Tell Egg Story
The Georgia Egg Association is a statewide trade organization i composed of producers, hatcherymen, egg handlers, feed companies, and other interested persons and firms. By coordinating their efforts through : the Georgia Egg Association, much more can be accomplished ' for the egg industry of Georgia.
In January 1955, commercial egg producers of Georgia realized the need of a strong egg association for Georgia to furnish a medium through which they could express their views for "legislation to strengthen enforcement of the Georgia Egg Law. .The Association was officially

: organized June 6, 1955. Through the "voice" of the Georgia Egg Association, our industry has been carefully organized to face the many changing conditions in the highly competitive field of marketing high quality eggs.
The cooperative efforts provided through the Georgia Egg Association help to safeguard the interest of all commercial egg producers. Those who represent the egg industry of the Board of Directors are selected from producers and egg handlers, both retail and wholesale.
The Georgia Egg Association directly represents the egg industry of Georgia on local issues, and also on a regional and national basis.
In 1955, Georgia had approximately 2,000,000 commercial layers, ranking 23rd in the nation in the production of eggs. At that time we were importing 60 percent of the eggs used in Georgia. The egg industry has changed drastically. In July 1972, Georgia ranked 2nd in the production of eggs with approximately 23,000,000 layers in production and is exporting 65 percent of our eggs to the eastern markets.
The Georgia Egg Association could see this trend developing over the years and realized the need for some organization to promote shell eggs. The Association sponsored what is now known as the Georgia Agricultural Commodity for Eggs, whose function is promotion, research, and education. The Association was also one of the leaders in establishing a southeastern organization known as National Egg Company, which disseminates information on markets, supply and demand conditions and statistical information.

Cured Meat Products
To List Ingredients
After February 19, 1973, a new U. S. Department of Agriculture regulation will require labels on cured meat products to list ingredients used in the curing process.
The new labeling is aimed at alerting consumers to the various ingredients that make up curing mixtures used today. Such mixtures may be composed of 10 or more ingredients - including salt, sodium nitrate, and ascorbic acid.
Milk Production
Milk production totaled 98 million pounds on Georgia farms during the month of October, according to the Georgia Crop Reporting Service. This level is unchanged from October 197K

Wool Fabrics, Garments
Required To Give Facts
Consumers now have help in selecting wool fabrics and garments, thanks to the Wool Production Labeling Act.
This act has practically eliminated "hazy" terms such as "part wool' and others which had no definite meaning. Now labels are required to give the percentage by weight of wool contained in the item.
The label must also state whether the wool is virgin or new, reprocessed or reused.
Plant Society To Meet
"Better Business for Me in '73" is the theme of the Georgia Plant Food Educational Society's winter meeting. The meeting will be held January 15 and 16 at the Rural Development Center in Tifton.

Compare prices in local stores and shop mainly in the one with the best prices on the products you buy regularly.
Check newspaper for special sales before you shop. Make sure you do not go so far out of your way to get a bargain that the time and distance negates the amount you would save.
Food bought in large containers usually cost less than the same amount bought in small containers. However, the big economy size is not a good buy unless the left-over portion can be stored and used. In short, buy the size containers with the lowest cost per ounce or per pound, if that size is practical for your family.
To take advantage of the best buys at the meat counter, you need to be aware of the many cuts of meat available and know how to use them in family meals. Keep in mind that

I wonder if any of your readers could help me find an oldfashion flower. I believe it would be considered a member of the mallow or hibiscus family, is a perennial, and has seed. The blood red bloom is not quite as large as a saucer and is single. The shrub grows about 4 to 5 feet high and the leaves are large and velvety texture. The only name I have ever heard for it was Velvet Blazing Star. I would like to know what the real name is for it and where I might get one.

STUFFED CUCUMBER

2 medium cucumbers

1 teaspoon dehydrated

2 cups canned

onion flakes

mushrooms, drained Salt and pepper to taste

Nutmeg to taste

1/2 pimento, cut

into 8 equal strips

Peel cucumbers; cut lengthwise and scoop out seeds.

Place in a saucepan; cover with water. Boil about 4 minutes

or until tender; set aside. Combine onion flakes and

mushrooms in blender and blend until smooth. Place in

non-stick pan. Cook slowly, stirring occasionally until mix-

ture has thickened. Season with salt, pepper and nutmeg.

Fill cucumber boats with equal amounts of mixture and gar-

nish with pimento strips. Makes 4 servings.

CREME DU BARRY

2 cups cooked

2 tablespoons

cauliflower

chopped celery

1 tablespoon dehydrated 1/2 teaspoon rosemary

onion flakes

3 packets instant

4 cups water

chicken broth and

1/4 cup evaporated

seasoning mix or 3

skimmed milk

chicken bouillon cubes

Salt and pepper to taste 1 teaspoon freshly

chopped parsley

Combine first 6 ingredients in saucepan. Simmer slowly un-

til celery is tender. Place 1/2 mixture in blender and blend

until smooth. Repeat process with remaining mixture. Add

milk; season with salt and pepper. Sprinkle with parsley.

Makes 4 servings.

