Four-H Guides
Georgia Youth
Three of the most difficult skills that young people need to develop are decision making, goal setting and leadership. Today, teenagers face extreme pressure and tend to make
quick decisions, short-term goals and become followers rather than leaders. The Georgia Four-H Club seeks to provide guidance, counseling and success in learning these vital decision making skills.
Four-H is the largest youth organization in Georgia, boasting over 175,000 members from grades five through 12. Extension offices, which carry out the Four-H program,

are set up in all but two Georgia counties. Four-H agents, with extensive district and state support, have expanded their local programs to include projects from performing arts to computers.
The goal of Four-H is to find an interest for everyone so that young people can seek help in developing their skills for the future. Four-H offers a choice of over 50 projects, each of which includes a free guidebook for developing the project. The Four-H'er must study and create his project to suit his own lifestyle. He soon learns to make quick decisions as daily circumstances change and long-term decisions in regard to a purchase, for example, that may be used for a long time or several months later.
Four-H projects offer opportunities for youth to compete in their project area on a local, county, district, area, state and national level. Competition teaches the Four-H'er to set long-term goals as he learns to prepare projects on an annual basis. In setting goals, Four-H emphasizes striving rather than winning. Since there can be on-

Some say that the first
report of a successful at-
tempt to make sorghum
syrup took place in north
Georgia at the farm of
Richard Peters in 1854.
With technical advice from
Robert Battey of Rome,
Peters decided to produce
the syrup commercially.
In his work with Peters,
Battey conducted various
experiments with sorghum.
Among his discoveries was
that
Georgia-grown
sorghum cane produced a
larger quantity of syrup
than cane produced in
France.
Early speculation in-
dicated that sorghum might
be more beneficial to nor-
thern farmers than
southerners. But, it was
discovered that while juice
yield was always 50 percent
of the cane's total weight,
syrup yield varied 10 to 20
percent depending upon the
latitude in which it was
grown. It just so happened
that existing conditions in
the Georgia piedmont area
produced the highest syrup
yields. There also was
evidence that southern
sorghum produced a higher
quality syrup.
During the Civil War,
sorghum syrup was dubbed
"Confederate syrup." It
served as a staple, replacing
molasses and sugar on many
farms. Sherman's troops
reported large quantities of
the product "at nearly every
plantation" on their
devastating march to the
sea and some even admitted
to developing a liking for it. The naval blockade during
the War, along with impoverished conditions that followed, helped establish a permanent foothold for the sorghum industry in Georgia. Prices for sorghum are reported to have soared to $20 a gallon immediately after the War.
During the late 1880's, many middle and south Georgia farmers attempted to develop the sorghum and sugar cane industry to replace cotton. Sugar cane became the more successful of the two. Acreage tripled from 1870 to 1900 and production eventually surpassed that of Georgia's faithful standby, sorghum.
Today, sorghum syrup often falls into the category with other "old-fashioned, country" foods such as sugar cured ham, red-eye gravy, grits and "cathead" biscuits. Some folks are not exactly sure what it is and tend to confuse sorghum syrup with molasses.
There is a distinct difference between the two. Molasses is the strong residue left when sugar is extracted from sugar cane while sorghum syrup is derived solely from sorghum cane.
North Georgia continues to be the center for the state's sorghum syrup production with Union County boasting the title of sorghum syrup capitol of Georgia.
The last weekend of the Sorghum Syrup Festival in Blairsville is October 22-23.

Leadership is a difficult skill for many youth to develop. Four-H offers many areas in which a young person can learn to exhibit leadership abilities. The club offers a long line of officers, from school clubs to the state level. In addition, each member is required to develop a leadership program within his chosen project area.
Georgia Four-H means learning, decision making goal setting and leadership. This is the club's contribution to the future of the state. In addition, Four-H is the promise of today's youth to become responsible, contributing adults of Georgia's
