The next time you see a dairy cow - tip your hat! She lowers the price of your morning orange juice. If you use sugar in your coffee, the same cow probably reduced the price on it also. What does a cow have to do with prices of foods other than milk? That is a good question and leads us into an interesting untold story.
When oranges are squeezed to get the juice that you buy as a frozen
concentrate, the processor is left with the peels and pulp. Many years ago these leftovers were hauled out and dumped. The smell was horrible and the neighbors com* plained. The second idea was to dig wells and dump it in them. Unfortunately, when the

pulp fermented the build up of gas caused the wells to explode.
Then someone got the idea of feeding the waste to cattle. Recycling of citrus pulp was born. What was once a smelly waste product is now a favorite feedstuff for dairy cows throughout the Southeast.
Now, about that sugar. When raw sugar is refined, the minerals and part of the sugar are separated into a product called blackstrap molasses. In the early days of sugar refining it was dumped into a nearby river. The net result was a mess and today would not be tolerated.
Fortunately, someone discovered that cows think molasses is the greatest thing since spring grass. The result - the cows are productive and sugar costs a lot less than it would if you had to pay to dispose of the molasses.
These are but two examples of the 40 million tons of former waste materials that were recycled last year by beef and dairy farmers. Included in the list are the residues of the corn after the corn oil is removed, beet pulp from beet sugar, peanut meal from peanut oil production, wheat mids from flour production, brewers grains from beer

More Beef Imports Will
Hurt US Cattle Farmers
Commissioner of Agriculture Tommy Irvin urged President Carter in a telegram not to increase beef imports as this would create more problems instead of solving any.
Irvin said an increase in beef imports would hurt consumers as well as the cattleman in that it would kill the incentive for beef producers to increase their herd which is necessary over the long haul to stabilize prices.
Cattle prices have increased; however, the cattle prices have been depressed for four years causing farmers to liquidate their livestock. Therefore the supply is not there at this time, Irvin said.
Left alone at reasonable prices beef production would increase and the price would stabilize. Increasing beef imports puts further burden on our foreign trade deficit, is unfair to the cattle farmer and will not help the consumer in the long run, Irvin said.

June Dairy Month Salutes

Ga. Dairymen And Cows

The dairy farm, one of Georgia's first specialized agricultural industries, is being honored this month. The theme of this year's dairy month celebration is "milk, a natural choice."

Milk is an excellent source of calcium which is needed for strong bones and teeth. Children like Burke Jackson should drink about three cups of milk every day for good nutrition.
The summer horse show edition will be July 5. Deadline for notices is June 26. Horse clubs are encouraged to send in all listings for July, August and September shows.
In addition, at stud notices will be published in the July 5 issue. At stud notices are published four times a year - July, October, January and April. Word limit for these notices is 35 words including name and address. Deadline is June 26.

June has traditionally been a month of high yields in milk production. For over 40 years, consumers have paid homage to dairy farmers during this month in recognition of the importance of dairy foods in the family diet.
According to the U.S. Department of Agriculture, there are now 963 dairy farms and 129,000 head of dairy cows in the state. In 1977, these farms produced an average of 106 million pounds of milk per month.
In a world where the price of nearly everything you buy is increasing daily, milk and dairy products remain as a bargain.
Dairy foods are very important to the family diet, supplying 75 percent of the daily dietary calcium requirements. With eight different dairy foods, there are a variety of ways in which to satisfy this calcium need.
Ranked 25th in production in the U.S., Georgia is self-sufficient in its dairy products requirements. In 1977 alone, the state produced 240 million pounds above its fluid milk needs.

Produce auction sales twice a day, two days a week at the Atlanta State Farmers Market started June 20.
Farmers carrying vegetables to the market may sell through the auction, use the standard shed method of display sales or use any combination of the two to dispose of their produce.
The auction, patterned after similar sales at Thomasville and Moultrie State Farmers Markets, is a result of suggestions from market users and representatives of American Agriculture.
Initial sales will be on a trial basis but if successful they will become a permanent feature of the huge Atlanta market.

others of being more careful when buying goats. The ad in the BULLETIN read seven registered Nubian goats. We traveled from Sylvania to Tennille a long ways. We bought two goats and the man assured us we would get our registration papers on the goats in six weeks.
After writing him several times, long distance phone calls, etc. we still have no papers. I asked for the name of the place where he had the goats registered so I could contact them. I have never heard anymore.
The warning is if you want any registration papers have it in your hand when you pay or you may end up not getting any papers.

