Bigger, Brighter
If the prices you pay for poultry products had kept pace with hospital costs, hotel room rates, taxes, the salaries paid to federal employees and construction workers, and countless other goods and services, you would today be paying over $2.00 a pound for chicken and over $2.00 a dozen for eggs.
The facts are, however, that though poultry products have
become Georgia's biggest agricultural money-maker, they have remained one of the consumer's best bargains at the grocery store.
The one factor most responsibile for this apparent paradox is coordination; the vertical integration of all elements of the poultry production process to

produce more for less, and the unification of all elements of the industry in support of the legislative, educational, research and developmental, and promotional activities needed to support more efficient, economical production and stimulate marketing.
This coordination, coupled with complete and unswerving championship of the free enterprise system, has made poultry the largest single element of Georgia agriculture, and has made Georgia the poultry capital of the world; the leading state in the nation in total income from poultry and poultry products.
In 1974, Georgia broilers continued a 17-year reign as Georgia's largest single source of farm-level income by bringing in $339,945,000; some $37,000,000 more than the next ranking commodity, broilers are leading all other farm products again in 1975.
Eggs produced $282,059,000 as the state's third largest agricultural commodity, hens brought in $11,041,000 and turkeys produced $8,783,000 for a total of $641,828,000-r-almost a third of our state's total farm income last year.

SOUTHERN CORN BREAD STUFFING (about 6 cups)

1/4 cup melted butter

1 slightly beaten egg

2 medium, chopped onions

Powdered poultry seasoning

2 cups minced celery

(to desired taste)

4 cups crumbled, dry corn bread Salt and pepper (to taste)

10 slices of toasted bread

1/2 cup chicken or other broth

Melt butter in heavy pan; add onion and celery; saute'

untjl tender. Add dry ingredients, seasonings and egg and

blend well. Add stock and mix thoroughly, (use less liquid

when stuffing a turkey) Bake at 375 degrees F. for 30 to

40 minutes in a well greased 13x9x2 inch pan.

BROWN PINES This is the time of year when old foliage on pines turns brown and begins to shed. This is a natural phenomenon and is distinctly different from symptoms of insects or other maladies. Only needles most distant from the end of the branch turn brown.

The wall fern is native to China and other points cast. It was probably imported to this country by accident rather than intention. It is also known in some areas as the Huguenot fern because of the theory that it was brought to this country by French settlers. If this is the case, this fern had a long trip from China through Europe to our country.
Although you can occasionally find young leaves in January, the wall fern is -not an evergreen. The fronds are produced in clusters anywhere from ten inches to 25 inches long. It was first grown as a greenhouse fern or pot plant but has escaped to the great outdoors and thrived, especially in the southern states. You are most likely to find specimens of the fern in old brick walls and cemeteries.
The wall fern is an interesting addition to the garden and will add variety to your houseplant collection.

Georgia peanut growers had a record crop for the sixth consecutive year. The average yield per acre for 1975 is 3,450 pounds per acre.
Georgia produces over one-third of the total U.S. production of peanuts. Of the seven main peanut producing states, Georgia is the leader. The other states are Alabama, Florida, North Carolina, Oklahoma, Texas and Virginia.
Two-thirds of peanuts produced in the U.S. go into the edible market and over one-half of the edible peanuts go into the manufacture of peanut butter. Americans eat almost nine pounds of peanuts per year and about onehalf of this is peanut butter.