ROAST TURKEY

Roast the turkey uncovered at 300 F. until tender, allowing 25 minutes a pound under 12 pounds; 20 minutes a pound for larger turkey. Baste about every half hour with the following mixture: chicken bouillon, diced celery, dehydrated green pepper flakes, dehydrated onion flakes, and other seasonings to taste.

APPLE-RICE DRESSING

2 medium apples,

4 tablespoons brown

peeled, cored and

diced

1/8 teaspoon nutmeg

1/8 teaspoon ginger

1/8 teaspoon cinnamon

1 teaspoon lemon

1/2 cup water

juice

2 cups cooked

enriched rice

Combine first 7 ingredients in saucepan; simmer for 15

minutes or until apples are soft. Combine with rice and turn

into a 1-quart casserole. Bake at 400 F. until thoroughly

heated. Makes 4 servings.

CRANBERRY - PINEAPPLE RELISH

2 cups cranberries
Artificial sweetener to equal 8 teaspoons sugar
2 cups water 1 envelope (1
tablespoon) unflavored gelatin 1 teaspoon lemon juice

4 tablespoons brown sugar replacement
1/8 teaspoon orange extract
4 small slices pineapple
(canned in its own juice), chopped; PLUS 4 tablespoons juice

Combine first 5 ingredients in blender for 20 seconds. Remove and place in saucepan. Simmer slowly about 15 minutes or until mixture thickens. Strain mixture through fine strainer; return to saucepan. Add pineapple and juice, gelatin and lemon juice. Mix well. Place over low heat and simmer 5 minutes. Remove from heat; place in a container. Chill. Makes 4 servings.

BROCCOLI SOUFFLE

2 cups cooked

1/4 teaspoon nutmeg

broccoli; drained

Salt and pepper to taste

and finely chopped 1/4 cup evaporated

skimmed milk

Season broccoli with nutmeg, salt and pepper. Fold in milk;

place in 1-quart casserole. Bake at 400 F. for about 20

minutes. Makes 4 servings.

BRAISED CELERY

1 bunch celery

2 packets instant

1 teaspoon dehydrated

beef broth and

onion flakes

seasoning mix or

1 cup tomato

2 beef bouillon

juice

cubes

Salt and pepper to taste 1/2 teaspoon freshly

chopped parsley

Cut off top and bottom of celery, leaving about 8-inch

pieces. Peel with vegetable peeler; wash well. Tie into 2

bunches with string. Place in saucepan; cover with water,

add broth mix and onion flakes. Bring to a boil and cook

about 30 minutes or until celery is tender. Drain, reserving

about 1/2 cup of liquid. Remove string and cut celery pieces

in half. Place in shallow skillet; cover with tomato juice and

reserved liquid. Simmer until sauce thickens (about 10

minutes). Season with salt and pepper; sprinkle with par-

sley. Makes 4 servings.

PUMPKIN CHIFFON TARTLETS

1 can (1-lb.)

4 tablespoons brown

cooked pumpkin

sugar replacement

1/4 teaspoon rum

1/8 teaspoon nutmeg

extract

1/8 teaspoon

Combine first 6 ingredients in large bowl; mix well. Set

aside. Sprinkle gelatin over water in small saucepan to sof-

ten. Place over low heat and stir until gelatin has dissolved

(about 3 minutes). Set aside. Combine milk and artificial

sweetener in bowl; mix with rotary beater. Slowly pour in

gelatin mixture and continue beating until stiff peaks form.

Fold 3/4 of this into pumpkin mixture. Divide equally into 4

individual dessert molds. Top each portion with equal

amounts of remaining gelatin mixture. Chill until firm.

Makes 4 servings.

MUSHROOM: Saute 2 cups sliced mushrooms with 3/4 cup chopped onion and 1 cup chopped celery in 1/3 pound butter or margarine. Add with 2 cups water to 1 1-pound package herb seasoned stuffing.
PECAN: Toast 1 1/2 cups pecans in 1/3 pound butter before adding to 2 7-ounce package herb seasoned cube stuffing with 2 cups water. Almonds, filberts, walnuts or drained water chestnuts may be substituted for pecans.

Sauce (recipe follows)

Combine ingredients, except sauce; mix well. In 16 x 11" baking pan, shape with hands into ring (or loaf) about 10" across. Pour over half the sauce. Bake in moderate oven (350 degrees) for 45 minutes; pour over remaining sauce; bake 45 minutes longer, basting several times with sauce. Makes 12 to 14 servings. SAUCE: Combine 1 can condensed tomato soup, 1/2 cup vinegar, 1/2 cup brown sugar and 1 1/2 teaspoon prepared mustard.

