FIRE ANTS
Federal funds for fire ant eradication programs have been increased this year from $3,300,000 to $5,300,000.
The 1966 Georgia Legislature appropriated $600,000 for Georgia's fire ant program. If this amount could be increased to $1,000,000 an estimated $2,000,000 in federal funds would be forthcoming.
This would give Georgia a three million dollar fire ant program rather than the current 1.2 million dollar program, speeding up fire ant eradication considerably.
The fire ant has been contained to the Southwest portion of the state through past control efforts.
The imported fire ant with its fiery sting and huge mounds creates a health menace and makes operating farm machinery virtually impossible.

Pecan
Eosy-to-make cookies with a caramel, toasted-nut flavor
3/4 c. butter IVz c. brown sugar, firmly
packed 1 egg 1 tsp. vanilla
'/2 tsp. salt 2 c. sifted flour 1 c. toasted pecans,
chopped
Cream butter and sugar until light and fluffy. Beat in egg, vanilla and salt. Blend in flour and nuts.
Spread dough in lightly greased IS'/zxIO'/zxl" jelly roll pan. Bake in moderate oven (375) for about 15 minutes or until lightly browned. Cool on rack for 5 minutes; cut into bars. Remove from pan and continue cooling on rack. Makes 48 bars.
Cranberry Conserve
Good combination of flavors. A gift you can make during the holidays
1 Ib. whole, fresh or frozen cranberries
3 oranges, cut in quarters 3/4 c. dried currants
1 c. seedless raisins 2 tart apples, pared
and cut fine
2 (8'/2 oz.) cans crushed pineapple
1 c. boiling water 5 c. sugar '/2 c. slivered blanched
almonds
Put cranberries through food chopper, using coarse grind; chop oranges, using fine grind.
Mix all ingredients in heavy saucepan. Cook, stirring, over medium heat until thick, about 45 minutes. Stir in almonds.
Spoon into hot, sterilized jelly glasses. Cover with paraffin. Makes 12 (6 oz.) glasses.
Oyster Stoffini
1 cup butter 1 onion, chopped 3/4 cup chopped celery 1 quart oysters 3 quarts breadcrumbs
(cornbread and white bread)
1 teaspoon salt '/2 teaspoon pepper
1 teaspoon sage
Melt butter; add onion and celery and cook until tender. Drain oysters and reserve 1 cup liquid. Add oysters to butter, onion, and celery and cook 10 minutes.
Put breadcrumbs, salt, pepper, and sage in a large bowl. Add oyster mixture and the liquid from drained oysters. Mix well. Stuff mediumsize bird. Wrap in aluminum foil and bake at 325 degrees F. for 1 Vz hours. Uncover and finish baking until brown.
Sweet Potato Casserole
Double the recipe for a crowd. Can be made ahead, baked at last minute.
6 medium-size sweet potatoes or yams, boiled in skins
1 egg, beaten '/2 e. heavy cream
5 tblsp. sugar
1 tsp. salt '/2 tsp. nutmeg
1 tsp. rum extract (optional) 2 tsp. finely grated
orange rind 1 tblsp. melted butter
Peel, mash and whip sweet potatoes until smooth or put through ricer (you should have 3 c. potatoes after mashing). Add beaten egg, heavy cream, sugar, salt, nutmeg and rum extract. Beat until light and fluffy.
Put in buttered 1 2 qt. casserole. Sprinkle evenly with orange rind. Driz zle the melted butter on top. Place in hot oven (400) for 30 minutes or until lightly browned. Makes 6 servings.
Stuffed Cornish Hens
4 Cornish game hens '/4 cup melted butter }/4 cup wine vinegar '/2 cup hot chicken stock
(use hot water and chicken stock base)
8 slices canned pineapple 2 tablespoons sugar </4 teaspoon powdered
ginger 1 teaspoon cornstarch '/4 cup pineapple syrup
Rinse defrosted game hens inside with a little wine vinegar. Season with salt and coarse black pepper. Fill lightly with favorite dressing. Put extra dressing in small covered dish and bake separately. Sew or fasten open ings with round toothpicks. Rub hens generously with part of the butter. Place breast up in shallow pan. Pour wine vinegar over hens and add half
the hot stock to the pan. Roast at 350 degrees F. about 1 hour until tender and browned. Baste every 15 minutes with remaining. butter and pan drippings.
To glaze: Lay 1 drained pineapple slice on each bird. Mix sugar, ginger, and cornstarch into pineapple syrup. Spoon over birds. Add rest of pine apple to pan. 'Raise oven temperature to 400 degrees F. Baste and cook 15 minutes or more until skin has golden, glazed look. Put extra dressing on heated platter. Lay game hens on top. Add rest of chicken stock to pan sauce and a little more wine vinegar, if desired. Heat to boiling and season with salt and pepper.

'/2 cup lemon juice or lemonade
1 6 ounce can frozen orange juice
'/2 cup pineapple juice
Combine all ingredients, chill with ice cubes and serve. Makes approxi mately 40 servings.
Small Fruitcakes
3 ounces candied citron 6 ounces candied cherries 6 ounces candied pineapple l'/2 cups chopped nuts 1 cup flour
'/3 cup butter or margarine '/2 cup sugar
3 eggs '/2 teaspoon baking powder
Dredge chopped fruits and nuts with half the flour. Cream butter and sugar until smooth. Add unbeaten eggs, one at a time, beating well after each addition. Combine remainder of flour and the baking powder; add to creamed mixture. Add fruits and nuts. Put into paper baking cups and bake at 275 degrees F. for 30 to 40 minutes. Do not overbake.

pumpkin >/2 c. milk '/4 tsp. salt '/2 tsp. cinnamon
2 tsp. nutmeg '/4 tsp. salt '/2 c. sugar
1 c. heavy cream or 1 (2 oz.) pkg. whipped topping mix
1 tsp. sugar '/2 tsp. rum extract
Chopped nuts
Soak gelatin in cold water. Beat egg yolks; save the whites for later. Add '/2 c. sugar, pumpkin, milk, salt, cinnamon and nutmeg (grind your own for added flavor).
Cook in heavy saucepan over low heat, stirring constantly, until thicken ed. Mix in gelatin until completely dissolved. Chill for about 2 hours in refrigerator.
Beat egg whites and '/4 tsp. salt until stiff.
Remove pumpkin mixture from refrigerator and beat until fluffy. Add '/2 c. sugar while beating.
Fold in beaten egg whites and return to refrigerator for one hour.
Whip the cream or whipped topping mix. Add 1 tsp. sugar and rum ex tract. Fold whipped cream into pumpkin mixture, reservng a bit of the cream for topping.
