GJHA Promotes Future Cattlemen
The Georgia Junior Hereford Association was organized in 1962 as an educational and promotional youth organization.

learn educational information which will better equip them as the future cattlemen of Georgia. The GJHA is a nationally affiliated organization being a part the American Junior Hereford Association with headquarters in Kansas City, Missouri.
The membership of the Georgia Junior Hereford Association and American Junior Hereford Association is open to anyone under 21 years of age who desires to join

by paying a $5.00 membership fee which entitles them to membership until age 21.
The Georgia Junior Hereford Association is an active organization sponsoring such activities as a field day hosted each year by a Georgia Hereford breeder; a club calf sale which is held in Tifton at the Coastal Plains Experiment Station; educational exhibits at steer shows and fairs; and participates in all phases of the beef industry in Georgia.
All of the activities of the Georgia Junior Hereford Association are held in order to give more opportunities to the young cattlemen of our State and to help promote Hereford cattle.
Each year the GJHA is well represented at the American Junior Hereford Association Convention in Kansas City, Missouri, which is held in October during the American Royal Livestock Exposition. Two delegates are sent to the National Convention and we participate in the National Public Speaking Contest and Scrapbook Contest as well as vote on the new National Directors.
The junior members have the
responsibility of running their own Association and planning its activities. This affords youth training under advisement of adult leaders that is invaluable to youth. We find that by working together in our various projects we can accomplish
more for ourselves as individuals as well as a group to promote the cattle

A conference on "Future of Agriculture in Georgia", jointly sponsored by Governor Jimmy Carter and Commissioner of Agriculture Tommy Irvin will be held in Tifton, Sunday evening December 12th and Monday, the 13th, at the Rural Life Center.

"Pick A Pecan"
For State Show
The time to pick up a pecan is as soon as it hits the ground.
Fresh pecans are very sensitive to moisture. They begin deteriorating as soon as they drop from the tree.
Pecans which lie on wet soil for a week or longer slowly turn an amber color in the shell and then discolor badly immediately after shelling.
Now, during the harvesting season, is the time to collect samples to exhibit in the state pecan show in Albany next May.
Every pecan grower in the state from the largest commercial producer to the "one-tree" man is eligible to participate.
One quart, or at least one pound of pecans, should be selected for each entry. They should be uniform in size, shape and color for the variety. Growers are urged to select well-filled nuts that are free of insect and disease damage.
Growers may enter as many samples of name varieties or seedlings as they desire. County Extension agents will have complete information regarding the state pecan show next year.
The main thing to do right now is to collect the samples as early as possible and place them in cold storage to preserve quality.
"Seed Bank" Preserves Today's Crop Ancestors
The introduction of seeds and plants from throughout the world has literally created American agriculture. From early Colonial times, settlers brought seeds and cuttings of familiar and useful plants from their homelands.
These corn seed are being evaluated for the germination test. Seeds are left in germination chambers for a specific number of days 7 for corn -- then the number of normal and abnormal seedlings and dead seeds are coun-
ted. Abnormal seedlings are those which do not have the necessary parts to produce a plant.

What procedure should I take to prevent the meat of my beef from having a wild onion or weed taste?

With very few exceptions, the crops now grown in the United States originated elsewhere potatoes and tomatoes in South America; wheat and oats in the Near East; soybeans in China; rice in southeast Asia; cucumbers in India; cotton in Mexico and Central America; citrus in Malaysia - to cite only a few of our imported crops.
Since 1898, when USD A started numbering plant introductions, up to 1970, 350,000 kinds of plants were introduced into this country. But much of this valuable and often irreplacable germ plasm has been lost.
To prevent such future losses, ARS opened the National Seed Storage Laboratory in Ft. Collins, Colo., in 1958. Today, the laboratory stores some 80,000 different kinds of seeds representing many agricultural crops.
For easy retrieval, each kind of seed is catalogued on a punch card according to its special characteristics. Seeds are kept in pint cans in 11 cold storage rooms which are maintained at a temperature of 40 degrees F. and 32 percent relative humidity.
Every 5 years scientists test for germination ability. If deterioration has occurred, contracts are made with seed-producing agencies to replenish ,the stock.

