Recipes of the Week

FROZEN CHRISTMAS PUDDING
1 cup crushed pineapple 1/2 cup marashino cherries 1/2 cup light raisins 2 cups tiny marshmallows 1/3 cup chopped blanched almonds, toasted 1 Tabtespoon grated lemon peel 2 Tablespoons lemon juice 2 teaspoons rum flavoring 2 egg whites 1/4 teaspoon salt 1/3 cup sugar 1 cup heavy cream, whipped Drain pineapple and cherries, reserving syrup. Chop cherries. Combine syrups and raisins; heat to boiling. Add marshmallows; stir till dissolved. Cool; add pineapple, cherries, nuts, lemon peel and juice, rum flavoring. Beat egg whites and salt tiU foamy; gradually add sugar, beating to stiff peaks. Fold into mixture. Fold in cream. Freeze firm in refrigerator tray. Makes 8 servings.

OLD-FASHION MOLASSES TAFFY

1/2 cup butter
2 cups sugar
1 cup molasses 1 1/2 cups water
1/4 cup light corn syrup Combine all ingredients in large saucepan and cook over high heat, stirring until sugar is dissolved. Cook rapidly until mixture begins to thicken. Lower heat slightly and cook until 260 degrees F. registers on candy thermometer, or until a little of mixture dropped into cold water forms a hard ball. Pour onto greased platter. When cool enough to handle, butter hands lightly and pull candy until light in color and too hard to pull further. Stretch out into long rope 1/2 inch in diameter; cut with scissors into 1 inch pieces. Wrap in wax paper; makes about 1 1/2 pounds. (Add a little red or green food coloring for decoration.)

QUICK FUDGE

1 can (6 oz.) evaporated milk, undiluted 1 3/4 cups sugar 1/2 teaspoon salt 2/3 cup chopped nuts 1 1/2 cups miniature marshmallows 1 1/2 cups semisweet chocolate pieces 1 teaspoon vanilla extract Combine evaporated milk with sugar and salt. Bring to a boil, and simmer for 5 minutes. Remove from heat, and add remaining ingredients. Stir until marshmallows melt. Pour mixture into buttered square pan (9 inches). Cool. Makes about 2 pounds.

PEANUT BRITTLE

2 cups granulated sugar

1 cup firmly packed brown sugar

1/2 cup light corn syrup

1/2 cup water

pinch of salt

1/4 cup butter

1/8 teaspoon baking soda

1 1/2 cups peanuts

Combine sugars, corn syrup, and water in saucepan. Cook,

stirring, until sugar is dissolved. Cook, without stirring, to

300 degrees F. on candy thermometer, or until a little of mix-

ture dropped into cold water becomes very brittle. Remove

from heat; add salt, butter and soda and stir just to mix. Add

nuts and turn into shallow greased pan. Let stand for a

minute or so and then pull quite thin; when cold, break up.

Makes about 1 1/2 pounds.

PULLED MINTS

3 cups granulated sugar 1 cup water 2 Tablespoons light corn syrup 1/4 teaspoon salt 10 drops peppermint or spearmint 1 cup sifted confectioners' sugar 1/2 cup cornstarch Combine granulated sugar, water, corn syrup, and salt in saucepan. Put over heat and stir until sugar is dissolved. Bring to boil; cover and boil for 2 minutes. Uncover and continue cooking, without stirring, until 265 degrees F. registers on candy thermometer, or until a little of mixture dropped into cold water forms a very hard ball. Remove from heat and pour out onto large platter. Cool until comfortable to handle (mixture should still be quite warm). Add oil of peppermint. Then pull with fingers until light-colored and glossy. Stretch into long rope about 1/2 inch in diameter. Cut into 1 inch pieces and put at once into mixture of confectioners' sugar and cornstarch. Let stand in warm place overnight to allow mints to mellow. Then shake in strainer to remove excess sugar mixture. Store in airtight container.

