Dual-Purpose

Cattle

The Georgia Simmental Associa-
tion is relatively new in Georgia as Simmental cattle have been in the
United States only about ten years. Although the breed is fairly
new in this country, it is one of the
older breeds of cattle. They are a dual-purpose breed, developed to produce meat and milk. The cattle were first re-
cognized in the Simmen Valley, Switzerland. (Simmental derives its name from the valley of origin. It is pronounced Sim - as in him Men-Tall.) The breed spread

throughout other European coun-
tries with each country having a lit-
tle different strain.
In 1968 the first full-blood Sim-
mental bull was brought into Can-
ada. Other males and females soon followed. At that time the United
States did not have quarantine facilities to allow the cattlemen in the states to import live cattle directly to
them as did the people of Canada. So we watched and anxiously waited until we could buy frozen semen from the Canadians. Eventually we were able to buy fullblood Sim-
mentals from Canada and other
countries.
The breed spread rapidly in the United States and recently moved into third place in numbers. They
cross well on all other breeds of cattle and in most cases compliment
them.
The Simmentals are medium to large in size, good milkers, very fer-

Commissioner of Agriculture
Dear Reader:
I am gravely disappointed that our Governor has attacked one of the state's oldest and finest services to the people of Georgia.
For more than sixty years now, the Georgia Department of Agriculture has published a MARKET BULLETIN as a service to farmers and consumers in buying and selling their farm commodities and hand-crafted items.
Some of you have told us that without the income you derive from selling your goods through the BULLETIN, you would have to be on welfare, or you could not make ends meet. Others have said this is the only place you have been able to locate a part for an old tractor or a particular plant you were looking for. Many livestock sale and horse show operators tell us the BULLETIN attracts more people to their events than any other medium.
Literally thousands have told us that this is the only publication they receive.
The notices published in the BULLETIN generate several million dollars to the state's economy each year.
The MARKET BULLETIN serves Georgia at a cost of about four cents per family reached each week. There is no other state or federal service that reaches as many, offers so much, and costs so little to the taxpayer.
The FARMERS AND CONSUMERS MARKET BULLETIN is an institution in Georgia that should not be attacked.
I do not believe there is a state official in government today that is any more interested in economy and efficiency than I am. For this reason the BULLETIN staff and I have worked hard to assure that the cost of sending you the BULLETIN each week has been kept as low as possible. It has remained at about four cents a copy for five years now.
This has been accomplished through competitive bidding on printing the BULLETIN; through an indepth study of the U.S. Postal Service that allowed the BULLETIN to be mailed at the lowest postage rate possible; through efficient use of personnel and office procedures and primarily through an all out effort to purge the mailing list of any one receiving the BULLETIN who does not want it.
These steps I am willing to continue to take and, if possible, to improve. However, the Governor's proposal is a threat to the wonderful service the BULLETIN is rendering and I believe, if successful, would lead to the ultimate death of the

E.D. Savannah The recommended shelf life for canned goods is 18 months to two years from the date of processing. However, properly stored canned goods may last indefinitely. You should be extremely cautious about purchasing products that are dented on the seam lines. Heat your soups thoroughly for at least ten minutes. If foaming occurs while warming, discard the soup.

What kind of salt should I use in preserving meat? Is table salt alright?

It is not recommended that you use table salt which contains cornstarch. According to our sources, pickling salt should be used and may be found in the canning section of your local grocery or hardware store. Also do not use rock salt, as it is not for human consumption.

Last week in the grocery store I was suspicious of the weights on some rolls and the clerk let me weigh them on the grocery scales. They were short.

CABBAGE AND BELL PEPPERS

12 large bell peppers, washed. Cut off tops and remove seeds (stem end). Save tops. With stem tops left on, soak in salt water for ten minutes. Scald and cool out in cold water, drain. Do tops the same way.
Shred cabbage as you would for cole slaw, 1 head. Chop fine, 2 large onions and 2 cups celery. If you would like it hot, chop up a hot pepper and mix with other ingredients. Mix together all ingredients and stuff into peppers. Pin tops of pepper with round toothpicks, just tight enough to keep the slaw from falling out. Place in open top clean
jars. Combine 2 cups sugar, 1 1/2 cups vinegar, 1 level
tablespoon salt and 2 cups water. Bring to a boil and boil about five minutes or until clear. Pour over peppers and seal. Allow at least 2 weeks to set.

