Growing Things
Receive Attention
Most humans enjoy and appreciate natural things of the earth. All of us who cultivate plants to coax beauty and usefulness from them are, in a real sense, farmers.
Although most of us Georgians do not cultivate large acreages or raise
animals as an occupation, we are nonetheless interested in our trees, shrubs, lawn grasses, and house and garden plants.
Most people probably think of "agricultural research" in terms of applying science to help the producers of vast tracts of crop plants or herds of cattle.

However, the kinds of knowledge produced by\ Georgia's agricultural research usually benefit all farmers. The benefit often is as important to the backyard farmer as to the large commercial farmer.
Plant diseases and insects sometimes frustrate our best efforts to produce beautiful and useful plants. Research on these problems continually searches for better and safer ways to combat these pests.
Despite our time and patient efforts, weedy lawns are occasionally our end product. If we want to do more than treat our lawn weeds with contempt, Georgia's nationally foremost research on lawn weed control will provide the guidelines.
Low-maintenance shrubs and lawn grasses are increasingly important for those of us who want our half-acre to be beautiful but lack time to snip and prune weekly.
The beauty of Georgia's landscape and the growth of our ornamentals industry are directly related. We have had an enormous expansion of flower and foliage crops production in the last six years. We now have 1200 greenhouse operations with a total of about 10 million square feet

Farm Problems Delay
The official state Christmas tree was found through an ad in the MARKET BULLETIN. The tree, decorated with more than 3,000 crocheted snowflakes, will be on display in the Capitol . rotunda through December 21. The public is invited to visit between 9 am and 9 pm during the week and from 1pm to 6 pm on S aturdays and Sundays.
Feed Stuffs Hearing
A hearing has been scheduled to discuss changes in regulations affecting commercial feed stuffs. Anyone interested is invited to attend the hearing January 13, 1981, in room 201 of the State Agriculture Building, 19 Martin Luther King Jr. Drive, SW, Atlanta.
Farm Survival
New Milk Assessment
Dairy farmers in Georgia have approved a recent referendum to increase the assessment they pay to the Georgia Agricultural Commodity Commission for Milk (ACCM) to a maximum of 1 percent of the Federal Order No. 7 blend
price, at 3.5 percent butterfat for the previous year.
A total of 56 percent of the eligible producers in Georgia voted and passed the referendum by a favor-
able vote of 56 percent. In accordance with the Georgia Agricultural Commodities Promotion Act such a major amendment to the Milk Marketing Order must have a minimum of 25 percent of the producers

voting with an affirmative vote of 66 2/3 percent or 51 percent of the pro-
ducers casting ballots and 51 percent being in favor, or where the total favorable vote represents at least 25 percent of the total produc-
tion. " After certifying the vote, members of the ACCM voted to delay implementing the new assessment, citing current problems facing dairy farmers. The recent critical drought
and current feed prices were primary considerations in the Board's
decision to hold the assessment at the 8 cents per cwt rate for the pre-
sent. Members of the ACCM expressed
their appreciation to the dairymen of Georgia for the favorable vote and said the ACCM will consider raising
the assessment at a later time when hopefully the economy and the financial situation of farmers im-
proves. Since the increase in assessment
has been approved by the State's milk producers, the members of the Agricultural Commodity Commission for Milk can implement the increase, fully or partially, by a majority vote of the Commission. ACCM members pledge to remain attentive to the wishes of their fellow dairy farmers.
Problem Oriented Management in 1981

Agriculture has been caught in the cross currents that are playing havoc with our economy. The manifestations of inflation are too numerous to count and many are so insidious that ' they slip by us. Agriculture is absorbing more than its share of the effects of inflation.
The structure of commercial agriculture is such that added production costs can't be passed through to the consumers in the short run. First, there are too many independent producing units to organize in purchasing input and marketing output. Then, there is strong competition within agricul-
ture. Livestock feeders want low grain prices but grain farmers want high grain prices.
Finally, the longterm nature of production investments lock farmers into production patterns that are difficult to change in the short run.
One signal effect of inflation on agriculture centers on land resource. Demand for land as a hedge against inflation for non-farm uses and as a productive base to maintain a viable business has pushed farm real estate prices higher and higher.
Inflated land prices have
produced more collateral to expand existing loans and for new loans.
However the net result is that the capital required to amortize farm loans based on inflated prices is beyond the productive capacity of the assets financed. Record setting interest rates have compounded the problem.
The adverse growing season experienced in 1980 has created a severe equity erosion problem on many Georgia farms. When equity decreases, financial leverage increases if the level of production is held constant. As leverage increases, the level of risk increases. A highly leveraged farm operation

