Thanksgiving has its own special meaning to each of us. For most it is a time to gather together with our families and to remember, either quietly or openly, the things for which we are thankful.
After a busy year in which I was required to be away from my home a great deal, I am looking especially forward to this Thanksgiving Day, at
home with my family.
This is a year for which I have much to be thankful. Most of all, for my family, friends and all the people of Geor-
gia who have been so good to me. I am doubly grateful for the
confidence that has been placed in me and in this department. . . for the cooperation of so many who have helped me in the performance of my duties and for the cooperation shown to the entire Department of Agriculture.
FIRST THANKSGIVING
By today's standards the small band of pilgrims who celebrated the first American Thanksgiving had little to be thankful for. More than half of their original number had died during that first hard, cold winter. But they looked forward to a better year, to a bountiful harvest and to the religious and personal freedoms they had won.
Today, this nation can produce more than enough to feed and clothe its people. And yet we are still beset with the problems of poverty and of fighting for our freedom.
We who share in the blessings of a good life should lift our voices in prayerful thanksgiving and should commit ourselves to the struggle begun by our forefathers to feed and clothe our people in a country constantly devoted to freedom.
Let us not forget ours is a hardwon heritage, one we have worked for, fought for. Let us pledge to reaffirm our faith in this heritage and determine to preserve and cherish it.
Again, I am personally thankful for the many kindnesses shown me during the past year and I look forward to a year of working and service to the people of Georgia and to my country.

Good And Wholesom

The great American hot dog can be prepared in America's kitchens in a

hundred different ways. But prior to that, the manufacturers themselves vary

their recipes in an attempt to produce a distinctive product that will appeal to

the customer.

All formulas (for recipes) must

be approved in advance by officials of

the meat inspection service of the

Department of Agriculture.

The formulas, however, must

conform to specific guidelines for the

production of sausage under State or

Federal inspection. This assures the

consumer that the product will be

wholesome, free of harmful

ingredients, and truthfully labeled.

The manufacturing process

begins with the grinding of large cuts

of meat. After this initial grinding,

curing ingredients and spices are

added in carefully controlled

amounts, and the mixture is more

finely chopped for 8-12 minutes. Cold

water or ice is added during this stage

to help keep the meat cool and to add

sufficient moisture for good texture

Each manufacturer of wieners has his own special recipe. Enough hot dogs and consistency. Regulations limit

are consumed in America each year to equal 127 round trips from New York to the use of water or ice to 10 percent.

have made away with several

Acting to stop this threat to the
well being of the industry, the Georgia Cattlemen's Association has announced a $1000 reward for in-
formation leading to the arrest and
conviction of those responsible.

farm family organization. Reynolds, a native of Turner
County, has been active in Farm
Bureau work for more than 17
years and has served in almost every capacity in the organization.

QUINCE JELLY (without pectin) 3 pounds of ripe quinces water 3 cups of sugar
Remove cores and blossoms and stem ends from quinces. Do not peel. Slice quinces. Measure and for each quart, add 3 cups of water. Put in kettle and bring to a boil and simmer for 45 minutes. Drain through 4 layers of cheese cloth. Then strain through clean cotton flannel or jelly bag. Do not squeeze or press. Measure juice - should be 4 cups. If not enough, add small amount of water to make up the 4 cups. Put juice in a large kettle and bring to a boil. Boil rapidly until mixture sheets from a spoon. Then pour into

MACARONI TREE A
Cut tree shape to desired size from heavy corrugated board. Glue pipe cleaner at top for hanging loop/ using household cement. Arrange your largest pieces of macaroni around outside of tree/ then fill in with smaller-sized pieces. Cement in place. When dry, spray with gold paint. Dot areas with cement and sprinkle glitter on macaroni.
CORN SHUCK WREATH B
Cut corn shucks in strips 2 I/ 2" x I/ 2". Fold each, forming a loop. Wire three together with wire and pick. Pin on to wreath frame to add depth and fluffiness. Add sweet gum balls and decorative balls. Spray desired color. Make bow and place at bottom, letting ribbon hang from the wreath.