CHECK UNDERSIDE
When checking your plants for insects, be sure to look at the underside of the leaves. Most insects feed on the underside, but most people tend to look only at the top side. And many times, say Extension Service entomologists, insects are so small they are hard to see. So look for light colored foliage where the insects have sucked out the juices. Also, look for malformed leaves and for a bronze color on the leaves.

FOR DISHWASHERS
A cold water rinse is a great help in removing leftover eggs, milk, cheese, rice and oatmeal from dishes. Extension Service home economists suggest soaking dishes and utensils before washing. They point out that hot water will cook these foods onto plates and utensils, making them more difficult to remove.

DAIRY DESSERT CONTEST WINNER

MINT LAYERED DELIGHT

First Layer:

1/2 c. butter, melted

1 c. self rising flour, sifted

1 c. nuts (pecans), chopped

Preheat oven to 350 degrees. Combine the

ingredients above. Press the mixture into bot-

tom of an eight inch square glass baking dish.

Keep fingers well buttered while pressing the

mixture. Bake 20 minutes. Cool.

Second Layer:

1 1/2 c. heavy whipping 2 T. granulated sugar

cream, chilled and

1 -8 oz. pkg. cream cheese,

whipped

at room temp.

1 c. powdered sugar, sifted

Whip whipping cream until firm. Mix

granulated sugar with whipped cream. Blend

cream cheese and powdered sugar until smooth.

Fold 1 c. of the whipped cream into cream

cheese mixture. Spread this mixture over 1st

layer. Save remainder of whipped cream for 4th

layer.

Third Layer:

2 c. whole milk

1 Irg. pkg. (6 3/4 oz.) instant

1/21. peppermint extract

chocolate pudding

Combine the 3 ingredients above and mix for 2 minutes. Pour this mixture over second layer.

Fourth Layer:

Remainder of whipped

2 sticks mint candy crushed

cream

(green preferred but red

sprig of mint

may be used)

Spread whipped cream over last layer. Crush

mint candy and sprinkle over 4th layer. Garnish

with sprig of mint. Cut in 2" squares to serve.

1 med. hd. green cabbage 2 small dill pickles

1/2 med. onion, optional 1/2 med. bell pepper cut in

mayonnaise or salad

Chop onions, bell pepper and dill pickles into

fine pieces. Grate cabbage fine. Mix all

ingredients together with 3 T. mayonnaise or

salad dressing. Mix until it holds together. Add

salt and pepper to taste.

Add enough water to make batter, take each bloom coat with batter on both sides and fry in oil. People who don't like squash, will sure like your fritters.

HEAVENLY RICE PUDDING

1 1/2 c. cold cooked rice 1 1/2 c. diced marshmallows

1/2 c. well drained canned or 1 c. coconut

crushed pineapple

2 tb. lemon juice

1 c. filled confectioner sugar 1/2 c. well drained chopped

2/3 c. (small can) undiluted maraschino cherries

evaporated milk

Mix rice and marshmallows (or coconut)

pineapples, nuts and cherries in bowl. Chill

evaporated milk in refrigerator tray until soft

crystals form around edges of tray 15 to 20 min.

Then whip until stiff about 1 min. Add lemon

juice and whip very stiff about 2 min. Beat in

sugar fold whipped evaporated milk into rice

mixture. Spoon into serv. dish.

PARTY TIME PORK CHOPS

8 pork chops

1/4 c. soy sauce

1/4 c. salad oil

1 dove garlic, cut up

3/4 tsp. ginger

1/4 tsp. oregano

1 tsp. maple syrup

3/4 c. cooking sherry or

other cooking wine

Brown pork chops in a skillet. Place in a

baking dish. Place all other ingredients in blen-

der container, cover, and blend on a med. speed

until smooth about 15 sec. Pour over chops,

cover and bake at 350 degrees for 1 to 1 1/2 hrs.

or until tender. Turn chops once during baking

for browning on both sides. Serve with cooked

rice or stuffing and use the remaining sauce as

gravy.

