School Food Service 25 Years In Georgia

25 years of school food service -

in these years the Georgia Food Ser-

vice Program has increased its scope

from 146,000 meals per day to

890,000 meals in October, 1971.

School food service includes

breakfast, lunch, and extra milk.

For some pre-

schoolers, it

includes snacks.

For some child-

ren it includ-

situations. Le-

gislative pro-

visions

for

the food service program are con-

tained in the National School Lunch

Act as amended and the Child

Nutrition Act as amended.

Georgia's heritage in school food

service is rich; Georgia's future is

bright. The late Senator Richard B.

Russell was instrumental in the

passage of the original National School Lunch Act; Senator Herman Talmadge provided the leadership for the amendments in 1970 and more recently P.L. 92-153, the amendment that provided a 20% increase in financial assistance^, in school food service for lunches to needy children.
The purpose of school food service is to meet the children's food and nutrition needs during the school day. The lunch menu pattern includes a meat, 2 vegetables or fruits (cooked or raw), bread, butter, and 1/2 pint of milk. The pattern is designed in such a way that the meal will provide 1/3 of the child's daily food needs.
In October 862,000 had lunch each day; 84.5% of all children in school. Breakfast menu pattern includes 1/2 pint of milk, 1/2 cup of fruit or fruit juice and one serving of enriched bread or cereal. Breakfast is designed to provide a minimum of 1/4 of the child's daily food needs.
All children need lunch at school. All children need breakfast; but not all children need breakfast at school. But for the children who travel long distances by bus or leave homes very early because of school transportation, or who have no food at home, or no one at home to prepare their breakfast, these children need breakfast at school.
28,000 children in Georgia had breakfast at school in October. The school breakfast program needs expanding to reach additional children. Community support is needed.
Hungry children cannot learn education is designed for "learning;" therefore, when a child is hungry the

the No. 2 state. George D. Walker, Cooperative
Extension Service forester who cited the figures, explained that on January 1 Georgia had 2,191 certified Tree Farms with a total acreage of 7,906,669. In second place was Florida, with 6,818,191 acres. Alabama, with 6,748,479 acres, was third.
Spray Meetings

Most Georgia gardeners think of hanging baskets as cascades of bright petunias, ferns, fuchsias, geraniums, lantana, caladiums or other spring and summer plants. With a bit of imagination hanging baskets can provide year round effectiveness.
Modern containers have increased interest in hanging baskets.
In addition to the wire and wooden baskets that we have been using we now have a wide choice of attractive containers made of plastics, ceramics, and even rubber.
Liners for the still favored wire

Held In March In response to many requests from
county agents and farmers, the Extension engineering department will conduct four meetings in March to
bring growers up to date on new equipment and methods for applying pesticides to row crops.
Meetings will be at Midville
March 20, at Claxton March 21, at Douglas March 22 and at Albany
March 23. The main purpose of the meetings
is to inform farmers of the various methods of applying chemicals to
row crops.

baskets may be made from paper mache, plastic bags, or plastic nursery containers. For the purest there is still sphagnum moss to line the basket. Water proof mache is used to line baskets where dripping water might present problems.
Sheets of plastic or a plastic freezer bag can give excellent results
as a liner. Three or four slits or pencil holes near the bottom will allow excess water to drain through.
For success, soil mixtures for baskets should be carefully prepared. A mixture of equal parts of clay loam, peat moss and sand

Pecan Growers Meet
The Southeastern Pecan Growers Association will hold their 65th Annual Convention March 12-14. The Convention will be held at the Sheraton-Biltmore Hotel in Atlanta.
Pecan specialists from five southeastern states will be discussing problems of production and marketing of vital interest to Georgia's $29 million pecan industry.

will be satisfactory. In sandy soil areas a mixture of equal parts of sandy loam and peat moss or garden mold will give good results.
When using evergreens for winter and summer color, make sure that you do not forget the plants during the coolejr months because water needs continue. Cold winds will drythe plants and soils very rapidly.
If you fertilize, go light by using about 1/4 teaspoon of an 8-8-8 or similar analysis fertilizer per 1

gallon of soil volume. Water thoroughly immediately after fertilization.

Look Before You Leap Two Special

Fearful that too many Georgians are "leaping into the greenhouse tomato business before they look/' a four-man team of Extension specialists have warned that it is not a business for amateurs.

