GEORGIA'S INTEREST IN HORSES IS RAPIDLY GROWING - The state has
shown a decided up-surge in interest and activity concerning virtually every phase of the equine industry. There has been more emphasis concerning such areas as breeding, shows, pleasure mounts, security and health during the last 10 years in Georgia than at anytime in recent history. Ads in

the Market Bulletin reflect the trend. Ten years ago an average weekly edition displayed only about 20 horse related ads, with that number now increased more than five tunes. In this issue is a special equine section
including advertisements highlighting horse shows, boarding facilities and horses at stud beginning on page 5.

"Agricultural research and education are investments - investments
that benefit taxpayers?" So why am I mentioning failure?
Because we have failed, in many res-
pects, to impress on consumers that their future welfare depends upon
scientists the same scientists who are finding it increasingly difficult to obtain dependable federal support. Problems that will affect the consumer will not be solved in a timely
fashion because of lack of funding. Failures apparently attract more
attention that successes, and this

Variety, Money to Ag Economy
Georgia's seafood processors, although confined to a relatively few businesses, pump more than $100 million dollars annually into the state's overall agricultural economy.

GEORGIA DELICACY The state's coastal waters provide a wide variety of seafood enjoyed virtually worldwide. Millions of prized blue crab are pro-
cessed in Georgia plants with shipments reaching tables in every corner of the nation.

Georgia coastal waters, warmed from the Gulfstream, provide an abundance of seafood' delicacies with the blue crab the flagship of the menu.
The state's fishermen and processors produce a wide variety of fish, clams, shrimp, oysters and other seafood, with crab meat from Georgia finding its way into virtually every state. In fact, 95 percent of Georgia's prized blue crab is
shipped to high demand areas in northern eastern states.
Even in states such as Maryland, where abundant supplies of seafood are readily available, the Georgia

blue crab is highly favored. There are six exclusive crab meat
processors in operation along the
Georgia coast from Florida to the Carolines. They include: the A and L Seafood Company, The Pleger Packing Company, Sea Garden Seafoods, Dewitt Seafood Company, Lewis Crab Factory, A. S. Yarn & Son and Ben's Seafood Company.
The crab meat plants along with other seafood processors come under the watchful eye of the Department of Agriculture. The Department's Consumer Protection Field Force inspectors are directly

Atlanta Market Sponsors
Second Festival of Season
The second in a series of Festival Days at the Atlanta State Farmers' Market is slated Sunday July 8th ..... It will be "Salad Day".
As that name might imply, all participants will be able to create their own salad fantasy from a variety of farm-fresh fruits and vegetables,
But, that's far from all that's on the afternoon program. There will be a watermelon eating contest, free pony rides, a free ferris wheel and music and entertainment for all.
The event, which gets underway at one o'clock and lasts until 6 p.m., is co-sponsored by the State Agriculture Department and the Kraft Foods Corporation.
Double-Cropping Seminar
Explains 2 for 1 Method
Georgia soybean, corn and sorghum producers are invited to attend a Feed Grain and DoubleCropping Systems Field Day at the Bledsoe Farm near Griffin July 12.
The field day, sponsored by the University of Georgia College of Agriculture's Georgia Experiment Station and Cooperative Extension Service, will include tours of crop plots for several double-cropping systems. Weed control in soybeans, tillage methods, date of planting and nitrogen applications will also be discussed.
"This field day will give growers an opportunity to see research results on double cropping in soybeans and grain sorghum. The

RUNNER UP RECIPES GA. CHICKEN COOKING CONTEST Parmesan Oven Fried Chicken

1 broiler-fryer chicken, cut in parts 1/4 teaspoon ground thyme

1/2 cup butter, softened

1/8 teaspoon pepper

2 taMespoons finely chopped

3/4 cup fine dry breadcrumbs

1/4 cup grated Parmesan cheese

1 teaspoon salt

1/4 cup finely chopped almonds

3/4 teaspoon garlic powder

In bowl, mix together butter, parsley, salt, garlic powder, thyme and pepper. In shallow dish, mix together breadcrumbs, cheese and almonds. Spread butter mixture on chicken; then add chicken to breadcrumb mixture, one piece at a time, turning to coat. In large shallow baking pan, place chicken, skin side up, in single layer. Bake, uncovered, in 375 degrees F. oven about 1 hour or until fork can be inserted in chicken with ease. Makes 4 servings.

