Forests occupy 69 percent of the state's land area, and provide the raw material for the state's woodusing industries. These industries funnel an estimated $3.4 billion a year into Georgia's economy.
February 18 is Arbor Day in Georgia. We should give attention to
this observance, and at all times support, aid and take part in the protection, development, and perpetuation of the state's timberlands.
This year's observance marks Georgia's 87th anniversary of Arbor Day v Hopefully many school children, teachers, garden clubs,

WHEREAS: Georgia has been richly endowed by Nature with rugged mountains, rich piedmont area and a fertile coastal plain, island-studded lakes and crystal streams, attractive coastal shores; all enhanced by forested areas, and
WHEREAS: Our forests occupy 69 percent of the state's land area; having for more than three centuries produced the raw materials for lumber, paper, and other wood-processing plants which manufacture a variety of products worth annually about 3,4 billion, thus giving steady employment to thousands of our citizens, and
WHEREAS: Good forest cover helps to store water in the soil, reducing flood run-off and preventing soil erosion, stabilizes the natural flow of rivers so necessary in the production of electric energy; provides cover and food for wild life

Dear Editor:
I want to know how to make a "crystal garden". Do you have the instructions?

(Editor's note: When flowers are not yet in bloom, crystal gardens are just the thing to cheer up a wintery home. Instructions are listed below:

6T. common salt

6 T. water

6 T. bluing

1 T. ammonia 2 or 3 good-sized lumps of soft coal

1) Place soft coal in shallow glass container. If you want your crystal garden to have trees and bushes, glue tiny sticks or twigs on top of the coal. Let glue dry and barely cover the bottom of the container with water. 2) Mix salt, bluing, water and ammonia together. Pour this mixture very slowly over the coal. 3) To color the garden, drop different colors of food coloring over the garden with a medicine dropper. 4) Crystals will begin to form after about 10 minutes. In a few hours the garden should have odd and interesting shapes. Carefully drop on a little more ammonia if you have bare spots. 5) The crystal garden is very fragile so handle with care.

Febuary Is Egg Month

PARTY STUFFED EGGS

12 Hard-cooked eggs 1/3 cup butter, softened 4 oz. pkg. cream cheese,
softened

1/4 teaspoon salt 1/2 teaspoon prepared mustard 1/2 tbs. lemon juke

Peel and halve the hard-cooked eggs and place yolks in

a medium size mixing bowl. Blend in remaining ingredien-

ts and whip with an electric mixer until fluffy. Place yolk

mixture in pastry tube and fill the egg whites generously.

Top with paprika, sliced olive, shrimp or caviar. Serve at

room temperature.

BACON AND CREAM CHEESE EGG SPREAD

1 pkg. (8 oz.) soft cream cheese salt to taste

4 chopped hard-cooked eggs 1 tsp. instant minced onion

2 tbs. mayonnaise

2 to 3 drips hot sauce

1/4 tsp. pepper

8 slices cooked bacon, crumbled

(makes 2 cups)

Thoroughly mix the following ingredients and spread on your favorite sandwich bread:

In a large saucepan blend soup with mushrooms including

liquid. Add remaining ingredients except eggs and

noodles. Cook over medium heat, stirring constantly until

cheese is melted. Gently stir in eggs. Bring to serving tem-

perature. Serve hot over noodles with additional soy

sauce, if desired. Makes 6 servings.

ASPARAGUS EGG MEDLEY

6 hard-cooked eggs, sliced 2 cans (15 oz. each) asparagus
spears OR 11/2 Ibs. fresh asparagus, cooked 1/4 cup butter 1/4 cup all-purpose flour 1/2 teaspoon salt

2 cups liquid (asparagus liquid phis milk)
1 cup shredded pasteurized process cheese spread
1/2 cup corn flakes Toast points, split ami toasted
English muffins or rice, optional

Drain asparagus, reserving liquid; set aside. Melt butter; blend in flour and salt. Cook, stirring until mixture is smooth and bubbly. Stir in reserved asparagus liquid and milk all at once; heat to boiling, stirring constantly. Boil and stir until mixture is smooth and thickened. Remove from heat, add cheese,, stirring until melted. In greased 2quart casserole, alternate layers of reserved asparagus spears, egg slices and cheese sauce. Sprinkle with corn flakes, completely covering eggs. Bake in preheated 350 degree oven 15-20 minutes or until hot and bubbly. Serve over toast points, if desired. Makes 6 servings.

EGG SALAD ORIENTAL

1/3 cup bottled French dressing 1 cup cleaned, cooked shrimp

2 tablespoons lemon juice

(approx. 6-8 oz.)

