Research Helps
Solve Problems
Agricultural research is generally thought of in terms of benefits to the producer. However, agricultural research ultimately benefits the consumer providing a food delivery system which provides a quality and quantity of food unparalled in the world. Therefore, a public commitment to agricultural research is well justified both in economic terms as well as a security measure for the future. Research demands require that agricultural scientists be aware of future needs and to try to solve problems faced by both producers and consumers in the future.
(Our guest columnist this week is Dr. Charles Laughlin, Resident Director for the Georgia State Experiment Station, University of Georgia College of Agriculture, Experiment, Georgia 30212.)
Although the array of the Nation's food may be measured in terms of quantity and quality, it is to this latter that we must address future efforts. To call for increase in quality of diet through enhancement of foods, demands efforts of many different types of people. Such foods will require maximizing the information at each step and will call for the concerted efforts of plant breeders, entomologists, environmentalists, engineers, processors, economists, nutritionists, consumer specialists, etc., working together as multidisciplinary teams.
The variety and convenience of fruits and vegetables will be greatly enhanced. One needs only to remember 25 years ago to know that there have already been big changes in this direction. The future holds even greater promise. Fruits and vegetables will be available in greater variety of packages and in more convenient sizes.
A greater proportion of fresh fruits and vegetables will be produced at lower costs by utilizing local inputs. Hopefully these efforts will result in a larger number of small or part-time entrepreneurs who will be able to provide the different plant specialties.

More Than Beauty and Shade

Georgia's pecan industry may be considered the "new kid on the block,"

when compared with other orchard crops produced in the state. But since

commercial production began in the late 1800's, the nuts certainly have

made their mark in the state's agricultural economy. Last year, the value of

Georgia's pecan crop totaled $79.6 million, according to the Georgia Crop

Reporting Service.

Should 1983 crop forecasts become a reality, Georgia will maintain its number one position in U.S.

pecan production. This year, the state's farmers are expected to harvest 110 million pounds of pecans, compared with 125 million

pounds in 1982.

The Georgia Department of Agriculture is responsible for checking random samples of pesticides to make sure they contain the ingredients listed on the label. Lab technician Steve Corley analyzes one of the 4,000 samples the pesticide lab receives each year. These tests assure farmers and consumers of the pesticide content and that there is no pesticide residue.

Ag Shortcourses
Planned at RDC
Several short courses have been scheduled at the Rural Development Center in Tifton during the month of December.
A one-day program on sweet potato production will be held December 2, from 9 a.m. to 3:50 p.m. Topics will include insect and disease and weed control, profit and loss potential, marketing and grading, and storage tips for small and large growers.
On December 8, a corn short course will be held from 8:30 a.m. to 3:30 p.m. The program will include discussions on factors affecting corn value, feed value of southeastern corn, corn hybrid performance results, land preparation, nutrient management and herbicides and herbigation.

Dear Editor: Fall brings firewood time. Some wood dealers quote
prices on a pickup load which is rather nebulous as a unit of measure. Truck beds vary in size. Also, is it considered a load when the top of the bed is level with wood or slightly concave? The difference can mean several nights worth of wood.
Have the limbs been closely trimmed or have they been left protruding several inches to take up space in the stack? Keep these points in mind when prices are quoted. What can be done that is both fair to both seller and purchaser? If you are a purchaser, consider the following.
Buy on a measure which you and the seller understand and can back with hard facts. Try to purchase your wood on the basis of a standard cord or a fraction thereof. A standard cord is a stack of wood four feet high by eight feet with the individual pieces of wood in the stack being four feet long. Dry or seasoned wood gives more BTU's than green wood. It burns at a faster rate than green wood so use less of it at one time. Green and dry pieces can be mixed to get a slower burning fire after the fire has been established and a bed of coals obtained. Never leave an open fire unattended.

"passion flower" vine, and make baskets, men, and animals using broom sedge straws? In years past, that was one way we had of entertaining ourselves on the farm.
This year, I had maypops growing in my yard. I gathered a bowl of them and took them to my sister in Thomasville. I am sending you a picture of my sister, Mrs. Mary Ingram. Can you imagine two women our age doing these things with maypops? I am sure this should bring back memories of days past for many of your readers.