SOUTHERN BAKED BEANS

1 pound dried beans

3 tablespoon molasses

6 cups water

1/4 cup ketchup

2 minced garlic cloves

1 teaspoon powdered mustard

1 sliced onion

1/2 teaspoon ground ginger

1 dried hot red pepper, small

1 1/2 teaspoons Worcestershire

1 bay leaf

1/2 teaspoon salt

3/4 pound sliced salt pork

1/4 cup brown sugar, firmly

packed

Cover beans with water and bring to a boil, boiling for

two minutes. Cover and let stand for 1 hour. Add next five

ingredients and cook until beans are tender. Drain, save

liquid - add remaining ingredients, except sugar, to two

cups of liquid. Place beans in shallow 2 quart baking dish.

Arrange slices of pork on top and add liquid. Sprinkle with

brown sugar. Bake at 400 degrees for 1 hour.

Pecan Trees

Nitrogen is the single most important element needed during the first flush of growth. Through photosynthesis, the pecan tree will store energy for growth and nut production.
Since you still have a week or two before you need to apply fertilizer, it's a good idea to have a soil test if you haven't had one recently. A soil test could save fertilizer dollars by telling you exactly what your pecan trees need.
First year transplanted pecan trees need three or four pounds of 10-10-10 applied in February. Additional small applications should be added in May, June and July to encourage continued growth. A second or third spurt of new growth will help the trees reach production size within approximately four years.

A 2 1/2 year-old registered Nubian, Tarheel Applegate's Noel, owned by Jackie Berry of Pineland Acres in Buford, is the first dairy goat in Georgia to qualify for permanent Grand Champion, pending American Dairy Goat Association verification.
Noel was Grand Champion Nubian winner in three sanctioned dairy goat shows, in Spartenburg, South Carolina; Lawrenceville, Georgia; and Lawrenceburg, Tennessee. In addition, the outstanding milker placed as best doe in show, at the Tennessee and South Carolina events.

Seed samples such as soybeans and peanuts are brittle and may be easily damaged in the mail unless properly packaged. All samples should be mailed inside a cardboard box or other suitable container to protect the sample from damage.

All seed sold commercially in Georgia is required by law to be tested for purity and germination. The results may be clearly labeled on the product before it may be sold.
Over 20,000 samples are collected from retail and wholesale outlets by department inspectors each year in enforcement of the state seed laws. This protection assures farmers and homeowners that when they plant their crops or lawns, the seed will germinate.
Germination percentages are printed on the label by law. Check
the percentages before buying. Some "good buys" may have a germination rate lower than other seed slightly more expensive. Almost all varieties of seed sold in Georgia germinate at least 70 percent while most germinate at 85 percent and above.

Seed are germinated in a special growth chamber which provides the optimum temperature and humidity
for sprouting.
The size of a sample is also very important for test accuracy. For all small seed such as clover, lespedeza grasses and vegetable seed, a half pound sample should be submitted; for sorghums and seed of similar size, a one pound sample; for soybeans, peanuts, cotton and seed of this size, two pounds.

tile, docile, and grow rapidly given proper nutrition. The popularity of the breed has caused a great impact on the beef industry. The Simmental breeder has been receptive to, or partially responsible for, the progress made in artifical insemination, heat syncronization and embryo transfer.
The American Simmental Association has been one of the leaders among the beef breed associations in pushing performance within the breed. They publish a sire summary each year, listing genetic traits, pedigrees and outstanding cows throughout the country.
The Georgia Simmental Association is affiliated with the national organization headquartered in Bozeman, Montana. The purpose of the Georgia Association is to promote the Simmental breed in the state by having sales, field days, as well as advertising in farm and beef cattle publications and answering questions from interested people.
The Georgia Association has over fifty members and there are now sixty or more fullblooded bulls in the state and many females with some Simmental blood.
GRASS TETANY
Grass tetany, also known as "the staggers," afflicts grazing animals and is caused primarily by insufficient magnesium in their diet. USDA and state surveys show that tetany occurs in almost all states. It involves one to two percent of the grazing livestock at an annual cost of $70 million.

