America 's First
Beef Breed
In 1940 the United States Department of Agriculture recognized the Santa Gertrudis as America's first beef breed. Through breeding techniques applied on the King Ranch, Texas, the breed was developed to satisfy the unique needs of South Texas. It has been found over a period of time that it has a wide range of adaptability from the snows of Alaska to the tropical stress of Africa, Central and South America.
The name Santa Gertrudis originated with Bias Maria de la Garza
Falcon, who was awarded the first land grant in the area of South Texas in the early 1760's. He named the surrounding geographical features, including the distance hills I which served as a background for his ranch. These he called "Los Cerros de Santa Gertrudis", probably after the patron saint of his only daughter Maria Gertrudis. As a breed derived from a specific cross, the Santa Gertrudis represen-

is a harmonious combination of the desirable qualities of the parental foundation stocks. These qualities are now well established in the purebred herds. Some of the desirable qualities are inherited as simple genetic characteristics as the red coat color from the Shorthorn and the solid color patterns from the Brahman.
Santa Gertrudis is a breed of range beef cattle developed to make maximum gains on pasture. It was developed for adaptation to warm climate conditions, but as stated before, does equally well in colder climates.
A standard of excellence is a descriptive guide used by breeders for orientation in selections and culling based on breed type. In various forms, standards of excellence have

If you have ever dreamed of having an herb garden, there couldn't be a better time to get one started than right now - in the middle of winter. Of course this is going to be an indoor herb garden, grown in your sunniest window where you can watch it grow and give it the attention it needs. After the plants are well established and warm weather has returned, your
herb garden can be transplanted outdoors for summer.
Different Methods
Of Shelling Walnuts
Shelling walnuts has never been easy but the promise of dark, rich nut meats in homemade candies and cookies has caused people to devise ingenius methods for accomplishing the task.
Walnuts are covered with a greenish-black outer husk which has to be removed before you can start shelling the nuts. One of the easiest ways to loosen this outer cover is to drive over the nuts several times a day with your car until the husks are knocked off. It's a good idea to do this on the ground rather than your driveway because the husks will stain the cement.
Next, scoop up all the walnuts and place in a large clean wash tub and cover with water. Stir them around several times a day for a few days. This will clean up the nuts and remove any remaining husks. Also, dried-up nuts will float to the top for easy removal.
There's no reason to buy a special "herb container" unless
you like to spend money. Cut-down milk cartons, aluminum pie plates, drinking paper cups, orange juice
cans - anything is suitable. A seed flat is one of the most desirable
starters and can be put together with a few pieces of scrap wood.
Whatever type container you choose, be sure to punch drainage
holes in the bottom. A good all purpose soil mixture
will suit most herbs. Equal parts sand, peat and garden soil combine to make a loose soil that drains
well but will hold moisture. There are some herbs that do
not transplant well because of long taproots. The following herbs, however, are good choices for
starting indoors and later transplanting to the garden: Basil, Chervil, Chives, Feverfew, Hore-
hound, Lavender, Lovage, Marjoram, Oregano, Sage and Thyme.
Herb seed are small and should not be planted more than 1/4 inch
deep. The seed rows need to be about 2 inches apart. Gently water the seeds, not with a watering can

Once you deliver the live animal to the custom slaughterer, your job is finished. You can just sit back and take it easy until the processed meat is ready. But you should understand the procedure your food is going through.

training his workers to maintain a clean processing plant.
Beef or hog carcasses must be chilled immediately after slaughter.
The internal temperature of the carcass should be at least 40 degree F. within 24 to 30 hours after slaughter. Lowering the temperature maintains meat quality and reduces spoilage.
While pork is normally cut and processed within 24 to 48 hours after slaughter, beef and calf carcasses are aged before cutting and processing. The aging process improves the tenderness of the beef.
The custom slaughterer should age the carcass by storing it in a cooler maintained at 35 to 40 degrees F. For best results there should be a "chill cooler" where the freshly-slaughtered carcasses are placed until the internal temperature is 40 degrees or below. Then the carcass is moved to an aging or holding cooler.
improperly handled carcasses may become slimy or slippery from an excessive amount of bacterial growth on the carcass. Once that occurs, the meat should be processed immediately, or "off" flavors may develop. If chilled carcasses are kept separate from freshly-slaughtered carcasses, the bacteria does not grow as fast.
Calf carcasses usually do not have a covering of fat and cannot be aged for as long as beef with a fat covering. Normally, calf carcasses are not aged over six or seven days, whereas beef carcasses can be aged up to two weeks.
Also, a beef carcass aged for more than 10 to 14 days may not