Do you enjoy sewing? Do you have expert sewing and fitting skills? Can sewing be done for profit? Yes it can. Sewing for profit can be a very successful home business.
Sewing for profit is not limited to constructing garments for family members and friends. In fact it is limited only by your imagination, interest and the resources you wish to devote to it.
Maybe you prefer to make alterations on ready-to-wear garments or on patterns instead of constructing garments for others. Perhaps your interest is in making uniforms, costumes, wedding garments or model garments used in fabric stores.
Producing items used within the home can also be profitable. Draperies, curtains, slip covers, bedspreads and pillows are greatly in demand. Decorative crafts, stuffed toys, designing, quilting and upholstering are other categories that involve sewing skills. New technology in sewing equipment makes it simpler to do tasks like monogramming, sewing on pile fabrics or machine embroidery.
This is the fourth and final article in a four-part series on how to establish and operate a home business.
How do you get customers at the beginning of your business venture? Let fabric stores know you are available to sew for the public. Leave some of your business cards with them. A short advertisement in your local newspaper, distribution of flyers or several well stated radio announcements will probably result in a number of customers.
Successful custom seamstresses rely heavily on repeat customers. "Word of mouth" from satisfied customers can bring new ones to you. Wearing garments you have made is also a way of advertising your seamstress skills.
There is no specified amount of money needed to begin a sewing business in a home environment. Compared to many other home businesses, sewing requires a considerably less financial investment. Generally, your business inventory will include measuring tools, marking devices, shears / scissors, needles, pins, and other sewing aids. Pressing aids, sewing machine, cutting board, irons, ironing board and a comfortable chair are also needed. From the business aspect, don't forget a filing cabinet, record books and business cards.

Country Cured Meats Remain

Favorite Old Fashioned Food

Many folks feel like they are eating "high on the hog" when they enjoy a meal featuring biscuits, grits, red eye gravy and old fashioned, country-cured ham.
Curing meat was a necessity for our forefathers in order to have a summer supply. Today country cured meats remain popular because they provide a delicious reminder of the past.

There are many ways hams can be successfully cured, according to the Extension Service and there are many ingredients that can be used. Years ago, most hams were cured with only salt. Although salt is still the main curing agent today, a combination of salt, sugar, sodium nitrate and sodium nitrite is common.
The Extension service suggests the following curing formula that has been used with success in many ham curing operations: ten pounds of salt (granulated or flaked), one pound of sugar, two ounces of sodium nitrate and one ounce of sodium nitrite.
Salt, as previously mentioned is the primary curing agent. Sugar helps give the meat a more desirable color and keeps the ham from becoming too hard during aging. Sodium nitrate and nitrite help develop the desirable bright red color in the lean portion of the ham. The amount of cure mixture needed depends on the weight of the ham to be cured.
There are a number of commercial ham curing operations scattered throughout the state. In addition,

many people continue to slaughter and cure their own meat for home consumption. However, Federal and State meat inspection regulations prohibit the production and sale of farm slaughtered animals and farm cured meats. Only meat from animals that has passed inspection and has been cured in an approved, inspected establishment may be sold to the public.
While the process can become somewhat involved, it is not difficult to successfully cure your own meat if a few basic principles in curing, salt equalization and aging are closely observed. The booklet, "Curing Georgia Hams Country Style," available through the Georgia Extension Service, provides step-by-step instruction on the curing process.

at the time, until the pile is four to five feet high. Lime also can be sprinkled on your pile to supply needed elements such as calcium and magnesium.
Your compost always should be moist but never soggy. This damp environment encourages the growth of microorganisms that break down organic matter into humus. To keep moisture from running off the pile, make a depression in the middle.
Oxygen also is necessary for decomposition. To increase the oxygen content of your heap, turn it with a pitchfork about once a month, beginning three to four weeks after it is started. Work outside material, which decomposes more slowly, to the inside of the pile for more even decomposition.
A compost pile started in the fall generally is ready for use by late spring or midsummer. You can tell your compost is "done" by running your hands through it. If it feels fluffy and loose, it is ready. In large, well-prepared compost heaps, a drop in temperature to near air temperature also indicates that composting is complete.
If you do not have the time or space to build a compost pile, but have plenty of leaves, you might try this technique. Rake and place your leaves in large plastic bags. Add two or three gallons of water, seal the bags and place them in a shady area. The leaves should be well decomposed by the time warm weather arrives in the spring.

The process may be viewed daily except Sunday and Tuesday at the agricultural heritage center located directly off 1-75. Many folks advertise plants in the MARKET BULLETIN and ship them by mail. A MARKET BULLETIN advertiser from Monticello shared the following plant shipping tips that she has found successful:
* Never put the entire plant in a plastic bag.
* Place plastic bags around the cut ends or roots of the plant. First wrap cut ends of roots in damp material, such as sphagnum moss (or you may use dampened paper, towel or newspaper for short distances). Seal the bag with a rubber band or tape.
* Wrap the entire plant or cutting in a couple of pieces of newspaper then staple or tape the resulting package.
* Line the shipping box with several layers of flat newspaper; place plants inside and use single sheets of crumpled newspaper to fill any gaps to prevent plants from rattling together and becoming damaged.
Now is the time to take a soil test in your garden. A soil test ta"ken in the fall will more accurately indicate soil nutrients that are present. If the soil test indicates a need for lime, apply it in the fall. This will allow time for the soil and lime to react before planting spring vegetables. Contact your County Extension agent for details on taking your own soil sample.

