Beefalo Excels In Performance

animal that produces a vigorous calf, small at birth, but fast-grow ing. Beefalo also browse as well as graze and are very efficient at con verting roughage to grain. A test conducted by Texas A & M Univer sity indicated that Beefalo perform as well on a higher roughage ration as other beef breeds performed on a more concentrated ration.
Due to the bison heritage, the feed lot or finishing period for Beefalo is much shorter than for straight bovine breeds. The animals have a small stomach and a smaller but dense bone structure. This re sults in a higher percentage of hoof to rail weight and a much greater cutability weight.
The traits of fertility, calving ease, efficient conversion of forage to gain and excellent health are essential to produce profit in any phase of a beef cattle operation. The shorter finishing period and effi cient use of a high roughage ration also provides a definite advantage to the feed lot.
The most important asset of the Beefalo breed is the end product -- lean red meat. Properly finished Beefalo cattle produce an excellent meat that is tender, tasty and lean. The breed produces a carcass which is both low in fat and cholesterol.

Christmas Tree Production Continues to Expand in Ga.
Within the last 30 years, Geor gia's Christmas tree industry has grown from a part-time enterprise for a few individuals to a viable industry with over 500 growers.
The state's production has in creased in recent years as some farmers have turned to the enter prise as an alternative to tradi tional crops. Others have entered the business as means of support after retirement from other careers.
According to Ken Bailey, district forester with the Georgia Forestry Commission in Stone Mountain, the number of producers has been in creasing at the rate of 20 percent, or about 30 growers per year.
Georgia is suited for Christmas tree production due to its long grow ing season and favorable climate, but only a few species are produced on a large commercial scale. Vir ginia pine is the most widely grown species, comprising about 75-80 per cent of total production. White pine and Eastern red cedar make up most of the balance with some spruce and fir being grown in the northern-most counties of the state.
Consumer demand for trees in the state has remained at about 800,000, which has been a standard for the last few years, according to Dr. David Moorhead, Extension for est regeneration specialist in Tifton.
Georgia growers sold about 340,000 trees last year with approximately 100,000 shipped out of state.
This year the state has some 7000 acres planted with about seven million trees in the ground at varying stages of maturity. Growers are expected to have around 600,000 trees available for harvest. However, Moorhead noted that greater production does not neces sarily mean a big harvest or that a large number of trees will be sold.

According to a survey made ear lier this year by the Georgia Coop erative Extension Service, the state only has approximately 350,000 trees of marketable quality. Based on planting records, only about 50 percent of trees planted are sold and only 25-50 percent actually are mar ketable.
"Probably the biggest problem among growers is that their expec tations have exceeded their whole sale market," noted Moorhead. He explained that a very uniform tree is needed for the wholesale trade and many of the trees will not reach

Among the southern states, Georgia ranks second in Christmas tree production (North Carolina ranks first), but other states may soon match this production. This year, Georgia growers are expected to sell about 350,000 trees, valued at approximately $5.5 million.

International Trade Focus of Ag Seminar
A seminar on international trade and policy will be held at the Mar riott Marquis Hotel in Atlanta No vember 21. The meeting will focus on the need for the United States to recapture its agricultural markets in world trade.
The Honorable Kika de la Garza, chairman of the U.S. House of Rep resentatives' Committee on Agricul ture, will be the featured speaker at the luncheon. Dr. Leo Mayer, asso ciate administrator of the U.S. De partment of Agriculture's Foreign Agriculture Services, will be the keynote speaker at the afternoon session. Discussions will be directed toward trade issues in the South eastern United States, particularly Georgia.
The seminar will begin with a luncheon at 12:15 p.m. with the program continuing until 3:30 p.m.

Cooking School Promotes Georgia Farm Products
The annual holiday ideas program, sponsored by the Rockdale County Extension Service, will be held Nov. 6, 7:30 p.m., at the Edwards Middle School Auditorium in Conyers. Billed as a Ce lebrity Cooking School, the event is designed to promote Georgia agricultural prod ucts and to serve as a fundraising project for the Rockdale County 4-H Club.