STUFFED BAKED SWEET POTATOES
4 medium sweet potatoes
1/3 cup orange juice
1 medium ripe banana, mashed 1 tspn, salt
3 tbspns. butter
Chopped nuts
Scrub potatoes and oil skins. Bake in a preheated 375
degree over about one hour or until done. The pulp can
either be very carefully scooped out to save the skins for
restuffing, or the potatoes can be peeled and the mixture
baked in a buttered casserole. Mash the pulp with the
banana, butter, orange juice and salt, or blend in a blen-
der. Spoon the mixture into potato skins or casserole;
sprinkle with nuts and return to the oven for 12 to 15
minutes.

Not A Simple Procedure
Many individuals will have a poinsettia and/or a Christmas Cactus leftover in their homes after this holiday season. One is often tempted with the proposition of carrying these plants over for another Christmas. This is not a simple procedure especially with these two plants. But for the stouthearted, procedures will be discussed that, if followed and accompanied by lady luck, will allow these plants to survive and bloom another year.
The poinsettia is difficult to rebloom. After plants have finished blooming, they should be allowed to dry. This means that the soil should be watered only slightly to prevent plant death. Near the end of spring, plants should be pruned
to a height of 4-6". After pruning, the plants can be
moved outdoors and should be fertilized once a month for the duration of the summer. Stem tips should be continually pinched off until September. This pruning will help produce a thick bushy plant capable of supporting many
blooms. Poinsettias are light sensitive
and bloom under short day conditions. From late September on, plants should be given 14 hours of complete darkness each day. Any light during this night period will inhibit flowering. Plants should be
placed in a dark room such as a closet during this time at night and brought out every morning around 8:00 a.m. About 40 days of this long night treatment are required before bloom color will appear.
Color should be apparent by Thanksgiving.
Night temperatures at 55-65 degrees F and day temperatures of
70-75 degrees F are acceptable.
The poinsettias should be kept out of drafts and should be allowed to dry slightly between watering.
The Christmas Cacti are native to jungles rather than deserts. This explains why they require more water than other cacti. For Christmas cactus, keep the soil uniformly moist and fertilize once per month during the spring and summer. Plants can be left outdoors in semi-shade until there is danger of frost.
Cool fall temperatures are required for Christmas Cacti to bloom. Night temperatures of 55 degrees F in November and December are best. During this time, plants should be kept on the dry side and should not be fertilized. Plants need to be placed so that they receive bright indirect sunlight. High temperature and low light intensity during this time can prevent flowering.

"REGULAR" DIET
Should you eat regular meals at regular times if you're on a diet? Yes, say Extension nutrition specialists at the University of Georgia. Three meals a day of properly selected foods is the best plan to follow. Breakfast is an especially important meal because it helps cut down over-eating at other meals. A breakfast should provide at least onefourth of the daily calorie allowance.
DIET ON POTATOES
On the average, a medium sized boiled, pressure-cooked or baked potato has only 100 calories, nutrition specialists at the Cooperative Extension Service say. The New York fern was. first
documented in America in the state
of the same name. It migrated
south, adapted to our climatic
conditions and has flourished in
Georgia ever since. It is seldom
found in the southern part of the
state, however, as it prefers the
cooler temperatures of the piedmont
zone.
Our "yankee come south" fern is
quite beautiful and is easily
cultivated. The medium size fronds,
about 18 to 20 inches, are more of
a chartreuse color than the typical
dark green of other ferns.
The New York fern is not an
evergreen and is killed back by the
first frost. When spring finally
comes, however, you will have little
difficulty identifying the fern. Just
look for its unique fronds that taper
at both ends.

Put all the washed walnuts 'in a strong feed sack or burlap bag and hang in the sun to dry and ripen for about a week.
Now you are ready to pick out the meats. Crack the shell with a hammer and place cracked walnuts in a paper bag. The next day the nut meats will have shrunk just enough to make them fall out of the shell when you shake the bag.

The preliminary estimate of the number of farms in Georgia
showed a drop of 1,000 farms during 1975. According to the
Georgia Crop Reporting Service, a similar decline was also recorded during 1974. Total farms for 1976
is estimated at 73,000 compared with 74,000 for 1975 and 73,000 in 1974.

