"Meet me at the Fair" are words you hear as summer draws to an end and everyone looks with anticipation to the cool days of fall. With this comes the aromas and tastes of candied apples, cotton candy, hot dogs, and the thrills of the midway, blue ribbons, prize winning jellies and handwork. The exciting occasion known as the Agricultural Fair is as American as are apple pie and baseball.
Agricultural Fairs in the United States date [back to 1644 and (were held priImarily for the I purpose of selling agricultural proIducts, mainly (livestock. These fffestive events
provided an opportunity tor farmers and their families to display products of their land and handiwork.
As the years have gone by, the number of farmers has decreased and fairs have become more industrial and cultural. Even so,

exhibits of livestock, crops, and items made in the home are still the main elements around which most fairs are built. Fairs through agriculture can be given much credit for upgrading the quality of livestock, crops, food preservation and homemaking skills.
Through the Land Grant College System and Cooperative Extension Service the agricultural fair has become an educational institution. T,oday youth programs and educational exhibits are a very important part of any fair.
Competition in livestock, arts and crafts, youth, and educational exhibits bring friends, neighbors, and strangers together for one purpose - improving the community. This is the agricultural fair in 1971.
As long as the public continues to say, "I saw it at the Fair," associations, communities, civic organizations and educational groups can ill afford to overlook the agricultural fair as an important part in their educational effort.

GROWING VIOLETS Pecan Producers IN YOUR HOME Hold Referendum
Georgia pecan growers are this month involved in a referendum on a
marketing order which will ultimately have the effect of establishing a working
Agricultural Commodity Commission for Pecans.
Georgia presently has nine Agricultural Commodity Commissions operating
in the state. They are cotton, tobacco, peanuts, eggs, peaches, milk, sweet
potatoes, apples and soybeans.
Any person in Georgia who has six acres or more in pecan production is eligible to vote. If you did not receive a ballot, you may obtain one from your county agent or from the ACC office, Room 324, 19 Hun-

winning recipe for basic bread mix.
Combine all ingredients and sift together about 5 or 6 times until thoroughly blended. Store in jar or in plastic bags in 2 1/2 cup quantities.
HOMEMADE BREAD
Add 2 Tbsp. cooking oil and about 3/4 cup of buttermilk. Blend together until thoroughly mixed. This dough may be stored in the refrigerator 10 days in winter or 5-6 days in summer. After shaping into loaf or rolls it may be frozen for a month or so. Allow to rise in warm place until doubled in bulk. Bake at 350 20-35 minutes or until brown.
PIMENTO CHEESE BREAD
21/2 cups basic bread mix 2 Tbsp. cooking oil 3/4 cup buttermilk 2 Tbsp. chopped drained pimento 1 cup grated sharp cheese Combine mix, oil and buttermilk. Mix until dough is formed. Add pimento and cheese. Mix thoroughly; may be stored in refrigerator. Pat on lightly floured board into rectangular shape and spread with melted butter. Fold four times in loaf shape. Place in greased loaf pan and brush with melted butter. May be wrapped and frozen up to a month. Place in warm place until doubled in bulk. Bake at 350 about 25 minutes or until golden brown.

Brush a sample swatch of the paint on a piece of clean white blotting paper. The Gentian is to fall what the Trailing-arbutus is to spring. Both the Fringed Gentian and Trailingarbutus can be tamed but the procedure for survival is painstaking and difficult. It is best to enjoy both of these plants in their native habitat. Fortunately, however, there are among the Gentians, species which are almost as lovely as the Fringed variety which can easily be grown in the wildflower garden.
The Fringed Gentian (illustrated right) was once an expected glory of late autumn. However, spreading suburbs and expressways have caused this beauty to become more and more difficult to find. Nevertheless, there are colonies of Fringed Gentian to be found by the determined naturalist. To take souvenirs of this plant home with you, collect the seed in late fall and plant in protected meadowlands.
The Closed or Bottle Gentian (illustrated left) is easier to find. The oval, pointed flowers of bright blue are produced in clusters at the leaf axils and are almost as beautiful as the Fringed variety. The leaves are dark green and lance-shaped. This perennial is easy to grow in moist, humusy soil.
The upright or sprawling clumps of both varieties grow about two feet tall. The effect a meadow of these plants in bloom can have on a viewer is startling to say the least. The blue-lilac intensity of these flowers makes a dramatic contrast to the red, gold and yellow hues of fall.
All these native Gentians like rich, moist soil and are often found growing in boggy meadows or wet ditches which is difficult to duplicate in the home wildflower garden. Fortunately a rich, humusy soil composed of a clay-peatmoss mixture which remains moist will suit the Gentians. They prefer full or partial sun and can be planted in the spring. The Gentian will selfsow once established. However, it can be temperamental. When nature is the gardener, it may grow with such abandon as to fill the roadside and meadows; when man. tries, it may refuse to cooperate.
It's best to thaw frozen meat in the refrigerator or cook it frozen rather than thawing it uncovered on the kitchen table. Although it takes longer to thaw meat in the refrigerator, less moisture is lost and the meat will be juicier this way than leaving it on the table.

