Promote Industry
In 1983, Georgia checked off 27.69 percent more hogs than in 1982. During the first five months of 1984 Georgia had checked off 13.41 percent more hogs than during the same
period in 1983. These checkoff funds have certainly been put to work to benefit the pork industry.
Eighty percent of checkoff funds are invested in pork promotion and research (68.4
percent promotion and 12.4 percent research); 6.6 percent is used for membership, checkoff and communications; 11.4 percent goes for

administration, which includes producer board, committee, and task force meetings, staff and physical resources; 1.2 percent is spent for government relations.
These percentages reflect budgets established and approved by producers. Approximately 60 percent of checkoff funds are retained by NPPC, 20 percent is provided to the National Livestock and Meat Board,, and approximately 20 percent is returned to the state of origin.
The NPPC (National Pork Producers Council] also has a long range plan which was authorized and approved by pork producer members and leaders. The mission of this plan is to enhance the producers' opportunity for profit. This plan helps guide the promotional, research, educational and legislative programs of the Council toward benefiting pork- producers to the greatest degree.
Winning battles in Washington, B.C., such as the nitrite issue, was not easy. But producers put up a valiant fight to save our industry from devastating financial losses. Winning the nitrite issue saved the industry billions of dollars.
If you count all past and future checkoff funding, this victory alone

An eight member Chinese delegation evaluating prospective joint ventures and technology transfers with Georgia corporations, recently met with state business and governmental leaders including Commissioner of Agriculture Tommy Irvin. The Chinese dignitaries, led by Chairman Zhao Fan, Chairman, China State Farms Agribusiness Corporation, were in the U.S. to establish cooperative relationships for agricultural functions and associated responsibilities.

Reminded to Vote
Peanut farmers in Districts I and III should have received ballots in the mail by December 31, 1984, to nominate producers for posts on the Georgia Agricultural Commodity Commission for Peanuts.
In each district, the list of nominees must be narrowed from two to three, after which ex-officio members of the Commodity Commission will appoint one for each district to serve a three year term.
Comissioner of Agriculture Tommy Irvin urges peanut farmers to vote for the candidate of their choice before the January 29 deadline.
Three candidates were nominated earlier in each district.
In District I, the candidates are Fletcher Thompson of Blakely, Bill Hatcher of Baconton and incumbent Luther Spooner of Donalsonville. District I consists of nine counties: Baker, Calhoun, Decatur, Dougherty, Early, Grady, Miller, Mitchell and Seminole.
In District III, the candidates are J.C. Wilkes of Lyons, Jimmy Blitch of Statesboro and incumbent M.L. Miller of Brooklet. The district consists of 23 counties: Appling, Bacon,

I purchased some basil for use in a recipe several weeks ago. I do not use this recipe very often, so I would like to know some others uses for this herb.
Basil, also known as the "herb of love," has a variety of uses, both for
main dishes and salads. It is most often used in recipes which contain tomatoes, such as spaghetti and pizza sauce, and may be used with or instead of oregano. Basil may be sprinkled over a tossed salad to enhance the flavor of oil and vinegar dressing. You also can sprinkle a few basil leaves over apples and bake to give them a different taste. Also, check egg, cheese, poultry, veal and vegetable recipes in various recipe books. Many
contain basil in their ingredients. ***

BUTTER PECAN CHEESECAKE 1/3 cup butter, melted g 1 1/2 cups graham cracker crumbs 1/3 cup sugar 1/2 cup chopped pecans g 3 (8 ounce) packages cream cheese, softened g 1 1/2 cups sugar 3 eggs g 2 cups sour cream g 1 teaspoon vanilla flavoring 1/2 teaspoon butter flavoring 1 cup chopped pecans g
Mix first four ingredients together (reserve some for garnish) and press on bottom of springform pan. Beat cream cheese and sugar together; add eggs, beating well after each one. Add sour cream and flavorings; stir in pecans. Pour into springform pan (9") and bake at 475 for 10 minutes; reduce oven temperature to 300 and bake 50 minutes. When done, open oven door, turn off oven and let sit for 1 hour before chilling. Garnish with toasted pecans and crumbs from the crust.

