Georgia Loses
Good Friend
Last week Georgia lost a great friend, a great leader, a great man Secretary of State Ben Fortson.
Ben Fortson was my friend. I have known, admired and respected
"Mr. Ben" for many years. It was | my privilege to work with him, as *; a fellow constitutional officer.
His opinions jwere never lukewarm. If he beI lieved in something he supported it wholeheartedly. He was straight forward and honest and we all loved him for it. His life can serve as an inspiration to us all. He believed in and loved Georgia, her beauty, her people, her history and her southerness. And, he supported his beliefs in the way he lived and worked. Because of this Ben Fortson left Georgia a better place to be than when he came. Georgia will miss Ben Fortson, an institution, a good man, a friend.
Statisticians Need
Farmer Assistance
The Georgia Crop Reporting Service in Athens is currently involved in gathering information for a numer of annual surveys important to the state's farmers.
Georgia information in various farming areas will become part of nationwide surveys conducted in late May and early June. One of the major information listings, currently underway through June 2, is the June Enumerative Survey.
Various farm facts are gathered in Georgia by personal contact with a sampling of farmers by field representatives of the Crop Reporting Service. The Georgia information then becomes part of a national survey framework.
Also during the same May-June period various "direct mail-type" questionnaires dealing with quarterly hog and pig multi-frame and white corn estimates will be completed.

Moisture Plentiful Future of Market Cannery

Throughout State Depends on 1979 Season

Georgia farmers could be in line for the "best weather conditions they have experienced on an overall basis in several years," even though heavy rains in April and May have caused some serious problems for parts of the state's tobacco crop, (as of press time Friday, May 25.)
Agricultural meteorologists say overall, long-range weather patterns appear to have the "proper moisture content levels" to provide excellent conditions for virtually all Georgia crops.
There have been "wet weather" problems in about 20 counties, with six areas in South Georgia Bacon, Jeff Davis, Coffee, Appling, Tift and Cook declared "disaster areas" by the Farmers Home Administration because of the concentrated rains and some hail damage.
The reasons for this optimism, says agricultural meteorologist John Lang of the National Weather Service in Atlanta is that the patterns which produced the state's drought conditions over the last two years (1977-78) have not developed, and twhoeng'te."neral outlook is, "that, they

The public cannery at the Atlanta State Farmers' Market will be open again this year despite an earlier decision by the Department of Agriculture that it would not be financially feasible to operate the facility during 1979.

Beef Hearing
Set for Atlanta
Public hearings, including one in the Atlanta area, have been scheduled in various cities across the country to determine the feasibility of establishing a national beef research and information order. The Atlanta area session is slated for June 21 at the Ramada Inn in Hapeville.
The order is being proposed by a group representing a number of national beef and farm organizations under authority of the Beef Research and Information Act.
Assistant Secretary of Agriculture P. R. Bobby Smith said such an order would establish a Beef Board composed of some 68 producers.
Monitored by USDA's Agricultural Marketing Service, the board

Agriculture Commissioner Tommy Irvin to order the cannery re-opened during the 1979 fruit and vegetable season.
The cannery will open June 11,
again offering a wide range of services for the preservation of fruits and vegetables, including the speed and convenience of mechanical shelling of peas and butterbeans.
The facility provides Number 2 or 21/2 metal cans for those needing such containers, while food preparation in pint or quart jars requires that persons using those
methods bring their own. Commissioner Irvin cautioned that
the future of the Atlanta Market cannery is still uncertain and he encouraged full support and .patronage by local area residents this year.

Many Horse Owners Lax

In Equine Immunization

Officials of the Georgia Department of Agriculture are strongly recommending that horse owners across the state take the necessary steps to protect their animals against equine encephalitis.

ANNUAL ENCEPHALITIS SHOT

The disease, more commonly known as "equine sleeping sickness," is transmitted by mosquitoes and becomes highly prevalent during spring and summer months.
The Agriculture Department has no program directly involved in combating or controlling the dis-
ease, but it is most important that horse and pony owners provide the necessary vaccine protection on a voluntary basis.
State veterinarians say it takes two vaccine injections yearly for protection against the sickness. They point out that combination vaccines are available for all three types of equine encephalitis eastern, western and Venezuelan.
Eastern and western types occur seasonally in Georgia and many other parts of the country. And, although the Venezuelan strain has

Today, more and more people are becoming keenly

aware of the necessity and good sense of re-cycling.

New life is being breathed into virtually everything

for re-use in some form of another, and certainly the

focal point of the American farm the barn should

be no exception.

These architectural wonders can be found in vir-

tually every rural county in the United States with

most discarded; given-away to newer more modern

structures.

