University of Georgia Annual Winter Grazing is one of the most important parts of a total feed production program. It is excellent for milk production and finishing steers. With good management practices winter grazing will furnish a large part of the feed nutrients in fall, winter and spring.

Mushroom culture, practiced in France and England for many years before it was introduced into the United States, has become a favorite hobby and the most recent crop addition in Mrs. Alfred Wall's farm in Roswell.
Mrs. Wall raises, cans and freezes most of the vegetables and some of the meat that her family eats throughout the year. "When I can't find what I want in the market, I just raise it in my garden," she says.

Herbs planted for culinary uses can also be used to advantage in plantings around the home. Use them in the landscape plan to impart color, as hedges, borders, specimen plants, or grow them in a garden arrangement. You may also include them in rock gardens.
You will want to keep the following suggestions in mind as you plan to locate your herb plants in association with other plantings or as an individual planting. Herbs are classified as annuals, biennials, and perennials. They range in tenderness from succulent to woody, exhibit varied growth patterns, and have different light requirements

nitrogen materials. It is good insurance not to let animals graze for one or two days after top dressing is applied or until after a heavy dew or rain.
Begin grazing when plants become well established and have made four inches or more of growth. Do not overgraze or graze when animals bog in soil. For maximum efficiency let animals remain on area just long enough to fill. If silage or good hay is available for use during severe cold weather the winter grazing plants can be kept grazed down to produce the most beef or milk per acre.
In late winter or early spring apply 50 pounds additional nitrogen per acre to give spring grazing or to produce silage.
To follow winter grazing, soybeans offers an excellent opportunity to reap another cash crop from the same land. The use of Soybeans on winter grazing areas goes with winter grazing better than any combination of crops that Georgia farmers have.

Tobacco Problems
To Be Discussed A series of tobacco meetings designed to familiarize tobacco growers with problems that threaten Georgia's tobacco export market will be held next week in several tobacco growing areas, according to Commissioner of Agriculture Tommy Irvin.
Irvin said the meetings, scheduled in cooperation with other interested agricultural agencies, will deal with concern expressed by foreign buyers over the substitution of new tobacco varieties for the standard or old line varieties which the foreign buyers prefer.
The meetings, which will all begin at 2:00 pm, will be held at the Waycross Court House on Nov. 17, Metter Court House on Nov. 18, Douglas Court House on Nov. 19 and the County Agriculture Building in Moultrie on Nov. 20.

Only one type of mushroom is commonly cultivated in the United States -- a horticultural adaptation of the common field mushroom. All portions of this type mushroom appearing above the ground are edible. When the underside of the cap reaches the deep rose to brown color, the mushroom is mature and produces spores.
These spores, microscopic reproductive bodies similar in function to seeds, are liberated by the fully developed cap. Mrs. Wall takes these caps and places them back on the ground with the gills down. The spores from these caps fall on the ground for another crop.
Mushrooms not only have a delicious flavor but a definite food value as well. They contain protein and are good sources of vitamins and minerals. The vitamins are well retained during cooking and in canned, dehydrated, and frozen mushrooms. Mushrooms are almost all water, about 90 percent, and

Dear Editor:
I have found another way to store Chinese chestnuts without refrigeration almost indefinitely.
Before the chestnuts harden, split the shell almost all the way through with a heavy knife. Boil the split shell nuts in a solution of three heaping Tablespoons of salt and a level teaspoon of soda for each quart of water. (Note: do not use an aluminum pot since the salt/ soda solution will cause heavy tarnishing of the aluminum). The nuts should be boiled for about 30 minutes.
After boiling, drain and rinse. Pack tightly in sterilized fruit jars. Prepare another salt and water solution (omit the soda this time), pour the boiling salt water to overflowing over the chestnuts and seal immediately.
Chestnuts preserved this way will keep almost indefinitely and maintain their "mealy" consistency and wonderful nutty taste.
Using this method, I believe Chinese chestnuts could be canned commercially and should make a profitable crop for the State.
The soda removes some of the tannic acid and makes the nuts have a much sweeter taste than plain boiling.

PIZZA SAUCE OR SPAGHETTI SAUCE Olive Oil 1 clove garlic l/ 2 Ib. sweet Italian sausage (optional) 1 No. l can tomato puree l small can tomato paste Water I/ 2 tsp. rosemary 1 beef bouillion cube l/ 2 tsp. salt l tsp. sugar l small bay leaf l tsp. oregano l tsp. sweet basil
Lightly brown garlic and sausage in saucepan which has oil just covering bottom lightly. Remove garlic and add remaining ingredients, filling empty paste and puree cans once with water and adding this to the mixture. Simmer slowly at least 2 hrs., or until thick, stirring occasionally.
PIZZA CRUST (TWO PIZZAS) 1 package dry yeast 1 1/4 cups water (lukewarm) 2 tsp. salt 3 cups plain flour
Dissolve yeast in water following directions on the package. Add salt. Dissolve flour in the mixture one cup at a time beating well after each addition, kneading toward the end. Knead for about twelve minutes, or until dough is smooth and satiny. Divide in half and continue kneading for another five minutes. Form each half into a smooth ball, and work with a rolling pin into a circle of about 14 inches, lifting the dough off the table with the hands to complete shaping by placing fists in center and underneath the dough so that the dough stretches of its own weight to desired size. Place dough on pizza pans, and put a medium coating of sauce on it, leaving edges dry. Sprinkle Parmesan cheese over sauce and bake for about 12 minutes (or until edges brown) in a 500 degree oven.
NOTE: This recipe does not require allowing the dough to rise before shaping, but an even better result can be obtained by letting the dough rise for about an hour prior to dividing and shaping.
OPTIONAL: Slices of mozzarella cheese, Italian sausage, pepperoni, anchovies, etc. can also be placed on the pizza before baking.

