Q: I have decided to save time by getting a pre-cooked turkey with dressing from my local grocery store's deli for the holidays. Do you have any suggestions for handling it safely?
A: A pre-cooked turkey with dressing must be handled carefully to prevent growth of bacteria that can cause food-borne illness. The best approach, according to home economists with the U.S. Department of Agriculture (USDA), is to pick it up the day you plan to eat it, since it may develop a "warmed over" taste when reheated. If you cannot serve it right away, cool both turkey and dressing down quickly to below 40 degrees F. in the refrigerator. If the dressing is stuffed inside the bird, remove it and place it in a shallow container. The meat must be removed from the carcass of the bird in order for it to cool quickly. After this is done, wrap the meat in small packages. The turkey may be kept refrigerated for three to four days, and the dressing and gravy for one to two days.
To reheat, place the meat in a preheated oven at 325-350 degrees F. and cook 10 minutes for each pound of turkey, so that it reaches a temperature of 160 degrees F. Bring the leftover gravy to a rolling boil before serving.
Never leave stuffing inside a cooked turkey, whether bought or homemade, since the cavity of the bird keeps the stuffing warm enough to promote bacterial growth.

Production of cotton, one of Georgia's major row crops, is expected to total 350,000 bales, up two percent from last year's crop. Harvested acres, projected at 340,000, are up 31 percent from 1989. Yields, projected at 494
pounds of lint per acre, are up from the previous estimate, but are well below the 631 pound average yield produced last year.

Utilize Safety Precautions When Cutting or Handling Firewood

Cutting, splitting and stacking firewood can lead either to the satisfaction of a well-laid fire or the pain and frustration of a lingering injury, depending upon the quality of your preparations, techniques
and equipment. Before embarking on a search for
wood, from tree-felling to bringing in the kindling, make sure you are relaxed and limber. Wear warm clothing that will not restrict your movements or get caught in your equipment. Gradually bend and stretch to warm up your muscles.
Protective equipment is a must and includes a minimum of hard
hat, goggles, work boots and gloves. Shin guards and ear plugs are recommended for heavy or loud conditions. A well-stocked first-aid kit
also should be kept close at hand. Avoid distractions, and don't try
to do too much. If you have children helping you, make sure you can adequately supervise them.
Chain saws can be especially dangerous. If you are a novice, read the instruction manual thoroughly. You
may want to ask a more experienced friend to take you on a "dry run" before setting off on your own.
When starting a chain saw, place
it on level ground at least 10 feet

from the gas can. Hold the saw down by placing one foot on the rear handlebar while holding the front handlebar with one hand, then pull up on the starting grip. Let chain saws cool off before refilling.
Hold the saw firmly with both hands. Don't overreach or cut above shoulder height.
When sectioning logs, don't stand directly behind the saw. Position
yourself to be away from the direction the log is likely to roll.
To avoid kickbacks when cutting limbs from a downed tree, make sure the log is secured, and work on the safest side, usually uphill. Work away from the fall of cut limbs; never stand on top of them.
All woodcutting tools, including chain saws, should be kept sharp. Dull edges require more labor and create hazards. Some signs of a dull chain saw include wood chips becoming smaller, more force required to make the saw bite into the wood, more smoke due to increased fric-

tion, and more trouble keeping the
saw cutting straight. Before starting, you can sharpen
the cutters on a chain saw yourself by using the proper file and file guide and following the instructions in your owner's manual. Or you can take the saw to your dealer if you have any doubts.
The blade of a bow saw is relatively inexpensive and can be replaced when it gets dull. Axes can be sharpened with a file or an ax stone lubricated with light oil.
When splitting logs with an ax or splitting maul, proceed as if you were cutting a pie. Heavy logs are best split with a sledgehammer and
steel wedge. Never use the ax as a wedge or its blunt side as a hammer. Not only is this dangerous, it
will also ruin the ax. Never rely on brute force to over-
come problems. If a log will not split readily, there is a good reason for it.
Perhaps the wood is too green to split or your wedge is buried in a
knot. When you are tired and frus-
trated, and the wood just will not
cooperate, accidents are likely to occur. Now is the time to step back and consider your options, rather
than pressing blindly on.

November Crop Report Shows Drought Damage
The November Crop Report shows Georgia's 1990 soybean production significantly below the October forecast, according to the Georgia Agricultural Statistics Service. As soybean harvest advanced, damage from this year's drought became more apparent. Peanut, cotton and tobacco production, however, are forecast above last month, while corn remains unchanged.
Soybean production is now expected to total 10.4 million bushels, a drop of 16 percent from last month. Compared with last year, production would be almost twothirds less than 1989. Yield is expected to average 13 bushels per acre, two bushels below last month's expected yield and exactly one-half the yield of 1989. This would be the lowest yield since 1980.
Soybean prospects are so poor in some areas that more fields are expected to be abandoned. Harvested acres are now forecast at 800,000 acres, 30,000 less than last month and 300,000 acres less than last year.
Peanut production is estimated at 1.29 billion pounds, 30 percent below last year, but up three percent from last month. The increase is attributed to a three percent rise in harvested acres to 760,000. Planted acreage is revised to 780,000 acres, based on the ASCS total farm acreage report. This is a 13 percent increase from last year's planted acreage. Abandonment, at 20,000 acres, is the highest since 1965. Yield per harvested acre is unchanged from last month at 1,700 pounds, the lowest yield since 1966.
Xeriscaping Workshop Scheduled December 5
"Xeriscaping: Landscaping for Water Efficiency" is the subject of a Dec. 5 conference at the Sheraton Century Center Hotel in Atlanta. The event is sponsored by the University of Georgia Extension Service in DeKalb and Cobb counties, in cooperation with the Georgia Water Wise Council, Inc.

TURKEY APPLE SALAD WITH CURRY DRESSING
2 cups diced apples g 2 cups cubed turkey or chicken (cooked) g 1 cup chopped celery 1 cup chopped pecans g 3/4 cup raisins 2 tablespoons minced Vidalia onion g 1/3 cup whipping cream 2 teaspoons curry powder 1/2 cup salad dressing or mayonnaise 1/2 cup flaked coconut (toasted) lemon or pineapple juice salt pepper lettuce leaves
Sprinkle apples with lemon or pineapple juice to prevent apples from discoloring. Combine turkey and apples. Mix with celery, pecans, raisins and onions. Salt and pepper to taste. Set aside. To prepare curry dressing, combine cream and curry powder. Beat at medium speed using an electric mixer until soft peaks form. Gently mix in mayonnaise or salad dressing. Fold dressing mixture into turkey and apple mixture and chill. Serve over beds of lettuce; sprinkle with toasted coconut. Serves 6.