Dear Editor: I was delighted to read about the "Change in Direc-
tion for Farm Survival" in a recent issue of the MARKET BULLETIN. It seems to me that the farmers could do a lot more to help themselves if they would take a bit more initiative.
With the rising costs of transportation, fertilizers, etc. they would be wise to start trying to market their produce closer to home, and perhaps grow more variety instead of less. They could also stop buying expensive fertilizers and find sources of organic waste and start trench composting their fields and cover cropping so that they would be building up instead of tearing down their soil. They could probably get the organic waste [from restaurants, etc.] FREE.
This country needs to realize that we are dealing with a bigger and better economy based on LIMITED resources and the land is the MOST important of those resources. I would like to see your BULLETIN try to encourage Georgia farmers to start returning to small-scale, close-to-home farming, without chemicals.

rough the MARKET BULLETIN. Some 30 years ago I read where a Mrs. Calvin McCarty had plants for sale in Rupert, Georgia. I ordered some and they were nice so Mrs. McCarty and I kept writing.
They sent me peanuts and pecans from their farm and after Mrs. McCarty passed away, her daughter Mary kept on writing and sending me nuts. Last week I got a note from some of the relatives telling me Mary had passed away. I already miss her regular letters but glad I helped in some small way through the

Baked Caramel Custard Just 121 Calories per serving
2/3 cup non-fat dry
2 cups water
milk powder
3 eggs
1/4 cup sugar
1/2-1 teaspoon vanilla
2 Tablespoons sugar
In small heavy skillet, melt 2 Tablespoons of
sugar over low heat until clear and golden
brown. Pour melted sugar into one quart
casserole and rotate casserole to coat the bot-
tom. In large mixing bowl mix milk powder,
water eggs, sugar and vanilla until thoroughly
blended. Pour into casserole and place casserole
dish in a shallow pan on the oven rack. Pour hot
wdter around casserole one inch deep. Bake at
325 degrees F. one hour and 15 minutes or until
knife inserted off-center comes out clean.
(Custard will be soft). Chill thoroughly. Unmold
to serve. Makes six servings.
Brown Sugar Pound Cake
2 sticks butter or margarine 1/2 cup shortening
1 box dark brown sugar 5 eggs
1 cup milk
3 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
Cream butter, shortening and brown sugar.
Add eggs, beat well. Sift flour, salt and baking
powder. Add alternately with milk to creamed
mixture. Add vanilla and mix well. Pour into a
greased and floured tube pan. Bake in
preheated 350 degree oven for 1 hour and 15
minutes. Cool before removing from pan.
Caramel Icing
1 box light brown sugar 1 sml. can evaporated milk
1/2 stick margarine
Powdered sugar
Bring brown sugar, evaporated milk and mar-
garine to a hard boil. Remove from heat. Beat in
powdered sugar, a small amount at a time til it is
of spreading consistency.

Pecan Drops
2 boxes powdered sugar 1 can coconut
2 cups chopped pecans
1 teaspoon vanilla
1 can sweetened condensed Dash of salt
milk
Mix together with big spoon. (Or grease han-
ds with butter and mix with hands.) Roll in small
balls and chill. Melt 12 oz. package chocolate
morsles with a 4 oz. blocked paraffin in double
boiler. Put toothpick in each ball and dip into
chocolate mixture. After dipping put on wax
paper.
Squeeze Bottle Crispies
2 eggs
2 cups self-rising flour
1 1/2 cups milk
2 cups oil
Powdered sugar
Put eggs, flour and milk in blender container
or mixing bowl. Mix thoroughly. Heat oil to 360
degrees F. Pour batter into a clean squeeze bot-
tle (detergent, catsup, etc.) Squeeze batter into
hot oil making a circle as big as the pan or
several small donut size circles. Brown on both
sides and drain on absorbent paper. Put sugar in
a bag. Add crispies one at a time and shake to
cover. Store in an airtight container or bag. May
be reheated for later use. Good anytime with
milk or coffee.

3-4 tablespoons whipping
12 drop oil of peppermint
cream
or 3/4 teaspoon
Food coloring if desired
peppermint extract
Use hands to blend ingredients until smooth.
Make into small balls and pat flat; cut into
shapes with mint cutters; or use a pastry bag
with no tip to shape. Place a nut on top of each if
desired. Store in the refrigerator. No cooking!