CABBAGE CASSEROLE
1/2 pound ground beef g 1 medium onion, chopped g 6 cups shredded cabbage g 1 can tomato soup 1/2 can water salt and pepper to taste
Slightly brown ground beef and onion. Drain well. Spread three cups of cabbage in bottom of an ungreased 2 quart casserole dish. Spread meat on top of cabbage. Top with remaining cabbage. Combine soup and water, spoon over casserole. Salt and pepper to taste. Bake at 350 for one hour. Yield: 6-8 servings.

Camellias do not require heavy fer tilizer applications. As a general rule, apply one level tablespoon of special camellia fertilizer (or substitute 8-8-8 or 10-10-10) per foot of plant height in March, May and July. Water the fertilizer into the soil to increase distribution. You will not need to remove the mulch before ap plying fertilizer if adequate water is applied.
The shrubs do not need a great deal of pruning since most of them have a relatively compact growth habit. When plants are young, you should pinch out the tips of vigorous ly growing shoots to stimulate bran ching.
Camellias have their share of disease and insect problems in cluding root rot, flower blight, scale, mites and aphids. Your county Ex tension agent can provide informa tion on controlling these problems.
Camellia enthusiasts should plan a visit to the headquarters of the American Camellia Society located in Fort Valley, Georgia. From November through April (depending on weather conditions) you can view

To reduce fishy aroma when frying,
seafood, rub the fish with a little mayonnaise before coating with meal or flour. If you do have a fishy aroma left in the house after cooking fish, boil a pan of water to which you have added two teaspoons of cinnamon until the fishy smell is gone. Use the pan you've cooked the fish in and it will also be odor-free.
Keep a squeeze bottle filled with club soda handy to remove grease build-up from car windshields.
Staple plastic berry baskets to the pantry wall or inside the cabinet door to hold small packages of sauce mixes, seasonings, etc.
Many homemakers seal homemade jelly with a cover of melted paraffin. Parrafin will be easier to remove if you pour only a small amount first, lay a clean string across the glass, and then add the rest of the wax. The ends of the string will make handy handles for removing the wax.

In browsing through the MARKET BULLETIN, you may have come across this plant advertised in the herb category. Calamus, also known by such names as sweet flag, myrtle sedge, wild iris and sweet rush, grows throughout the United States in shallow water and along the edges of ponds and slow flowing streams.
The rush-like plant spreads by underground rhizomes and usually is found in large patches.
The plant usually grows no larger than four feet in height and features sword-like leaves which resemble iris foliage from a distance. The calamus flower is a dry, finger-like, green spike, which appears throughout the sum mer.
The unique characteristic of calamus is that every part of the plant has a spicy, aromatic fragrance. It is this pleasant odor that sets the herb apart from others that might resemble it.
Our forefathers are said to have us ed calamus as an old-fashioned room deodorizer. They gathered and spread the rushes on the floors of their homes. When people walked on the leaves and bruised them, they released a pleasing aroma.
The lower stems or rhizones con tinue to be collected, dried in a warm room, cut into fine pieces and used to create sweet smelling drawer sachets. Some folks claim that the herb also will repel moths, as well as, give clothes a pleasing smell.
Calamus is edible. The plant's inner young stalks (with half formed leaves) can be gathered in the spring and used to create unique, tasty salads. The dried root also can be used to make tea or as a substitute for ginger or nutmeg.
Candied calamus root once was a popular confection that originally was perfected by the Shakers. Those who have tried it say that it is a delicious treat when consumed in small quan tities. To make this early American treat, gather calamus by gently pulling the stalks until they break from the root. Remove the undeground portions, wash and peel the stalks and cut into half inch pieces. Boil for half an hour, changing the water frequently to reduce the stalk's strong flavor. Barely cover with a sugar syrup and cook an additional 20 minutes. Place the candy on wax paper and allow to dry a couple of days. Roll in sugar and store the confection in a closed jar.
The Greeks and Romans favored calamus as a medicinal herb. American Indians are said to have utilized it for a variety of digestive related ailments. Some folks continue to use the dried root to make a tea to remedy such ailments as indigestion or heartburn.
Norris Bryans of Newborn is proud of his new arrivals. One of his cows recently gave birth to triplets. While twin calves are relatively common, triplets are a rare occurrence.