The fig tree is one of the most often mentioned fruits of the Bible. It's leaves were first used to cover Adam and Eve's nakedness in the Garden of Eden (Genesis 3:6,7). Later figs came to be symbolic of peace and prosperity.
And Jiidah and Israel dwelt safely, every man under his vine and under his fig tree .... I Kings 4:25. To sit under one's fig tree was, according to the Jewish faith, the ultimate in peace and prosperity. In Hebrew the name for the tree means "to spread out", characteristic of the tree's multi-branching nature.
In Proverbs 27:18, Whoso keepeth the fig tree shall eat the fruit thereof .... is further indication of the belief that the tree represented peace.
Ficus carrica is native to western Asia. It has been cultivated for centuries as a shade tree and for its edible 'fruit'. In Biblical times, dried figs were the staple of many long journeys. 'Cakes of figs' are referred to in I Samuel 25:18.
In Georgia many fig trees are grown not only for the fruit production but also because they are an attractive deciduous plant often reaching 25 feet tall. The southern part of the state is the most desirable for fig production although some varieties will succeed in the colder portion of the state.

A hearing will be held to discuss changes in cabbage plant inspection regulations. Changes include substituting the term cruciferous (which includes broccoli, cauliflower, brussel sprouts, etc.) for cabbage in all regulations and limiting the amount of seed for testing to 500 pounds.
The hearing is scheduled for February 6, 1979, 10 AM, Room 201, Georgia Department of Agriculture Building, Capitol Square, Atlanta.

MARKET BULLETIN.
The Governor has proposed that a "restraint" be placed on the BULLETIN subscriber list by charging everyone who takes the BULLETIN a subscription fee.
There are several reasons this is unthinkable to me. This is a state service that should not be placed in jeopardy. This is a service that helps many who are economically depressed and cannot afford another advertising medium or to subscribe to other publications.
The Governor's proposal could cost money instead of saving money in that collecting subscription fees is expensive. It could cost more in paper work and postage to collect the subscription fee than he has proposed to charge.
I do not believe this proposal would cut your taxes one cent. In fact, the Governor has indicated that the purpose of the fee is not to defray costs, but to place a "restraint" on subscribers. I do not think any restraint should be put on the BULLETIN that might prohibit anyone from receiving the BULLETIN that wants it.
I pledge to you all of my efforts in continuing to keep costs of publishing the FARMERS AND CONSUMERS MARKET BULLETIN at a minimum but to keep the services of our publication at a maximum.
In return, I would like for each of you to help me respond to the Governor's attack on the BULLETIN. Please write Governor Busbee and your local state Representative and Senator today and tell him how you feel about the FARMERS AND CONSUMERS MARKET BULLETIN and if you would like to continue to receive it as you have throughout several decades. Let's have economy and efficiency in government. But let's not destroy the traditions that have served us so well.

Spring Seed Fills Ag Laboratory

For Germination/Purity Testing

Every year at this time, the Department of Agriculture is deluged with seed samples from persons who want to have their seed inspected prior to spring planting. Proper packaging identification on the samples and good timing are all necessary to make the process run smoothly.

Grandpa's Garden
This is the time of year for producing lots of wood ashes in your fireplace. If you don't feel like braving the cold and adding them to your garden now, save them in a plastic garbage bag for use later this year.
Judy Webb, Duluth, shares an old mixture her mother used for cleaning windows. Mix 1/2 cup vinegar, 1/3 cup ammonia, and 1 gallon water. Put in spray bottle and use like other window cleaners.

The state seed lab located in the Department is one of the most modern and extensive in the nation, testing more than 30,000 samples a year. With the heavy demand placed on the laboratory, samples must arrive far enough in advance to allow time for testing and mailing results back to the farmer.
At the time a sample is received and opened in the lab, it is assigned a lab number and an acknowledgement of receipt will be sent. Make certain that you include the kind and variety of seed in your sample as well as your complete name and address.
The acknowledgement will show the lab number and the approximate number of days necessary to complete the test. Some seed samples such as corn may be germinated in as little as 7 days, but others may

Pecan Trees
Need Attention
Pecan trees need attention in February. They need pruning and feeding to keep them in tip top shape for the coming growing season.
Broken and low hanging limbs should be pruned. These limbs may have broken because of heavy weight from nuts or high winds.
Pruning helps the tree supply more nutrients to the top where the heavy production is. The lower limbs are more susceptible to disease and sap energy from the stronger more productive limbs.
Nitrogen fertilizer needs to be applied in February. By applying early, the nutrient has time to work its way down to the root system before growth starts.