Paprika Chicken

1 broiler-fryer chicken, cut in parts 2 tablespoons paprika

1 teaspoon salt

1 tablespoon tomato puree

3 tablespoons bacon drippings 2 chicken bouillon cubes

4 slices bacon, chopped

3 tablespoons cornstarch

1 onion, chopped

6 tablespoons sour cream

2 1/4 cups water, divided

1/2 lemon, squeezed

Sprinkle salt on chicken. In fry pan, place bacon drip-

pings and heat to medium temperature. Add chicken and

cook, turning, about 15 minutes or until brown on all

sides. Remove chicken from fry pan. In large shallow bak-

ing pan, place chicken, skin side up, in single layer. To

remaining drippings in fry pan, add bacon and onion and

saute about 5 minutes or until bacon is crisp and onion is

soft. Add 2 cups of the water, paprika, tomato puree and

bouillon cubes. Simmer, stirring, about 3 minutes or until

bouillon cubes are dissolved. Pour bacon mixture on chick-

en. Bake, uncovered, in 350 degrees F oven 40 minutes.

Remove chicken from baking pan. In small bowl, mix corn-

starch with remaining 1 /4 cup water, stirring until smooth.

Add cornstarch mixture to drippings in baking pan. Cook,

stirring, over medium heat about 5 minutes or until sauce

is thick. Add sour cream and lemon juice. Return chicken

to baking pan. Bake, uncovered, 10 minutes or until fork

can be inserted in chicken with ease. Makes 4 servings.

Chicken In The Straw

2 whole broiler-fryer chicken

1 can (101/4 ounces) condensed

breasts, halved, boned and

chicken broth

skinned

1 3/4 cups hot water

1/4 cup cooking oil

1/2 cup julienne celery

1 cup regular rice, uncooked

1/2 cup julienne green

1 envelope (1 3/8 ounces) onion pepper

soup mix

1/2 cup julienne fresh mushrooms

2 tablespoons chopped pimiento

In fry pan, place oil and heat to medium temperature.

Add chicken and cook, turning, about 15 minutes or until

brown on all sides. Remove chicken from fry pan and set

aside. In large shallow baking pan, spread rice on bottom.

Sprinkle soup mix and pimiento on rice. Add chicken broth

and hot water. Place chicken on top. Cover and bake in

350 degrees F. oven about 45 minutes or until fork can be

inserted in chicken with ease. Add celery, green pepper

and mushrooms and cook about 5 minutes or until

vegetables are cooked but slightly crunchy. Makes 4 ser-

vings.

Just before serving, fold in 4 mediumsize unpeeled fresh peaches, diced. Serve in Fresh Peach cups. (To make Peach cups, cut fresh peach into quarters, cutting only to about 1/2 inch from bottom. Mr. George Garrett, Macon, called to advise that ap ple vinegar was good for bites. Just dab a little vinegar on the sting and the itching will subside.
Summer is not complete without whitewashing the picket fence. Mix two pounds salt into one gallon water. Slowly stir in seven pounds hydrated lime and start painting. Use caution with the lime as it is caustic and can cause burns.
If you need a give-away pl ant container, use an old berry basket. Stretch a nylon stocking over the frame, fill with dirt and presto giveaway-pot. To keep water from running through the bottom you may want to wrap the "pot" in aluminum foil.
Another use for old berry baskets is to turn them upside down in a bowl and use them as a "frog" to hold cut flowers.
If you want to change the color of your trench hydran geas, you must change the acidity of the soil. If you want blue flowers, the soil must be very acid. The pH should be 5.5 or lower. Add acid fertilizer or a heavy mulch every year of oak leaves. Some people say that a few rusty nails stuck into the soil will provide the needed acid.
Pink flowers are the result of an alkaline soil with a pH of 6.75. Add just a tad of limestone to increase alkalinity. Just a touch it doesn't take much.
Only a chicken farmer would suggest this -- but since he didn't sign his name, we can only guess. Plant chicken bones around the base of roses or other plants. They turn into bone meal faster than most other bones.
A reader from Savannah who had trouble with deer eating his garden devised this method for deterring them. "Take bits of human hair that you can get from the barber shop, and encircle the garden. Place pile of hair 5 to 10 feet apart. Deer will not cross the human odor." According to our Savannah reader, the method is effective for a week or two depending on how often it rains.
In addition, hair is also a good fertilizer. It is very rich in nitrogen. Brushing your dog, your own locks or the local barber shop can all be good sources for this overlooked natural fertilizer.

seems to be especially true when it comes to obtaining federal funds. Maybe we have overemphasized our successes and have failed to admit to our failures.
Let's face it we have; so far,
failed to solve many problems related to water use and management. We have failed to control soil erosion. We have failed to prevent losses due to insects, diseases and weeds.
We have failed to solve many of the animal health problems that face the livestock and poultry industries. We have failed to improve reproductive efficiency to the point where we will be able to feed an expanding population.
We have failed to get our message across to the decision makers that seem determined to weaken the state-federal partnership exemplified by ther Land-Grant College System. Past successes are praised but not rewarded, even to the extent of maintaining the capacity to sustain current levels of research.
The purchasing power of federal funds allocated to the State Agricultural Experiment Stations through the Hatch Act will be $28 million less in the Executive FY 1980 budget than in 1966.
Now do you see why so many problems that need attention are being delayed? This is only part of the story. Look what is happening to the federal agricultural research program. The Executive Budget proposes a reduction of almost 500 agricultural scientists in FY 1980!