No Bake Fudgies
2 cups sugar
1 cup evaporated milk
1/2 cup margarine
6 oz. package chocolate
3/4 cup sifted flour
morsels
1 cup graham cracker
3/4 cup chopped nuts
crumbs
1 teaspoon vanilla
Combine sugar, milk and margarine. Bring to a
boil stirring constantly. Remove from heat and
add chocolate morsels. Stir until chocolate melts.
Add flour, cracker crumbs, nuts and vanilla. Mix
well. Pour into lightly buttered oblong cake pan.
Cool. Cut into squares. Makes incredibly smooth
fudge candy.

Peanut Orange Balls
1 cup chopped peanuts
1-12 oz. package orange
1 -14 oz. package flaked
slices (diced)
coconut
1 -14 oz. can sweetened
2/3 cup powdered sugar
condensed milk
Combine chopped peanuts, orange slices
(diced) and coconut in large mixing bowl. Add
sweetened condensed milk, mixing well. Shape
in 1 inch balls. Roll in powdered sugar. Makes
about 9 dozen.

Emergency Dressing
When you want some dressing but don't have broth, substitute conned
soup.
3 cups crumbled corn bread 2 slices day-old bread cubed
1/2 cup celery, diced fine 1 tablespoon onion,
1 egg well beaten
diced fine
1/2 cup milk
2 cans soup-chicken and rice.
Salt and pepper to taste
chicken bouillion etc.-
1 teaspoon sage, H desired
undiluted
Mix together in a large mixing bowl. Pour into
a greased baking dish and bake at 350 degrees
about 30 minutes or until browned.
Holiday Strata 6 servings
6 slices white bread
2 cups diced, cooked turkey
1/2 cup chopped celery
or chicken or ham
1/4 cup chopped onion
1/2 cup mayonnaise
3/4 teaspoon salt
Pepper to taste
4 eggs, beaten
1 1/2 cups milk
1 can cream of mushroom
soup
, Cube 2 slices of bread and place in bottom of a
8x8x2 inch baking dish. Combine turkey, celery,
onion, mayonnaise, salt and pepper. Spoon over
bread cubes. Trim crusts from remaining 4 slices
of bread and arrange slices on top of turkey.
Combine eggs and milk and pour over mixture.
Cover and chill. Spoon soup over top of
casserole. Bake at 325 degrees until set, or
about 1 hour. Sprinkle cheese over top for the
last few minutes of baking.

1 package (8 oz.) cream cheese, softened
1 package (8 oz.) cooked ham slices
2 tablespoons minced green onion with tops
Mix together cream cheese and minced onion. Spread mixture evenly on ham slices using approximately 2 tablespoons per slice. Roll slices; cover and chill 2 hours. Cut each slice into 6 pieces

6 eggs
1/2 cup white corn syrup

1 quart vanilla ice cream 1 quart ginger ale, chilled
Nutmeg
In a blender container or medium mixing
bowl, blend eggs, corn syrup, ginger, cloves, cin-
namon, until spices have dissolved. Pour into
punch bowl over orange juice, lemon juice and
vanilla ice cream. Pour ginger ale over nog mix-
ture. Sprinkle with nutmeg.

Chewy "Noels" 2 dozen cookies
2 tablespoons butter or 1 cup packed brown sugar
margarine
1 cup chopped nuts
1/3 cup all-purpose flour 1/8 teaspoon baking soda
1/8 teaspoon salt
3 eggs, beaten
1 teaspoon vanilla
Powdered sugar
In a 9x9x2-inch baking pan, melt butter or
margarine. Stir together brown sugar, nuts,
flour, soda and salt; stir in eggs and vanilla.
Carefully pour over butter in pan; do not stir.
Bake at 350 dgrees for 20-25 minutes. Sift
powdered sugar over top. Place waxed paper
under wire rack; immediately invert pan onto
rack. Cool. Dust again with powdered sugar. Cut
into bars. Write "Noel" on each bar with green
or red decorator icing; if desired.