HUSH PUPPIES

1 1/2 c. corn meal

1 c. serf rising flour

1 med. onion, chopped fine 1 c. buttermilk

Mix together corn meal, flour and onion. Add

buttermilk. Mix together until you can pick up

with a teaspoon. Use teaspoon of mixture and

drop into hot grease. Let both sides brown. Drain

on paper towel. Hushpuppies taste better if

cooked in grease where fish has been deep

fried.

DILL PICKLES

4 Ibs. cucumbers

6 tablespoons pickling salt

3 cups apple cider vinegar 3 cups water

3/4 to 1 cup dill seed

21 peppercorns

Boil vinegar, water and salt. Pack cucumbers

into clean jars. Pour the solution over cucum-

bers. Add 3 peppercorns and 2 tbs. dill seed to

each jar. Seal and put in a cool, dark place. If you

have grape leaves line the jar before packing

the cucumbers in them. They will keep the

pickles dark green.

GERMAN POTATO SALAD

3 Ibs. small red potatoes 8 strips fried bacon (save

1/2 c. bacon grease

1 tsp. flour

1/2 c. vinegar (can add

3/4 c. water

more to taste)

3 or 4 hard boiled eggs-sliced

Wash potatoes, boil in salt water with jackets

until soft - let cool - peel & slice. Crumble bacon

and put between layers of potato slices. Mix

bacon grease & flour & vinegar & water. Turn off

heat and add 1 med. chopped onion. Don't

brown, let cool to luke warm. Add 1 tablespoon

of brown mustard and 1 tablespoon mayonnaise.

Mix and pour over potatoes & toss lightly. Gar-

nish with sliced eggs on top. Add a little salt &

pepper. Serve warm.

My non-dairy coffee creamer's label states that it contains no cholesterol, but one carton contained coconut oil, which my doctor advised me to avoid. Another recently purchased carton did not have this information on the label. How can I know what's inside?
L.G. Savannah Happy to hear you're being label conscious and agree that the information printed on food containers can be confusing. The label was accurate in stating that no cholesterol was present; vegetable fats do not contain cholesterol. But there are different types of vegetable oils. Poly-unsaturated ones such as corn or safflower oils act to lower the
cholesterol count. Others are saturated like coconut of hydrogenated oils and do not lower the cholesterol count. The company is sending you literature about their product and do continue to follow your doctor's advice. The Department of Agriculture does check labels for accuracy and encourages you to read before you buy.

The search for new products to be recycled for feed goes on in the experiment stations every day. We at the Georgia Station are interested in such products as cannery waste, straw from the production of wheat, oats and barley, cardboard boxes, bones and scrap from poultry processing, household scraps, and many other nutritious products that today constitute pollution problems.
So, when you next see a cow, remember she is not only the source of cheap milk and meat - she holds down the price on many food products by recycling processing residues.

Quarantined areas in counties of Decatur, Echols, Lanier and Lowndes are scheduled to be released. The hearing will quarantine a portion of Ware and release other areas in that county.
Pesticides
Regulations for implementing the Georgia Pesticide Use and Application Act and the Georgia Pesticide Control act have been proposed for adoption. This action is required by the Environmental Protection Agency for final approval of Georgia's plan for certification of pesticide applicators.

Cows have to be milked morning and night without fail. Labor is expensive to keep and hard to find. More often than not, dairying becomes a family operation as a result of the constant responsibilities and management requirements.
Dairymen were the first in Georgia to organize a commodity commission. At the present time, they are assessing themselves 8 cents per hundred weight, (approximately 2/3 cents per gallon), for promotion, research and education in the dairy field.
Dairying has made great strides from years previous when most of the work was done by hand. Modern milking equipment, transport and storage in modern refrigerated compartments, and advanced purification techniques provide the finest dairy products in the world for Georgia consumers.

