OQ consumer line... Threat of Exotic Swine Disease

Consider the
Possibilities
Earlier this month I met in Washington with the Senate and House Agriculture Committees as well as with several of our Georgia poultry leaders.
One of the problems which was discussed was the need for a turkey
> processing facility in Georgia. As the leading poultry producing state, it seems incongruous that our Georgia produced turkeys must be hauled several hundred miles to be processed.
With the cost of transportation increasing steadily, the need for a turkey processing facility in Georgia grows more economically advantageous. Other leading broiler and egg producing states, such as California, Arkansas and North Carolina also have tremendous turkey industries, supported by the accessibility of processing plants to finish their birds. A processing facility in Georgia could finish turkeys from other states such as Florida and Alabama where no processing facility is available.
Despite the lack of a processing plant in Georgia, turkey production in our state has more than doubled in five years. In 1975 we produced 1,216,000 birds. In 1980 the projected total is 2,451,000.
The demand for turkey is also on the rise. Consumers are more aware of the nutritional advantages of turkey meat and are including it regularly in their diet.
In Georgia where poultry has established its value, where feed facilities are set up to cater to the poultry industry, where climate has proven desirable for raising birds, there appears an opportunity to advance another great part of our agriculture industry. Yet before this industry can achieve its place of prominence in our state's agriculture, we must have all the ingredients of success. The only one we

We want to stock our freezer with cuts from a side of beef, but the advertisement by the meat company is confusing. Are there gimmicks?
Mrs.B.P. Atlanta There can be. Pay particular attention to conditions listed for getting the "free" extras. Remember, too, that the per-pound price is quoted on a "carcass weight" basis, including bone and fat; your perpound cost of usable beef will run higher. How much higher depends on the "yield grade," often designated in ads as "y." A "yield grade 1 carcass" yields the highest percentage, "yield grade 5" the least percentage of usuable beef. Before buying, you may want to read "Getting the Most From Freezer Beef Buys," available free from the Beef Industry Council, 444 N. Michigan Ave., Chicago, IL 60611.
At the store where I shop, dates on the milk cartons consistently are shown as having only two or three days to spare. I want milk to stay fresh longer than that.

The stamped dates represent the last day of retail sale, not the last day of freshness. Properly stored at 33 to 40 degrees, milk will keep fresh at least seven days after the carton date.

Prompts National Legislation

Almost ten years ago, when hog cholera was costing Georgia swine producers millions of dollars annually, a law was passed in Georgia which prohibited the feeding of garbage to swine. The control measure worked and Georgia succeeded in not only controlling but eliminating the deadly disease. Now similar measures are being taken, but on a national basis, to protect America's swine population from the threat of African Swine Fever.

Composting is a progressive task which wastes nothing and helps supply necessary nutrients for your garden. Most organic remains will break down and provide "something" to the overall compost pile. Coffee grounds, vegetable peelings and eggshells are the most common additions. For tough skinned ingredients such as orange and grapefruit peels, it helps to cut them into smaller pieces before adding to the pile.

African Swine Fever, which to
date has not been diagnosed in this country but has been reported in five locations in Central America can be spread through scraps of
meat from infected or carrier hogs that get into garbage which is then
fed to hogs. No known cure or vaccine exists for the disease and the only means of preventing its spread is the destruction of infected animals.
The law passed last week by Congress is not as extensive as Georgia's swine/garbage law but it is the first effort nationally to restrict the feeding of garbage to swine
as a disease control measure. The law requires that all garbage fed to swine must first be cooked or otherwise treated to kill disease organisms.
With the threat of exotic disease
on the upswing, an increase in preventive measures can be anticip-
ated. Experts estimate that African Swine Fever could cost billions of dollars if it were ever allowed to enter this country.

School Lunch Week Emphasizes Nutrition

The food served in school lunchrooms is one of the best nutritional bargains in today's economy. The week of October 12 through 18 has been set aside as National School Lunch week to emphasize the value of the school lunch program.

A lunchroom meal costs 50 to 75 cents with a comparable bag lunch from home 30 to 45 cents higher.
Many years ago under legislation supported by the late Senator Richard Russell, Georgia became a leader in the national school lunch program. To recognize the state's successful leadership in the program. Governor Busbee has officially proclaimed this week as a time to be aware of the program's advantages.
Lunchroom menus have become more varied and attractive to young people in recent years, as evidenced by this year's school lunch week theme "Mexican Fiesta". Many school lunch menus this week will feature a mexican-style lunch in observance of Lunch Program week.

