Watermelon Day At The State Capitol
State employees enjoy a famous agricultural product--Georgia watermelon.
The Crisp County Farm Bureau treated state employees to a fresh slice of cold watermelon on a day in July that couldn't make up its mind to rain or shine.
This is the sixth year that the Crisp County Farm Bureau and watermelon growers have invited state employees to take a "watermelon break." The delegation was accompanied by State Representative Howard Rainey and was met at the capital by State Senator Martin Young whose 13th District includes Crisp County.
In the courtyard adjacent to the agriculture building, long tables were set up and several thousand state employees came out to enjoy a slice from the more than 1 500 Black Stone, Crimson Sweet, Jubilee and Charleston Grey melons brought from South Central Georgia.
Miss Beth Wells, 1968 Crisp County Watermelon queen, daughter of Mr. and Mrs. William L. Wells and a student at Mercer University, accompanied the delegation headed by Max Garden, Crisp Farm Bureau president.

Good Ideas For Georgia Watermelon Season
WATERMELON RIND PICKLES Prepare rind by removing all green and red portions; cut into cubes or cut with a doughnut cutter. Soak 2-1/2 to 3 hours in lime water (2 teaspoons of slaked lime to 1 quart of water). Freshen 1 to 2 hours in clear water. Drain and cook rapidly in a sirup made by boiling together 1 pound of sugar, 1 pint of water, 1 pint of vinegar, 1 teaspoon each of cloves, cinnamon, allspice and 1/2 teaspoon of mace, tied in a spice bag. Make enough sirup by this proportion to cover your rind well. Add a little water if needed as rind cooks. Cook until the rind is clear and transparent. Let cool, pack, reheat sirup and cover rind. Process 15 to 20 minutes in hot water bath at simmering..
WATERMELON RIND PRESERVES 1 pound rind 1-3/4 pounds sugar 1/2 lemon 3 cups water
Prepare rind by carefully removing all green and red por tions and cut into cubes or into 3/8-inch slices or use dough nut cutter with a small hole in the center. Soak 3 hours in lime water using 2 teaspoons of slaked lime and 1 quart of water for each pound of rind. Wash and soak in clear water for 1 hour. Drain and boil in clear water for 1 hour. Drain, drop into boiling sirup made from 1-3/4 pounds sugar and 3 cups water. Boil moderately for 1 hour with occasional stirring. Add lemon slices and continue boiling at a slower rate for an additional 30 minutes or until rinds are transparents, light amber in color and the sirup temperature reaches 224 F. Pack loosely in hot jars, cover with sirup, seal and process for 15 minutes at simmering. Cool as quickly as possible.
The sirup should register 222 to 224 F. when finished. If the sirup becomes dense before the rind is transparent, boiling water may be added.
GINGERED WATERMELON RIND PRESERVES 1 pound rind 2 teaspoons slaked lime 1 quart water
SIRUP 1-1/2 pounds sugar 1 ounce ginger or 2 tablespoons 2 quarts water 1 /2 lemon, sliced
Use proportions and prepare as given under the directions for watermelon rind preserves. After rind has been freshened for 1 to 2 hours in clear water, drain well and boil rapidly in strong ginger tea (1 ounce ginger to 1 quart water) for 15 minutes. Drain, put into sirup made by using 1 pint strained ginger tea with 1 quart water and 1-1/2 pounds of sugar. Cook until tender and transparent (about 1-1/2 hours). After boil ing half hour, add half lemon sliced thin. Place in shallow pans to cool, having the rind well covered with sirup which when boiling tests 220 F. When cool, pack and process.
