Peach-Mince Pie
Pastry for 2-crust 9-inch pie 2-1/2 cups prepared mincemeat 1 2-pound can (2 cups) sliced peaches, drained Line 9-inch pie plate with pastry. Fill with a mixture of the mincemeat and peaches. Adjust top crust, cutting slits for escape of steam, seal. Brush crust with milk and sprinkle with sugar. Bake in hot oven (400 degrees) 45 minutes or till crust is browned.
Party Peach Punch
6 jars Peach Juice Drink (27 ounce size)
1/2 cup lemon juice or lemonade 1 6-ounce can frozen orange juice 12 cup pineapple juice Combine all ingredients, chill with ice cubes and serve. Makes approximately 40 servings.
Grated Sweet Potato Pudding
3 cups grated sweet potatoes 1 cup sugar
2 cup brown sugar 2 stick margarine
egg
2 cup milk 2 tsp. allspice 2 tsp. cinnamon /2 tsp. salt Mix all ingredients together. Put into baking dish. Cook at 350 degrees till done, about 60 minutes.
Pecan Pie
1 unbaked pastry shell 2 eggs, slightly beaten 1 cup red Karo syrup 1 cup sugar 2 tbsp. melted butter 1 8 tsp. salt 1 tsp. vanilla 1 cup pecan meats Mix ingredients, fill 9-inch pastry shell. Bake in hot oven at 400 deqrees for 15 minutes. Reduce heat to 350 degrees and bake 30 minutes longer. Filling will appear softer in center. Cool at room temperature end do not put in refrigerator.
Refrigerator or Freezer Cookies
1 cup shortening 2 cups brown sugar 2 egqs, beaten 3-1 2 cups sifted flour 1 2 teaspoon salt 1 teaspoon soda 1 cup chopped nuts 1 teaspoon vanilla Cream shortening, add sugar and blend well. Beat eags and add to creamed mixture. Add soda and salt to flour. Add dry ingredients, nuts and vanilla. Mix until just blended. Divide into 2 rolls and wrap them in waxed paper. Put in refrigerator overnight. To freeze: wrap rolls in cellophane or freezer foil, seal, label, and freeze. To bake, remove from freezer and leave at room temperature for 10 minutes. Slice with a sharp knife to 14 inch thickness. Place on well-greased cookie sheet about 1 inch apart. Bake in a 400 degree F. oven 10 to 12 minutes. Yield: 100. Decorate & cut in holiday patterns and colors.