Georgia Pumpkins Georgia ranks among the top seven pumpkin producing states in the nation. Grown mainly in North Georgia, pumpkins range in size from tiny to 160 pounds or more. Most often carved into the perennial favorite, the Jack-OLantern, pumpkins are also very tasty and nutritious vegetables. When buying a pumpkin to eat, choose a small one. They tend to be tastier and a whole tot easier to handle when cooking. Look for one without cuts or bruises, but the shape does not effect flavor. Many directions will tell you to peel the pumpkin and cut it into cubes before boiling. Those of you have tried It know this can be very messy and time consuming. The easiest way to cook a pumpkin is to cut the small pumpkin in half. Scoop out the fiberous material and seeds with a serving spoon. Place the cut pumpkin half on a pizza or jelly roll pan with the rind side up. Add a little water to prevent sticking and simply bake 45-60 minutes at 350 degrees F. or until tender. Serve the pumpkin right from the shell sprinkled with brown sugar and butter, or scoop out the pulp. This cooked pumpkin may be used for pies, cakes, puddings or breads or substituted for winter squash in other recipes. Whether preparing a pumpkin for cooking or carving a Jack-0-Lantern, you may want to save the seeds for toasting. Wash, then dry the seeds for a few days. Coat with oil, spread on jelly roll pan and bake 10-15 minutes at 350 degrees F. or until lightly browned. Cool on paper towels, salt and enjoy. Pumpkin seeds also may be toasted in a skillet with a little butter or margarine until lightly bro wned. High in Vitamins A and C, pumpkins are also low in calories. At only 40 calories per 1 /2 cup serving, they make a excellent addition to a family diet. Try one of these terrific pumpkin desserts. They are sure to become family favorites.

Pumpkin Nut Roll

2/3 cup cooked or canned

2 teaspoons cinnamon

pumpkin

1 teaspoon ginger

3 eggs

1/2 teaspoon nutmeg

1 cup sugar

1 cup chopped nuts

3/4 cup flour (all purpose)

powdered sugar

1/2 teaspoon salt

1 teaspoon lemon juice

1 teaspoon baking powder

Beat eggs 5 minutes and gradually beat in sugar, stir in

pumpkin and lemon juice. Combine flour, baking powder,

salt and spices, fold into pumpkin mixture. Pour batter in-

to a floured, greased cookie sheet, sprinkle with nuts.

Bake 15 minutes at 350 degrees F. or until cake springs

back when touched. Sprinkle powdered sugar on a towel,

loosen edges of cake and immediately invert onto towel.

Roll cake up in towel beginning with narrow edges, cool

cake completely. Unroll cake and spread with filling to

within 1/2 inch of edges. Reroll cake and chill. Keep in

refrigerator. Serves 10-12.

1 cup powdered sugar

6 oz. cream cheese, softened

1/4 cup butter

1/2 teaspoon vanilla

Combine ingredients and beat until smooth.

1 1/3 cups milk

2 packages (3-3/4 oz.) instant

2 cups cooked or canned pumpkin vanilla pudding

1-1/2 teaspoon pumpkin pie spice 4 cups whipped topping

1-9 inch baked pie shell or graham

cracker crust

In a large bowl, pour milk and add pudding mix. Mix

slowly with rotary beater or electric mixer. Add pumpkin,

spice and 2 cups whipped topping. Mix til well blended.

Pour into pie shell and chill 4 hours or until set. Garnish

with remaining whipped tppping and pecans if desired.

Keep refrigerated til serving.