Neither is it a good sideline
operation to supplement the family income, said Horticulturist C. D. Spivey, Agronomist J. B. Jones, Plant Pathologist Ralph Motsinger and Entomologist Emmett Harris.
Greenhouse tomato production is an extremely risky adventure and based on current experiences of many would-be growers, includes "more bust than boom."
Anyone interested in greenhouse tomatoes should contact his county agent for the latest unbiased research information before making any definite plans.
The tomato, one of the easiest vegetables to grow in the outdoor garden, becomes almost an entirely different plant in the greenhouse.
The effect of light, humidity, tem-
perature, fertility, insects and diseases are greatly intensified under greenhouse conditions.
One of the hazards, and most dif-
ficult to control, is humidity and

temperature. The specialists in-
dicated there is a real art to keeping a greenhouse from getting too wet or
too dry, or too hot or too cold. . They mentioned at least four
diseases, and about the same number of insect pests, with which the greenhouse tomato grower has to contend.
Fertility of the soil or artificial growing medium was also mentioned as a particularly difficult problem for the amateur grower.
Calcium deficiency and excessive nitrogen have been prevalent this
season with greenhouse tomatoes grown in artificial soil mixes such as the "Cornell Mix."
Calcium deficiency causes blossom end rot of the fruit and death of young terminals. Too much nitrogen leads to poor fruit set.
Labor requirements are also an
important factor which should
receive a lot of study before deciding to build a greenhouse for tomatoes.

Recipes of the Week

SMOKED MULLET
6 dressed mullet (1 pound each) or other dressed fish, fresh or frozen 1 cup salt 1 gallon water 1/4 cup salad oil
Thaw fish, if frozen. Remove the head just below the collar bone. Cut along the backbone almost to the tail. The fish should lie flat in one piece. Clean and wash fish. Add salt to water and stir until dissolved. Pour brine over fish and let stand 30 minutes. Remove fish from brine and rinse in cold water.
To smoke the fish, use a charcoal fire in a barbecue grill with cover or hood. Let charcoal fire burn down to a low, even heat. Cover with 1/3 of the wet chips (prepared by soaking 1 pound of hickory chips or saw dust overnight in two quarts of water).
Place fish on a well-greased grill, skin side down, about 1/4 inches from coals. Cover and smoke for 1 1/2 hours. Add remaining chips as needed to keep the fire smoking.
Increase the temperature by adding more charcoal and opening the draft. Brush fish with oil. Cover and cook 15 minutes longer or until fish is lightly browned. Serves 6.

Still another part of the allencompassing Pink family, Sweet William is, in the opinion of many, the most attractive of all.
History fails to tell us who Sweet William was, or what he was so sweet about, but he left his name to one of the showiest of all Dianthus. Botanically identified as Dianthus barbatus, it is rarely perennial, though it gives every appearance of being one. The trick is in what gardeners call "volunteer seedlings", or a host of little plants growing up around the old one and replacing it.
Growing from six inches to more than two feet high, it is covered with fragrant, long-lasting blooms in various shades and bi-color combinations of red and white. A garden favorite for centuries, it makes an excellent contrasting co-worker with Canterbury Bells, Foxglove, or other early summer flowering plants. Amazingly hardy, too, once Sweet William is established, you can count on his company for years.
Valera Jessee
School Food Service
(Continued From Page 1)
learning is obstructed and consequently his education is obstructed.
For the first time the lunch program is available to children in accordance with the level of family income. All children are eligible to buy lunches at less than full cost; children from a family of four with income of $3,940 are eligible for lunches at no cost; children from homes with income levels between $3,940 and $4,500 (for family of four) are eligible for lunch at no more than 20 cents.
The highest price paid in an elementary school for lunch is 35 cents. The cost of producing a lunch is around 48 cents. The sale price to the child is geared to the family income level.
School food service is good for children; it is good for the agricultural market and for the labor market. In 1970-71, Georgia schools spent $71,600,000 for goods and services. The schools spent $38,500,000 for food, including 183,313,652 1/2 pints of milk.
The schools use 364,000 pounds of poultry in a single day's menu. The schools feature poultry on the menu at least 6 times per month. Schools use peanut butter at least 10 times per month. Peanut butter is popular on the lunch menu and is gaining appeal as a breakfast item. Schools use 240,000 cups of peanut butter each day that it is on the menu as a protein food. In a single day schools will use 71,000 dozen eggs.
School food service is a large consumer of Georgia products and will become a larger consumer as food service programs are expanded to reach the elderly and pre-school children. This expansion will be good for the market as well as for the people.