Tiftwhite 78 lupine has been found to be a good source of energy and protein to replace soybean oil meal in cattle diets, according to researchers at the University of Georgia Coastal Plains Experiment Station, Tifton. As a plus, the winter hardy legume also leaves considerable amounts of nitrogen in the soil.
Growing lupine as a feedstuff for cattle is attractive since it gives cattlemen a crop option which is not subject to damaging summer droughts.
Experiments at the Coastal Plains Station also were conducted to access the nutritive value of corn stillage (undehydrated distillers grains and solubles) when incorporated as 10 percent of the dry matter in conventional silage based diets for dairy cows. Cows showed an immediate and persistant preference for diets containing stillage.
In addition, the stillage diet increased the amount of milk produced (2.3 percent) and increased the efficiency of milk produced (5.2 percent). This advantage may be associated with the higher ether extract in the stillage diet.

Workshop Designed Establish a Compost Pile

For Swine Breeders By Utilizing Autumn Leaves

The Master Purebred Swine Breeder Workshop will be held January 5 at the Conference Center on the Georgia Southern campus in Statesboro. Speakers scheduled for this workshop will present practical information on selection and merchandising programs that are critical to the success of seedstock producers.

Dead leaves, flowers, vegetable trimmings and grass clippings may sound like candidates for the garbage can, but gardeners consider such materials treasure. This "trash" can be utilized to make compost which ultimately can be used to enrich soil and improve its structure.
Although composting may sound complicated, it simply is a method of speeding up Mother Nature's process of decomposition. Organic materials are broken down and their components are returned to the soil.

Over 36 percent of Georgia's pecan crop has been gathered, according to the Crop Reporting Service, compared with 61 percent of the crop harvested at this time last year. The crop is about three weeks behind schedule.
Pecans are one of the few crops that don't have to be harvested immediately after they mature; they can lay on the ground awhile and can be mechanically harvested later.
In the past, producers relied primarily on hand labor to gather the crop. Crocker pointed out that now about 90 percent of the large producers depend on mechanical harvesting and cleaning equipment. "Nowadays, about the only time the human hand comes in contact with the nut is when it is graded," he concluded.

Fall is an excellent time to establish a compost heap since there is a plentiful supply of autumn leaves on hand. Other types of organic materials, such as animal manures, grass and shrubbery trimmings, coffee grounds, sawdust and vegetable and fruit peelings also are good compost materials. But, before these materials can be used as a source of organic matter, they first must be broken down by microorganisms in the soil.
If you plan to compost regularly, you might consider constructing a compost bin. Cinder blocks, chicken wire, or other types of fencing can be used or ready-made bins are available. But whether the design you choose is simple or elaborate, make sure that compost can be conveniently added, turned and removed (some gardeners leave one end of their bin open for this purpose). Although your bin can be any size, Extension specialists recommend a bin four to five feet high, four to five feet wide and any convenient length.

USAHA is the largest animal health association in the world and is recognized as the official voice of livestock producers and others in recommending changes to state and animal health regulations.

Research Helps

In order to realize some of these plans, interdisciplinary research efforts are being initiated at the Georgia Station of the Georgia Agricultural Experiment Stations System which will deal with commodities which may be grown in our state and utilized in consumer households. These interdisciplinary teams will be charged with developing production research activities and addressing the utilization of these commodities.
The teams are expected to involve horticulturists, agronomists, engineers, economists, food scientists, and others. Thus, the mission of these particular groups may be said to produce higher quality plant products for the consumer at reasonable costs.
Similar systems for animal products are also being initiated. The Piedmont region of Georgia is suited to the production of animals and forage and, thus, another interdisciplinary team is charged with using a system's approach to maximize the value of animal products.
Ornamental crops enhance the quality of life and the enjoyment of many of our activities. A system for developing and enhancing the varieties and quality of ornamental crops is also being developed.
These multiple efforts, however, cannot be conducted without the conscious efforts of the other part of our agricultural expertise and it is hoped that a new age of agriculturists will be forthcoming who will be willing to utilize these new systems and new products.