Chives have been used by tribes of Asian people centuries before Christ. They have continued to be one of the most popular herbs for an estimated 5,000 years.
Chives are members of the lily family and produce tiny bulbs which can be divided for new clumps of the fast growing herb. They grow to a height of two feet and the leaves are hollow with a slightly oniony flavor.
The flowers produced by the chive plant are pretty enough for a decora tive border but if the plant is allowed to bloom the delicate flavor of chives is lost. Herbs which are to be used exclusively for seasoning should not be allowed to flower for the flavors become stronger and more pungent after blooming.
Chives like moist and fairly rich soil. Dump a handful of coffee grounds around chive plants to make them really happy.
As perennials, chives come back every year. If you want to have fresh chives throughout winter, though, transplant a small clump to a sunny windowsill and enjoy fresh chives all year.
Grandpa's Garden
We have received many requests for oldtimey garden hints. While most of these methods have not been 'research-tested' they have withstood the test of time. If you have hints to share with our readers, please let us know.
Save your banana peels. Besides their value in compost piles, if you chop them into small pieces and bury around tomatoes, eggplants and peppers the plants will have higher yields. When buried around the base of rose bushes (no more than three banana peels per bush at one time), the rose will have stronger stems and better blooms. (Fact: banana peels yield 3.25 percent phosphorus and 41.76 percent potash.)
Don't smoke in the garden. Tomatoes, peppers, eggplants and petunias are highly susceptible to tobacco mosaic virus. If you smoke, scrub your hands with soap and water before handling these plants. Also, if your garden is mulched with hay or pine straw, a careless 'butt' could eliminate your garden this summer.
If rabbits are chewing your garden away, fill large soft drink bottles half full of water and bury upright or at an angle so that about four inches of bottle sticks above the ground. Place bottles about every four feet around the border of the garden. The whistling noise of the wind over the top of the bottles

Cotton Production Declines As Crops Diversify In Ga.

The 1977 production of Georgia cotton fell to the lowest levels in recorded history, at 82,000 bales. This is a small figure compared to the over 9,000,000 bales once produced in the state when cotton was "King".
The history of cotton in Georgia has greatly influenced our state. At one time cotton reigned supreme in Georgia, with more than one-third of the state's cropland devoted to its production.

During the 1850's the demands for cloth in the U.S. and in Europe were
increasing daily. Georgia possessed a good climate for cotton, and with
available labor, the state was set for mass production.

Cotton was shipped by rail from Thomasville, Albany, Columbus and Rome, direct to ships in Augusta, Savannah and Brunswick. Completion of railway systems within the state opened up vast new frontiers
which were soon transformed into swaying seas of cotton.

After 1863 and during the remainder of the Civil War years,
cotton production was sharply curbed as there were few avenues of shipping left open and surpluses
were steadily mounting within the state.

Cotton fields are getting harder to find in Georgia.

With the end of the war came a renewed demand for cotton. The long starved cotton mills of New England, Britain and France were calling for cotton as never before and were willing to pay fantastic

What is cultured milk? Mrs. Linda Wall, Extension Service home economics specialist in foods and nutrition, says cultured milk has undergone flavor and texture changes through "souring." One or more harmless bacterial cultures are used. Buttermilk and yogurt are examples of cultured milk.

was not an uncommon price for cotton. This was an exorbitant price when compared to the eight, ten and eleven cent prices on which many a planter reaped his fortune in the 1850's.
The Georgia cotton crop of 1880 reached the 6,000,000 bale mark, and in 1891, 9,000,000 bales were marketed. However, the enormous production levels gradually caused prices to drop.
By 1873, the crop brought fifteen cents a pound, eight to ten cents during the 1880's and as low as four and one half cents during the 1890's.
By the last decade of the 19th century, Georgia cropland was suffering from overuse and erosion from the enormous cotton crops. The
need for enrichment ushered in the "fertilizer craze" in Georgia and new techniques in farming.
During the three years of 1921-23, the state's normal bale average of 1,750,000 dropped to 600,000 bales. Soil erosion, the labor shortage, the boll weevil and a one crop economy all teamed up to put an end to the great era of growth.
Georgia was for many years a national leader in cotton production. As the pie graph indicates, in 1927 more than half of Georgia's

agriculture was devoted to cotton. The years between the late 1920's
and late 1940's however saw a shift in Georgia agriculture. During that time Georgia became a multi-crop economy with a large percentage of cropland being devoted to peanuts, tobacco and later soybeans.
In 1965 the Georgia Cotton Commission was established for the purpose of carrying on programs of research, promotion and education relating to the cotton industry. One of the most outstanding projects they have helped promote is the new boll worm study which will be jointly funded by the Cotton Commission and Governor Busbee's emergency fund.
This new research hopefully will alleviate the worm problem which threatens to destroy the future of cotton farming in Georgia. This boost is expected to help increase the number of cotton fields in Georgia.
Although cotton may never be grown on the large scale it once was produced in Georgia, cotton's importance to the state's agricultural heritage can never be diminished.