APPLE-STUFFED ACORN SQUASH

If fresh beans are used, wash, French, and boil until tender. Season to taste with sugar, salt, and pepper; drain. If canned, drain; heat until tender, season; add the extra tablespoon of butter to hot beans; mix thoroughly. In a separate saucepan, saute fresh mushrooms, cut into desired pieces, until tender. Mix with drained, seasoned beans. If canned are used, heat for several minutes, in butter, and stir into beans. Now make a sauce as follows: A/lelt butter in pan; blend in flour; season with salt and white pepper to taste, blending in salt and pepper before adding milk; add cream or milk; stir until thickened. Remove from fire; add lemon juice and dash of cayenne pepper. Just before serving, combine beans and mushrooms with sauce, and, lastly, stir in the almonds, whole or chopped. Reheat to boiling point, serve hot. This may all be put into a casserole and baked in moderate oven, 25 minutes. Top with crumbs or cheese if desired. (For a quick dish, blend beans and almonds with 1 can condensed mushroom soup.)

Wash squashes, cut into halves lengthwise, and scoop out seeds and fiber. Put in baking pan, cup side down, and add

1/2 inch of boiling water. Bake in preheated hot oven (400 degrees) for about 20 minutes. Meanwhile, peel, core, and dice apples. Mix apples with 1/4 cup melted butter and the maple syrup. Turn squash halves cut side up and brush cup surfaces with melted butter. Sprinkle with salt. Fill squash with apple mixture. Cover pan with foil and continue baking
in hot oven (400 degrees F.) for 30 minutes, or until apples

This tree along with the northern
white oak is the most common and
important of eastern white oaks and
contributes about 3/4 of the wood
sold under this name. The acorns of
this tree sprout soon after they fall
in autumn and many are frozen
before the roots can penetrate the
ground.
They are the prime source of food
for the gray squirrel who by nature
plants many of them at a time when
they must be covered or die. This
has caused many naturalists to be
concerned for the future population
of white oaks since the squirrel
population is considerably
diminished from a few years ago.
The acorns were also eaten by
the Indians and settlers who made
the acorns more palatable by
boiling them in water. This
"sweeter" acorn was not only tasty
to early appetites but the oil which
was produced by boiling the nut
was used to treat aching joints.
The wood from the white oak is
one of the best hardwoods and is
used for making furniture, flooring,
barrel staves, railroad ties and fuel.
It has also been used for axe han-
dles due to its durability and when
hickory was scarce.
The white oak is a large tree
growing to approximately 100 feet
high and 4 feet in diameter. The
leaves are alternate, simple, about 7
inches long, 3 inches wide and
deeply lobed. Picture No. 1 above is

Check the prices for different forms of milk in your area. Then decide which kind of milk, what sizes of containers, and what services are best for your family and your budget. It is usually less expensive to buy fresh fluid milk at a good or retail dairy store in 1/2- to 1-gallon containers.
Prepared or partially prepared foods often but not always are more expensive. If a product will save you considerable time and the price is reasonable, try it. If the convenience food cost more, decide if the time and work it saves are worth the extra cost.
Most baked products made at home from mixes cakes, pies, cookies, and biscuits cost about the same as similar products made from basic ingredients. Sometimes they cost a little less. Many frozen and chilled baked products and ready-to-serve bakery products cost much more than home-prepared ones.

Horses may never regain the full popularity they lost to the automobile,

but they are making a big comeback at Berry College and Berry Academy.

Students this year are learning to groom, feed, saddle and bridle, as well as

ride horses, according to the college's horsemanship instructor Mrs. Jane

Doss. "We hope that when a student completes the course, he will be able to

competently buy, care for and enjoy a horse of his own," Mrs. Doss said.

James Deal, chairman of the college's agriculture department, said his

department plans to use the horses in conjunction with Berry's new animal

technology program. In those classes, students will learn to work horses

with cattle. Here two Berry students prepare for an afternoon class in

Our pecan trees put on a big crop of nuts but when they are almost mature, they develop a white to black mold or fungus on the shells and fall off. What is this and how can it be prevented?

The disease you described is known as scab. It is caused by a fungus which attacks susceptible nuts in July and August, causing them to turn black and drop off the trees. Spraying the trees with a fungicide is the only way to control scab. About seven applications are required per year. There are scab-resistant varieties in some areas. Stuart, Parley, Elliott, and Curtis are the varieties most resistant to this disease. However, they can be susceptible in some locations. Your county agent has information on spraying to prevent scab.

We have one stand of bees we've fed old honey and kept through two winters now, but we have not gotten any honey from them. Can you help?

There are several factors that effect the production of honey by a colony of bees. Some of these are a strong queen, management of the hive, location, availability of pollen and nectar and sufficient storage space in the hive for surplus honey stores. We suggest that you contact your county

agent and ask that someone inspect your bees and see if the problem can

be found and corrected.

The sample you have submitted is a piece of a quartz rock with small shiny flakes of mica adhering to it. The linear surface texture which looks

like wood grain is due to the fact that it comes from strongly folded and

sheared metamorphic rock.

The problem that causes the eyes to swell is probably caused by either a viral or bacterial infection. You should separate the sick birds from the rest of the flock and treat all birds with antibiotic or sulphur drugs in their water. You could get this from your local veterinarian or feed store.

I have a problem with my chickens picking each other's tail feathers out. How can I prevent this?

This problem could possibly be avoided by debeaking your chickens. This means that the sharp end of their beaks be removed by shears or an electric iron.