What are Mallard ducks? Why must they be three generations
removed from wild? I am a city gal and this puzzles me. Mrs. F. B.,

Hubert Handy, Chief of Game Management, Department of Natural
Resources, advises that Mallard ducks are a wild species and as a
migrant bird are under the protection of the federal and state govern-
ment. However, they can be domesticated and raised by convential
methods. To differentiate between the wild birds and domestic birds, it is
necessary for the domestic variety to be three generations from the wild;
at that point these birds are considered domestic birds and not wild
Mallards.

What is red root and where does it grow. F. R., Englewood, Tenn. Amaranthus retroflexus, a weed of the Amaranthaceae is called Redroot Pigweed. Lachnanthes tinctoria Walt. [Ell.] of the Liliaceae is an aggressive weed in some cranberry bogs. It is called redroot. Ceanothus of the Rhamnaceae is also called redroot. Finally, there are two members of the Boraginaceae, Lithospermum canscens and Alkanna tictoria, which are called redroot. Lachnanthes, and Ceanothus are all found in the eastern part of North America. If this isn't confusing enough, we will help some more. There is a plant called Bloodroot and one called Pinkroot.

been applied as guides in all improved breeds of livestock from ancient time to the present. The proven performance of certified Purebred Santa Gertrudis cattle, established through independent research, can improve the efficiency and profits of beef cattle production.
For the producer with an established herd of cows, the selection of the bull breed which offer the best opportunity for heaviest weaning weights is the key to increased profits. Cattle with high gainability make fast and efficient conversion of milk, forage or grain into profitable beef. Gainability is one of the most highly heritable economic traits in beef cattle, and a PROVEN trait of the Santa Gertrudis breed. Purebred Santa Gertrudis bulls will transmit gainability to their offspring, whether bred to Santa Gertrudis cows or to cows of another breed or cross.
Santa Gertrudis Mother-ability Research has shown that the amount of milk produced by the mother cow has the single most important influence on the weaning weight of her calf. Studies revealed that the variation in milk production among individual cows accounted for 46% of the variation in the weaning weights of their calves.
Santa Gertrudis was the first breed of beef cattle which required animals to be individually inspected by an association representative before being accepted for permanent registration. The "S" brand designates the certified Purebred Santa Gertrudis a superior animal which must exceed the minimum requirement of the Standard of Excellence. This includes bulls which are judged to be suitable for use in commercial herds as well as bulls which may be suitable for use as herd sires in registered herds.
Santa Gertrudis is truly the beef of the 70's.

After aging, the meat must be cut and wrapped.
During your initial discussion with the custom slaughterer, you should have selected the types of cuts desired. Even though no steer can produce all steaks, there is some selection in the quantity and size of certain cuts.
Meat should be wrapped in moisture-vapor-proof freezer paper or film within a short time after cutting and then frozen immediately.
Make sure that one of the services included in the processing cost is freezing the meat. Most home freezers would take three or four days to freeze several hundred pounds of meat. There is a possibility that the meat will spoil or develop "off" flavors before it is frozen.
The wrapping of meat for the freezer will be different than the wrapping used for fresh meat at the local grocery store.
Fresh pork, if wrapped in a moisture-vapor-proof paper or film, can be kept in a freezer for six to eight months. Beef can be stored for approximately one year at zero degrees Fahrenheit. Meat may become rancid if stored longer than recommended.
Don't be tempted to turn the temperature of your freezer to 15 or 18 degrees above zero to conserve electricity. Meat will only maintain its quality about half the storage time at the higher temperature.
When you pick up your meat, remember to take it straight home and put it in the home freezer,

but with a fine spray mist. The soil should be kept moist but not soaking wet.
Damping off will be your biggest hurdle. Seedlings decay at soil level easily when grown indoors. The fungus that attacks baby plants thrives when there is too much water, not enough fresh air or if the temperature is too warm.
The seedlings are ready to transplant and thin-out when they have two sets of true leaves. If the weather is suitable, put the seed flat outdoors in the shade for a few hours each day before transplanting. This will help minimize the shock of moving.
If, however, you are going to relocate your herb seedlings hi permanent containers for the house, make up a slightly richer soil mixture than the seed bed combination. Two parts potting soil to one part sand and one part peat will provide more of the nutrients the herbs need.
Herbs do not like strong fertilizer but appreciate some extra nutrition. One tablespoon per month of barnyard tea* is usually enough to give your plants the headstart they need.
*Barnyard tea is made by allowing a cup of water to drain through a coffee can of dried cow , manure.
