FHA Helps Build Goals
Youth organizations play an important part in many young persons' lives. The Future Homemakers of America is the largest vocational youth organization in Georgia. The 17,500 Georgia members unite with over five hundred thousand members across the United States in helping to make our world a better place to live.
Future Homemakers place emphasis on improving the individual by
participation in the group activities. Many projects are planned so that everyone's interests are met. Indepth projects, designed to dig deeper into activities by helping students identify concerns and problems, make up a large part of our local chapters' programs of work. Some of our concerns include "Family Unity: Make It - Don't Break It", to help improve relations within

the family; "FOOD (Focus on our Diet}", to enlighten members on the importance of balanced meals; and "Step Back, Suzy Homemaker", designed to show that everyone uses homemaking skills.
At a Performance youth leadership workshop that I had the privilege of attending this past Christmas, we were introduced to many different concepts and ideas. One of the statements that stuck in my mind was "The width of your present is only as wide as the goals that you set

Peaches are members of the Prunus family along with other fruit trees such as cherries, apricots and plums. Peaches are classified as the third most important fruit in the U.S. (apples first, oranges second), and Georgia is one of the leading producers of this delectable summertime taste treat.
Georgia once led the nation in peach production. In the early part of this century up to 15 million peach trees were in production. While we were increasing acreage, however, other states were also devoting more farm acres to peach production. Georgia also became more diversified utilizing more farm acres in production of other agricultural commodities.
Georgia is now in third place in peach production. In 1978 we produced 120 million pounds amounting to $18,720,000 in agricultural revenue.
Peaches are thought to have originated in China where they have been grown for thousands of years for their fruit and decorative flowers.
From China, traders took peaches to Europe; Spaniards brought the trees to Mexico and settlers brought peaches to the colonies.
Peaches have always been a delicacy. In ancient China they were so precious that only emperors and kings were allowed to taste the exquisite fruit. A single peach, the symbol of long life, was sometimes given as a birthday gift to express the wish for many happy years.
Georgia's 1979 peach crop is expected to be one of the state's best. Fresh fruit will soon be available throughout the state so prepare to 'eat like a king.'

Longer Than You Think

June is dairy month and every year we join in promoting one of the state's growing industries. This year consumers want to know how to get the most for their food dollar by properly handling milk one ot nature's most perfect foods.

The summer horse edition will be published July 4. The issue will feature at stud notices, horse boarding facilities as well as the quarterly horse show announcements.

Each week when I go shopping at the grocery store I ask for a receipt, but I never get one.

Milk is a perishable commodity but with proper storage should last one week after purchase. The date on milk containers is not the last day of freshness or an expiration date. It is a 'pull date' for the grocer's use. This is the last day the store will sell the milk as fresh. They must remove it from the shelf after that date.
Dairy farmers devised the pull date in the early 1970's to aid grocers in stocking only fresh milk and to help consumers know what shelf-
life they could expect. In Georgia you are guaranteed se-
ven days of freshness after the carton date if you use reasonable care in storing milk. If you have milk that loses its natural freshness before the seven days and if you have kept it refrigerated and handled it properly, regardless of the brand, return it to the grocer for a money back guarantee.
Here are ten tips or methods of assuring that the milk you purchase stays fresh:
1] Milk stays freshest longest when kept between 33 and 40 degrees. Every time milk gets above 40 degrees you lose freshness.
2] After milk is purchased, rush it home and place in refrigerator. Hot car trunks or back seats is no place to store milk.
3] Check the temperature in your refrigerator with a thermometer. It needs to be below 40 degrees.
4] Keep milk out of direct sunlight. Prolonged exposure to sunlight heats milk, destroys flavor and reduces nutrition value.

the April 11th MARKET BULLETIN, she said that the Georgia Western Horse Show Association had ". . . the only electric timer of its kind in the southeast."
This is to advise that my family and I are members of the Radio Ranch Saddle Club, Thomasville, Georgia and have had an electric timer since 1973. As the horse enters the gate, it starts the clock, lights up the board and as the horse leaves the gate the clock is broken and the final score is visible at all times to the rider and spectators. This is called a read-out board.

Buttermilk Pie

3 eggs

1 cup sugar

4 tablespoons flour

1 tablespoon butter

2 cups buttermilk

grated rind of lemon

1 teaspoon lemon extract

Beat yolks of eggs and sugar (save egg whites for

meringue). Mix flour and butter together add yolks, sugar,

buttermilk, grated rind of lemon and lemon extract. Pour

into pastry lined pan, bake 10 minutes at 450. Reduce

heat to 350 degrees and bake 30 to 35 minutes longer.

Beat egg whites until they are frothy and gradually add 6

tablespoons sugar to make meringue. Spread over pie and

brown.

