Food Proteins
Studied Closely
Some eight faculty members of the Department of Food Science at the Georgia Station are devoting part of their combined research efforts to improving world food protein sources. While emphasis is on increasing the content and quality of protein in peanuts, other potential sources of food and feed protein are being investigated including purified proteins from brewery wastes and poultry feathers.
The research group has been gathering momentum in the food pro-
tein area during the past five years and has thus far published more than 30 scientific and technical articles on their findings.
The focus on .peanuts is be'cause (1) they have economic importance in Georgia, (2) as a crop widely grown throughout the highly populated and less-developed areas of the world, it has a high potential for providing much-needed food protein, (3) the

Screwworm Found Prompts Warning
With reports that screwworms have been discovered in Arkansas and Oklahoma for the first time this year, southeastern livestock owners are urged to be especially vigilant in watching for screwworms the remainder of this summer.
Livestock owners are advised to avoid man-made wounds such as branding, dehorning and castrating whenever possible, and to treat unavoidable wounds and navels of newborn animals with a protective smear.
Keep animals confined and watch until all wounds are dry and danger of infestation is gone. Careful inspection of animals being purchased or sold is also recommended.
When infested wounds are found, samples should be taken from the center of the wound and submitted to the state veterinarian's office. Sample kits may be obtained from state or federal veterinarians, livestock inspectors or county extension service agents.

Cordele proved again that it is indeed the Watermelon Capitol of the world. From mid June through July 30, of this year 177,089,080 pounds of watermelons were moved through the Cordele Market. Average price of these watermelons was 3 cents per pound which brought a total of $5,312,672.40, well over the receipts brought in 1973. The heaviest, best day was July 9, when 9,100,000 pounds were moved through the Market at an average price of 3 cents per pound which brought a total of $27,300.00. Farmers from 50 different counties used the Cordele Market. These counties cover the major watermelon producing counties of Georgia.

Understanding The Farmers' Dilemma

While costs have increased in almost every area of our economy in recent months and years, many people do not seem to understand the farmers' dilemma in this squeeze. In a recent cost comparison study by the Department of Agriculture, basic farm supplies, vital to the production of food and fiber for this nation, were found to have increased steadily for the past two years and

then taken a giant leap upwards during the last six to 10 months. Some supplies, once readily available, currently are not even listed in farm catalogues.
Petroleum products, and many, many of the farmers supplies that are petroleum based, have about doubled. Add to this the spiraling property taxes over the past three years, study the charts, and you should have a better understanding of the farmers' plight.

Thank you all for your interest in identifying the farm implement pictured in the July 17th issue of the BULLETIN. We have heard from 42 of our readers, eight of whom were veterinarians. Thirty letters claimed the instrument to be a horse speculum used to hold a horse's mouth open while removing or filling teeth. 1 bunch watercress (cut into bite-sized pieces)
1/2 pound Romaine lettuce (bite-size)
head Boston lettuce cup blackeyed peas
(cooked and chilled) avocado
(peeled and diced) 2 hearts of Palm
(cut into 1 inch pieces)

2 hard-cooked eggs (coarsely chopped)
1/2 chicken breast (cooked, finely diced)
1 papaya (peeled and cut in slices)
1/4 cup broken salted pecans
8 stalks of cooked white asparagus
1 pint cherry tomatoes

Caesar salad dressing with oil to which the juice of 2 lemons and 3 drops of bitters have been added. Seasoned salt and seasoned pepper as needed. Mix ingredients, saving tomatoes, asparagus and papaya for garnish. Garnish and serve with Caesar salad dressing with oil.

Sorry to hear of your problem with muscadines. It is quite frustrating to have them and never get to eat the fruit. Chances are that your male pollinator is not doing the job. Perhaps the place where you got it ac cidentally gave you the wrong kind. I suggest that you buy a new pollinator and plant it near your scuppernong vines. Several good pollinating varieties are Cowart, Southland, Magoon, Burgaw and Dearing. Anyone of these should provide you with ample pollination.

We have a problem with our chest freezer. The freezer was unplugged without our knowledge and all the food ruined. Now there is such an odor that we can't get rid of it. We have tried baking soda, bleach and charcoal. Do you have any suggestions?
Mrs. J. M., Newborn We suggest that you try oil of wintergreen in your freezer to eliminate the odor. It can be purchased at most drug stores. Saturate cotton balls with oil of wintergreen and thoroughly cover the freezer with the oil. Leave the door slightly ajar and let the oil remain for 24 hours (or longer if you feel it is necessary). This should solve the problem unless the odor has gotten into the insulation. If this occurred, the insulation will have to be changed.