PECAN PROBLEM
Pecan trees that are deficient in zinc may develop a condition called "rosette." Extension Service horticulturists say late summer, about a month before the first killing frost, is a good time to check for the disease. Symptoms include dead wood in the tree tops; defoliation, discoloring and mottling of leaves in the tops; numerous dead twigs on the tree; young leaves that are small, yellow, curved and ripple shaped; undersized nuts, and numerous lateral twigs near the ends of limbs.
THE RIGHT WOOD
Choosing the right kind of wood for your fireplace is just as important as choosing the right gasoline for your automobile, say Extension Service foresters. They recommend ash, oak, birch or hickory. These woods give high heat and low smoke, and have easyburning qualities. Elm, gum, yellow poplar and sycamore produce lower heat, but they can be used when better wood is not available.
PACKING TIPS
Georgia 4-H winners, getting ready to head for National 4-H Congress in Chicago this fall, got these packing tips from 4-H leaders with the Extension Service. Maybe they will help you on your next trip. (1) Fill shoes with small items like socks, underwear and handkerchiefs. (2) Put shoes in shoe socks or plastic bags to keep from soiling clothes. (3) Roll swimsuit, sweaters and underwear to save space. (4) Secure bottle tops with clear tape. Place bottles in plastic case to protect against spillage.

Herbs and spices should be stored in a cool, dry place, and in airtight containers.
TALKING TURKEY
Today's turkey has something to "crow" about, according to the U.S. Department of Agriculture. USDA says it comes both smaller and larger than its ancestors, is meatier and more tender, plumper and more compact, and has a larger proportion of breast. Furthermore, turkey is the highest of all cooked meats in protein, and lowest in cholesterol. Turkey meat is also relatively high in riboflavin, and low in calories:

The Cathedral Window is one of the most beautiful and intricate quilt pat terns of modern quilting. By folding and refolding several layers of cloth the finished product requires no further padding or quilting.
The most desirable cloth for this pattern is muslin because of its loose weave and flexibility. Wash before using to preshrink. Accurate measurement is very important. If your square is one quarter inch off, the difficulty of the quilt will be multiplied many times.
Cut pieces of muslin seven inches square. On one square fold over one edge 1/2 inch and press down; fold opposite edge and remaining edges each 1/2 in ch (see diagram a).
Fold squares in half with folded edges on outside (diagram b). Sew edges together, catching just the edge, down 11/2 inches. Turn piece inside out and refold flat into a square with seams meeting in center. Stitch open edges to gether 11/2 inches on both sides from center, (diagram c). Do not sew through bottom fabric. Piece is now 41/4" square.
Turn square over so plain side is on top. Fold corners in so they meet at center [diagram d]. Tack corners together securely at center, then tack to square going through all thicknesses in center. Square is now three inches.

Make three more squares in same manner. Join two three inch squares by holding pieces with open fold sides together.
Overcast along one edge. Open out and press. Open fold sides at the right side of quilt. Join two other pieces in same manner and then join to first two to make four block square. Block should be six inches square.
For window, cut a two inch square from colored cloth. Place window patch over diamond shapes formed by two adjacent squares [diagram e]. Pin win dow in place, trimming edges of colored cloth if necessary. Fold one edge of diamond shape in a curve over window patch and slip stitch in place. Sew three more windows into block.
Add more blocks to achieve desired size.

They will remove the head, skin, cut the meat to your specifications, double wrap, label each cut and blaze freeze at 18 cents per pound (hot hanging weight, carcass without head and hide) for a 100 pound or over deer or $20 hot hanging weight for 100 pound deer or less.
All deer must be field dressed. Hours of operation are 8:30 am to 5 pm Monday through Saturday.

Make Fireplaces
After selecting the chemicals to be used, they should be sprinkled on a hot fire. The fumes rise in the chimney and cause accumulated creosote to flake off and fall into the blaze, leaving a clean stack.
If you choose not to combine the chemicals yourself, commercial chemical cleaning "sticks" may also be purchased and are easy to use.
If you lean toward a more traditional method of chimney cleaning, a spruce bough pulled through the round flue of a steel chimney will do the job. Heavy chains are recommended to loosen creosote residue on masonry chimneys.

It's Sorghum Syrup Time in Georgia

When sugar was in such short supply after World War I, many families used sorghum syrup as a sweetening agent. Sorghum syrup reached its peak of enjoyment during the 1930's but many people still crave its unique taste and flavor today.
One of the advantages of sorghum syrup is that it can be totally produced on the individual farm. The cane is cut in the fall and the sweet juice is squeezed from the cane in sorghum mill, historically powered by the family mule.
Although many people still grow cane, not all are able to process their own syrup because they do not have a mill or a mule. For Glen Cleveland, Augusta, the lack of a mule did not discourage him from producing his own sorghum syrup.
"After planting an acre of sorghum this year, I found that I could not get a mule to power my 1906 Golden's three roller cane mill so I decided to convert the mill to work with my Massey Ferguson 135 tractor," Mr. Cleveland explained. "It cost me about $100 to convert the mill, a lot cheaper than I could have bought and kept a mule."
Mr. Cleveland's cane mill is hooked to a 1942 International truck transmission with a drive shaft from a 1956 pick-up truck. This is connected to a 1957 Chevrolet 411 rear end ring gear and pinion.
After Mr. Cleveland converted his cane mill, he built syrup pans and other equipment needed to complete the syrup making process. Mr. Cleveland advises that he has made 63 gallons and is not quite finished.