Holiday Decorations

CARD HOLDER
Equipment needed: 1 qt. milk carton, roll of yarn in Christmas color, two pieces of styrofoam, decoration for top, your Christmas cards. 1. Cut the top and bottom out of a quart milk carton. 2. Start wrapping knitting yarn around the sides of the carton by going in and
out so that the yarn runs vertically with the height of the carton. To attach the start of the yarn, staple to the carton. Four ounces of yarn is sufficient to cover a half gallon with yarn. 3. If a two color effect is desired, one ounce of yarn for each color is needed. Wrap about 10 laps of one color around, then 10 laps of another, and continue wrap ping with alternating colors. Secure the end of the last lap by tying the ends of the yarn inside to an other piece of yarn. 4. Cut 2 pieces of styrofoam in squares to fit snugly in the top and bottom of the carton. This is necessary since it keeps the carton in shape and forms a top that can be decorated. Secure styrofoam by sticking straight pins from the sides. 5. Decorate the top of the carton with artificial foliage like holly, ribbon, pixies, snowmen, Santa Claus, etc. 6. To use as a card holder, slip a card through each strand of yarn and pull the card through until the yarn is in the fold of the card. One carton can hold ap proximately 140 to 160 cards if each strand of yarn is used.
SOUR CREAM CUP FLOWER (Use as a package bow)
Materials needed: Sour cream cup, paint.
1. Cut down from open end of cup 5 times (1/2 inch apart) -
2. Round off the ends of the petals. 3. Roll back petals. 4. Dip cup in hot water to remove wax. (Dry with
paper towel.) 5. Paint (use 2 coats) Dry thoroughly.

Equipment needed: Cardboard cut in a triangle (27 x 27 x 27), cardboard cut into the shape of a pot (top 10", bottom 5", sides 7 1/2"), burlap, velvet paper or felt, gold rope, 21 cottage cheese cups, hanger, wire.
1. Cover cardboard triangle with dark green burlap. 2. Cover cardboard pot with red and trim with gold rope. 3. Paint 21 cottage cheese containers (dip cartons in hot water to remove wax and use flat enamel paint.) 4. Wire containers through cardboard beginning with 6 on the bottom row, 5 on second row, until you have 1 for the top of the tree. 5. Cut circles of velvet paper or felt and glue into center of cups. 6. You may decorate insides of cups with Christmas lights or shiny ornaments. 7. Wire a coat hanger to the back to hang onto your front door. (Miniature blinking lights would be excellent for a special look at Christmas)
CHRISTMAS TREES

Equipment needed: milk cartons, (pint or quart), wallpaper or contact, trim small luster ball, glue, ruler, cardboard paper towel or toilet tissue rings. 1. Cut pointed end out of carton. Use ruler and find
center of the four sides. Draw angle lines for ming shape of tree. Cut out sections. 2. Bring four points to center and tape. 3. Cover with wall paper and trim. Add tree trunk (towel rings).
CHRISTMAS REINDEER
Equipment needed: 3 qt. milk cartons, 1/2 gal. carton, 1 pt. carton, velvet paper, gold glitter, sprig of holly, gold cord for reins, 2 tree branches for an tlers, small jar gold paint or spray can.
\. Cut the 1/2 gal. carton so it will have a flat end. Cut out pointed ends of 2 qts. were used for base of legs. Cut pointed end of other qt. carton and fold and tape flat. Cover the pint carton also.
2. Attach the head (pt. carton) to the neck (qt. car ton) by cutting a hole and inserting qt. carton.
3. Glue the neck to the body (1/2 gal.). 4. Glue and brad the l8gs which have been cut to
desired length to the body. 5. Trim. Add tail, eyes, ears (all cut from gold
paper), paint antlers gold, after dry put glue on antlers and dip in gold glitter. Attach gold rein around using brads on each side of head.

The traditional use of evergreen trees during the Christmas season brings us all closer to the fragrance and freshness of the forest. Christmas trees probably do more to bring joy to families during the holiday season than any other decoration during the year.
It is the general opinion that the custom of decorated evergreen -trees in the home at Christmas began in western Germany several hundred years ago. The first Christmas trees were hung with roses cut from paper of many colors, apples, wafers, spanglegold, sugar, etc.
Later cookies in the shapes of flowers, bells, stars and angels adorned the holiday tree. The lighted Christmas tree is attributed to Martin Luther who first attached lighted candles to the tree to simulate the bright starlit sky of Christmas Eve.
Christmas trees were not common in the United States until the 1850's. The first Christmas trees in America were trimmed with fruit, ribbons, colored paper, cranberries, polished nuts, tufts of cotton and strings of popcorn.
Decorating the tree is thought to have originated from the idea of hanging food for birds on the upper limbs of trees.
Fir trees were the original Christmas trees. However, today practically all species of evergreens are being used. The number one favorite though in the U. S. is the bushy, longer-needled scotch pine, Pinus sylvestris, pictured above.

