For Georgians
Broadly speaking, ornamental horticulture involves flowers, woody shrubs, ornamental trees, turf, ground covers and house plants. Due to the recent interest in the environment, many of these plants have gained new prominence because of their positive impact on the environment. Interest in ornamental horticulture, and thus plants, abounds in metro-Atlanta. The Cooperative Extension Service of the University of Georgia is aware of this great interest and has developed the capacity to help people who are involved with plants.
There are a lot of different people involved with plants: general
public, retail nurserymen, landscape contractors, landscape maintenance people, greenhouse operators, florists, indoor plant retailers and interior 1 a ndscapers. My office, located in Atlanta, serves the six counties that comprise metro-Atlanta: Fulton, Clayton,

Cobb, DeKalb, Douglas, and Rockdale. My job, as area horticulturist, is to effectively help all the abovementioned people who have plant questions. Of course you can readily see that the job is too big for one person.
We are fortunate in metroAtlanta to have in each county, county extension agents who have a great deal of plant knowledge. So we suggest that plant questions, if they can't be answered by a local plant dealer, be directed first to the county extension staff. They have bulletins, available to the public, dealing with many facts about plants." Your county extension staff will be able to answer most of your plant questions.
Should they not happen to know the answer to your question, it will probably be referred to my office where I, hopefully, can provide an answer. So, regarding plant questions, there is a very close

Cotton Producers
Vote On Referendum
Ballots have been mailed to cotton producers in Georgia to determine whether or not there will be adequate funding for the National Cotton and Research Production Check Off Referendum.
The purpose of this voting is to try to get an increase in check off from one dollar to one dollar plus fourtenths of one percent of value per bale of cotton. This could mean from $1.20 to $1.40 per bale depending on prevailing market prices.
Producers are urged to mail ballots on the National Cotton and Research Production Check Off as soon as possible. The deadline is midnight, Friday, December 17, 1976.
All Show Birds
Must Be Tested
Georgia Department of Agriculture regulations now require that all poultry shown in public exhibition in Georgia must have been tested and found free of pullorum-typhoid disease or have had a negative pullorum-typhoid test within 90 days of the movement to the public exhibition.
Birds from out-of-state must meet the above requirements and also obtain a permit prior to entering the state from the Georgia Poultry Laboratory.

Georgia's 4-H'ers
Achieve Record
Georgia 4-Her's recently achieved the 3rd best record ever made in national competition at the 55th National Congress held in Chicago. The 1975 crew did slightly better and the only ones who top that record were in 1922.
This years national winners are: Chris Cleveland, Hartwell; Meriece Dailey, Eastanollee; Lynn Miller, Irwinton; Joyce Neal, Gainesville; Jim Flanders, Swainsbpro; Margaret Park, Blackshear; Tommy Pool, Tifton; Susie Porter, Jefferson; WayneReece, Ellijay.

For several years now many Georgia citizens and ecologists have been concerned about our native wild flowers and plants that are disappearing
from the woods and parks of our state.

Special Features
For Sheep Day
On December 17, 1976 a Sheep Day will be held in Athens at the University of Georgia Livestock Arena adjacent to the Coliseum. The event will be conducted by the University of Georgia Extension Animal Science Department beginning with registration at 9:30 a .m.
Sheep management and production will be covered by several respected authorities including Dr. LeRoy Boyd of Mississippi State University. Other speakers from the University of Georgia College of Agriculture and School of Veterinary Medicine will provide information on feeding, marketing and parasite control.
The program is free and both youth and adult sheep producers are welcome.
Atlanta Club Holds
Pigeon, Dove Show
The Greater Atlanta Pigeon and Dove Show will hold its annual winter show on Sunday, January 9, 1977 at the Shrine Temple Recreation Room, 400 Ponce De Leon Ave., Atlanta.
Fancy breeds of pigeons and doves from several states will be entered. Entry fee is $1.00 per bird. Mail all entries and fees to Joe Mosley, P.O. Box 153, Clarkston 30021. Call (404) 294-1459 for further information. Entries must be received by December 20. The public is invited.