Tie a small ball ornament on thread. Tie small piece of tooth-

pick crosswise about 1" from ornament (Fig. 1). Slip thread

through a needle and poke hole through inside bottom of cup.

Pull thread until toothpick holds cup so it will not slide down.

Repeat this two more times, using different-colored baking

cups. Adjust at different levels. Tie threads together. Add a red

Using white fluffy dust mop head/ attach 6 small red balls for Santa face. Cut a long triangle from red felt and sew to top of mop for Santa cap. Sew a red ball to end of cap.
MOBILE DECORATION G
Wrap three wire coat hangers with red ribbon or yarn. Hang an ornament below the hook of each hanger. Hang three decorations on bottom rung of each hanger. Hook two hangers over center one. Tie bows to hold hanger in place. Hang mobile from piece of yarn at center hanger. When hangers balance, use cellophane tape to hold ornaments in place.

THE TURKEY
Rub 10-lb. turkey inside and out with 1 tablespoon of salt. Stuff with the following:

4 bacon strips Salt and pepper Spices

THE STUFFING

Season ducks with salt and pepper and spices, inside and out.

6 medium-sized onions, chopped Turkey liver, cut in small cubes Salt, pepper to taste 3 tablespoons butter Powdered sage 5 cups bread crumbs Cold water Chopped parsley Garlic, if desired
Chop the onions, and cut up the turkey liver. Soak bread crumbs in water and squeeze dry; season to taste with salt and pepper. Melt butter in a frying pan, and cook onions and liver until tender. Add the bread crumbs and seasonings. Let it all cook, constantly stirring until almost dry. Then the stuffing is ready.
To stuff and truss the bird, begin by placing spoonfuls of stuffing in the neck end, using enough to fill the skin. Fold the wings close to the body and hold them by inserting 2 skewers through the wing, body, and wing on the other side. Fasten the thighs in the same manner with one skewer. Draw the skin over the neck and fasten to back with skewer. Rub the outside of the bird with 11/2 tablespoons of salt, 5 tablespoons of fat, and 2 tablespoons of flour mixed together.
Lay the turkey, breast down, in an open roasting pan and place in a moderate (375 degree) oven. When brown, turn the fowl on its back, basting every 15 or 20 minutes with 3/ 4 cup hot water and I/ 2 cup melted butter. Cook from 20 to 25 minutes to the pound, depending on the age of the bird.
ROYAL PLUM PUDDING
1 -1 Ib. can or jar (2 cups) purple plums 1 pkg. Gingerbread mix 1/2 teaspoon salt I cup light raisins II 2 cup chopped walnuts 1/4 cup sugar 2 This, cornstarch 1 Tbls. lemon juice Plum syrup Water
Drain plums, reserving syrup for sauce. Remove pit and cut plums in pieces. Prepare gingerbread mix according to package directions adding salt and plum pieces. Stir in raisins and walnuts. Transfer batter into well greased six cup mold. Bake uncovered in moderate oven 375 degrees about 1 hour. Loosen edges and immediately unmold on serving plate. Meanwhile prepare plum sauce:
Add water to reserved plum syrup to make 1 I/ 2 cups. Combine sugar and corn starch in small saucepan. Gradually stir in plum syrup mixture. Cook over medium heat stirring constantly til mixture thickens and boils. Cook one minute. Add lemon juice. Serve warm over plum pudding. Pass Fluffy Hard Sauce. FLUFFY HARD SAUCE
Thoroughly cream together I/ 2 cup margarine or butter and 2 cups sifted powdered sugar. Stir in 1 beaten egg yolk, 1 teas, vanilla and 1 stiffly beaten egg white. Chill.
CRANBERRY SALAD 1 qt. raw cranberries 2 cups sugar 1 package raspberry jello 1 small can grated pineapple 1 cup chopped pecans 1 large package cream cheese 1 pint mayonnaise
Grind raw cranberries in a meat grinder sprinkle with the sugar. Let stand for 2 hours. Heat one cup of water add Jello. Drain pineapple add to cranberries. Add nuts to mixture. Place in a ring mold. Add one cup of cold pineapple juice to Jello. Pour over cranberries, let sit until congealed.
Combine cheese and Mayonnaise; serve with salad. Serves ten. (good with turkey)