January Short Courses Feature Commodities
Short courses on cotton, grain sorghum and watermelons have been planned at the Rural Develop ment Center in Tifton during January.
The cotton short course will be held January 15 from 9 a.m. until 3:25 p.m. The program will include discussions on outlook and marketing strategies for 1985, research updates, boll weevil eradication, benefits of rotation and factors affecting grade-price.
On January 21, a grain sorghum short course is scheduled from 9 a.m. to 3 p.m. Management, diseases, markets and other topics
will be discussed along with a grower, panel discussion.
Watermelon production will be the topic of a short course planned for January 31. The program begins at 9 a.m. and ends at 3:15 p.m. Grower experience, production costs, research updates and a report on the Georgia Watermelon Association will be among the topics of discus sion.

The Georgia Pork Con gress will be held January 16 and 17 at the Heritage House Hotel in Albany. The annual event will feature various educational programs designed for hog producers. Topics will include hog farm business management, managing the productive sow, external parasite con trol, swine housing ventila tion, drug residue monitor ing, economic production practices, feed processing and quality and the growth of the pig. "Lean pork is not high in calories or cholesterol." This is the main theme of pork's television and radio ads. The ads are running in key cities across America. Cable television alone is hitting 132 metro markets, and network radio spots are being broadcast on 1051 stations. 450 million household impressions were made from these ads supported by checkoff funds.
The African swine fever project successfully kept this dreaded disease out of the U. S. We also have developed a "pork value program" to pay producers for lean hogs. These and many more programs express the pride pork producers have in their industry.
Camellias Remain Popular Southern Ornamental
Although native to the Orient, camellias have been a traditional part of the Southern landscape for nearly two centuries. The evergreen is a popular ornamental since its glossy, green foliage provides an ex cellent screen year round. As a bonus, the normal blooming season for camellias may extend from November through April, depending on variety selection and weather conditions.
With proper care, both balled and burlapped and container plants can be set out anytime. But, the shrubs tend to transplant easier during the dormant season (fall through spring). Now is an excellent time to establish them as part of your landscape.
There are hundreds of camellia varieties from which to choose. Since some are hardier than others, consult local nurserymen or Exten sion personnel for variety selections for your specific area. Be sure to choose healthy, well-shaped plants, whatever variety you decide on.
Camellias grow best in areas that are semi-shaded year round. Shrubs established in full sun are less dor mant during warm winter periods and severe temperature drops can
result in severe damage. Consider a planting site beneath tall pines or on the north side of a building.
Camellias require well drained soils high in organic matter. You pro bably will need to incorporate peat moss, pine bark or leaf mold to im prove soil structure.
Although camellias are shallow rooted and do not require a deep planting hole (one to two inches deeper than the root ball is suffi cient), the hole should be at least three feet across. If you are planting a container grown shrub, wash away the outer one inch of soil from the root ball to encourage better root penetration.
Thoroughly mix at least 50 percent (by volume) organic material, such as peat moss, pine, bark, or decompos ed leaves, with backfill soil. After placing the plant in the hole, fill with soil until the top of the root ball is one half inch above the top of the natural soil line. Planting camellias too deeply may result in poor root growth. The top of the container soil or burlap ball should be visible if the shrub has been planted at the proper depth.
Remove air pockets by tamping the soil lightly around the root ball and watering thoroughly.
Adequate moisture is vital in main taining vigirous camellias. Conserve water around the root ball by con structing a small dam two to three in ches high around the plant, two feet out from the stem. Mulching with pine straw or similar materials also will help conserve moisture.
Since camellias have shallow root systems, they are susceptable to drought damage. Be sure and water properly during extreme drought periods and particularly during the first summer after transplanting. While adequate water is important, be careful not to overwater.