At the same time, the Agricultural Research/Science and Education Administration has been requested to redirect millions of dollars to "national priorities" while cutting base programs.
Research cannot be turned on and off like a water spigot. We have failed to tell our story even to our leaders. For this failure, we are paying a heavy penalty.
Failure. How will it affect citizens? When certain chemicals are banned we will undoubtedly fail to protect the quality and safety of food; we could conceivably fail to produce enough food and fiber to meet future needs for America.
Let's see what could occur as a result of failure to solve agricultural problems a botulism outbreak, a crop failure, an epidemic among livestock or poultry, not enough meat, milk, eggs, fresh fruits and vegetables at a price that consumers can afford in our supermarkets.
These events, unfortunately, may be what will be required before the federal government "reinvents" the Land-Grant College System and state-federal partnerships and once again seeks the services of agricultural research scientists and educators.
These failures will become evident within the next decade. I wish "Failure Factor for Federal Fun'ding" were only a joke.
We need a good punch line.

The gourmet delight of wild rice can be readily gathered if you happen to be located near a swampy area, shallow lake or pond.
Contrary to popular belief, it is not a member of the botanical family that includes our everyday white or brown rice.
Wild Rice is an aquatic grass found growing in dense clumps in marshy areas or in shallow water where there is a mucky bottom. The rice has become so popular that it has been easily introduced into many areas of the country to which it is not native.
It is native in areas from eastern Canada to Manitoba, from Maine to North Dakota and south to Florida, Louisiana, and Texas.
The best harvesting time is from mid-summer through the fall months.
Gathering the seed can be both interesting and fun and take you back through the pages of history to the time Indians harvested the stalks.
The seeds are on very tall grasslike stems from 6 to 12 feet high, the leaves are lance-shaped and grow alternately on the stem.
The flower stalk is so showy that it would not be out of place in a florist's dried arrangement. The seed heads are as much as two feet long with the seed purplish at maturity and tightly encased in a husk.
Now for the harvesting. That's done in two stages.
When the seeds have formed but are still green and the plant is still growing, twist the seed head into loose clusters and tie them.
Then return to their location .... preferably in a small boat .... when the seeds are ripe.
Pulling the clusters over the side of the boat, break the seeds away with a stick or paddle into a bag .... Thus, you have your wild rice.
The process continues by drying either in the sun, or in an oven.
Stirring occasionally, leave it in the oven at 200 degrees for two or three hours in a shallow pan, or spread the seeds out in a warm, sunny place to dry naturally for two or three days.

Last week when I bought gas I was overcharged. I bought 6.8 gallons at 84.9 cents and paid $5.76 for it. Can this be checked? I only owed $5.09 at most.
E.W. Sylvania Apparently in figuring, you omitted the eight-tenths of a gallon. There was a slight miscalculation, however, the station came out a penny short. It is important to include portions of each gallon when computing the total price. Always check to see that the*pu* m* p* starts dispensing at zero.

If you are referring to the sanitary conditions during processing or the nutrition value of the product, there are no measurable variations. Howev er, there may be differences in the vegetable varieties or spices used that would cause your family to prefer one brand over another.

I wanted to write about a pancake mix I bought. It was a change from my regular brand. The individual packets inside the box promise six to eight pancakes, but I only got five medium size pancakes. I was amazed.

Snakes become more active as the weather warms up. Generally speaking, a snake will leave you

effective way to control snakes is to remove their habitat. That means
getting rid of rock piles and firewood stacks near your home. Keeping the
grass cut around the house will discourage them, too.

Processors are constantly on the look-out for methods and machinery to improve their facilities. The seafood industry is growing every year and constant expansion and improvement is necessary to provide the most economical and safe means to market a perishable product.
Pasteurization of crab meat and year-round contracts with Florida fishermen are recent developments in the industry. Pasteurization allows for long periods of cold storage which provides a constant, abundant supply throughout the year rather than restricting it only to the warmer months.
Industry observers note that this major breakthrough will add even more dollar value to Georgia's seafood industry, a growing and important part of the state's agricultural economy.