2 tablespoons soy sauce

1/2 cup chopped green pepper

1 tabkupoon instant minced

or chopped green onions

3 cups cooked rice

Lettuce leaves

5 hord'cooked eggs, chopped 3 hard-cooked eggs, wedged

2 medium cucumbers, chopped

Combine dressing, lemon juice, soy sauce and onion;

set aside. Mix together rice, chopped eggs, cucumbers,

shrimp and green pepper. Add reserved dressing mixture;

mix thoroughly. Chill. To serve: Mound rice mixture on let-

tuce leaves and garnish with egg wedges. Makes 8 ser-

vings.

SOME TOMATO
The Economic Research Service of USDA recently published a study of farm-toconsumer cost components of selected foods. One of the products was canned whole tomatoes. Farm value of the tomatoes was only one-eighth, 12.9 percent, of consumer costs. Packaging costs accounted for more than 25 percent. Labor represented 19 percent of the total cost, and transportation added another 11 percent.

Egg Tips
If you prefer your fried, you needn't give them up when dieting. Use just enough butter or a spray of vegetable coating in a nonstick pan to lightly grease the surface. Cook 2 eggs over low heat about 1 minute (until the edges turn white). Add a teaspoon of water, cover and let the steam finish cooking your eggs. No turning or basting with*fa*t*is*required!
When a dieter is tempted to eat a fattening goodie or convenience food for a quick and easy breakfast, try suggesting one of these instead: Whir an egg, 1/2 cup skim milk and 1/2 cup orange juice in a blender and serve immediately. EATING HABITS
American eating habits have changed significantly in the last 15 years. Beef consumption is a long-term rise and has been at record levels in recent years. Pork usage has remained fairly stable, except in 1975 when supplies were tight. Other foods being eaten more are chicken, turkey, cheese, margarine, shortening, frozen fruits and juices, potatoes, frozen vegetables, rice, and peanuts. These have lost ground since 1960: eggs, milk, butter, lard, fresh fruits, wheat flour, coffee, dry beans and melons.
BEEF PRICES
The decline in consumer beef prices may be about over. Beef is expected to start going up in response to a reduction in cattle numbers.

TV Series Begins
On Family Trees
A new television series, "Genealogy," produced by WGTV, The University of Georgia, will teach viewers how to investigate the past. The program will be shown locally on your educational station at 3:30 p.m. beginning Sunday, February 27.
A workbook, "Genealogy For Fun," supplements the series and is available by writing to: Independent Study/WGTV, Georgia Center for Continuing Education, The University of Georgia, Athens, Ga. 30602. The cost is $7.00 and checks should be made out to the University of Georgia.
Survey Updates
Farming Costs
In 1975, U.S. farmers paid out nearly $82 billion to produce crops, livestock, and poultry. The report, issued by the U.S. Department of Agriculture and the Georgia Crop Reporting Service, noted that the expenditure averaged more than $29,000 per farm, nationally.
The major expenditure was for feed, which accounted for over $12 billion, next came rent at $8 billion, followed by purchases of livestock and poultry for more than $7 billion, and fertilizer, lime, and soil conditioners hit about $6.8 billion.
The Georgia Crop Reporting Service points out that farm production outlays need to be closely watched if there is to be a reliable measure of how well farmers are doing compared with other groups in the nation's economy.
A cross section of Georgia farmers will be interviewed during February as part of a nationwide survey to determine 1976 farm production expenditures. Along with questions concerning outlays for equipment and services and other production needs, some farmers also will be asked about their marketing patterns for corn, soybeans, wheat, and grain sorghum as an aid to accurately estimating farm income.

Held At ABAC
The ABAC Nationals Tractor Pull will be held March 4 and 5 at the Georgia Peanut Farm Show at the Rural Development Center in Tifton. It is an annual event at the Abraham Baldwin Agricultural College.'
The 1977 Georgia Peanut Farm Show is an extension of Peanut Progress day, which began in 1966. It was a day for peanut farmers from throughout the state of Georgia to learn more about new chemicals, machinery, and ideas in the peanut industry. This same format will be employed in the Georgia Peanut Farm Show.
There will be no admission charge for the show. The public is cordially invited to attend.
Farm Workers
Wage Reports Due
Farmers and crew leaders who hire farm workers are reminded to send 1976 wage reports and social security contributions to the Internal Revenue Service, according to Don Skaggs, social security district manager in Atlanta.
Any farm worker paid $150 or more in cash wages by an employer in 1976 is covered by social security. A worker who did farm work for an employer on 20 or more days during the year figured on a time basis rather than a piece-rate basis is also covered even if he is paid less than $150 during the year.
A free leaflet, "Social Security Information for Crew Leaders and Farmers," is available at any social security office, according to Skaggs. The local social security office should be contacted for more information. The telephone number for the Metropolitan Area is 881-9600.