Once you have the amount for
slaughtering and processing, add it to the cost of the animal and shipping charge {if any). Now divide your cost by the estimated number of pounds of processed meat. That is your cost per pound. Remember, it is an average price for all cuts of meat. You are getting hamburger and sirloin at the same price.
Selecting the proper animal may be the hardest part, especially if you are not an expert. Since most people are interested in beef animals, let's look at the three types of cattle sold for meat: veal, calf and beef.
Veal Veal is a young bovine animal usually under 200 pounds and milkfed. Calves are bovine animals that weigh from 200 to 700 pounds and are usually four to twelve months old. Beef comes from cattle that weigh over 750 pounds and are usually over 14 months old. That includes steers, heifers, cows, bulls and stags. Calf meat, usually sold in the retail stores as "baby beef, has a bland beef taste, lacks the desired marbeling (flakes of fat within the lean) and has a tendency to become less tender when cooked due to the high moisture content in the lean. Long cooking and high heat cause the moisture to evaporate and the meat becomes less tender. Meat from a calf carcass is wholesome and nutritious, but you should not expect it to give the same beef taste as choice-fed beef. So don't blame your processor.
There are eight U.S.D.A. grades for beef which denote eating quality. Meat grading is voluntary and is usually not done in the custom slaughterhouse. Meat inspection, however, is mandatory. While grade gives some idea of the eating quality, the inspection stamp, either federal or Georgia Department of Agriculture, indicates that the meat is fit for human consumption.
In selecting cattle for slaughtering, check the recent food supply. "You are what you eat" applies to cattle, also. Cattle on pasture, especially during winter and spring, should be taken off pasture and placed in a dry-lot at least a week to ten days before slaughtering to prevent the meat from having an "off taste" if they have been eating odorous plants such as wild onions.
Forage or grass fed beef is satisfactory for home meat supply. The animal is from 25 to 30 months old, fed primarily on silage and grass or grass alone, and will have only a slight to moderate covering of fat on the carcass.
Meat from a grass-fed animal will be quite tasty and will compare favorably with beef that is fed grain for a short time (two months) . The fat from forage-fed animls will be slightly yellow and the lean will appear watery, but it is still good eating. The meat will

Storage and handling of anhydrous ammonia Pulpwood logging Slow-moving vehicles (also a state law requirement) Roll-Over-Protection Structures (ROPS) for farm tractors The ROPS standard is the latest to take effect requiring all farm tractors over 20 horsepower including crawlers produced after October 25, 1976 to have roll-bars. No requirement is made for fitting older tractors if they are used for farming. Roll-bars are required on tractors used for logging or construction. The standards change almost daily with very few deletions. Agricultural standards are being proposed for guarding farm machinery, walking and working surfaces, hand and portable power tools, electrical hazards, field sanitation and others. Compliance officers can show up at any time, unannounced, and inspect any operation which has hired labor. Citations or penalties may follow if hazards are found. Family members are exempt and are not covered under the law. Accidents have always been expensive. The law now means an existing hazard can be expensive.
Transplant Shrubs
Now is the time for transplanting shrubs.
The best time is determined by the soil moisture. Shrubs should not be planted when clay soil is soggy wet or 'extremely dry. The planting period may be extended past March if the shrubs are watered properly.
Container-grown shrubs can be planted any time of the year.

The Georgia Poultry Federation
has played an integral part in this poultry revolution as the forum for united action on problem areas within and outside the industry; working with governmental and legislative leadership, education, research and development agencies, other kindred organizations, and the general public in behalf of a bigger, brighter future for poultry and for all Georgia agriculture.
Chartered in August of 1951 by by men who saw the need for united action to do what they could not do alone, the Federation embraces five member organizations; the Georgia Poultry Processors Association, the Georgia Egg Association, the Georgia Poultry Improvement Association, the Georgia Turkey Association, and the Georgia Poultry Feed Council.
Many, many volunteer workers, exemplified by those who sit on the Federation's "Poultry Leaders Round Table," have supplemented the efforts of the officers and staff in establishing and accomplishing the Federation's goals, and in joint action with related groups to produce many positive benefits for Georgia agriculture and for consumers throughout the world.
In addition to its year-round efforts and industry service in many areas, the Federation provides insurance programs and other benefits not otherwise available to its members, sponsors and cooperates in student award and scholarship programs to help insure a continuing inflow of trained leadership for Georgia agriculture, and works with allied groups in mutually beneficial public information and marketing efforts.