Christmas Trees
Need Special Care
Success in the production of Christmas trees depends upon giving the trees the care and attention they need to develop into the kind of plants consumers demand.
The plantation site is very important. It must be fertile and provide accessibility for the kind of treatment the tree crop will need later on.
A must in growing good Christmas trees is to control the growth of unwanted vegetation. This can be accomplished by mowing or by the use'of chemicals.
Good weed control throughout the life of the stand will also help control rodents. Many small rodents depend upon dense cover for protection, therefore, eliminating the vegetative cover will help reduce the rodent population.
Shape is another important factor in Christmas tree production, say Southern Extension forest management specialists.
Unlike timber trees, Christmas trees must be planted with care to eliminate the crook at the base. Shearing regularly helps produce the height and conical shape demanded by consumers.

and consequently the most important from the standpoint of the frog industry. 2. In the wild state, it takes three years to transform from the egg, go through the tadpole stage and become a small frog. 3. This three year process is too long and time consuming to be profitable and we strongly advise against investing money in a business of this type. In some instances, concerns advertising frogs for sale have used misleading statements to entice people into investing money in frog farming.)

Recipes of the Week
ORANGE SLICE CAKE
1 cup butter 4 eggs 2 cups sugar 1 teaspoon soda (dissolved in 1/2 cup buttermilk) 3 1/2 cups plain flour 1 box dates (cut in small pieces) 1 box or can flakey coconut 2 cups chopped nuts 1 pkg. orange slice candy (1 pound) Cream butter and sugar. Add eggs one at a time. Add flour alternately with milk. Roll nuts, orange slice candy, and dates in flour. Add along with coconut to batter. Bake in tube pan at 250 degrees for 2 to 2 1/2 hours.
ORANGE SAUCE
1 cup orange juice (fresh or frozen) 2 cups powdered sugar Mix well, pour over cake as soon as taken from oven. LET CAKE STAND IN PAN OVERNIGHT.

PIXIES
3 eggs beaten 1/2 cup granulated sugar 8 oz. dried apricots, cut (about 1 1/2 cups) 1 pkg. vanilla wafers rolled fine (7 1/2 oz.) 3/4 cup chopped pecans 2 cans (7 oz.) flaked coconut Combine eggs, sugar and apricots in lightly buttered skillet. Cook over low heat, stirring constantly, about 10 minutes. Remove from heat. Thoroughly blend in crumbs. Stir in pecans and half the coconut. Cool until easy to handle. Shape into 1 inch balls and roll in coconut. Store in tightly covered box. Makes about 5 1/2 dozen.

4-H LAND JUDGES
The best 4-H land judges in Georgia hail from Coweta County, according to results of the 1971 State 4-H Land Judging Contest. Clifford Nash, Donny Hunter, Kent Kirbow, and James Davis make up the Coweta team which tallied 844 points to beat an 825 score of Wilcox County. Teams received points on their ability to evaluate land class and capability, slope, depth of topsoil, and texture. The winning Coweta team will represent Georgia at the International 4-H Land Judging Contest in Oklahoma City in April of 1972.

TURKEY LEG POT ROAST
USES 1/4 OR LEG QUARTER OF LARGE 16 TO 22 POUND TURKEY

Place turkey leg, 4 to 5 pounds, on waxed paper.
Mix flour, salt and pepper on wax paper

Melt fat in large, heavy pan.

Put seasoned flour all over turkey
Brown turkey leg in hot fat, on skin side. Turn turkey to brown other side. Do not brown too fast.
Drain off all fat.
Cook slowly:
Pour water over turkey and cover pan tightly.
2-1/2 hours. Add more water if needed to
prevent sticking .
1 . Simmer on top of stove over low heat, or
2. Bake in moderate oven, 350 F.

