people who enjoy the fruits of the land, is stewardship. The soil is not a mine from which we can withdraw tons of food and fiber without replenishment. Wells are not oceans which will never go dry.
Wise use of soil and water, however, results in a continuing renewal of their capabilities. The soil can go on giving forever if it is never depleted. Water will last forever if it is allowed to replace itself in the ground as fast as it is used.
Just through natural processes, soil is being created every minute of every day. In the span of one year, most land in Georgia will create 1-5 tons of soil per acre per year and
maintain a steady production. There are about 6 million acres of
cropland in Georgia. The trouble is, some 4.6 million of those acres are known to be exceeding that rate of formation. This cropland is being steadily drained of its capacity to produce.
We know how to stop this soil
loss. We have the methods and the will. But, it takes money and expert care on the part of everyone who
disturbs the land. There are individuals out there

Marketing Tour Sweet Success For Georgia Vidalia Onions
A recent three-city marketing tour of the Northeast may help make this growing season one of the sweetest for Georgia's Vidalia onion producers.
Commissioner of Agriculture Tommy Irvin and several of the state's Vidalia onion growers and dealers made stops in Boston, Mass., New York, N.Y., and Philadelphia, Pa., to promote Vidalias and other Georgia produce. The group called on Massachusetts Gov. Michael Dukakis and presented New York Mayor Ed Koch with a gift package of Vidalia onions.
"The Vidalia onion name already has gained fame among consumers throughout the nation," said Irvin. "But we wanted to introduce the commodity to other" potential buyers who may not be familiar with its sweet, mild taste. Hopefully, many more consumers will soon have Vidalias available in their local markets. I think all of our Vidalia onion growers will benefit from this trip."
Ralph Cavender of G & R Farms, who had an order for 40,000 pounds of the sweet onion within days at his return, said, "The Georgia Department of Agriculture has shown all of us how important it is to get out and meet those people and market our product."
Another Georgia producer, Bland Farms, has shipped two loads of Vidalias to Boston; and, grower W.J. Grimes will soon be shipping his onions to Boston and New York.

Specialty Food Show Lauds Georgia 'Taste'
To show that Georgia products are "always in good taste," a number of the state's wineries and manufacturers of specialty foods will showcase their goods to potential commercial buyers during a reception at the Georgia Railroad Depot in Atlanta, May 4.
The private tasting, organized by the Georgia Department of Agriculture, is the first major event utilizing the new promotional theme, "Georgia Always in Good Taste." Members of the trade will have the opportunity to see and taste wines, specialty candies and nut items, gourmet cookies, breads and desserts, and unusual conserves, jellies and relishes made with Georgia farm commodities.

"The production of specialty food items makes up a growing segment of our state's agricultural industry," said Georgia Commissioner of Agriculture Tommy Irvin. "These specialty food manufacturers utilize a number of Georgia commodities which not only provide farmers with additional revenue, but strengthen local economies as well."
The first specialty food and wine reception coordinated by the Department was held last March 1988. The event was such a success, it prompted many Georgia specialty firms to participate in the International Fancy Food and Confection Show in Chicago, 111., and resulted in the formation of the Georgia Specialty Food and Wine Association last December.

SHERRIED CHICKEN-WILD RICE CASSEROLE
two 3-pound whole broiler-fryer chickens g 1 cup water 1 cup dry sherry 1 1/2 teaspoons salt 1/2 teaspoon curry powder 1 medium onion, sliced g 1/2 cup sliced celery one 10 1/2-ounce can cream of mushroom soup 1 pound fresh mushrooms 1/4 cup butter or margarine g two 6-ounce packages long-grain & wild rice
with seasonings 1 cup sour cream g
Place chickens in dutch oven; add water, sherry, salt, curry powder, onion and celery. Cover and bring to a boil; reduce heat and simmer for 1 hour. Remove from heat; strain broth. Refrigerate chicken and bfpth at once, without cooling first. When chicken is cool; remove meat from bones; discard skin. Cut meat into bite-size pieces. Rinse mushrooms and pat dry; slice and saute in butter until golden, about 5 minutes, stirring constantly. (Reserve enough whole caps to garnish top of casserole; they may be sauteed along with sliced mushrooms.) Measure chicken broth; use as part of liquid for cooking rice, following directions for firm rice on the package. Combine chicken, mushrooms and rice in a 9x13-inch Pyrex baking dish. Blend sour cream and mushroom soup and toss with chicken-rice mixture. Arrange reserved mushroom caps over top of casserole. Cover; refrigerate overnight if desired. To heat, bake covered at 350 degrees for 1 hour. The casserole may be completely prepared and frozen ahead of time. Yield: 10 servings. Note: It freezes well, but do not cook before freezing.