APPLE STUFFING
Use three apples, sliced thin with peeling on. Use two apples sliced thin to line for stuffing and also in baking pan around ducks.
For the stuffing, use the other sliced apple, three cups cornbread, stale; 1 onion chopped fine; 3 tbsp. melted butter or margarine, 1 tsp. salt.
If you like, sprinkle some unseeded raisins when you mix ingredients and add enough water to moisten thoroughly. Stuff duck and put the rest outside in pan. Put two strips of bacon over each duck. Pour a cup and half of water into pan and cook at 350 degrees until meat is tender. Keep a watch on the water.
SWEET CORN PUDDING 10 or 12 ears corn 11/2 tbsp. sugar 1 qt. whole milk Salt to taste 2 tbsp. flour 1 tbsp. butter 3 eggs
Grate corn and mix with milk. To make smoother, run through colander. Work flour and butter creamy, then beat in sugar and egg yolks. Add beaten whites. Put into corn and milk mix and salt to taste. Bake. If you want it sweeter, add sugar and cream.
AMBROSIA 1 cup chopped pecans 1 cup flaked coconut 2 cups orange sections (free from membrane)
Combine all ingredients. Note: Many Georgians like to add miniature marshmallows, pineapple chunks, seedless white grapes, maraschino cherries, and other fruits to this recipe.
SNOW ON THE MOUNTAIN CAKE 2/3 cup white shortening 2 cups granulated sugar 3 cups flour I/ 2 teaspoon salt 3 teaspoons baking powder 1 cup warm water 1 teaspoon orange extract 8 egg whites (beaten)
Sift flour three times with baking powder and place in refrigerator to chill to the same temperature as the eggs. Cream shortening and sugar well, at least 10 minutes, and add warm water I/ 4 cup at a time. Add sifted flour to shortening mixture and egg whites beaten with salt. Add flavoring. Bake in moderate oven 15 minutes and increase heat to 375 degrees, until done.
COCONUT ICING FILLING
4 egg whites stiffly beaten 2 cups hot water or juice from coconut 4 cups sugar 2 large or 3 small fresh
coconuts, grated 1 teaspoon orange extract
Cook sugar and water or coconut milk in granite pot. Boil together until it forms a soft ball, tested in cold water. Pour I/ 2 cup of this hot syrup slowly over egg whites beating constantly. Let remaining syrup cook until it spins a thread. Pour slowly over egg whites, beating continuously. Add flavoring. Do not add grated coconut to the icing.
Frosting the Cake Spread one layer of cake with icing to a
depth of 1 inch. Add grated coconut of 1 inch. Add another thick layer of icing and top with layer of cake. Cover top and sides with icing as thick as possible and dredge with coconut. You may leave the outside icing plain if desired.