This attractive creeping perennial goes by a variety of names besides Wintergreen. Among the more common are Teaberry, Boxberry, and Checkerberry. It grows in open woods, often under evergreen trees from New England to Georgia.
In its native habitat in cool, rich woodlands, Wintergreen can make a lush ground cover. The foliage is aromatic and the winter color is reddish or bronze.
The pulpy berries with their Wintergreen flavor can be found in autumn and through the winter. A refreshing tea is made from steeping the leaves in hot water, and the berries can be made into pies.
Wintergreen grows to perfection in acid soil, rich in leafmold. It also prefers shade but if the soil is moist enough it will tolerate some light or sun. Transplants from the wild are usually successful if they are watered regularly until the plant is established.

(Continued From Page 1) judging using live animals, we have included carcass evaluation and the use of various cuts of beef for grading and judging at our field days. The Georgia Junior Hereford Association was the first group to use this in their field day programs and several other states have since used it successfully in their field days.
This past field day we used performance records at our Field Day Judging Contest where a class of cows and calves were judged in the contest and then the TPR Records were announced for each pair. We were asked to present this information at our National Convention.
The junior association members assist many breeders during their private sales and at shows. We also encourage our members to participate in county, area, and state livestock shows. We have provided displays where informational material is distributed to people interested in learning more about the Hereford breed as well as information on equipment used in the raising and handling of beef cattle.

Complex Dairy Industry
Interests Almost Everyone
Most students are not acquainted with the dairy industry and its many complexities. They only visualize cows in the pasture or in the barn cows which
must be milked and fed twice each and every day.
But the field of dairy science is genetics and animal 'breeding in its most real sense. It is physi9logy of reproduction, metabolism, nutrition.
Indeed, dairy science is biology, perhaps in a very advanced and yet not fully explored form.
But dairy science is also the production of crops with which to feed the animals; it is engineering in the design and operation of automated equipment, the construction of new types of buildings and the design of new methods and procedures.
Dairy science is marketing and economics. It is business law, accounting, transportation and management. Marketing agreements, contracts, purchasing, sales, and many other aspects of business and economics are a vital part of the dairy industry.
But dairy science is even more. It
is chemistry, bacteriology, quality control, human nutrition, public health, sanitation, product development, packaging, advertising mer-
chandising, sales, accounting and personnel management.
Dairy science is education teaching, research and extension. It
is technical service, field work, procurement, public relations and journalism.
All of these areas and many more are involved in the simple task of
getting a glass of milk from the cow to the breakfast table or into the vending machine.
No other industry offers such a wide choice of vocations. There is a phase of the dairy industry that will
interest almost everyone. In dairy manufacturing, the
graduate qualifies for employment in quality control, processing and manufacture of dairy products, sales, distribution, public relations, research and teaching. Most graduates employed in industry progress rapidly into positions with management responsibility.
More and more interest is being expressed in dairy microbiology, by industry as well as educational agencies and institutions. Graduates with a strong background in microbiology with supporting courses in dairy science are in demand by dairy and food plants, sales agencies, public health departments, departments of agriculture and by educational institutions for work in research and teaching.
The dairy production program
qualifies the graduate for efficient operation of his own dairy herd, the ultimate goal of most graduates in this program. Graduates are employed in farm and dairy herd management, milk procurement, extension and other agricultural ser-
vice agencies, sales, public relations, research and teaching.

Anyone may submit seed of known value that is qualified for storage. But once stored, the seed becomes the property of the Federal Government and is available to all research scientists in the United States and, with special permission, to scientists abroad.
However, there is no central repository for plant material which does not breed true from seed, such as fruits and some other crop plants that are propagated by vegetative means.
Today, with agriculture's growing emphasis on breeding disease and insect resistance into our food crops and increasing yields to feed a
hungry world, plant breeders require large stocks of germ plasm to find a particular plant characteristic needed at a particular time.
If the proper plant material is not available, an expedition may be sent out to collect the needed plants or seeds.
Besides serving as a "seed bank", the Ft. Collins laboratory is also incorporating research on various long-term storage problems of seeds, such as temperature and humidity, packaging, and germination requirements.
In a sophisticated agricultural nation such as ours, it is startling to realize that the future of many of our food crops could very well rest in small cans of seeds stored in a building nestled beside the foothills of the Rockies.
