SEPTEMBER IS GOLDEN GOODNESS

OF GEORGIA EGGS MONTH

During Hie entire month of September the egg industry, along with allied industries, will be .promoting egg consumption in Georgia. The slogan for the month is "Enjoy the Golden Goodness of Georgia Eggs."
The egg industry in Georgia has swelled to a $110 million industry during the past few years. Where once we were importing eggs for consumption in Georgia, eggs are now exported on a large scale for use in other states.
In fact, Georgia chickens are today laying more than

9 million eggs daily, making Georgia second in the nation in gross income from the egg industry.
Highlight of the month long promotion program designed to persuade more people to eat more eggs every day will be beautiful Georgia co-eds passing out hard-cooked eggs in sixteen of our largest cities.
In cooperation with this effort, we congratulate the egg industry in Georgia and encourage all Georgians to everyday enjoy more of the perfect protein food eggs.

Egg and Cottage Cheese

Salad

6 chopped hard-cook Georgia eggs
1 cup cooked ham, diced or cut into thin strips
2 teaspoons chopped scallions
1/4 cup chopped pimento

1/4 teaspoon salt I cup cottage cheese 1 teaspoon prepared
mustard 2 tablespoons cream or
milk

Mix first 5 ingredients. In small mixing bowl or blender, place cottage cheese, mustard and milk (or cream). Beat until smooth and creamy. Fold into first mixture. Chill in refrigerator until firm and flavors are well blended, at least one hour. Serve on lettuce leaves; garnish with ripe olives, stuffed olives or tiny pickles, slices or wedges of hard-cooked Georgia eggs, etc. Serves 6.

HARD COOKED EGGS
Remember, you should never BOIL an egg. Cook eggs right below the boiling point. For soft cook, let simmer about three minutes. For hardcooked, simmer about eight to 10 minutes.

Georgia egg consumption in Georgia amounts to almost one per day per person. Are you eating your share?

The eggs were presented in conjunction with the celebration of "Gold Goodness of Georgia Eggs" month in September. Miss Tatum has been selected to represent the egg industry during the month long celebration.

Cantaloupe Alaska Surprise

:4 Georgia egg yolks,

1/2 teaspoon lemon extract

slightly beaten

1/2 cup shredded coconut

1/2 cup sugar

2 cantaloupes, about 4 inches

I teaspoon cornstarch

in diameter

1/8 teaspoon salt

Meringue:

1 cup milk, scalded

4 egg whites

2 teaspoons unfavored gela 1/4 teaspoon salt

tin softened in 1/4 eu p3/4 cup sugar

cold milk

Grated rind of I lemon

1/2 teaspoon vanilla extract

Coconut for garnish

Make custard: blend Georgia egg yolks, sugar, cornstarch and salt. Pour scalded milk gradually into egg mixture, stirring constantly. Blend in softened gelatin. Cook, stirring constantly, in double boiler or over low heat until mixture coats spoon. Remove from heat immediately and pour into chilled bowl to cool promptly. Stir in flavoring and coconut. Chill. Cut cantaloupes in halves. Remove seed portion. Trim some of the melon to make large enough cavity to hold 1/3 scant cup of custard, cutting on the slant from edges to center. Fill cantaloupes v/ith chilled custard. Cover tightly; refrigerate to allow custard to set. When ready to serve make meringue: Beat egg whites with 'salt until foamy. Gradually beat in sugar, beating until a very stiff meringue is formed. Stir in lemon rind .... Spread meringue to completely cover custard and melon to the outer edge. Garnish top with coconut. Place melon on baking sheet. Bake in a very hot oven (450 F.) about 5 minutes, until meringue is a golden brown. Serve promptly. Makes 4 servings.

The annual Fall Farm Land edition of the Market Bulletin will be published Wednesday. October 21. The deadline for all notices arriving in the Bulletin office is October 9. Notices received later than October 9 C regardless of reason involved) will not be published.
Only farms and farm land for sale, for money rent, wanted to buy or exchange for, or wanting to rent are eligible for publication. Notices may not exceed 50 words, including name, address and phone number when desired. Notices will be cut down or returned to writer if submitted otherwise. One notice only to an individual or family, except in case of separately owned
tracts. Notices in the interest of Real Estate firms, agents, brokers, banks,
dealers, etc., or for city and town lots, individual houses, apartments or rooms, stores, filling stations, summer or winter resorts, and of like nature will not

COTTON INSECTS BOLL WEEVIL-counts were made in 18 northwest, north and northeast Georgia cotton fields. The per cent puncture ranged from 8 to 88 per cent, averaging 44 per cent. BOLLWORM - egg counts in the above mentioned area ranged from 6-27 per 100 terminals, averaging 16. Larval ("Worm") counts ranged from 3-12, averaging 6 per 100 terminals. The moths are depositing eggs on squares, blooms and stems. CABBAGE LOOPER-light infestations on cotton in the above mentioned area.

BOLL WEEVIL-counts were made in 10 of 27
fields in southcentral and southwest Georgia. Counts ranged from 14 to 85 per cent punctures, averaging 48 per cent. BOLLWORM - egg count ranged from 9 - 40 per 100 terminals, averaging 19 per 100 terminals, averaging 9 per 100 terminals. CABBAGE LOOPER - light to moderate infestations on cotton in southcentral and southwest Georaia BEET ARMYWORM - light infestations on cotton in the above mentioned area.