But, a close look will quickly reveal the unique

beauty of the wood of the structure. Colored and tex-

tured by aging and weathering, the beauty and design

simply cannot be duplicated now, by man or machine.

So, what was considered among the passing pages

of American history only a short time ago is now be-

ing re-newed, used and appreciated not only as a pra-

ctical material, but, is enjoying a growing popularity

as an applicable art form.

The uses of barn wood are endless . . . from the

smallest shape, merely as an eye pleaser, to complete

material for a new home or other structure.

The possibilities for the wood's uses are virtually

endless

limited only by the imagination of the

user.

Vegetable oil

Beat egg; stir in rice, poultry seasoning, salt and

cheese. Refrigerate at least 1 hour. Shape by rounded

teaspoonfuls into fifteen 1-inch balls. Roll in bread crum-

bs. Heat oil in 2-quart saucepan. Fry rice balls until golden

brown; drain. 15 rice puffs.

Pork Chop Onion Rice Bake

6 pork chops, cut 1 to 1 1/2 inches 2 tablespoons fat or drippings

thick

1 cup uncooked rice

1 envelope onion soup mix

1 can (4 oz.) sliced mushrooms

2 tablespoons diced pimiento

Brown chops in fat or drippings. Spread rice in bottom of

rectangular baking dish (13 1/2x9x2 inch.) Reserve 1

tablespoon of seasonings from envelope of onion soup

mixture and sprinkle remaining seasonings and bits of

onion over rice. Drain mushrooms, reserving liquid and

distribute mushrooms and pimiento over rice. Add hot

water to reserved mushroom liquid and pour over rice.

Arrange browned chops on top of rice mixture and

sprinkle chops with reserved seasonings. Cover tightly

with foil and bake in a moderate oven (350 degrees) until

tender, 45 minutes to 1 hour, depending upon thickness of

chops. Remove foil and continue cooking for 10 minutes

longer or until any excess liquid evaporates. 6 servings.

Fresh Apple Cake

3 cups plain flour

2 eggs

1 1/2 tsps. baking soda

1 1/2 cups salad oil

1/2 tsp. salt

2 tsps. vanilla

1 tsp. cinnamon

1 cup chopped nuts

2 cups sugar

5 cups chopped apples

Sift together twice, the flour, soda, salt and cinnamon.

Beat eggs and sugar until creamy; add oil and vanilla and

beat until smooth. Add sifted flour mixture and mix to

form stiff dough. Stir in apples and nuts. Pour into greased

and floured 10-inch tube pan. Bake at 350 degrees for 1

hour or until brown.

Fresh Peach Tarts

3 Ibs. (about 12 medium) fresh 1 tablespoon fresh lemon juice

peaches

1 cup sugar

41/2 teaspoons comstarch

6 (5-inch) baked tart shells

Whipped cream

Peel and slice peaches into eights. Combine peaches,

lemon juice and sugar. Let stand 20 minutes. Drain juice

into a measuring cup. There should be 1 cup of liquid. If

not, finish filling cup with water. Blend in cornstarch and

cook until transparent. Cool - divide fruit equally among

tart shells. Spoon cold sauce over each tart to form a

glaze. Chill until the glaze is set. Garnish with whipped

cream.

2 cups water

4 cups peeled sliced peaches

1 -3 oz. pkg. peach or mixed

2-9 inch pie shells

fruit jello

Mix sugar and corn starch. Add water and bring to a boil

for 3 minutes. Add one 3 oz. pkg. of peach or mixed fruit

jello. Cool and add the 4 cups of fresh sliced peaches. Pour

into two baked and cooled pie shells.

Southern Pine Beetle Season

For Posterity, Memories
The friendship quilt is a popular quilting bee production. Each quilt patch is 'signed' by the quilter and then all blocks are assembled into an attractive, personalized quilt. This design also lends itself as a wedding gift from many friends or a remembrance for someone moving away. Some families use it as a family tree quilt.
Each block is 10 inches square. You will need approximately 8 yards printed fabric and 5 1/4 yards for solid pieces.

Termite Time
Termites can do a lot of damage to houses. Check under your house once or twice each year for signs of the pests. Be especially careful to inspect wood that is near the soil. Pick at the wood with a knife to see if it is sound. Termite-infested wood will be riddled with tunnels. If you discover termites, treat them with a recommended insecticide or seek professional help.

The three sleeping sickness viruses are often fatal to horses and can infect humans as well.
There are a number of prominent indications of the illness in animals. It may initially cause hyperactivity followed by abnormal drowsiness, tremors, lack of coordination and loss of weight. The animals may also chew excessively, have difficulty swallowing, show impaired vision, reduced reflexes and an irregular gait.