Holiday Breakfast
Apple Fritters* Oatmeal Bacon Hot or Iced Chocolate*
APPLE FRITTERS 1 cup flour 11/2 tsp. baking powder 2 tbsp. sugar Apples 1/2 cup milk I/ 4 tsp. salt 1 egg
Mix above ingredients to form batter. Cut apples into small pieces and roll in powdered sugar. Dip in batter before sugar dissolves. Then fry.
When frying fritters of raw vegetables or fruit, have the fat hot enough to brown a cube of bread in one minute. Fat should be deep enough to cover the fritters. Each fritter will sink at first, then rise as baking powder acts. That's when you start turning the fritter to make all sides brown. Most fritters are done in five minutes. Take care and don't put too many fritters in at one time, so that the grease pops over.
HOT OR ICED CHOCOLATE Put in a saucepan
4 cups milk
2 ounces sweet chocolate or 11/2 ounces unsweetened chocolate and 1/4 cup sugar few grains salt
Heat until the chocolate melts. Beat until smooth and foamy. Add 1 teaspoon vanilla and serve with whipped cream. Makes 6 cups.
For iced chocolate: Chill; pour over crushed ice, stir well, and sweeten to taste. Serve with whipped cream.
Holiday Brunch
Sausage Ring and scrambled eggs* Honey Muffins* coffee Orange Juice
SUNDAY MORNING SAUSAGE RING 2 Ib. bulk pork sausage 2 eggs beaten 2 tablespoons grated onion 11/2 cups fine dry toast or
bread crumbs I/ 4 cup chopped parsley if
desired.
Heat oven to 350 degrees. Lightly butter a 9" ring mold. Mix ingredients well and pack into mold. Bake 25 minutes. Take from oven and pour off excess fat. Bake 25 minutes more.
Turn onto heated platter and fill with scrambled eggs.
HONEY MUFFINS 1 cup butter 1 cup honey 2 cups flour 1 cup sugar 1 cup sour cream I teaspoon soda II 2 teaspoon salt 1 egg
Stir all ingredients in, bake in muffin pans which are greased and coated with flour. Cook 15-20 minutes at 425 degrees F.
SOUR CREAM COFFEE CAKE
2 cups sugar
2 sticks oleo 2 eggs
2 cups sifted, all-purpose flour, plain 1 cup sour cream 1 tsp. vanilla 1 tsp. baking powder I/ 4 tsp. salt
Cream sugar and oleo, add eggs, sour cream and vanilla, then add sifted dry ingredients. Pour I/ 2 batter in bundt or tube pan, greased and floured, and put part of filling on top, then rest of batter and top with filling. Bake at 350 degrees F. for 55-60 minutes, or until done.
FILLING
1/3 cup nuts (chopped fine) 3 teaspoon brown sugar 1 teaspoon cinnamon