Has Vacancies
Several vacancies still exist for the Texas-Mexico Fact Finding Tour, February 6-13, 1977, sponsored by the Rural Development Center, Tifton, and the Cooperative Extension Service. The deadline for reservations was December 10, 1976, so immediate response'is urged.

In 1973, the Georgia Legislature passed a Wildlife Preservation Act and an Endangered Wildlife Act in order to protect the beautiful and interesting flowers and plants that once flourished in our woodlands.
The Legislature charged the Department of Natural Resources to research and establish rules and regulations to protect these plants from extinction. As of August 25, 1976, the rules and regulations per-
tinent to these acts have been promulgated and are now in effect.
The reason many of these plants are disappearing from the Georgia scene is that most people do not realize that when a wildflower is taken from its natural home, it usually will not survive in your yard no matter how much love and,attention it receives.
Some of the flowers and plants on the endangered species list compiled by the Department of Natural Resources are advertised in the Farmers And Consumers Market Bulletin. If the plant is being grown on private property and is being sold by the landowner, it is all right to advertise. However, these plants may no longer be dug from the woods of state or national parks and
forests. Anyone wishing to advertise in the
Farmer's And Consumers Market Bulletin or elsewhere any plant which is listed as an endangered or protected species by the Department of Natural Resources must first obtain a permit from that Department. The permit number should be included on your advertisement so that the Bulletin staff and customers will know that you are growing your own plants and that they are not from protected, public land. The permit will be issued free of charge for BULLETIN advertisers.

SPICED BEEF ROUND

6 Ibs. round beef roast

1 T. allspice

1/2 cup brown sugar

1 T. black pepper

1 Vi T. saltpetre

1 /2 T. cloves

1/2 T. mace (ground)

1/2 T. nutmeg

Mix all well, and rub roast with ingredients above and

then rub well with 1/2 cup salt. Put all in stone jar and

pour spices and salt around. Turn every day or so for

about three or four weeks. When ready to cook, sew in

cloth, cover with juices, adding water. Cook just as you do

fresh boiling beef, allowing one hour longer cooking time.

Let cool in liquid before removing save some of liquid

to moisten the cloth occasionally to keep meat moist.

BAKED FRUIT

A colorful, festive, hot dish for holiday buffets and special dinners is baked fruit. It's especially good with ham and poultry.

1 can each:

sliced peaches

pears

apple rings

pineapple chunks or slices

apricots

Drain the fruit and put in a casserole dish.

Make a sauce with: 1 stick margarine 1 cup fruit juice

1/2 cup brown sugar 2 Tablespoons flour

Cook the sauce until smooth and pour over the fruit. Refrigerate overnight. Bake 350 degrees until hot and bubbly. Serves 10.

HOMEMADE PASTRY MIX

5 cups sifted all-purpose flour 1 pound vegetable shortening

1 tablespoon salt

(2-1/3 cups)

1. Measure ingredients accurately, using standard

measuring equipment. Regular flours should be measured

after sifting. Two tablespoons of flour should be removed

from each level cup if the flour is not sifted before

measuring. When using instant flour, omit sifting; then

combine flour and salt in mixing bowl.

2. Sift regular flour and salt into a mixing bowl.

3. Mixing by hand: Cut one-half of the solid shortening

into the flour until the texture is like coarse corn meal.

The remaining fat is cut in until the pieces are the size of

small peas. This two-step method helps give a short, flaky

pastry. For cutting in the fat, use a pastry blender or two

knives in a scissors motion.

With Electric mixer: Cut the fat into small chunks and

roll in the dry ingredients before blending with the mixer.

Keep the chunks of fat pushed toward the bottom of the

bowl during blending or the dry ingredients will fly out.