Helping 'Back Other
Dear Editor:
Camp Horizons International Inc. is a non-profit youth organization, which is developing a 20-acre ranch to benefit children at risk. These are inner-city children exposed to drugs, alcohol, broken families, crime and other problems related to socio-economic deprivation.
Our mission is to provide an alternative for these children. Our program provides hands-on outdoor education and recreation in a setting with farm animals, gardens, trails and streams. We aim to help the children develop positive social and educational skills that will make them productive citizens and leaders.
We need help in this effort. We are appealing to farmers to contribute livestock, tools and other equipment to help us run the ranch. All donations are tax deductible. We need child-safe horses, rabbits, ducks and other small animals, grain and feed, hay, tack and lumber.

A recent "We Get Letters" inclusion from the Georgia Organic Growers Association (GOGA) indicated that readers could write the group for a reference list of farmers who have organic produce. This list is not yet available, but GOGA is compiling a state-wide list of farmers who are growing produce or raising livestock that meets one or more of the following categories: totally organic; transitional (leading to organic); and, partially organic (using no pesticides, herbicides, hormones, etc.), but using synthetic fertilizers and/or transitional, integrated pest management or feeds that are partially or transitionally organic.

Eagle Watcher
The Georgia Department of Natural Resources has begun a state-wide eagle watch to locate eagles and protect their nests. Eagle watchers can help Georgia bald eagles and golden eagles by participating in the program.
A general description of eagles seen, including color, any markings or color difference in the head, wing and tail feather areas, size, flight profile, the time of the sighting and the vicinity in which the bird was seen are part of the volunteer job, and include information needed by DNR biologists.
Sightings and suspected nests should be reported to DNR's Nongame Wildlife Program by calling Terry Johnson at 912-994-2439, 404-656-0772, or any office of the DNR's Game and Fish Division.
Everyone reporting a sighting will be given a "DNR Eagle Watcher" decal for their vehicle. Biologists will use the information received to monitor the birds and insure that nests are protected.