APPLE BUTTER CAKE 1/2 cup buttery 1 cup sugar 3 eggsg 1 1/2 cups apple butter, reserve Vi cupg 2 1/2 cups all-purpose flour 3 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/ teaspoon nutmeg 1 cup sour milkg Seven Minute Icing
In a mixing bowl, cream butter and sugar. Add eggs one at a time, beating until light and fluffy. Stir in 1 cup apple butter. Sift together flour, baking powder, baking soda and spices; add alternately with sour milk to apple butter mixture.
Pour batter into 2 greased and floured 9-inch round baking pans. Bake at 350 for 30-35 minutes. Cool 10 minutes, remove from pans and cool thoroughly. Spread one layer with V4 cup apple butter; top with 1 cup Seven Minute Icing. Cover with second layer; frost top and sides with remaining Seven Minute Icing, swirl remaining Vi cup apple butter on top.
SEVEN-MINUTE ICING 2 unbeaten egg whites g 1% cups granulated sugar % teaspoon cream of tartar % cup of cold water 1 teaspoon vanilla
In the top of a double boiler, combine all ingredients, except vanilla. Place pan over boiling water and beat constantly until frosting forms stiff peaks (about 7 minutes). Remove from boiling water; add vanilla and beat another 2 minutes. Frosts tops and sides of two 8- or 9-inch layers.

Stuffed Pork Chops With "Pockets " 8 pork chops, 1- to 1%-inches thick, cut with pockets g 1 medium apple, diced g 2 teaspoons lemon juice 2 cups soft bread crumbs 1 teaspoon salt 1 teaspoon celery seed 1/4 teaspoon monosodium glutamate 1/8 teaspoon pepper 1/4 cup butter or margarine 1/2 cup onion, chopped 1/4 cup apple cider 2 teaspoons fat
Combine diced apple, lemon juice, bread crumbs, salt, celery seed, monosodium glutamate and pepper. Set aside.
Saute onion in butter. Combine with apple mixture. Toss lightly with 1/4 cup apple cider (use only enough to barely moisten bread). Fill pockets of each chop with stuffing.
Heat 2 teaspoons fat in a large skillet. Add stuffed chops and brown on both sides. Remove chops to a large, shallow baking dish; cover with aluminum foil. Bake at 350 for 1 hour, or until pork is tender and thoroughly cooked.
Just to be sure of "doneness," cut a slit near the bone no pink color should be visible.

If your family is looking for an exciting weekend excursion, consider taking a ride on the New Georgia Railroad steam train. The turn-of-the-century passenger train is headed by Engine number 750, one of the last of the steam driven locomotives that streaked across this country from 1830 through the 1950's. The steam engine, which belongs to the Atlanta Chapter of the National Railway Historical Society, is leased to the State of Georgia for the New Georgia Railroad.
Each Saturday, from now through December, the train will make a run to Stone Mountain Village (Nov. 8 and Dec. 20) or an 18 mile loop through Atlanta. For more information on tickets and other rides, contact the Georgia Building Authority at 656-0768.

Instead of using pebbles to help drainage in flowerpots, try utilizing small pieces of styrofoam, such as those used as packing material for shipping. Just place a handful in the bottom of the pot. The styro foam does not decay and because it is very light, you will have not to worry about adding extra weight to pots you intend to hang from the ceiling.
Rescue your tomatoes before the first frost. Gather up all your toma toes, whatever their size, and let them continue ripening on windowsills, counters or tables. Or, you can wipe the fruit clean, wrap each in newspaper, pack in a cardboard box and store in a warm area. Check for ripening daily and re move fruit that begins to feel soft.
Some folks simply uproot the en tire tomato vine just before frost. After shaking the excess soil from the roots, they hang the plant up side indoors and utilize tomatoes as they ripen.
An athlete's water bottle (a plas tic bottle with a bent straw) is great for watering hard-to-reach hanging baskets.

Plant Pansies Now for Spring
Although pansies usually are considered spring bedding plants, they can be planted in the fall garden in preparation for spring blooms. Pansies may look delicate, but the plants actually are quite hardy. Only occasionally are they injured by extreme winter tempera tures and even then, they usually bounce back from surviving crowns
in the spring. Fall planting allows pansies to become estab lished early for an even better show the follow ing spring. In ad dition, plant ex perts maintain plants will be twice as large and
produce more flowers. But you need to get your plants in the ground now so they will become well rooted before heavy frosts begin.
Pansies are an excellent choice for planters, window boxes, low bor ders and mass plantings. Usually a sunny location will provide the most abundant flowers, but plants that are shaded by the spring foli age of deciduous trees may bloom longer. Pansies do prefer welldrained soil which is moist and fertile. Plants usually are set six to
12 inches apart. Be sure to keep plants watered
during dry periods. Incorporate a
general purpose fertilizer in the soil at planting (8-8-8 or 10-10-10 at a rate of one level teaspoon per square foot of bed) and again in the spring. Do not use excessive amounts of nitrogen which can cause plants to produce soft foliage and to rot easily.
Most pansies are not heat toler ant and few will withstand high summer temperatures. The plants usually are removed in late spring or early summer and replaced with summer annuals.

