the young animal. Human scent may attract dogs, foxes or coyotes to the area. A doe will return for her fawn for up to three days. In most cases, the scent of humans on the fawn will not cause the doe to abandon it.
In rare cases, a fawn may be found near a dead doe and truly orphaned. If this occurs, contact the nearest. Game Management Office.
Other animals often mistaken as orphans include fledgling birds. Fledgling birds often leave the nest before they are able to fly or obtain food as well as an adult bird. These young birds will be fed by their parents until they gain the strength and skills needed to obtain food for themselves. At this stage, they may appear helpless and vulnerable. In fact, they are actually going through a natural learning phase and are being assisted by their parents.
For more information on dealing with orphaned or injured animals, write to the Wildlife Resources Division, 2070 U.S. Highway 278, S.E., Social Circle, Ga. 30279 or call (770) 918-6416.