Horse Show Edition

The Georgia Forestry Commission estimates that last year the pine beetle and a couple of his cousins killed some 2,240 cords of pulpwood and more than 387,000 board feet of other lumber. The loss was worth hundreds of thousands of dollars.
Still, additional hundreds of thousands of dollars were paid by consumers to "shady, would-be" exter-
minators who promise to keep the Southern Pine beetle from "eating
your house". By nature the Southern Pine beet-
le is an outdoor creature. They don't like houses and would under no circumstances have it for lunch.
Outside, however, there are a number of tell-tale signs to look for if a beetle attack is suspected in trees.
Any damaged trees whether by storm or otherwise should be treated or removed immediately.
These trees are favorite targets for the pest who quickly bores in just
under the bark and lays eggs. Trees weakened by age should
also be watched closely. They too are likely beetle targets.
Green lumber around construction sites attracts Southern Pine
beetles. Even though the beetles will not settle in finished wood, they will probably find other suitable quarters in trees on the building location.
When damage does occur, and it is not desirable to remove the tree, scrapes, cuts and bruises should be treated as quickly as possible.
Smooth ragged bark edges around the damaged area and paint. Use liberal mounts of pruning paint, an asphalt base paint, shellac or any oil base surface which will form a seal to keep the resin flow to a minimum.
Spraying of pines for protection against the beetle is justified in suspect area. Two insecticides are available for homeowner's use. One is Lindane; the other is BHC (benzenehexachloride). The latter is
marked as pine beetle spray. Use specifically as directed exer-
cising care and caution in spraying the chemicals. Both are penetrating and both will cause skin burn and
irritation. If you think you have Southern
Pine beetles check with the Georgia Forestry Commission. Beware of beetle exterminators who offer to keep beetles out of your house when they were never there in the first
place.

Don't ask why but aphids are attracted to yellow. To make a homemade trap for the buggers fill a yellow dishpan or container 3/4 full pf water and set in the middle of the garden.
When it's tune to tie up your tomatoes use a soft old cloth. (Nylon stockings are a good choice.) Loop the tomato stalk and then cross the tie ends before tying securely to stake. The 'figure-eight loop' leaves a little growing room, lets the plants blow with the breeze and yet gives the plant the support it needs.
Johnnie Daniel of Baxley has developed his own method for getting the most from his catalpa trees (fish bait trees). According to Mr. Daniel, his way of pruning and working them provides him fishing worms when no one else's tree is producing. . "Cut trees off three feet above the ground each winter no matter how big they are. When the new growth reaches six feet, nip the tiny bud out of each limb. This makes more leaves, gives the worms more to eat and lets me reach all the limbs to pick the worms."
Daniel says, "As soon as I find tiny worms on a tree I spend as much time as possible with a fly swat killing wasps that would otherwise rob the tree of the worms."

could conduct a cattle and beef research and information program funded by assessments on cattle sales. Under provisions of the Information Act, the maximum allowable assessment is one-half of one percent of the live animal value of cattle sold.
Smith said the purpose of the hearings is to receive evidence of the need for such a program.

He says April and May this year have been "unusually wet" with the state's rainfall now at more than five inches above normal for the year. Lang says this has produced generally a good soil moisture content ... one he predicts "should hold."
Lang said the rainfall factor may diminish somewhat during mid and late June, but, that crop soil should not suffer because of the moisture build-up already experienced.
"Most of Georgia's farmers have gotten by a 'critical period' this year with the weather turning in their favor," said Lang.

The first varieties known to Englishspeaking people bore colorful eggshaped fruit, hence the name 'eggplant'. Spaniards called them 'apples of love' while botanists in northern Europe called them 'mad apples' because they were thought to cause insanity.
In Georgia eggplant is a good candidate to grow in home vegetable gardens. Horticulturists recommend that you use plants rather than wait for seed germination. These are hot weather vegetables and should not be planted until the daily mean temperature reaches 65 to 70 degrees. Day temperatures of 80 to 90 degrees and night temperatures of 70 to 80 degrees are considered optimum.

The 'gold' wagon train is on the move through Georgia. It started its trek from Jekyll Island to Dahlonega on May 12. Scheduled arrival in Dahlonega is June 14.

Slugs are having a grand time in most gardens this year due to the wet spring. There are several commercial slug killers on the market which are most effective but if you prefer a homemade method, the most popular is the old beer-killer.
Place a saucer or wide-mouth jar lid full of beer around the garden at night. In the morning you should find a pile of deceased slugs. (Caution: cats are known to go for beer too, and although it probably won't kill them, it may have an adverse affect on them.)
If you prefer you can mix up a yeast poison for the sluggers. Actually it is the yeast in the beer they are after so a mixture of one