Horses of Georgia

Pleurisy-root, butterfly-weed
or orange milkweed, common names of Asclepias tuberosa, is the showiest of all the native milkweeds and thrives in dry, sandy soil all over North America.
It is a rough-hairy herb one to three feet high with coarse, oblong leaves - but the gorgeous orange clustered flowers that flame over meadows during the last of summer and early autumn are so brilliant that they almost seem tropical. Although the plant grows wild, it is worthy of cultivation and is easily transplanted as the fleshy roots when broken in pieces form new plants.
Its great masses of color give it the name butterfly weed -while
that of pleurisy-root came from the belief that the thick, deep root was a remedy for pleurisy. Orange milkweed - because of the fact that all of the milkweeds contain a milk-like substance. The botanical name Aslepias is the Greek name in honor of Asclepias, the god of medicine. The Indians used it as food and prepared a crude sugar from the flowers; the young seed pods they boiled and
ate with buffalo meat. Although we take this plant
for granted, flowers, like prophets, are not without honor save in their own country -because oddly enough, at the Centennial Exhibition much attention was attracted by a bed of these beautiful plants which were brought over from Holland.

Appaloosa

These speckled beauties make up three percent of Georgia's horse and pony population. Numbering over four thousand head, the bright spots of the Appaloosa are no longer a rare sight at horse shows over the State.
There are indications that "Appaloosa type" horses were raised in Spanish Mexico on the ranges of Chihuahua, but their first appearance in substantial numbers occurred in the Columbia River Basin of the Northwest.
The Nez Perce Indians, who owned these horses, lived in deep valleys which provided ample forage while restricting the wandering of the herds. Early explorers of the area were surprised to find the Nez Perce practicing selective breeding to improve their horses.
As settlers moved into the valleys, they found Indian horses grazing near the Palouse River in Washington State. From this came the name "Palouse" or "Palousey" horses, which later evolved to Ap-

paloosa. As conflicts developed between
settlers and the Indians, the Army was called in. After repulsing the Army's first attack, the Nez Perce began a retreat which lasted one hundred-ten days and covered fourteen hundred miles of wilderness. It was the hardiness of their Appaloosas that made such a long flight possible. After the surrender of the Indians, a dispersal sale was held.
Horse brokers bought large quantities of these horses and resold them over a large area. They were sold usually in small lots so that continuation of the blood lines became difficult. The Appaloosa was bred nearly into oblivion.
In 1937, a magazine called "The Western Horseman" printed an article which pointed out the almost total disappearance of the Appaloosa Horse. Shortly after this, interest in the breed revived and by 1947, the Appaloosa breed had a stud book and was on its way to the popularity it enjoys today.

Mushrooms

advised sticking with the known ones. One poisonous mushroom will ruin the whole bunch and the poison is deadly.
Edible mushrooms have an earthy odor while poisonous ones do not. The older mushrooms have holes in the stems and if the stem is broken from the cap, will sometimes display signs of insects or insect damage in the cap.
When the mushroom first appears, the cap is pure white and later turns brown. Frost causes the cap to have a marbly cast.
Mushrooms prefer the cooler climates and produce much faster in our northern states than here. The warmer climate of Georgia causes a much later crop than those in the extreme northern states. The mushroom grower encounters most of the economic difficulties that confront the producer of other perishable crops. Under present market conditions, there is no assurance that a grower will be able to raise mushrooms at a profit in the South. However, they can be raised as a hobby and a delightful addition to your garden.

Some types of worms are working inside of my pecan and pear trees. The limbs are being cut off and appear to have been sawed off. What can be done to control this?

You have twig girdler worms. The limbs from your trees should be burned as soon as they are cut off as they contain eggs of the insect that will infest your trees next year. We have also mailed *y*ou* a pamphlet which should be helpful.
Enclosed are 2 six cent stamps for now and the time I asked before thinking it might be published in the BULLETIN. This time my sister wants your ideas about these butter beans I have enclosed. Many years ago our father planted them in Mississippi, Tennessee, Georgia and Oklahoma. They were pink, lavender, purple and black splotched. We have saved the seed year alter year and now they are only black or deep purple splotched. Why have the other colors left?

Our Seed division advised that beans normally do not change colors. This change is caused by picking, and saving for seed, beans of a specific color year after year. Although this was probably not done intentionally, you have saved
the black and white strain through the years. We have mailed your stamps back to you but appreciate the kind*g*e*sture.

RESPONSE

For the lady who had rust on her iron pot. Wipe the inside and outside

where the rust appears with a paper towel or cloth saturated with oil or un-

salted shortening. Place the pot in a 200 degree oven for two hours. The oil or

shortening will burn off and so will the rust. After cooling, wash pot for a "like-

new" appearance.

Sweet Potatoes
November 26, 12:01 a.m., has been set by the Georgia Agricultural Commodity Commission for Sweet Potatoes as the cut-off date for selling non-cured sweet potatoes this season. After this time all sweet potatoes offered for sale in Georgia must be properly cured.
On November 20 and 21 the Tenth Annual Sweet Potato Festival will take place in Ocilla. From midmorning Friday until noon on Saturday, visitors will be entertained with exhibits, speakers, good food and an exciting parade.