TRADITIONAL HOLIDAY DINNER
HOLIDAY PEAS 1 (4 oz.) can mushroom stems
and pieces 1 (10 oz.) pkg. frozen peas 1 small onion, chopped I/ 2 c. chopped celery 3 tblsp. butter 1 (2 oz.) jar pimientos,
chopped I/ 2 tsp. salt I/ 8 tsp. pepper
Drain mushrooms, reserving liquid. If not enough liquid to cook peas as directed on package, add water to make enough. Cook peas as directed; drain.
Cook onion and celery in butter until soft. Add pimientos and mushrooms and heat thoroughly. Add to peas along with seasonings. Heat. Makes 3 to 4 servings.
GIBLET GRAVY Giblets from any fowl (neck, gizzard, liver, heart) Cold water 1 stalk celery with tops, cut in long lengths 1 large onion, peeled, halved 11/2 tablespoons poultry seasoning, or mixture of
thyme, rosemary, sage Salt and pepper to taste 1 teaspoon dry mustard 4 tablespoons flour or cornstarch 1 teaspoon Kitchen Bouquet, optional 1 tablespoon catchup 1 tablespoon Worcestershire sauce Dash Tabasco sauce 1 teaspoon soy sauce, optional 2 to 3 hard cooked eggs, peeled, sliced
Wash and remove all skin from giblets. Place in heavy pot with celery, onion, salt, pepper, and poultry seasonings. Cover with at least 11/2 quarts cold water. Bring to boil and simmer until meat is done (about 1 hour). Remove liver after 10 minutes boiling, reserve. When meat is tender, remove to a bowl and cool. Strain the broth and skim. Return 1 quart broth (add water to make 1 quart if liquid is boiled down) to pot. Mix dry mustard with flour or cornstarch, and mix with enough cool broth or water to make a thin paste. Stir into broth and bring to boil. Add the Kitchen Bouquet if a brown color is desired; add catchup and sauces. Boil slowly until gravy is smooth and thickened. Meanwhile, chop up meat fine and return it to the gravy. Heat thoroughly, and just before serving stir in gently the slices of egg, or float them on top of gravy. Serve over poultry dressing or rice.
COUNTRY STYLE HOLIDAY DINNER
BOILED CUSTARD 1 pt. milk scalded 3 egg yolks I/ 4 cup granulated sugar Dash of salt I/ 2 tsp. cornstarch 1/4 tsp. vanilla
or other flavoring you choose
Scald milk in a double boiler. Beat the egg yolks until light then add sugar, salt, cornstarch and heat again. Pour this into the scalded milk and keep cooking and stirring until custard coats the spoon. Remove at once and set the utensil in a pan of cold water.
ORANGE CUP SWEET POTATOES 6 orange shells from which inside has been scraped 6 medium sweet potatoes 3 tblsp. butter I/ 2 c. orange juice
1 tsp. salt
1 (8 oz.) can crushed pineapple I/ 2 c. chopped pecans
Bake sweet potatoes in moderate oven (375 degrees) until tender, 45 minutes to 1 hour. Spoon potato out of shell. Combine with butter, orange juice and salt, and whip.
Stir in pineapple. Spoon back into orange shells, i'prinkle with nuts. Bake in moderate oven (375 degrees) until thoroughly hot, about 12 minutes. Makes 6 servings. Decorate with marshmallows and raisins if desired.

APPLESAUCE PECAN PIE 1/2 cup butter or margarine, softened 1 cup sugar
3/ 4 cup dark corn syrup 3 eggs I/ 4 tsp. salt 1 tsp. vanilla extract 3/ 4 cup thick canned applesauce 11/2 cups pecans
Make pie shell using basic recipe and chill. Cream butter and sugar until light and fluffy. Beat in corn syrup, then eggs, one at a time. Add salt and vanilla. Stir in applesauce and pecans and pour into shell.
Bake in moderate oven (375 degrees) about 45 minutes. Pie will still be soft, but will stiffen on standing. Cool before cutting.

CHRISTMAS SALAD 1 package lime gelatin 1 small can crushed pineapple 6 quartered red cherries (optional)
Make gelatin according to package. After it is slightly congealed, add drained pineapple and cherries. Let stand for at least 12 hours.
1 lemon 1/2 pint whipped cream 1 small package cream cheese
Whip cream until stiff, gradually adding cream cheese and juice from lemon. Add to first layer and let stand for at least 12 hours.
1 package raspberry gelatin 1 cup finely chopped nuts
After raspberry gelatin has slightly congealed, add cup of nuts. When jello has congealed enough that it will not run, add to second layer and let stand until very firm (about 4 hours).

Mix all together and form into crescent shapes. Bake 20 to 30 minutes in 350 degree oven and immediately roll in powdered sugar.

Melt butter adding garlic and Worcestershire sauce. Mix other ingredients together and pour butter mixture over coating all ingredients. Spread in pan and heat at 250 degrees for 30 minutes. Cool on brown paper to absorb excess grease.

CRANBERRY CHUTNEY (Serve with poultry or cold meat - extra jars make nice gifts) 1 (1 Ib. 14 oz.) can fruit cocktail 1/2 cup orange juice 1/2 cup sugar 1/4 cup light brown sugar I/ 4 cup cider vinegar 1/2 tsp. ground cloves 1/4 tsp. red pepper I/ 2 tsp. salt 2 cups cranberries 1 cup chopped, unpeeled apples 1 Tbsp. finely chopped
candied ginger 1 small clove garlic, minced 3/ 4 cup seedless raisins
Drain fruit cocktail. Measure 11/4 cup syrup; reserve fruit. Combine syrup and next 7 ingredients in a heavy 3 quart saucepan. Bring to a full boil, stirring often. Add cranberries and remaining ingredients. Cook until berries pop, about 5 minutes. Stir in fruit cocktail. Simmer, stirring often, until mixture thickens slightly, about 15 minutes.
Pour into hot, sterilized jars. Seal immediately or store in refrigerator.
Chutney will thicken as it cools. Makes about 21/2 pints.