Cabbage On New Year's Represents Four Seasons

According to German tradition, if you eat cabbage on New Year's Day, you'll assure yourself of plentiful food for the coming year. The cabbage should be served in four equal pieces -- representing the four seasons of the year. And it should be the first solid food eaten at the main meal that day.

When shopping for cabbage, look for heads which are firm or hard, and heavy for their size, with crisp leaves. The outer leaves should be free from serious blemishes. These outer or "wrapper leaves" are usually discarded, but too many blemished leaves cause extra waste.
Old cabbage (cabbage that has been stored) may lack green color, but it's satisfactory if the leaves aren't wilted or discolored. If the
leaves have separated from the base of the head, the cabbage may be too old.
Cook fresh cabbage the shortest time possible and use very little water to save its high nutritive value. Never overcook cabbage because the flavor gets, strong and it loses its crisp texture.
The cooking time in a saucepan is

short -- only 3 to 10 minutes -- for shredded cabbage of different varieties. Finely shredded cabbage can also be cooked in a frying pan in a small amount of fat (1 tablespoon) and water (2 tablespoons), and 1/2 teaspoon salt for each quart of shredded cabbage. Cover the pan to hold in the steam, and cook over a low heat for 6 to 8 minutes until the cabbage is tender.
For a different flavor, cabbage can be cooked in milk. Add 1 quart shredded cabbage to 1-1/2 cups milk, and simmer for 2 minutes. Mix 2 tablespoons each of flour and melted fat and add a little of the hot milk. Stir this mixture into the cab bage and cook for 3 to 4 minutes, or until thickened, stirring constantly. Season to taste with salt and pepper.

Market Fined
Commissioner of Agriculture Tommy Irvin has imposed a cash penalty of $3,000 on an Atlanta Market for selling and offering for sale short weighted and mislabeled packages of fresh meat products.
The penalty grew out of charges last week in which State Department of Agriculture inspectors, working on a tip from a customer, visited the market with the customer and pur chased eight packages of which six proved to weigh less than claimed on the package.
A hearing on the matter was called by Commissioner Irvin and the defendant assented to the monetary penalty in lieu of further legal action.
Father, Son Win
Peanut Honors
A father and son team claimed top state honors in the Father-Son 4-H peanut award program held in Camilla Saturday, Dec. 11.
Four-H'er Mike Daniel and his father, H. A. Daniel of Evans County, are the members of the win ning team.
According to Walker Robertson, Southeast District 4-H Club leader, competition was based on peanut yield per acre plus 4-H records and promotion of peanut production.
THE CHESTNUT
The chestnut is completely dif ferent from the pecan. The nut of the chestnut is made up almost en tirely of carbohydrates and water. It has practically no oil content. Ex tension horticulturists warn that if the chestnut is allowed to lie on the ground for several days, it will deteriorate and become inedible. Chestnuts must be harvested on time and refrigerated if they are to be kept any length of time.
COOK ONCE Do not partially cook poultry one day and complete cooking the following day according to the Cooperative Extension Service, University of Georgia. This is not considered a good procedure, as it would give bacteria an additional opportunity to grow.

would depend greatly on the grade

of beef. Your slaughterer can give

you some good points on the

proper length of time to age the

beef in accordance with its

quality. Generally speaking, the

aging process is a week to ten days.

Egg Season
Tis the season for lavish buffets, gift-giving, parties and old friends. Tis also the season for eggs.
Since eggs are so versatile, they probably have a standing place on your grocery list, anyway. But during the holiday season eggs can really be your best friend.
You can keep hard-cooked eggs ,on hand for a number of simple holiday dishes - egg salads, deviled eggs, egg dips and canapes. Or scramble a batch for d'nner when you've been out all day shopping for gifts.
Remember that hard-cooked eggs can be refrigerated either in the shell or out. But if the shell is removed, the eggs should be protec ted in a film wrap.
Dehydration and darkening of the cooked egg white can be prevented by keeping the eggs in a closed con tainer covered with water. These eggs should not be kept more than seven to ten days under refrigeration.