Cranberry Swirl Coffee Cake
1 stick butter or margarine 1 cup sugar
2 eggs
1/2 teaspoon salt
1 teaspoon baking powder 1 teaspoon baking soda
1 teaspoon vanilla or
2 cups all purpose flour
almond extract
1 pint sour cream
*7 ounces - 1/2 can wholel/2 cup chopped nuts
cranberry sauce
Grease and flour 9 inch tube pan. Preheat oven to 350 degrees F. Cream butter and sugar. Add eggs, salt, baking powder, baking soda, and
flavoring. Add flour and sour cream alternately. Mix well. Put layer of batter in tube pan. Spoon 1/2 the cranberries on top. Add remaining batter. Top with remaining cranberries and sprinkle
with nuts. Bake at 350 degrees F for 55 minutes or until cake tests done. Allow to partially cool before removing from pan. Cool completely and
top with your favorite confectioners sugar glaze if desired.
*Apple pie filling or blueberry filling could be
substituted for cranberries.

What can farm managers do to ease the pressures created by these and other equally serious problems? There are no complete solutions that fit all situations, but there are some basic management principles that can be applied to improve the
manager's odds for success. 1. The general price outlook is
much brighter for 1981, but price outlook for enterprises that fit your resources best should be analyzed. A cost-return analysis should be made on each enterprise that fits into an efficient total production program on your farm. Crop and livestock enterprise budgets are available from your county Extension agent.
2. Analyze each asset under your management. If you discover idle assets, put them to work or dispose of them and shift the capital to productive assets. For instance, if you're renting marginal land, drop it and shift inputs to the productive land or other enterprises that don't require much land.
3. Identify and plug every economic leak in your business. For starters the leaks may be;
idle borrowed capital feeding inefficient livestock excessive machinery repairs resulting from poor maintenance and reckless operation. untrained and unsupervised labor that's doing more to you than for you. chronically non-productive enterprises maintained by
tradition. not using soil samples and feed analysis services provided through your county Extension agent.

Control methods for termites are not effective against the beetles. If you haven't already, it would be a good idea to get a second or third opinion -- and estimates -- from other pest co*nt*ro*l *companies.
4. Maintain a flexible management position. Watch high risk ventures, especially those that involve highly specialized investments. Consider joint investments. Investigate leasing of high cost equipment to improve your balance sheet position for the short run. Double crop land where practical. Look for off-farm, income-producing opportunities that do not cripple the management efficiency of your business.
5. Concentrate on sldllful pur chasing of needed inputs and marketing of output. Advanced planning can lead to better input buys. Marketing strategy should be incorporated in your product plans.

Don't Neglect Safety
At Christmastime
Christmas can be the most dang-
erous time of the year, a time when
people often neglect safety precau-
tions. The "overloaded electrical
circuit" is the most common danger.
Many residential blazes during the
Christmas season also have been
caused by the mis-use of temporary
extension cords.
Inspect extension and other cords
on holiday decorations before using
them. Look especially for loose
connections or frayed or exposed
wire.
Only use extension cords app-
roved by a recognized testing labor-
atory, making sure to select the
correct cord for the job. If multiple
lights are used, rely on a heavy duty
extension cord; if you plan to use
outdoor lighting, make certain the
extension cord is labelled "for out-
door use."
Make sure each plug is inserted
fully into the outlet, with no prongs
exposed; poor prong contact at an
outlet can cause the plug to become
overheated and a shock hazard.
Do not coil or bunch an extension
cord while it is in use, or place it
under a carpet or rug. Place exten-
sion cords along the floor boards so
they do not overheat and will be out
of general traffic paths to prevent
tripping.
Overloading a single wall socket
with any sort of multi-plug device is
dangerous.
Keep small children away from all
electric outlets. Curious children
often push metal objects such as
paper clips, tacks and nails into out-
lets. Proper inexpensive child-proof
outlet covers can prevent serious
tragedy.

Peanut Princess
Contest Planned
Peanut Princess is underway. Contestants must be a high school graduate or high school senior and at least 17 years of age before February 2, 1981 but no more than 22 years of age. She must also be the daugh-
ter of a Georgia peanut farmer or peanut allotment owner.
Deadline for entries in the competition is January 7. For application forms contact your local county Extension office, Farm Bureau office,-or Pageant Coordinator Emory Murphy, Georgia Peanut Commission, Box 967, Tifton 31794. The contest is scheduled for January 24 at the Rural Development Center

