Sweet Potato Growers Meet
Georgia, the seventh ranking state in the nation in sweet potato production, hosted the 16th annual convention of the Sweet Potato Council of the United States in January.

"How Far in How Long" was the topic of discussion by Dr. Teme Herandez, Professor of Horticulture, L.S.U. Dr. Maurice Hoover, Professor of Food Technology, N.C. State University presented "A Critique of Dehydrated Sweet Potato Products".
A fine cross-section of American agriculture was represented at this gathering with attendees coming from New York, California and all southern states.
Sweet potatoes, which contributed approximately seven hundred thousand dollars to the states' economy last year, are known for their nutritional value, versatility and good taste. All of these factors contribute to make the sweet potato a very popular vegetable in America.
Sweet potatoes are native to the Americas. They were grown in areas of Central and South America and most Caribbean Islands. Sweet potatoes quickly became an important crop in the South. Sacks of yams were traded by early merchants and the tasty tubers helped fight off starvation during the early days of colonization.

Hog Cholera Free At Last
Arbor Day is February 17. It is a special day to appreciate trees and their value in our lives. Trees help
purify the air, act as noise buffers and help save energy by shading our homes in summer. The Georgia Forestry Commission and State Department of Transportation crews are shown planting a tree along interstate 85 near Atlanta as part of the reforestation and beautification project sponsored by both agencies. The highway interchange planting program was started in 1970 and every year
during planting season, November through March, thousands of pines and oaks are planted along Georgia's interstate highway system.
It has just been announced that the United States has achieved hog cholera free status. The war to eliminate this $100 million costly disease
was begun in 1962.

In 1972 Georgia was one of the first major hog producing states to achieve this status but until the entire country was declared hog cholera free, all states were in constant threat of a new outbreak.
When Congress implemented the eradication program to rid the
country of hog cholera, the disease was costing hog producers more than $50 million per year in preventive measures and actual losses from swine herds.
Georgia farmers were particularly concerned with combating hog cholera due to our large swine production. (We are the eighth largest hog producer in the country.)
The Georgia Legislature passed the anti-garbage feed law which prohibited the feeding of garbage to hogs. Evidence had proven that the deadly hog cholera virus lived and multiplied in garbage. By restricting it from the hog diet, the threat of contamination was lessened.
In addition, veterinarians and Department of Agriculture inspectors throughout the state were
urged to report any suspicious herds, which resulted in early detection and treatment of hog cholera outbreaks.
Department diagnostic labs in Tifton and Athens began testing every swine specimen for hog cholera as a surveilance measure. This testing will continue as a precaution even though Georgia's last case of hog cholera was more than five years ago.
Hog cholera, also known as swine fever, still exists in many countries throughout the world. The virus affects swine only and can not be transmitted to humans or other animals. The disease is often fatal
and can sweep through an entire herd before it is brought under control.
Monty Holland, dimming, receives the Georgia poultry industry's first annual 'Georgia Broiler Grower of the Year' award from Governor George Busbee. Mr. Holland and his wife Betty were honored at ceremonies at the Capitol last week. The 'Broiler Grower of the Year' contest was established to honor outstanding growers and to give recognition to all of the 25,000 men and women in Georgia broiler production.

The MARKET BULLETIN has no jurisdiction over such instances. A smart buyer and or person breeding a mare will ask to see the papers first.
In order to qualify to advertise horses, horse farmers should have had the livestock advertised in their possession 60 days or more before offering it for sale through this publication.
All horses offered for advertisement through the Market Bulletin should have a negative coggin test within the past 60 days.
On recommendation of the State Equine Board, at stud notices are published in the Farmers and Consumers Market Bulletin during the prime breeding season only, January through April.

CAULIFLOWER CASSEROLE
1 medium cauliflower, separated 1 c. chopped green pepper
into flowerettes
1/2 c. clived onion
3 T flour
3 T peanut oil
1 1/2 c. milk
1 c. grated cheddar cheese
1/4 c. grated cheddar cheese
1/4 c. peanut butter
1/2 tsp. salt
dash of pepper
1/2 c. chopped peanuts
Parboil cauliflower flowerettes, green pepper and
onion in salted water just until tender. Drain and arrange
in 1 1/2 qt. casserole. In a skillet over medium heat, blend
peanut oil and flour. Add milk, stirring constantly, and
bring to a boil. Boil for one minute. Remove from heat.
Blend in 1/2 c. of cheese, peanut butter, salt and pepper.
Pour over vegetables. Top with chopped peanuts. Bake in
350 degree over for 30 minutes. Five minutes before the
end of baking, top with remaining 1/2 c. of cheese and re-
turn to oven. Serves 6-8.

1 c. softened butter
Mix well and press in long pyrex dish. Bake 20 minutes
or until brown at 350 degrees. Cool and press down.

