Dogwood Farm, a leading thoroughbred training facility in Greenville,
Georgia, recently invited the Atlanta Farmers Club to visit the 1124 acre
operation. Under the direction of W. Cothran [Cot] Campbell the farm has
been operating since 1972. Located 40 miles south of Atlanta, the farm is
one of the many horse farms in Georgia which are increasing in number as
the horse industry grows in our state.

Depends On Exports
The future of the Georgia farmer depends in part on our ability to establish a strong marketing system by putting forth a tremendous effort to develop markets worldwide. This is our immediate goal and my challenge to you.
We have the efficiency and knowledge to grow food better and
more economically than any other country in the world. Now is the time to capitalize on these great agricultural assets.
As the world's economy continues to improve, many countries are making new efforts to improve their standard of living and the diet of their citizens. Certainly America is the only dependable supplier these countries can turn to for the food and goods they want. We must move forward to capture these markets that did not exist a decade ago. We raise more food than we can use at home. Without new markets farmers must cut back production. The more farmers cut back production, the more land and equipment will sit idle and the price of agricultural products at home will increase. Export markets allow farmers to produce nearer their full capacity permitting them not only to do better financially but to help keep down food costs for all of us. There are less than ten countries in the world that produce en-

In announcing the opening date, Irvin said crop prospects appear "excellent" although dry, hot weather is beginning to hurt a little in some areas. He said harvesting
was just getting underway and is not as far along as it was this time last year, but harvest activity is expect-
ed to pick up rapidly.

I took two hogs to a local meat packer and asked that they be slaughtered, and dressed for me. I wanted the hams, side meat and the rest in sausage. When I picked up my meat I had all sausage and only meat from one hog. The man at the packing house said the other got away. What can I do?

Hie MARKET BULLETIN has received numerous complaints of people who buy a horse with the seller promising to send papers later and the papers never appear. The MARKET BULLETIN has no jurisdiction over such instances. A smart buyer and or person breeding a mare will ask to see the papers first.
In order to qualify to advertise horses, horse farmers should have had the livestock advertised in their possession 60 days or more before offering it for sale through this publication.
All horses offered for advertisement through the Market Bulletin should have a negative coggin test within the past 60 days.

2 cups green bell peppers-sliced 2 reg. red bell peppers sliced
in strips
Soak squash in brine water for 1 hour before pickling.
Mix 3/4 cups of salt in 3 quarts of water to soak squash.
3 cups vinegar
4 cups sugar
2 tablespoons celery seed
2 tablespoons mustard seed
Bring vinegar to a good boil, then add vegetables and
let come to a boil again, but do not cook any longer. Very
good. Makes 6 pints.

HARVEST TIME
Harvesting those garden vegetables at the proper stage of maturity is necessary for highest quality, says Paul Colditz, Extension Service horticulturist. And that doesn't always mean full maturity. In fact, if crops such as beans, okra, squash and cucumbers are left on the vine to fully ripen, the plant will stop producing. So it is important to pick these vegetables regularly.

What 9 Coconut?
Although coconuts will not grow in Georgia, they are enjoyed year-round by Georgia residents. Coconuts are considered a vegetable, fruit, ornamental and herb in their native surroundings. In fact, there are few plants which are as versatile as the coconut.
Besides enjoying the wholesome goodness of the coconut meat, coconuts also yield a refreshing, nutritious "milk" which is always cool because the wall of the nut serves as an insulator against the heat. The coconut juice is also reputed to have a mild peptic reaction on fhe stomach which prevents indigestion.
The roots of the coconut tree are ground and used like tea or coffee in the mid-east; mattresses are made from the fibers of the coconut husk; housetops are made of coconut leaves; the shells make excellent drinking cups and much much more. Coconuts are easily one of the most indispensable plants in the world.
The milk of the coconut means the milky colored liquid that can be pressed from the coconut meat not the coconut water. To prepare coconut milk, grate the coconut, spread in a shallow pan moistened with a little coconut water. Set in a warm oven a few minutes to release the oils. Put the coconut in a cheesecloth bag and wring out the milk. Discard the sawdust-type remains.

Once yeast bread dough has risen and is ready for shaping, don't add more flour. Extension Service home economists say the extra flour will cause streaking in the dough.

High Stepping Horses Often
Suffer From Illegal Soring
Horse shows can be good fund raisers, particularly when high-stepping
breeds are present to accentuate a performance. One of the methods of
obtaining this accentuated gait is "soring", which is a cruel practice now
forbidden by federal law.

years ago. Our farmers are growing . enough to take care of both domestic and export demands.
A full production policy for food and fiber, however, is dependent on the freedom to sell these farm products overseas. In order to be a dependable supplier of food and fiber, we must not allow embargo or threat of embargo to hurt our reputation as a dependable food supplier. Embargoes interfere with the marketing system and cause price swings that are harmful to farmers and consumers.
We also must work to get unreasonable tariffs lowered so we can compete in the world market. In this effort I have contacted special U.S. Trade Representative Robert Strauss to seek a reduction in the trade barriers which are hurting the sale of American tobacco abroad. Representative Strauss must assist us in alleviating some of the unreasonable trade restrictions on our other food commodities as well.
As a dependable exporter, Georgia's reputation is outstanding. In the past five years since the international trade division in the Department of Agriculture was established our exports have increased more than 200%, from $203 million in 1973 to $475.7 million in 1977.
Georgia exports agricultural products all over the world, but the surface has only been touched. The potential for Georgia's exports is
its gait by placing its hind feet further forward and quickly raising its front feet whenever they strike the ground in order to avoid the

stopping soring rests with the management of horse shows, sales and auctions. These individuals are held accountable for examining each entry and excluding sored horses.
The Horse Protection Act is enforced by the Animal and Plant
Health Inspection Service (APHIS), an agency of the U.S. Department of Agriculture. APHIS inspectors do come to horse shows unannounced to check for compliance by management and participants. They must be admitted free of charge and given free access to the grandstand, show ring, sale and auction facilities,
stables etc. If a horse show management
organization is unfamiliar with
required procedures, here are a few key processes to follow: I/ Inform
all participants that sored horses will be excluded and APHIS regula-
tions enforced. 2/ Study APHIS regulations as many can be under-
stood and acted on by laymen. For example, laymen can learn to recog-
nize banned equipment, padding, scars, and lubricants. 3/ Instruct judges and stewards to exclude sored horses and horses that
present a bad image. 4/ Hire a veterinarian to identify sored horses
and exclude all horses he disqualifies. (Following this last suggestion discharges management's legal responsibility to examine horses.)

To grow extra large pumpkins, remove all blossoms or young fruit except for one, never letting them run dry and fertilizing once a week. Also, if you want to personalize your pumpkin, scratch your name on the outside skin while it is still growing. If you let weeds grow in your garden, they can cut as much as half of the production. Cut or pull them before they are 2 inches high and absolutely before they go to seed. One year's seed will make for seven year's weeds.