Beef-Vegetable Loaf

1 ft 1/2 Ibs. ground beef

1 medium onion, peeled, sliced,

1 small onion, chopped

1 small carrot, pared and grated

5 Tbs. chopped parsley

1 teas, salt

1/8 teas, pepper

1/2 cup milk

2 Tbs. bottled steak sauce

(1.) Mix ground beef lightly with egg, rice, chopped

onion, carrot, 4 Tbs. parsley, salt, pepper, and milk until

well blended. (2.) Pat into a bowl-shaped loaf in a greased

shallow baking pan; mark top deeply into quarters. (3.)

Bake in moderate oven (350 degrees) 45 min. Brush with

steak sauce. Bake 15 minutes longer, or until richly

browned. (4.) While loaf bakes, saute onion rings in butter

or margarine just until soft; sprinkle with remaining 1 Tbs.

parsley. Toss lightly to mix. (5.) Spoon onions in a mound

on top of loaf. Cut loaf into quarters at marks, then slice.

1 cap of uncooked rice

1 can of whole kernel corn

1/2 cup chopped onions

Place ingredients in casserole dish starting with rice on

bottom. Bake for 1 hour at 350 degrees.

Jellied Apple Nut Salad

1 package (3 oz.) lemon-flavored 1 cup boiling water

gelatin

3/4 cup cold water

1 tablespoon lemon juice

1/8 teaspoon salt

1/2 cup finely chopped celery 11/2 cups chopped Georgia

1/4 cup chopped pecans

Dissolve the gelatin in the boiling water. Add cold

water, lemon juice and salt. Chill until slightly thickened.

Stir remaining ingredients into gelatin. Chill until firm.

1 tip. Worcestershire sauce

2 cups boiling water

6 oz. brick cheese cut in 1 inch Salt and pepper

strips

Preheat oven to 350 degrees, melt butter in casserole,

arrange meat in it; top with soup mix, green pepper and

rice; spread on catsup and sprinkle on Worcestershire

sauce; pour boiling water over all; cover and bake 55 to

60 minutes (add additional 1/2 cup boiling water if mix-

ture becomes too dry.) Remove from oven and top with

cheese strips and allow to stand 10 minutes before ser-

ving.

in the past." The width of my present has wid-
ened considerably since I became a member of FHA. My involvement in the Future Homemakers began during my eighth grade year in elementary school. I began to get involved and take an active part in my organization. As I took the office of degree chairperson, I began to set priorities and work toward accomplishing the goals that I had set for myself.
The first goals I accomplished were earning my junior degree, becoming "Homemaker of the Year" and attending State Convention.
When I saw how much the state officers enjoyed what they did, I decided I would continue my work in FHA in high school and run for a state office.
Upon entering the ninth grade I took the office of honor roll chairperson and began making plans to run for a state office. In April of 1978,1 was elected State Treasurer. Throughout my year I was growing, learning, working, and preparing myself for the future.
My next goal was to become state president. After long hours and lots of nervous times, I was elected State President of the Georgia Association at State Convention in April of 1979.
My involvement in FHA has given me the opportunity to develop the leadership abilities I have needed to accomplish the goals I set hi all areas of my life.
You reap only what you sow, and during my two years in high school I have gained many "fruits" for my efforts hi the Future Homemakers of America.

5] Store milk in tightly closed containers to prevent it from picking up the flavor of other foods.
6] Do not leave milk on the table during meals.
7] Do not pour unused milk back into original container. Cover it in a separate container and place back in refrigerator. Mixing milk of varying temperatures can have an adverse effect on its freshness.
8] Don't look for the milk container with the most distant pull date. Since the date does not indicate freshness, save shopping time by picking up the closest and most convenient container.
9] If you should discover out of date milk in the dairy case, tell the store manager.
10] In the unlikely event you should end up with stale or sour milk at home, first check the date, add seven days to see if the allotted time has expired. If not, review your handling of the product since purchase. Did you leave the groceries in a hot car while you ran a quick errand? Did a child leave the milk container on a counter for a few hours? If you are convinced you are not at fault, by all means return the product to the store for refund or replacement.
Remember, you are guaranteed seven days of freshness after the carton date if you have properly refrigerated and handled the milk.
DARK POTATOES
Ever notice how peeled Irish potatoes turn dark if you don't cook them right away? You can prevent this by tossing them with an ascorbic acid solution or a little lemon juice, say Extension Service home economists.

Thanks for contacting our office and saving other Geor gians from this experience. The brand of potato slips you bought has had a "stop sale" placed on it during which time the seller is having to relabel the count as 750.

ELECTRICAL SHOCK
Take immediate action when someone suffers electrical shock. First, turn off the electrical current. If the victim is unconscious, tilt his head back, open the airway and check for breathing. If the person is not breathing, administer artificial respiration; if there is no pulse, call the Emergency Medical Service. Begin cardio-pulmonary resuscitation and continue until help arrives. If you don't know CPR, learn it.