Buying Firewood

Firewood dealers and firewood operators are becoming plentiful. The homeowner should buy according to a known measure (the standard cord is 128 cu. ft.).
Pieces of firewood two feet long will require a stack of wood four feet high and 16 feet long to be a cord (2 X 4 X 16 = 128 cu. ft.). A half cord would be (2 X 4 X 8 = 64 cu. ft.). Naturally, if the pieces of wood are shorter or longer than two feet, the stack of wood would be adjusted according to the length of the pieces.
Some woodburners prefer split wood while others prefer round wood. These questions should be resolved while a person is ordering his wood from the salesperson. The question of dry wood or green wood should also be resolved.
Forest owners with poor quality hardwoods now have a market for a product that has been a burden in the past. Many forest owners around urban areas have an opportunity to improve the quality of their forest lands by removing the poor quality hardwood trees now while homeowners with fireplaces and wood-burning heaters are paying good prices for firewood.

grant approval for the emergency use of four new experimental insecticides, Botstar, Curacron, Pydrin and Ambush.
He said preliminary indications are that limited quantities of these pesticides could be produced for use on cotton in 1977, however, there is not sufficient time between now and the growing season to allow for completion of full EPA registration procedures.
Irvin said EPA already has on hand quite a bit of detailed information concerning the new insecticides as a result of experimental use during 1976, but his request asks that emergency use of the new pesticides be granted only for those that EPA has determined offer minimum risk to the environment and human health. The Commissioner said if the request for emergency use is granted, the materials would be used only by registered applicators and only then after careful field surveys pointed to a crippling infestation of either or both of the two pests.
Pointing out that cotton is a major crop accounting for from 6 percent to 15 percent of Georgia's cash farm income, Irvin said 1976 revenue from cotton is estimated at $65 million. He emphasized that production cost of cotton in Georgia averages about 71 cents per pound, leaving the farmer only two to five cents profit per pound and that any increase in production costs would eliminate such profit.
He said losses resulting from damage by the tobacco bud worm plus the cost of controlling the pest totaled $9.6 million in 1975 and added that 22 percent of the total estimated cost of producing cotton in Georgia goes for controlling insect pests.

Violets deserve special recognition and appreciation in February as they are the official birth flower of the month. Although the native violets have not yet emerged, the houseplant variety enjoys popularity year round.
Violets have always been important throughout history. Violets were the first prize for winners of some Greek competitions. Later, poets were honored as the most favored in the king's court when they received violets.
The most famous violet.fancier was Napoleon, affectionally called Papa La Violette. When he was exiled he vowed to return to his homeland when the violets'were in bloom, a promise he kept.
Violets grow throughout North America as they did in France and Europe. They prefer dry fields, open woodlands and almost always acid growing conditions. The common blue violet is usually found in moist ground near a stream.
One of the most popular violets is the birdfoot violet. Its leaf instead of being heart-shaped like other violets, is more like that of a palm, or if you will, a bird's foot.
Wild violets are edible - leaf, stem and flower. Use the green part of the plant in salads and candy the flower. To candy the bloom, dip the flower in beaten egg whites then sugar being sure to coat all petals completely. Dry in a 200 degrees oven for 30 to 40 minutes or until sugar crystallizes.

Tested Bull Sale
The North Georgia Bull Evaluation Center will hold it's 7th Performance Tested Bull Sale in Calhoun at the Livestock Pavillion on Wednesday, February 23. The sale will begin promptly at 12:30 p.m. EST.
It is estimated that 50 yearling bulls will be sold. Angus, Charolais, 3/4 Chianina, Polled Hereford, Santa Gertrudis and 3/4 Simmental bull will be sold.
Seventeen or 27 percent of the 64 bulls on test are gaining 3.70 pounds per day and higher (8 are above 4 pounds), while only 10 bulls are under 3.00 pounds per day. The average actual weight per day of age on all 64 bulls is 2.75 pounds. Multiplied by 365 days this gives an unadjusted projected yearling weight of 1004 pounds for the entire test group.

I would like some information regarding the scalding and cleaning of swine.
B. H. Milledgeville The proper temperature to scald hogs is 138 to 142 degrees Fahrenheit, with 140 degrees used in meat packing plants. The tune the hogs are left in the scald water varies according to the type of hair. Generally, hard to scald hogs should be scalded with less temperature and more tune. There are several commercial compounds on the market for scald water additives and these are primarily designed to bleach the skin. Water with heavy mineral content would probably demand slightly longer time the hog would need to be in scald. [Or so "Hairless, the scalder" said.]

I would like to know a simple home process for tanning deer and cow

hides.

We have enclosed an instruction sheet on tanning hides at home. It is a lot

of work and unless you are doing it as a hobby, it is suggested that you let a

taxidermist do it. It is well worth the $20.00 or so. Good luck with tanning

hides!