"I was raised on buttered hoecakes and sorghum syrup with fried fatback on the breakfast table," Mr. Cleveland said. It was this memory which prompted Mr. Cleveland to grow sorghum this year and find a way to utilize his 1906 sorghum mill in 1980 fashion.

A Georgia crop which for many years has gained only minor prominence now is being predicted as the "crop of the future." Grain sorghum can be a major cash crop for Georgia and could mean "survival" for many of the state's farmers according to grain experts.

Goldenseal is known by many names including yellowroot, orangeroot and Indian turmeric. It gets its name from its thick yellow root which is dug by many old time herbalists as a cure for numerous ailments. It is claimed to be good as a diuretic and as an aid for curing mouth ulcers.
Although these medicinal claims go unproven by researchers, naturalists continue to believe in the healing properties of goldenseal.
Goldenseal is an attractive plant which grows in the woods and along shaded paths. The leaves can grow to a height of 10 to 20 inches high with two or more leaves near the single greenish-white flower.
This year will probably be exceptionally hard on goldenseal since it is very sensitive to dry conditions. The lush green foliage may have already died but will appear again next spring if weather conditions are suitable.

With the value and demand of wood and wood products increasing, forest landowners need to know how to best manage their investment. A forest landowners conference is scheduled at Berry College in Rome October 22 for this purpose.
Starting at 9:30 am at the Krannert Center, the conference will last until noon with an optional field tour scheduled for the afternoon session. Professional foresters and timber growers will discuss the many ways a landowner can increase income and benefits from his investment.

Dr. Oscar Anderson, who heads the Agronomy Department at the Georgia Experiment Station at Griffin, says he and others involved in grain sorghum research agree that it is a "natural" for double cropping and even triple cropping programs.
Grain sorghum made its way into Georgia from Texas, expanding from a crop of 13,000 acres in the mid1960s to 130,000 acres planted in 1980.
Dr. Anderson says he anticipates the crop will be heavily planted during the next few years, particularly over major portions of north Georgia. "The development of grain sorghum has the potential of 'breathing life' into thousands of north Georgia agricultural acres which are now dormant. Grain sorghum in a few years could become as valuable to Georgia farmers as soybeans are today," Anderson continued.

The Market Bulletin has had several requests for information contained in a story published last year concerning cleaning the chimney of your fireplace.
Fire Department officials say the only sure way to prevent chimney fires is to make certain it is kept clean. There are several methods which can be used, but the chemical "sweep" is by far the most popular.
Two tablespoons of sodium chloride (salt) can be used, but other chemical combinations do a better job and are recommended more highly.
A chemical mixture (two tablespoons each) of sodium chloride and calcium chloride or sodium chloride and copper sulphate can be more effective than salt. The combination creates a cleaner burn than salt alone.
Chemists agree that an oft-times suggested combination of sodium chloride and zinc oxide should be considered "dangerous" and not used.
Another word of caution - sodium chloride (salt) should not be used in metal fireplace liners or cast iron stoves because of the corrosive elements in the chemical.
The chemicals suggested can be purchased at most hardware or drugstores.

The planting season runs from mid-March through mid-July, with harvest from October through December. However, researchers say that the stability of grain sorghum, coupled with good, long-term irrigation programs, could produce a much longer planting potential for the crop.
Already considered a good alternative to corn, grain sorghum is used as an on-farm feeder crop. When farmers learn more about the advantages of grain sorghum it could become a major cash crop for Georgia. The state's poultry industry is already showing great interest in the possibilities of using grain sorghum instead of corn.
Dr. Anderson expects research and development of grain sorghum to increase, bringing the crop's value into full focus within a comparatively short period of time. He says the future is bright for the crop, which could very well, "be the difference in years to come between success and failure for a large segment of Georgia's farmers."