Made Easy
1. Can only fresh food in top quality.
2. Have equipment in good working order and know how to use it.
3. Have food, jars and everything used in canning thoroughly clean.
4. Work quickly, so as to can "freshness." This avoids deterioration.
5. Follow up-to-date directions backed by research.
6. Make sure jars are sealed air tight to keep out spoilage organisms.
7. Use boiling water bath for fruits, tomatoes, pickles and sweets; steam pressure canner for other vegetables and meats.
8. Process hot enough and long enough to kill bacteria and other organisms so they will not "work" in the food and make it spoil.
9. Store canned foods in a cool, dry, dark place.

Besides the geranium which we recognize in summer gardens with its bright showy flowers, there are also those geraniums which are known primarily for their scent.
There are over 50 species and varieties of scented geraniums in cluding the rose, lemon, orange, peach, lime, nutmeg, apple, pep permint, almond, apricot, coconut and filbert-scented. When the leaves of these species are crushed they release their exotic fragrance for use in potpourris, perfume, soaps, cold drinks and in cooking.
Scented geraniums were in troduced to this country before the Revolution, originally native to South Africa. In New England some people believe that a geranium in the window will keep flies away from the house.
According to Moslem legend, geraniums were all lowly plants un til one day Mohammed happened to lay his shirt on the plants to dry. When he removed his shirt, the sim ple plant had been rewarded with brightly colored flowers and a fragrant aroma.
Scented geraniums do not have the showy flowers like the other typical summer geraniums, although many have lovely delicate umbels of pink or white. Some have small crinkly leaves, others are slightly hairy with deep green lobes, while other varieties have round ruf fled leaves.
Geraniums are tender plants. They should be grown in pots so they can be brought indoors during the winter months. They will thrive indoors and will even bloom if placed in a window that will provide enough sunlight. They require as much sun as possible, good welldrained soil and very little fertilizer. Only when the foliage is particularly pale or there is a conspicuous lack of new growth should you fertilize.
To encourage side branching, pinch growing tips in early stages and remove flowers as they begin to fade thereby encouraging more to bloom.

Tribute To The Lowly, Long-Eared Friend

The second annual "Tribute to the Mule" will open at Gold Hills of Dahlonega at 10:00 a.m. on August 17.
Few remember the great con tributions the mule made to our American heritage.
A mule is a stubborn animal but rightly so. He held a very prominent place in the lives of the gold miners and was the most valuable asset it's owner possessed. In exchange for his room and board that man provides, the mule performed the power for building roads to the gold rich coun try of Dahlonega.

Mules are bred of a donkey and a horse which produces a horse, mule or a mare mule. Two mules cannot reproduce because of an imbalance of genes but the size and color is determined by the donkey and the horse.
A mule has a big belly and a long neck. His ears are long and pointed similar to that of the donkey and are very sensitive to touch. His feet are small for sure-footedness on the rough mountain terrain. He's an ugly beast compared to the horse but has much more stamina. He will work as long as required by his master.

quality. Substantial variations have been noted in both content and nutritional quality of the proteins present. This in turn has generated comprehensive peanut breeding and selection programs in the United States and other countries to improve the crop's protein profile. A com plete bibliography of the worldwide published research on peanuts is being assembled at this location and to date more than 5,000 references have been catalogued.
The facilities available to the research group along with their in dividual interests has prompted in vestigations of other potential food protein sources. In a recent study, a purified creamy-white protein isolate powder was prepared from poultry feathers. Work is in progress on the fractionation of this isolate to im prove its nutritive properties. Poultry feathers are available in large ton nages not only in Georgia but in many countries of the world. There has been rather widespread interest in this work.
Other large-volume waste materials are also being studied as potential protein sources. These in clude various food processing, brewery and food service wastes.
As the world food and protein needs become more intense, the con tinuing dynamic efforts of this small research group is expected to have increasing significance.

Hills is a mule pulling contest. There will be a Mule Beauty Queen or King Contest whichever the case may be and the winner will be crowned Queen or King of Mule Day. To most folks, all mules look alike but to qualified judges such as Secretary of State Ben Fortson, chairman of the judges, the winner of the Mule Beauty Contest will have a well proportioned body, curved legs, nonsagging back, small waist and shoulders, narrow hips and shinning, well groomed hair. Judges will also select the ugliest mule and the most stubborn mule.
Tommy Irvin, Commissioner, Georgia Department of Agriculture, will present trophies to the winners of the various mule contests.

Peanut Program Falls to Clear
Due to lack of grower response, the proposed indemnification program for Segregation 3 peanuts (or oilstock peanuts) did not pass.
Those voting approved the program by more than 85%. However, enough growers did not participate in the voting to approve the measure, (51% voting favorably is required).
Many of Georgia's peanut allot ments are now leased or rented, this is regardless as a contributing factor to the failure of the program to pass.
If the program had been approved, each peanut grower would have been assessed $5.50 per ton of peanuts produced. This deduction would have comprised a fund through which producers of Segregation 3 peanuts would have been in demnified for the difference between oilstock prices and average support prices. ________________