Store this mixture in a covered container. No

refrigeration is required. Yield: 7-8 cups mix.

To make a one-crust nine-inch pie: Take out 1-1/3 cups

of the mixture. Put in a mixing bowl. In a separate small

bowl blend 2 tablespoons water with 1/4 cup flour. Stir

this into the dry mixture in your mixing bowl.

CARAMEL NUT POUND CAKE

1 cup butter 1/2 cup shortening 1 box light brown sugar 1 cup sugar 5 eggs 1 tablespoon vanilla

1/2 teaspoon salt 1/2 teaspoon baking powder 3 cups sifted flour 1 cup milk 1 cup finely chopped nuts
(black walnuts)

Cream butter, shortening and brown thoroughly. Gradually add granulated sugar. Continue creaming. Add eggs, one at a time, beating thoroughly after each addition. Sift baking powder and salt with flour; add alternately with milk, beginning and ending with flour. Add vanilla, then nuts, and blend well. Turn batter into a wellgreased and floured 10" tube pan and bake at 325 degrees for 90 minutes or until cake tests done. Cool in pan 1 5 minutes before turning out of pan.

PECAN ROUNDS

3 egg whites, unbeaten

1 teaspoon vanilla

3 cups dark brown sugar

Candied cherries

4 cups pecans, finely ground

Mix egg whites and brown sugar; add nuts and vanilla.

Form into small balls and flatten, like a macaroon, on a

buttered cookie sheet. Decorate each with a small piece

of candied cherry. Bake in a preheated 350 degree oven

about 10 minutes.

Preheat oven to 400 degrees F. Mix sugar and cornstarch, then add to pineapple. Cook pineapple mixture until thick and clear. Cool hot mixture. Blend cheese, salt and 1/2 cup sugar. Beat in eggs one at a time. Add milk and vanilla to cheese mixture. Spread pineapple in pastry shell. Pour cheese filling over top of pineapple mixture. Sprinkle nuts on top. Bake for 10 minutes at 400 degrees F., then turn over temperature to 325 degrees F. and bake for 50 minutes.

3 cups cooked sweet potatoes 1 can coconut

1 cup sugar

1 tablespoon vanilla

2 eggs

1/2 stick margarine

Blend well and pour into greased casserole dish.

TOPPING

1 cup brown sugar

1/2 stick melted margarine

1 cup chopped nuts

1/2 cup flour

Mix ingredients together and spread over top of sweet

potatoes. Bake at 350 degrees F for 1 hour (or less).

Pinto beans are grown very much like Navy beans or Soybeans. They need rich soil and full sun. They are planted in the spring after the threat of frost is over and the soil warms to approximately 70 degrees F. Yields may be low because there are no varieties selected specifically for the climate and disease problems of this area. Another problem will be finding good, high quality seeds. Try butterbeans.

I have about sixteen gallons of old honey in jars. It is comb extracted,

never heated or strained, it is all crystalized and is from three to ten years

old. How can it be prepared for use by humans,.animals or bees? Does it

actually spoil? Is it good when stored? Does it ever develop bacteria? What

is a recommended degree to heat honey?

The honey possibly can be heated to re-liquify so that it can be consumed

by humans. Should you desire to feed it to animals or bees, the addition of

water to the crystalized honey and the application of heat should bring it

back to a liquid state. Usually honey does not actually spoil by the develop-

ment of bacteria. Honey can spoil by the development of either yeast or

mold in the product. The recommended degree to heat the honey would be

considered only the application of enough heat to return the honey to a

liquid state.

I have two hogs that I plan to kill and eat. I have been feeding them sour

corn (self-feeding) and minerals. I would like to know if the sour corn will

have any effect on the taste of the meat.

It is a common practice for farmers to feed sour mash or swelled grain to

hogs and there is generally no effect noted in the meat of these animals.