8 oz. pkg. of soft cream cheese 1 c. of confectioner's sugar
Fold In:
9 oz. of cool whip topping
Spread this mixture over cooled shell, Top 1 can of
strawberry, cherry or blueberry pie filling.

CRANBERRY CAKE
2 1/4 c. self-rising flour
1 1/4 c. sugar
1/2 c. shortening
1/2 c. evaporated milk
1/2 c. water
1 tsp. vanilla
4 eggs
Heat oven to 350 F. Blend flour, sugar, shortening, milk,
water, and vanilla together. Add eggs and blend. Pour in-
to 9 inch baking pans. Cook 30-35 min. Cool. Fill layers
with 1 c. cranberry filling. Frost sides of cake with creamy
frosting forming 1/4 inch ridge above top of cake. Spread
top of cake with remaining cranberry filling.
Cranberry Filling
1 can (8 oz.) crushed pineapple, 2 T. plus 1 tsp. cornstarch
drained (SAVE 1/4 c. pineapple 1 can (16 oz.) whole cranberry
syrup.)

Blend pineapple syrup and cornstarch in sauce pan. Stir
in pineapple and cranberry sauce. Cook until mixture
thickens and boils. Boil and stir 1 minute.
Creamy Frosting
1/4 c. butter or margarine
2 1/4 c. powdered sugar
softened
1 -2 T. evaporated milk
1 tsp. vanilla
Blend butter and sugar. Stir in vanilla and milk. Beat un-
til smooth.

Important To All
One very important reason why consumers should be involved in metric conversion decisions is because of the widespread impact that measurements have on our lives. Some areas which will be affected include:
1. The Supermarket items measured by volume will be marked in milliliters and liters. Items sold by weight will be marked in grams and kilograms.
2. Clothing clothing sizes will probably be based on body dimen-
sions measured in centimeters. It is hoped that new sizing will be more uniform and more closely related to actual body sizes than the present system.
3. Textiles cloth will probably be sold in even metric widths which are similar to our old standard widths of 36", 45" and 60". Sewing patterns will have dual sizing for a time with metric first and then customary measurements.
4. Household Furnishings furniture dimensions will be given in centimeters; carpeting will be sold by the square meter.
5. Appliances

Galax is more well known for its leathery evergreen leaves than it is for its small white flowers. The plants are low growing and reproduce from underground runners.
Most people have seen galax leaves, either in their natural woodland habitat or in a florist's corsage. The leaves are very suitable for arranging in displays, floral sprays and bouquets. When violet bouquets were in style, galax leaves were used as an outer decoration.
The beautiful heart shaped leaves are up to 5 inches across. The veins are prominent on the waxy surface and the edges are delicately scalloped. In fall the leaf margins turn red and leaves in exposed situations turn bronze in winter.
Galax is a distinctive ground cover. It is native to Georgia and is also known as galaxy or beetleweed or windflower.

Continue stirring for 15 minutes until mixture begins to get very thick. If the soap mixture hardens before time is up, immediately pour in molds which have been lined with wax paper. If the soap or mixture tends to separate while stirring, beat harder. Otherwise moderate stirring should be sufficient.
To modify the recipe, add 2 Tablespoons borax to the lye and water solution. If color and fragrance is desired add food coloring and perfume just before soap is poured into molds.

Graduates may take advantage of a variety of opportunities in agriculture and related industries. Or they may continue study in a specialized field such as bacteriology, plant breeding, nematology, mycology, crops pathology or disease diagnosis and control.
Majors with BS or MS degrees qualify for positions as county agents, research assistants, high school science teachers, laboratory technicians in government agencies and for various sales and technical positions with commercial companies at starting salaries of $10-15,000, Dr. Garrett continued.
"Teaching and research positions in industry as well as in colleges and universities usually require the Ph.D. degree. We have a continuing demand for those trained at the Ph.D. level in plant pathology and genetics."
In pest management, he said, there is a "great demand for students to fill positions which require the training of those receiving the MS degree in plant protection and pest management. In the case of the MS and Ph.D. degree in plant pathology there has been a constant demand for good students in these areas for a number of years."

Elections, Farm Show
For Peanut Producers
Peanut farmers have been busy electing new officers for the Georgia Peanut Commission as well as planning for the 2nd Annual Georgia Peanut Farm Show and Progress Days.
The biggest farm show for peanuts in the world will be held in Tifton at the Rural Development Center, February 15 - 16. A highlight of the show will be a USDA public hearing announcing the support prices of peanuts for 1978.
Peanut commission members have also announced officers for 1978. George Whelchel, Crisp County, has been reelected chairman of the Georgia Peanut Commission. M. L. Miller, Brooklet, was elected vice chairman.
Other board members include Luther Spooner, Donalsonville, Lucius Black, Preston and H. C. Dodson, Jr., Tifton.
