the conversion system that moves agricultural commodities to the consumer while adding value. The conversion system is the bridge known as the food industry.
Within the food industry are a variety of market segments that handle the various commodities. Through this conversion system or bridge, the consumer is provided numerous food products. Basic items such as milk, hamburger, bacon, eggs, fresh, frozen or canned fruits and vegetables and bakery products are processed by many different means to provide wholesome consumer products.
Today's modern eating styles, patterns and needs are constantly changing. Many consumers graze. They eat throughout the day. Consumers desire variety, convenience and healthy foods. To meet these changing needs, the food industry is dependent upon new technology.
Food science is the technical arm of the food industry devoted to research, technology development and education. Extension food science, as part of The University of Georgia's food science division and a department within the Cooperative Extension Service, is striving to strengthen the food industry bridge.

Georgia Eligible for Drought Aid

Last week, the United States Department of Agriculture (USDA) declared all of Georgia an agricultural disaster area due to the severe impact of drought conditions on the state's crops and livestock. This announcement came after Governor Joe Frank Harris filed a request for this designation on July 21.
"There is no doubt that this disaster designation is justified. It will provide some needed assistance to our farmers that they otherwise would not have been eligible for," said Commissioner of Agriculture Tommy Irvin. "The federal government now needs to move quickly in implementing this assistance."
Details regarding the federal drought assistance programs had not been released at press time. But the disaster designation should allow
Conference Designed
For Small Businesses
The Governor's Regional conference on Small and Minority Businesses will be held at the Hyatt Regency Savannah Hotel on August 26. Scheduled from 1 to 7 p.m., the theme of the conference is "State Government and Minority Businesses."
The conference will feature Governor Harris as the keynote luncheon speaker, along with forums led by state government officials. Those attending will have the opportunity to participate in forums to discuss issues relevant to economic development, resources available through Georgia's Small Business Develoment Centers, liability insurance rules and regulations, unemployment compensation and claims and other topics of interest and concern to small and minority businesses. Commissioner of Agriculture Tommy Irvin will conduct a session on the state's agribusiness industry including state and federal support and educational programs on alternate farm products and opportunities.
All local small and minority business representatives are invited to attend the conference. Registration is $25 which includes a luncheon, reception and all conference materials. The announcement of Georgia's disaster designation came just after
the U.S. House of Representatives unanimously passed a bill requiring that government grain be donated to areas suffering a critical shortage of livestock feed. In addition, the bill provides for direct commodity grant payments to producers hurt by the drought.
"I could not be more pleased with the House action and the members should be commended," noted Irvin. "They have passed virtually every recommendation I outlined to Secretary Richard Lyng and members of Georgia's congressional delegation as being critical to our survival."
Irvin added, "The House legislation is a step in the right direction. Now we must work to get it passed through the U.S. Senate and signed into law by the President."
Farmers are urged to stay in touch with their local ASCS offices as details of federal drought assistance programs are released.

Proper Management Techniques Key to Successful Irrigation

Before 1950, irrigated farm land was a rarity in Georgia. By the 1970's, encouraging commodity prices, as well as a devastating drought in 1977, resulted in a rapid expansion of irrigation throughout the state. By 1982, irrigated land had increased to almost 600,000 acres.
However, since that time rising costs and depressed crop prices have led to a leveling off of irrigation. Most of the increase in irrigated acreage in recent years has been for fruit and vegetable crops.
Although irrigation has improved yields and enabled many farmers to survive, producers can make better use of their irrigation systems, accor-

ding to irrigation specialists. The key is good management.
According to Dr. Jim Hook, soilplant-water specialist at the Coastal Plain Experiment Station in Tifton, most problems occur because of improper scheduling of water applications and the inefficiency of irrigation systems. "Usually, the tendency is to under-irrigate," noted Hook. "Farmers often irrigate only when they see the crop needs water. By that time the plants already have undergone stress and yield has been affected."
Farmers often think of irrigation only as a way to water a crop if it does not rain. But Dr. Doyle Smittle, professor of horticulture at the Coastal Plain Station, said just the opposite is true. "Farmers need to look'at irrigation from this stand point," he explained. "If it rains, then we (farmers) don't have to irrigate as much."

many potential sales. Remember, nothing is ever sold until someone gives you
the money and takes the item away. My husband learned his lesson about that a few years ago when he advertised a front end loader. One of the first persons to call said he would take it and asked my husband to hold it for him. The man sounded so believable and insistent that my husband promised to hold it.
We received calls from about a dozen potential buyers, but my husband told them the loader was already sold. We soon realized how foolish this was. Needless to say, the man never showed up. Finally, my husband was able to sell

COCONUT CHEESE PIE 1 1/2 teaspoons butter, softened B 2 2/3 cups coconut 2/3 cup sugar 3 tablespoons lemon juice 4 eggs 8 1 package (8 ounce) cream cheese
Spread butter evenly over bottom and sides of a 9-i.nch pie pan. Press 1 1/2 cups coconut into butter, forming a shell. Place 1 cup coconut, sugar, lemon juice, eggs and cheese in blender or food processor. Blend until smooth, about 1 1/2 minutes. Pour into coconut shell. Sprinkle remaining coconut in a ring around top and in center. Bake at 325 for 30 minutes. (If coconut on top browns quickly, cover with a circle of aluminum foil). Serve warm or cool; refrigerate leftover pie.