Grease small baking dish. Heat 2 tbsp. butter in saucepan. Blend in mixture of flour, salt, white pepper and tenderizer. Heat until mixture bubbles, (stir constantly). Remove from heat. Add sour cream and mustard gradually, stirring constantly, heat but do not boil.
Heat 1 tbsp. butter in small skillet, mix bread crumbs and stir frequently. Set aside.
Add beans, cheese and onion to sauce, turn into baking dish. Top with crumbs and bake about 15 minutes in 350 degree oven. Makes 4 servings.

Cream butter and sugar together; add eggs one at a time, beating well after each addition. Sift dry ingredients together and combine the two mixtures. Flour raisins and nutmeats and add to mixture. Pour into layer pans and bake in slow oven at 300 degrees for one hour or until cake leaves sides of pan.
JAPANESE FRUIT CAKE FILLING 2 boxes of coconut 21/2 cups sugar 2 Tbsp. flour 2 lemons grated rind and juice 11/2 cups hot water
Combine all ingredients and cook until thick. Cool slightly, and put filling between layers.

CRANBERRY NUT CAKE 1 cup shortening 11/2 cups sugar 4 eggs 3 cups sifted flour 1 cup chopped pecans 21/2 tsp. baking powder I/ 2 tsp. salt 1/2 cup milk 2 cups chopped cranberries
Cream shortening and sugar thoroughly. Add eggs, 1 at a time, beating well after each addition. Sift together flour, baking powder and salt. Add to creamed mixture alternately with milk, blending after each addition. Fold in pecans and cranberries. Spread in greased and floured 10 inch tube pan. Bake at 350 degrees for 1 hour and 20,minutes. Cool. Frost with Cranberry Frosting or sprinkle with confectioners sugar.

sugar. Combine cranberries and water in small
saucepan. Cook, stirring occasionally, until berries pop, about 5 minutes. Cool. Blend in lemon juice. Cream butter, add confectioner sugar alternately with cranberry mixture, blending after each addition. Add only enough sugar to make spreading consistency.