Enclosed in my letter is an olive seed. I would like to know how to plant and grow the tree, if it will grow in this part of the country.
W. T., Rocky Face Olives only grow and set fruit in the Pacific southwest due to its high heat and draught requirements. The tree is killed by 15 degrees F. and
the fruit by 28 degrees F. The tree will live in the extreme south but due to the high humidity will not set fruit. They will grow in most soils but require good drainage.

What will keep birds from eating strawberries? E. B., Metter
Just before the strawberries become ripe (just as they begin to have color), cover the bed with a plant bed cover or a fine net. The cover should not be placed directly on the berries, but rather on a frame just
above the berries. When they ripen, the cover may be removed. This should be a matter of just a few days. The berries should be picked immediately upon removing the cover.
***

Would you please identify this monster? It looked like a baby alligator, only with a short snout, mouth full of teeth, tan in color, later changing to red polka dots, rough looking bumps down his back in streaks, feet looked like web feet only toes separated, stomach had suction cups down entire length, and was about 16 inches long. We found it in the feed room where hay is kept.
Mrs. L. B., Douglas The reptile you described closely resembles a salamander, known as a
hellbender or mudpuppy. They are fairly common in Georgia and
Florida. They are not dangerous, however, their bite is painful. ***

My yard is covered with snakeweed. How can I get rid of it?

J. B., Pelham

Use Atrazine in the late fall. It may take two years of annual treatment

to rid you of this pest.

***

I have bought four different tulip trees from nurseries and they grow but never bloom. What is wrong?
Mrs. S. C., Savannah We need to know what variety of tulip trees you have. If you are
referring to the tulip poplar, it takes fifteen years to bloom. The tulip magnolia should bloom unless it* w*as* killed by the cold weather.

I have noticed that the retail price of okra is very high. Could you give me some information on this? I would like to raise and sell it.
H. C., College Park The price of okra fluctuates with the season. We suggest that you con-
tact some retail outlets in your area and have an agreement with them to
furnish a set amount at a set pr*ice* d*uring the growing season.

Where can I buy sunflower kernels or meal by the bulk? D. G., Alpharetta
Our seed division advises that any of the seed companies such as Hastings, Sawan, Inc., and Everett Seed Company handle sunflower seed.
Any of the retail seed dealers in your area could secure sunflower kernels in bulk for you from these dealers.
***

My dog would not eat much for two weeks, then she started having fits

and chomping her teeth. Then she ate until she died. Is it possible for a dog

to have fits without having rabies?

Mrs. E. C., Glenwood

The Vet division advises that there are many conditions such as

worms, hepatitis, distemper, certain poison, etc. which will cause fits in

dogs. It is very unlikely that your dog had rabies since she was eating un-

til death. Animals with rabies usually have throat paralysis which causes

them to be unable to eat or drink for some period of time prior to death.

May we suggest that you contact your local vet for additional infor-

mation.

***

Will catfish that you buy from commercial hatcheries grow and reproduce in ponds? I have been told that catfish must have running water to reproduce.
H. D., Waynesboro Catfish will grow and reproduce in farm ponds.

I have a rooster that crows constantly. Either I find some way to stop him or make rooster soup. Do you have any suggestions?
Mrs. J. E., Oxford We checked with several chicken experts and they seem to think the
best thing for you to do to stop this excessive noise is to go ahead and make rooster soup.

Why do horses eat the bark off of trees? We have 11 horses pastured in a pecan grove and they are stripping the bark from the trees. The vet told us that the horses are being properly fed. Could something be lacking from their diet?
K. F., Albany One of two things might be responsible for your horses eating bark. First, there is a possibility that the horses are not getting ample amounts of minerals and salt. Horses require free choice loose salt and minerals. Second, they may have acquired this as a bad habit. If this is the case, you should try wrapping the trunks of the trees with croker sacks or some
similar material that could be soaked with burnt oil or anything that would cause a bad taste in their mouths and an unpleasant odor to them. This will stop the habit if this is the case.