SEAFOOD CASSEROLE 3/4 cup raw rice, cooked 1 can (6 ounce) crabmeat, drained 1 can (4 1/4 ounce) shrimp, drained 1 cup chopped celery 1/2 cup chopped onion g 1/2 cup chopped green pepper 1 jar (4 ounce) pimiento g 1 cup grated Cheddar cheese 1/4 cup mayonnaise 1 tablespoon lemon juice 1/2 teaspoon Worcestershire sauce 1/2 teaspoon salt dash black pepper 1/2 can cream of mushroom soup 1 cup crushed rich, round crackers 2 tablespoons butter, melted g
Combine all ingredients except cracker crumbs and melted butter. Place in a baking dish; top with cracker crumbs mixed with butter. Bake at 350 for 25-30 minutes or until bubbly. Serves 6-8.

Garden
Prune back okra plants to stimulate late season growth. Remove all overripe pods from the plant and branches that look close to breaking off. Cut back the main stalk to about four feet about the ground. Leave several midsection branches on the plant. Water well and you should be able to enjoy okra from your garden until frost.
Rust is a fungus which often attacks beans during the late growing season. The problem can be identified by tiny yellow specks which appear on the leaves. Left untreated, the specks turn into reddish brown blisters. To control this disease, apply a recommended fungicide when the yellow specks first appear and before blisters erupt. Next year, plan to rotate your crop and select a bean variety which is resistent to this disease.
An eggplant is ready for harvest when it reaches six to eight inches in length, five to six inches around and develops a shiny appearance. Do not allow the outer covering to become dull and streaked before you harvest or you may end up with a pithy, overripened vegetable.

For Goat Research Center
Georgians will have the opportunity to tour one of the state's newest research facilities, August 21, when Fort Valley State College (FVSC) hosts an open house at its Goat Research Center.

I would like to grow asparagus in my garden. When is the best time to plant it and what is the best variety for north Georgia?
Asparagus can be planted from November through about the mid dle of March. This plant likes cold winters, so it will do better in the northern part of the state than in extreme southern areas. Mary Washington is the recommended variety for all of Georgia, since it is resistant to rust.

Proper Management Techniques Key to Successful Irrigation

Hook noted that although rainfall cuts down on the need for irrigation, it does make scheduling more difficult. The best way to ensure ade-
quate water is to continue a planned irrigation schedule, regardless of the weather forecast. If it happens to rain, the irrigation system can be turned off.
Sometimes a farmer may reduce irrigation for economic reasons. "If
you decide to arbitrarily cut back on irrigation, you can affect your crop even though it is not readily visible," noted Hook. "If you reduce the
water by one inch at the time of emergence, the plants will not emerge well and all the money you have put into the crop at that point could be wasted."
Smittle added that the blooming stage was the most critical watering stage for vegetable crops. In one of his experiments involving irrigation of snap beans, yield was reduced 75 percent when he skipped irrigation for one day during the blooming period.
In arid regions such as the southwestern U.S., where farmers know they are not going to get rain, they use pre-plant irrigation to build up moisture in the soil before planting. The idea is to have enough water available in the soil for the plant to use when needed.
"A plant can suffer and lose yield even if plenty of water is applied at the first and last of the growing season," noted Hook. "What a crop needs is water available everyday during the growing season."
A plant will use water freely until it reaches its limit, which is determined by the type of plant and such

factors as the weather, temperature and humidity. According to Hook, as the limit is reached, meaning water is becoming difficult for the plant to obtain, the plant begins to shut itself down as a means of protection. An obvious example is the twisting of leaves on a stalk of corn. Although water may be applied at this stage and for the remainder of the growing season, the plant already has undergone stress and yield will be affected.

Sometimes a farmer may irrigate his crop but still not achieve maximum yields because of the inefficiency of water distribution. Hook said proper maintenance of irrigation systems is important. "One of the first places to target for efficiency is the pump," he noted. As equipment becomes older, pumps often operate at a lower pressure than when first installed, thus causing uneven water distribution along the pipeline.
Another way farmers can make better use of their systems is to utilize soil measuring devices, such as tensiometers, to help them determine when to irrigate. Another popular device is the evaporation pan. Smittle pointed out that this method provides more ease of operation for most vegetable producers. "For vegetable production, a farmer's measurement criteria for his irrigation schedule should be simple," he said., "He will be better off establishing his market and planning his next crop than spending a lot of time taking tensiometer reading and having to average the results."