Set Aside a Few Acres
When a mysterious plant with no purpose appears to grow without soil and water, it is only natural that superstitions and stories about its origin and purpose develop. Such was the case with mistletoe, a parasitic plant which grows high in the tops of deciduous trees.
The Scandinavians claimed that mistletoe was a symbol of hate with powers so strong that it could overcome any goodness. In one of those "turn-of-events" common to mythology, though, the god of love decreed that it was a good plant and that anyone passing under it should receive a kiss.
The Druids took mistletoe very seriously going through a series of religious rites to collect it with a "golden sickle". It was considered the main ingredient in their fertility celebration of the marriage ceremony.
Folks obviously liked the "kissing custom" best since it is the one which has prevailed. In the South, part of many family traditions include hunting mistletoe and shooting it down. The best marksman had the privilege of hanging the mistletoe and selecting who will be kissed.
Farmers believed that mistletoe would protect their cattle from disease and hang boughs of the berry on the barn door.
Mistletoe berries are poisonous although birds appear to be immune to the poisonous ingredient. If you hang mistletoe in your home, hang it high so children won't be tempted to taste the intriguing berries.
To Save Georgia's Wildlife
Blue Acres For Wildlife Habitat Plot Signs are showing up in increasing numbers throughout our State. Whenever a landowner displays one of these signs he is participating in, and expressing his personal committment to, the preservation of Georgia's wild animal and plant communities.
Thermostat Problem
Prompts Big Recall
The federal government has announced a nationwide recall to repair more than 600,000 liquid pro pane gas water heaters which authorities allege have been responsible for 23 explosions between 1968 and 1980.
Safety experts say that the explosions were triggered when the pilot gas control knob of the thermostat became damaged, jamming the safety valve in the "open position".
The thermostat was manufactured by the White-Rodgers Division of Emerson Electric Company.
The water heaters involved were sold between 1961 and 1980 to predominently rural and suburban home owners by the A. O. Smith Corporation of Kankakee, Illinois; Sears Roebuck & Co., of Chicago; as well as a number of other manufacturers and retailers. A total of 56 different brand names of water heaters are covered by the recall.
Safety alert notices to an estimated 15 million U.S. homes are being mailed by White-Rodgers with a description of the faulty unit, information about how to have it replaced, and a toll free hot line (800) 825-9589, for further questions.
Georgians have enrolled 229 plots totalling about 150,000 acres in the Acres For Wildlife Program. These landowners are managing their lands for such widely diverse species as quail, deer, songbirds, rabbits, squirrel, waterfowl, mourning dove, turkey, beaver,
possum, raccoon, fox, and wild flowers.
Participants, called Cover Agents, locate privately-owned tracts of
wildlife habitat as small as an acre in size and pursuade landowners or tenants to protect it from any practice detrimental to the wildlife or flowers on their property.
Landowners can act as their own Cover Agents. A landowner can set aside a plot of land for wildlife, or can enter into an intensive management effort if he so desires.
Wildlife biologists check the management potential of each plot and advise landowners what is feasible. If desired, detailed management plans will be drawn up. Property owners, however, are under no obligation to carry out such plans.
Cover Agents receive distinctive shoulder patches and certificates. Landowners are provided with a limited number of Acres For Wildlife Habitat Plot Signs and periodic mailings of wildlife-related booklets.
A colorful and informative Acres For Wildlife slide presentation will be given by a wildlife biologist to your club or civic organization upon request.

Crop Reporting
Six students from the Georgia College of Agriculture have been selected for membership in the AGHON society, one of the University's most prestigious organizations. Only about 15 students collectively from the schools of agriculture, forestry and veterinary medicine are chosen annually from an en rollment of about 3,000 candidates.
Considered the college's most selective honorary organization, members are judged on leadership as well as scholarship, with recommendations for membership made by a special combined faculty-student committee.
The latest inductees include [standing, 1-r] Scott Wallace, Hampton; Randall Morris, Uvalda; Glenn Smith, Nicholson and Sam Hill, Winterville; and [seated, I-r] David Thomas, Thomasville and Drew Harvey, Athens.
Head Retires
Frasier T. Galloway, Statistician in Charge of the Georgia Crop Reporting Service, will retire January 10, 1981. Mr. Galloway has worked with agricultural statistics for more than 30 years and has counted Georgia crops at the Athens USDA office since 1970.
Mr. Galloway is also the recipient of the "Administrator's Special Merit Award for Equal Employment Opportunity." This award is presented to those who make significant accomplishments in promoting and fostering equal opportunity.

Selects New Leader
Fred W. Greer, Jr., vice president of the C&S National Bank, is the new president of the Georgia Agribusiness Council. The GAG is a non-profit, statewide membership organization which promotes and represents the business sector of agriculture.
As president Mr. Greer succeeds A. B. Carlan of Desoto. Other
officers elected were: Hugh Craig, Jepeway-Craig Commission Company, Dublin, and Preston M. Coilins, Southern Bell, Atlanta, vice presidents; John T.