Subscription Rates

Consumer Protection Division Monitors Frozen Food Products
In the wind-swept snowbanks of Northern Labrador in 1912, a young American naturalist named Clarence Birdseye discovered the advantages of frozen food when he observed the local Eskimos catching large supplies of fish and quickfreezing some of them in the subzero weather to store for future use. Birdseye also noticed that when the frozen fish was defrosted and cooked, the taste and texture were virtually the same as fresh fish.
The naturalist spent the next 10 years experimenting with fish and other types of food that could be frozen and sold directly to consumers. With the marketing of his first frozen peas in 1930, the frozen food industry was born.
In 1988, more than 7 billion pounds of frozen foods ~ valued at $14 billion -- were purchased in the U.S. and those figures are increasing steadily. Not only have the volume and variety of frozen foods increased dramatically, so have the quality and convenience.
Today's consumers can choose from among over 1,500 products, and have come to expect wholesomeness, good taste, ease of preparation and portion-control.
Sales of frozen prepared vegetables were up to 10.8 percent in 1988; and sales for microwaveable frozen foods rose 31.2 percent. With 3 out of 4 households in the U.S. now using microwave ovens, frozen vegetables and microwaves are a marriage made in consumer heaven. Today's two-income households, or singles, do not have time for elaborate meal preparation. The average time spent preparing the evening meal is 30 minutes. Singleserving packages are an asset to families with small children or other "particular" eaters. Older Americans are also interested in ease of preparation, portion control, wholesomeness and safety.
Frozen vegetables score high on all these counts. Vegetables for canning or freezing are grown particularly for that purpose. Processing plants are usually located in vegetable production areas so that produce can be processed fresh. A frozen vegetable entree is very likely to be more nutritious and tasty than the "fresh" vegetables a consumer buys
and leaves in the refrigerator a few days before serving.
Georgia has a major frozen food processing center located in the heart of the state's vegetable growing area, near Montezuma. Inspectors from the Georgia Department of Agriculture's Consumer Protection Division make sure that products coming out of this plant meet consumer expectations for food safety, quality and consistency. In
addition to the normal areas of inspection, such as employee hygiene and cleanliness of equipment,
the inspectors make sure that all produce is thoroughly washed before being processed.
Most frozen vegetables are given
a quick blanching to suspend enzyme activity that could affect freshness and taste during storage. Mechanical cutters and sorters ensure sanitation and uniform qual-
ity. In the final process, the vegetables are quickly frozen in special low-temperature chambers. Department inspectors make sure that storage areas are cold enough (-10 degrees F.) and that stocks are rotated properly. Packages are weighed and labels checked for full
and accurate declarations. All this should prove reassuring
to health-conscious consumers.
Some vegetables, such as broccoli and cauliflower, cannot be canned; but are readily available in plain or fancy combinations frozen. Vegetables with butter and cheese sauces are also hard to process in cans, but lend themselves easily to frozen, microwavable products.
Consumers are still ultimately responsible for their own diets, and reading labels for calories, cholesterol -and fat content is not as easy as it may seem. However, the trends toward increased vegetable consumption, quality and portion control and clearer label declarations are all steps in the right direction.
"Just as in other segments of our agricultural economy, Georgia's vegetable producers and processors have a well-deserved reputation for consistently high-quality products. Consumers can rest assured that
our department will continue to remain responsive to their needs," said Commissioner of Agriculture Tommy Irvin.

Tractor Operators Should Use Safety
Tractors are for work, not play. Almost everyone has fond summer childhood memories of them and their cousins, or buddies, piling on the tractor for a ride to the nearest pond for a cool dip, or a special fishing trip. But the fact is, there is only one seat for one person: the operator. Many people most often youngsters are seriously injured and killed in falls while riding tractors. Few serious mishaps are easier to prevent.
Keep children and non-workers off of and away from farm machinery. Do not offer rides or give in to a child's plea to ride along. Make "no riders" your policy. A tractor is not a suitable place to baby sit, whether parked or cranked. Supervise children.
Tractors can be noisy, so make sure no one has climbed aboard the tractor or trailing equipment without your knowledge. See that everyone is out of the way before moving.
Make it clear that young tractor operators cannot let friends or siblings ride along. They should not allow another to drive without your permission, either. Also, try to arrange for safe transportation for workers rather than allowing them to ride on equipment.
When training a new operator if you must ride along to supervise or instruct choose the safest place possible to stand or sit and hang on tight. Make sure they know where the starter switch and brakes are before you drive off.
Resistant Plants A Good-Sense Buy
When you go to your favorite nursery or seed store to buy transplants of tomatoes and peppers, be aware that there are not only differences in variety, but differences in quality.
Always look for healthy plants free of insects and disease. Also check the label for the letters "F, N, V, A" or "S". That is the code for resistance to Fusarium, nematodes, Verticillium, Alternaria or Stemphylium. Tomato plants will often be labeled "VFN", for example.
Georgia gardeners should look especially for "F" and "N", since Fusarium and nematodes are the most common problems with tomatoes. The labels indicate resistance, not a guarantee that these problems won't crop up. Under heavy infestation pressure, for instance, plants may be affected.
In addition always check with your local Extension office for information on plant varieties which are suitable for your area.