However, if the mash has soured to the point of being extremely fermented,

[i.e. whiskey mash] sometimes an off flavor is noted. [Sometimes, it is repor-

ted, the little piggies stagger.] Taking the animals off this diet and placing

them on grain three weeks prior to slaughter would remove the objection-

able flavor hi most cases.

The Chinkapin species are alive and well hi the S. E. United States. Several species in this geographical area are noted. Common species include Alabama, Florida and Allegheny Chinkapin. Christmas cactus is a very popular and easy to gfow houseplant so named because it usually blooms during the Christmas season.

Many people have difficulty with their Christmas cactus failing to

bloom. Old-fashioned coal furnaces let
temperatures drop below 50 degrees at night allowing the flower buds to be initiated. However, in today's thermostatically controlled homes, temperatures seldom fall below 60 degrees so it will be necessary to locate your cactus on an unheated porch out of the direct rays of the sun if you expect a blooming Christmas cactus. Be careful, though, not to let your plant freeze. Daytime tempera-

tures of 75 degrees are satisfactory. In addition to finicky temperatures
requirements, Christmas cactus also need special attention regarding water. They need two dry periods each year, the one in the fall especially important for Christmas blooms.
Start withholding water in the fall for about a month; a little bit each week will be sufficient. Start giving the plant a little more water after the first month while it is experiencing the cool nights described above. After blooms have formed you can start

giving it more regular waterings. After the plant has bloomed and
before new growth starts, let the plant go through another "dry-up" dormant

period.

Fireproofing Trees

The best way to fireproof a Christmas tree is to keep it moist. However, drug stores sell materials that can be used to fireproof trees. One good formula is:

Spray or sprinkle this material on

the tree. Get good coverage. The

fireproofing material may be applied

with a tank garden sprayer, a

sprinkling bottle used for dampening

clothes, or the tree may be set in a

large pan and the solution poured

over the branches. The large pan

will catch the material that runs off

so it won't be wasted. Do not expect

the tree to be completely fireproof. If

it gets hot enough it can still burn.

We regret we do not have the nutritional information on chuffas. Chuffas

are high in food value. In some areas hogs are fattened on them. Probably

the lack of popularity in chuffas is due to the problems involved in harvest-

ing. Chuffas are sold in some areas. We have collected samples of seeds

from U.S.S. Agric. Chemicals in Albany 31702. Their wholesaler was Sawan

I had been hearing that milk and butter in Europe was much better than ours. On a recent trip to England and France I found this to be true. I would like to know why we can not have milk without the chalky and overcooked taste we get in our area.

The chalky taste in Georgia is probably due to a different breed of cows in Europe that have more butterfat. The overcooked taste is caused by pasteurization which assures us of a much safer product

Artificial Snow
Easy, Fun To Make
Whip up some artificial snow for tree boughs, wreaths, or mantle arrangements. Combine two tablespoons of soap flakes with 1/2 cup cool water in a large bowl. Beat with rotary beater until suds stand in stiff peaks. Slowly beat in 1/3 cup instant laundry starch. Apply "snow" to evergreen, artificial greens or bare branches with fingers or a paint brush. Before the mixture dries completely, press in bright ornaments or birds for added attractiveness.

relationship between county extension offices and my office.
The county offices and I have had to eliminate personal house calls because it became impossible time wise to fill all the requests. In some instances, it may be desirable for you to bring a specimen by one of our offices if it seems convenient and useful for you.
My office works more directly with* commercial plant people (retail nurserymen, landscape contractors, landscape maintenance people, greenhouse operators, florists, indoor plant retailers, interior landscapers). This can be done because there are not so many people involved.
I do visit our commercial people, oft times with county extension personnel, when they have a substantial problem. This is done because ultimately their problems become the general public's problems and quite often their problems involve great sums of money and, in fact, their very livelihood.
There are programs put on by the Cooperative Extension Service for the general public and for our commercial industry.
Also the counties together with my office offer area wide shortcourses for the commercial industry on various timely topics. Contact your local county agent for more information on these programs.
