Holiday Recipes
Featuring Good Georgia Products
DATE PECAN MUFFINS
1 cup brown sugar. 1/2 cup shortening. Add 4 eggs to above. Mix 2 cups of plain flour. 1 teaspoon of soda.
Add to above and gradually add 1 cup of buttermilk and mix to
gether. 1 box (8 oz.) pitted dates (cut up), f cup pecans (cut up).
Grated rind of one orange, add this to above mixture. Put into muffin pans and bake for 15 minutes at 400 degrees. Makes 5 dozen, (small party size) dip in the following, boil 1 1/2 cups sugar and 3/4 cup concentrated orange juice, after diluted let cool and then dip muffins in this mixture. Use tongs for taking up out of boiled mixture. Store in tins, they will keep fresh six weeks. Don't freeze.
CANDSED FRUIT CAKE
3 packages pitted dates 1 pound candied pineapple 1 pound candied cherries 8 cups (2 Ibs.) pecan halves
2 cups sifted flour 2 teaspoons baking powder 1/2 teaspoon salt 4 eggs 1 cup sugar
Cut dates & pineapple in coarse pieces. Mix with whole cherries and pecan halves. Sift together flour, baking powder, and salt; mix fruit. Beat eggs and gradually beat in sugar. Combine with first mixture. Pack into 2 9-inch tube pans, lined with wax paper. Bake in oven 275 degrees F for 1 hour and 15 minutes.
APRICOT DELIGHT
1 box apricot gelatin (prepare 1 No. 2 can crushed pineapple
according to pkg. directions)
(drained)
4 ripe firm bananas
1 61/2 oz. pkg. miniature
marshmallows
Prepare gelation and set in refrigerator to partially congeal. Add
other ingredients; pour into large square or oblong dish or pan and
allow to congeal until firm before adding topping.
TOPPING: 1/2 cup pineapple juice (saved
2 Tablespoons flour 1 Whole egg (well beaten)
from crushed pineapple used 1 Small box Dream Whip
in gelatin) V2 cup sugar
(or 2 cups whipping cream) 1 Small pkg. creamed cheese
Whip egg and add sugar, flour and pineapple juice. Stir well until
dissolvedthen cook over medium heat, stirring often, until thickened.
Remove from heat and immediately add creamed cheese and whip until cheese is completely melted. Set aside to cool. Prepare Dream
Whip according to pkg. directions or, if using whipping cream, whip until thick, then fold in topping mixture, when it is cooled. Spread
over gelatin mixture and allow to stand in refrigerator overnight
before serving.
JAPANESE FRUIT CAKE
6 eggs
1 cup pecans
2 cups sugar
1 box raisins (black)
1 cup sweet milk 1 cup butter
1 pkg. or box shredded coconut 1 tsp. cinnamon*
4 cups flour (self-rising)
1 tsp. cloves
1 cup English walnuts
1 tsp. nutmeg
* any combination of spices may be used. Sift flour and spices together, mix thoroughly. Roll raisins and nuts in about V2 c. of the flour mixture, lay aside for later use. Separate eggs and beat whites until stiff enough to stand up in peaks. Cream butter and sugar until fluffy. Add egg yolks two at a time, mixing thoroughly after each addition. Add flour and milk alternately until thoroughly mixed. Add raisins, nuts and coconut, mix thoroughly. Last, fold in beaten egg whites, just until well mixed. (If using mix er do not use when folding in egg whites, use wooden spoon or hand.) Cook at 400 degrees in greased and floured cake pans. Will make 4 large 8 inch layers.
FILLING
2 Oranges 2 Lemons 1 can or Package shredded
coconut
1 1/2 C. boiling water 2 Tblspn. self rising flour or
corn starch 2 c. sugar
Peel and cut oranges and lemons in small pieces. (DO NOT USE PEELINGS). Mix sugar and flour (or cornstarch), add boiling wa ter, oranges and lemons. Cook until filling is thick as honey. Add coconut, bring to hard boil. Remove from stove and spread be tween layers and over top of cake.