Gifts From Your Kitchen

Gifts For Mailing
Food gifts always make welcome gifts especially at Christmas time. Before mailing your gift, you should consider recipe selection, preparation, and packaging.
Different foods travel differently with the moist and firm foods being the best travelers. Suitable packaging is a must. Foil pans, coffee cans, and light weight aluminum serve as a container to cook hi as well as mail your gift in.
For an extra touch, include the recipe for your gifts either typed or neatly handwritten on small index card. This can easily be added to a recipe file.
HOLIDAY CANDLES You'll need:
Several pounds of paraffin Containers suitable for molds
(frozen juice cans, soup cans, gelatin molds, milk cartons, paper cups, muffin tins, etc.) Wax crayons or rit dye for coloring Candle wick (instructions to make below) Decorations for candles Double boiler To color candles, add wax crayons to melted paraffin, or add one to two teaspoons dry rit dye. Stir while color is being added to assure even coloration. Old colored candles can be melted down with the paraffin also for color. Candle wicking can be purchased at most hobby shops or you can prepare your own. Put a length of husky string in a solution of: 1 Tablespoon salt, 2 Tablespoons of borax dissolved in a cup of water. Soak overnight. This will make the wick burn slowly. Wicks can be inserted in candles by tieing one end of a string to a pencil or small stick and suspending it across top of the mold or by heating an ice pick and sticking it through a cooled candle and threading wick through candle. Pour in enough melted wax to fill the hole and hold wick in place. Any shape or size container is suitable for candle making. However, unless the mold is metal or waxed cardboard, grease the mold to prevent sticking. 1. Prepare mold 2. Melt paraffin in double boiler and add color. Do not heat paraffin directly over heat as it is inflammable. Remove from boiling water and stir thoroughly for two or three minutes. Let stand for a few minutes and pour carefully into molds. To avoid air bubbles, do not pour from a height of more than one to two inches. 3. To hasten hardening, candles may be placed outside, in refrigerator or set mold in pan of ice water. When candle is thoroughly hardened, unmold. Metal molds can be dipped quickly in hot water to loosen while milk cartons or plastic molds can be cut or peeled from the candle. For variation: Fill milk carton with crushed ice and then pour hot paraffin into mold over ice. When wax is hard, remove mold and pour off excess water.
QUICKIE CHEESE BALLS 1 stick margarine 1 cup flour sprinkle salt dash paprika dash red pepper 1 cup grated New York State
sharp cheese 1 cup rice crispies
Mix together thoroughly and form into ball size of marble. Place on cookie sheet -- dip fork slightly in flour and mash each ball almost flat. Cook 10 minutes, 300-325 degrees F.

PECAN ROLL COOKIES 1/2 cup butter or margarine I/ 3 cup confectioner sugar, unsifted 11/4 tsp. black walnut extract 11/2 cups sifted cake flour 1/2 cup chopped nuts Whole pecan halves
Cream butter thoroughly; add sugar and beat until creamy; stir in flavoring. Add flavor in several portions, beating after each addition. Add chopped nuts. Shape into rolls about two inches long and I/ 2 inch in diameter. Press a pecan half on top of each cookie. Bake on buttered cookie sheet in moderate oven (350 degrees) 10 to 15 minutes. While hot sprinkle lightly with confectioner sugar. Cool on cake racks. Makes 21/ 2 to 3 dozen cookies, depending upon size.

Toss nuts with melted margarine. Spread in shallow baking dish, sprinkle with sugar, cinnamon, and nutmeg. Bake in moderate (350 degree) oven, stirring frequently until toasted, 15 to 20 minutes. Makes I/ 2 pound.

Cream butter, add molasses, sift flour and salt together, and stir in chopped nuts.
Add flour mixture to creamed mixture, blend well. Shape dough into small balls, about 1 inch in diameter. Place on greased baking sheet and bake in moderate oven 350 degrees, 25-30 minutes or until lightly browned. Roll in XXXX sugar. Makes about 4 dozen.

BRAZIL BEAUTIES 1/2 cup firmly packed brown sugar I/ 4 cup granulated sugar 1/3 cup light cream I/ 2 tsp. vanilla 11/2 cups whole Brazil nuts
Combine brown sugar, granulated sugar and light cream in saucepan. Cook over low heat, stirring constantly, until sugar is dissolved. Cook until 246 degrees is reached on candy thermometer or until a small amount of the mixture, forms a firm, soft ball, when dropped in cold water. Remove from heat; add vanilla and Brazil nuts. Stir until mixture begins to harden on nuts, turn onto waxed paper and separate nuts. Yield: 3/ 4 Ib.

BUTTERSCOTCH NUT FUDGE I/ 4 cup butter or Margarine 1 cup light brown sugar 1 cup granulated sugar 3/ 4 cup sour cream 1 tsp. vanilla I/ 2 cup chopped black walnuts or nuts
Melt butter in heavy saucepan, add brown sugar and heat to boiling, add granulated sugar and sour cream. Cook over low heat, stirring until sugar dissolves to soft ball stage, 235 degrees. Cool at room temperature without stirring until lukewarm, 110 degrees. Beat until moisture holds its shape, add vanilla and nuts, quickly spread in greased pan. Cool and cut in squares, makes 21/2 dozen pieces. Garnish with nut halves.