Workshop Features Use of Ag Chemicals
The 1986 Farm Chemicals Work shop is scheduled Nov. 11-12 at the Ramada Inn-West in Macon. While the workshop is geared toward chemical dealers, distributors, in dustry representatives and Exten sion agents, farmers and others in terested in chemical pesticides are welcome to attend.

Christmas Tree Production Continues to Expand in Ga.

the number one or premium grade demanded by buyers. "Georgia growers are just getting to the point where they can produce a large quantity of uniform trees," he added.
At present about 47 percent of the state's producers are located within a 50-75 mile radius of metro Atlanta. Most of these small farms are cut-your-own operations. Ac cording to Moorhead, these farms usually are not able to grow and deliver the number one or premium quality trees in the quantity needed by wholesale buyers. However, some small-scale producers do sell moderate quantities wholesale to civic organizations and other
groups. The larger tree plantations, some
100 acres or more, are located in the south and southwestern portion of the state and supply about 80 per cent of the wholesale trade.
With an increase in production, both statewide and nationally, there is a potential glut of Christ mas trees on the market this year, said H.E. Ruark, president of the Georgia Christmas Tree Associa tion. This should help weed out inferior trees leaving consumers with a good selection of quality trees to choose from. "Quality trees always seem to sell,"noted Ruark.
With growers now making money available for research, Moorhead said genetic improvement of seed sources is one of the first priorities toward better quality trees. And recently, the Georgia Christmas Tree Association started an educa tional effort to make its growers
more aware of the grading system and standards used to designate a quality tree.
The desire to improve tree qual ity also was one of the reasons for the creation of the North Georgia Christmas Tree Growers Coopera-, tive, according to its president, Roy Gandy. The organization currently is working with the Georgia For estry Commission to determine the characteristics needed to improve tree quality. Gandy said the Co-op also was established to help small growers, many of whom are north of Macon, take advantage of quantity purchase prices.
Moorhead noted that from a pur chasing standpoint, a south Georgia co-op is not needed. He explained that most of the south Georgia Christmas tree farms are part of large farming operations which al ready purchase their supplies in
bulk quantities. The North Georgia Co-op actually
was started as the result of a letter by Gandy published in the Market Bulletin nearly two years ago. "Twelve growers got together for our first meeting," Gandy said. "Now we've grown to over 90 mem bers." Gandy also stressed his orga nization is willing to share its ex pertise and knowledge with other growers and potential producers.
Although north Georgia pro ducers grow largely Virginia pine, the area shows promise for the production of other species. "In the northern quarter of our state, par ticularly hi the mountains, a greater number of species can be grown," noted Turner S. Davis, re
tired horticulturist from the Geor gia Experiment Station in Griffin. It was Davis' research on the Vir ginia pine that lead to its commer cial introduction and the subse quent growth of Georgia's Christ mas tree industry. Among the other species being produced in north
Georgia are Norway spruce, white spruce and fraser fir. "Research over the last 26 years has shown that many of the species, which are normally thought of as imported or northern trees, can be grown suc cessfully in our northern counties,"
Davis said. To compete effectively with trees
imported into the state, Moorhead said more study is needed of the consumer market in Georgia. "We need to know how many people are actually using real trees," he said. The specialist added that growers also need to be more aware of consumer preferences in terms of tree species.
"A lot of folks just don't realize the time, effort and money needed to grow a marketable tree," said Bailey. Moorhead also noted that Christmas tree production requires a fairly large capital outlay of $1000 to $1500 per acre per year for four to five years before first har
vest. Moorhead said he knew of grow
ers who planted Virginia pine sev eral years ago and sat back expect ing to harvest a crop with no effort. But without proper cultural prac tices, Virginia pine are not suitable for sale as Christmas trees. Since the tree is not desirable for pulpwood or saw wood, some growers
had no choice but to abandon their crop.
"There's been quite a lot of inter est in Christmas tree production in recent years," Moorehead noted, "but it's not something you can get into and get a quick return."
This Norway spruce, on the farm of Tom and Martha Scissom in Union County, is one of the spe cies of Christmas trees being grown in northern Georgia. Al though other species, such as fra ser fir and Eastern hemlock, are being grown successfully in a few areas, about 75 percent of the Christmas trees produced in the state are Virginia pine.