The hostess pictured above, cooling off in a stream running by the Park's grist mill, is one of several who will be on hand each day from 10 a.m. until 7 p.m. to assist with the festivities.

producers of pecans with an acreage of six (6) or more acres in production in this state who produce pecans for sale within and without the state. (b) Producer, as referred to in this Order, means.all affected producers as defined in section 8, (a).
8. The order is to effect only producers with six acres or above in production. Those producers with five acres or less would not be eligible to vote in the referendum nor could they be compelled to pay the proposed assessment. This limitation was felt necessary since there is a tremendous number of people in the state with very few pecan trees, and that this proposal is for those producers who depend on pecans in part or solely for their livelihood.
9. Method of Finance: (a) Projects, undertakings and expenses incurred under this Order shall .be financed by an assessment and levy of fifteen cents (15 cents) per hundred pounds on all pecans produced by producers in this state and sold. The assessment and levy shall be against the producer of pecans upon the approval of the
- requisite number of affected producers and effective as of October 1, 1971 an annual lew and assessment of fifteen cents (15 cents) per hundred pounds on all pecans produced by producers in this state and sold is hereby made. Such levy shall continue of force and effect until this Order is suspended or superseded as provided by law and during the time this Order remains of force and effect.
9. (a) The assessment proposed by the commission is 15 cents per 100 pounds produced by effected producers. This is the maximum amount which can be collected by this order. The commission may reduce this amount by its own action but may not raise or increase the amount. Before any increase could ever become effective it must be voted on by all effected producers.
(b) To the end that the Commission
shall have such funds to defray ex-
penses pending the collection of
funds under the levy and assessment
herein provided, the Commission
shall be authorized to borrow
money and hypothecate anticipated
collections as authorized under sec-
tion 17, (e) of the "Georgia
Agricultural
Commodities
Promotion Act," (Georgia Law
1969, p. 763, as amended).
(b) If the marketing order received a favorable vote and became effective and the commission decided that it had
projects that needed to be initiated immediately it would have the authority to borrow money and pay back from anticipated collections.
10. Method of Collection: (a) The levy and assessment provided by this Order shall be collected from producers. As an aid in such collection, handlers, distributors and others purchasing pecans from producers shall deduct the. amount of such levy and assessment during each pay period and remit the same to the Commissioner of Agriculture for the account of the producer. (b) The Commissioner is authorized in the collection of funds to adopt and utilize a reporting and auditing method of collecting the levy and assessment provided herein.
10. (a) The producers are responsible for the payment of the assessment. However, as an aid in collection buyers are to deduct the amount of the assessment from producers and remit to the Commissioner of Agriculture for the account of the commission. By law the handler is made equally liable for the remittance of the assessment. It is proposed that to facilitate the remittance of the assessments buyers buying pecans in Georgia would be registered with the Department of Agriculture.
1 1. Administration and Enforcement: The Commissioner of Agriculture shall administer and enforce-the provisions of this Order, particularly as to the collection of levies and assessments.
12. Expenditure of Funds: The Commission is hereby .authorized to expend funds of the Commission as it deems necessary to defray the costs and expenses incurred under this Order. The Commission is further authorized to expend funds to defray the actual costs and expenses of the Commission, including employees, special committees, advisory boards and individuals to aid, advise and assist the Commission in the performance of its duties.
12. The commission may expend funds only in the proposed areas of operation within the authority of the '69 act. The commission may also spend funds for the actual expenses of operating the commission.
1 3. Contracts: The Commission may enter into contracts as it deems necessary and advisable in the performance of its duties under the provisions of this Order for the performance of duties and services, as the Commission shall deem necessary and proper.
13. The 1969 act treats a commission as any public corporation. It may contract and may be contracted with, sue and be sued in all courts of law.
14. It shall be the duty and responsibility of each affected person or handler to keep adequate records to reflect the true amount of pecans produced, sold or purchased by him, and to make such records available for inspection and audit by the Commissioner.
14. All effected producers, growers, and handlers must keep adequate records and these records may be inspected by the Commissioner of Agriculture. This paragraph does not intend for effected producers to keep an additional set of records for the commissioner.

various windows and observe the resultst . They will soon be evident.
While watering each day may not be necessary, it is advisable to check the soil daily and to apply moisture if the soil feels slightly dry to the touch.
Always use warm or roomtemperature water never cold. Cold water will cause ring spot on the foliage.
Saintpaulias will grow and flower best if the soil is kept just slightly damp at all times.
Saintpaulias may be grown in a great variety of soil types and mixtures. As a rule, these plants do best in soils which are loose in texture, porous and well drained, with a high percentage of organic matter.
Best growth is obtained in temperatures which range from 65 to 75 'degrees Fahrenheit, with 50 to 60 per cent relative humidity. Saintpaulias can endure higher and lower temperatures but they will not prosper if the air is excessively dry.
It is better to feed very small amounts of plant food each time the plant is watered than to give large applications occasionally.
Use a complete water-soluble fertilizer recommended for Saintpaulias and read the manufacturer's instructions printed on the label before applying.
Do not over-fertilize and always be sure the soil is not too dry before using plant food.
