Beginning next week, the "Georgia Cookin'" column will take on a new emphasis. All recipes published will have been tested for accuracy in our new test kitchen located at the Department of Agric-
ulture. We plan to include ideas from all
the food groups along with informat-
ion to make the job of meal planning and preparation a bit more creative and fun.
The column will emphasize southern dishes and Georgia farm
products, however, from time to time other ideas will be included. We are looking for recipes that are
relatively simple, economical and
The purpose of the plant will be to (1) improve the technology of alcohol fuel production; (2) determine those agricultural crops in each geographic area which are best suited for alcohol production; (3) develop marketing procedures to encourage bulk fuel dealers and motorists to use alcohol fuels; (4) prove the economic feasibility, profitability and manufacturing success of alcohol fuels; (5) stimulate the farm economy by providing a market for excess and/or distressed farm commodities and the cultivation of idle land; and (6) reduce our dependency on foreign oil.

The percentage of commission or tariff allowed varies with the sale barn. Each barn must register its rates with the Packers and Stockyards AMS branch of the U.S. Department of Agriculture. The tariff rates should be available to the public.
When the rates change from number one or first tariff, the new rates must be posted ten days before they go into effect and a copy sent to the above office. The barns may also charge a yardage fee and these must also be on file.
If you are concerned about the rates, check them out before you do business, not after. The Georgia Department of Agriculture is involved hi the regulation of scales, animal health, licensing and bonding of the stockyards.

By choosing and cutting your own tree, you know the tree is fresh and will last through the holiday season with a tittle extra care. When you bring your tree home, place it in the coolest part of the house, away from fireplaces, radiators and television sets.
Sit the tree in a container of water
and check it daily to be sure the container is full.

1 pound candied pineapple (all colors)
I pound candied cherries 1 pound white raisins 5 cups pecans (chopped) 1 1/2 teaspoons baking powder 5 eggs
1 cup sugar 2 cups plain flour (unsifted) 1/2 pound butter I teaspoon vanilla 1 teaspoon lemon extract 1/8 cup orange juice
Cream butter and sugar. Add well beaten eggs. Add
baking powder to flour. Then sift twice. Add 1 cup of flour to nuts and fruit. Add other cup of flour to creamed mix-
ture, mix thoroughly add lemon extract. Mix flour, nuts and fruit together by hand if you prefer. Add to creamed mixture, mixing well. Put into ungreased tube pan and place in cold oven. Put pan of water on bottom shelf. Bake at 325 degrees for 2 hours. Note: Prick top with fork and
using teaspoon, let orange juice seep into holes. Then I prefer to wrap cake in wax paper then cover tightly with foil and let set in cake plate, covered about 10 days before serving.

What t
In 1849 when Dr. James Bolton Davis of Fairfield County, South Carolina, imported several Brahmans to his coastal plantation, he could not have known how important his decision would be to the future of southern cattle farming.
Until the importation of the Brahman, cattle were traditionally of European parentage or native to the plains of the American west. Neither was particularly suited to the climate and growing conditions of the South.
The Brahman, however, was famous for its ability to tolerate the hot, humid climate of India by perspiring, a trait uncommon to other breeds. This perspiration or secretion is also thought to be effective in repelling insects.
Brahmans are the famous, sacred cattle of India where the animals roam the street, untethered and often

hungry like the people of this impoverished country. It is under these conditions that the Brahmans display their worst personality characteristics.
Under good conditions with adequate fopd, Brahmans become very docile but if improperly handled, their temperament reverts to a wild nature.
The value of the Brahman breed in the South has increased in recent years when cattle producers started crossing Brahmans with other meatier breeds. Results from these experiments have resulted in the famous Santa Gertrudis (Shorthorn /Brahman), Brangus (Angus /Brahman), Charbray (Charolais /Brahman) and the Beefmaster (Hereford /Shorthorn /Brahman).
In their own right, however, Brahmans are good meat producers. They are good mothers and produce satisfactory milk when other cattle's flow is affected by heat and humidity.
Characteristically, Brahmans have a marked hump over the top of the shoulder and neck. They have large drooping ears and considerable excess skin under the chin (throatlatch) and underside (dewlap). The preferred color is steel grey although red is not uncommon.

and moderate income farmers to produce commodities for the plant and as many commodities as possible will be tested to determine the types of yields of gallons of alcohol and the best techniques for processing the commodities.
The distillery will be fired with a highly technical wood burning boiler using primarily wood wastes as a renewable fuel source. Distillery by products such as wet corn mash will be sold to cattlemen as high protein feed. Non-edible by-products will be used in experimental soil building programs.
Ground breaking and construction is expected to start around the first of the year and all information developed by the project will be available to farmers and the general public.