2 eggs
Toast almonds, cut up pecans and fruits. Add flour, soda, salt, cinnamon and mix well. Add creamed sugar, butter, and eggs to above mix. Drop from teaspoon on cookie sheet. Cook at 350 degrees for 10 to 15 minutes. Let cool before removing. Makes 150 to 175 cookies.

CRUNCHY CHOCOLATE CHEWIES
3 pkg. (8 oz. ea.) semisweet chocolate pieces
1 jar (12 oz.) crunchy peanut butter 1 box (7 oz.) crisp rice cereal 1 box (15 oz.) seedless raisins
Place chocolate pieces in top of double boiler. Melt over hot but not boiling water. Stir in peanut butter. Toss together cereal and raisins in a large bowl. Pour chocolate-peanut butter mixture over cereal and stir until well combined. Drop by spoonfuls onto waxed paper or into small foil cups. If you like, press half a maraschino cherry into each cluster. Makes eight to nine dozen crunchy cookies.

DATE, NUT, COCONUT ROLLS 2 large eggs, well beaten 1 cup sugar 1 tsp. vanilla I/ 2 tsp. almond flavoring pinch of salt chop:
1 cup dates 1 cup nuts 1 cup coconut
Mix together and bake in 11 x 7 pie pan until lightly brown. Take out of oven. Stir well as soon as cool enough to handle, make small balls, size of walnuts. Roll in powdered sugar.

PECAN LOGS Filling for Bars
3 cups sugar I/ 2 cup water 1/2 cup white corn syrup 2 egg whites 1 tsp. vanilla
Cook sugar, water and corn syrup until spins a thread. Pour half of mixture over beaten egg whites and mix. Cook remaining half til forms a hard ball in cold-water. Pour into egg whites and syrup and beat til holds a peak. Add vanilla. Shape in logs and refrigerate.
Caramel Filling
1 cup white sugar I/ 2 cup brown sugar 1/2 cup white corn syrup 1 cup evaporated milk 1/4 cup margarine 1/2 tsp. vanilla
Mix all ingredients except vanilla and cook til forms a firm ball in cold water. Add vanilla; let cool. While still warm, dip cold logs in mixture and roll in pecans. Use approximately one quart finely chopped pecans.

Put cranberries through food chopper. Peel oranges, remove seeds and put oranges and rind through food chopper. Mix with cranberries and sugar. Let stand a few hours before serving or put in jars, cover with light paraffin seal and enjoy later.

Beat eggs and sugar lightly; put in top of double boiler and let heat, then add the flour, nuts, and vanilla, mix thoroughly. Bake in flat pans for 20 minutes at 300 degrees. Cake will be chewey, this recipe is good to send to service men because it will stay moist and fresh if tightly wrapped.

TOASTED BUTTER PECAN CAKE 2 cups pecans, chopped fine 11/4 cups real butter 3 cups sifted all purpose flour 2 tsp. double-acting baking powder I/ 2 tsp. salt 2 cups granulated sugar 4 eggs 1 cup milk 2 tsp. vanilla
Toast pecans in I/ 4 cup butter in 350 degree oven, 20-25 minutes. Stir frequently. Sift flour with baking powder and salt. Cream 1 cup butter, gradually add sugar, creaming well. Blend in eggs; beat well after each. Add dry ingredients alternately with milk, beginning and ending with dry. Blend well after each addition. Stir in vanilla and 11/3 cups pecans.
Turn into three 8 or 9 inch round layer pans, greased and floured. Bake at 350 degrees for 25 to 30 minutes. Cool, spread frosting between layers and on top.
Frosting: Cream I/ 4 cup butter, add 1 pound sifted
powdered sugar, 1 teas, vanilla, 4 to 6 Tablespoons evaporated milk or cream until of spreading consistency. Stir in remaining pecans.
