The sweet onions are coming!
Georgia Agriculture Commissioner sets official Vidalia pack date
ATLANTA Mark your calendars, Vidalia onion lovers, because America's favorite sweet onion is set to ship next month. The Georgia Department of Agriculture and the Vidalia Onion Committee announced April 12th as the official pack date for the 2022 Vidalia onion season.
"Each year I, along with the Vidalia Onion Committee, look forward to sharing when Vidalia onions will be on their way to stores, so I'm pleased to announce April 12th as the official pack date this season," said Georgia Agriculture Commissioner Gary W. Black. "Cultivated for more than 80 years, Vidalia onions mean a great deal to the state of Georgia, earning a renowned reputation for their sweet distinct flavor and versatility beloved by chefs and home cooks alike."
Only available for a limited time each year, Vidalia onions hitting grocery store shelves often signals spring has sprung for fans near and far from the onions' home state of Georgia. The pack date is determined by growing season soil and weather conditions to ensure the highest quality Vidalia onions. The Vidalia Onion Advisory Panel unanimously voted April 12th as the 2022 pack date.
The pack date rings in the start of the Vidalia onion season, where shoppers can get their hands on the famous seasonal treat between April and August. Known for their sweet, mild flavor, these onions compliment any dish from soups to salads and even desserts.

"In the 2022 season, approximately 10,000 acres of Vidalia onions were planted by 60 registered farmers across 20 southeastern Georgia counties," said Vidalia Onion Committee Chairman Cliff Riner. "Representing about 40 percent of the sweet onion market across America, Vidalia onions are sold in all 50 states and most of Canada."
Discovered by accident in the 1930s during the Great De-
pression, Vidalia onions have grown to be a favorite across America. The Vidalia Onion Act of 1986 trademarked the name "Vidalia onions" and defined the growing region in South Georgia. Vidalia onions are grown from a distinctive Granex seed, then packed and sold on or after the official pack date annually.

About the Vidalia Onion Committee Because Vidalia onions are sweetly unique, farm-
ers united to seek legal protection for their crop and its name. Federal Marketing Order No. 955 was established in 1989, to stipulate where the crop can be grown and help with research and promotion of Vidalia onions. The Vidalia Onion Committee administers FMO No. 955 and authorizes production research, marketing research and development and marketing promotion programs. This federal program along with Georgia state laws that protect the Vidalia trademark have provided a legal framework for the industry. Biosecurity is the practice of minimizing the spread of disease into a flock of birds or, in the event of disease occurrence, preventing the spread of disease-causing organisms off the premises.
According to the Centers for Disease Control and Prevention, new outbreaks of avian influenza (flu) have been detected in U.S. aquatic birds, commercial poultry and backyard flocks since January. Although avian influenza is not a threat to human health or food safety in Georgia, avian flu presents a risk to all poultry operations, from hobbyist flocks to the state's $22.8 billion commercial industry. The key to preventing the spread of the
disease is biosecurity.
Often heard but frequently misunderstood, biosecurity refers to a set of practices that all poultry owners should know and implement to protect their poultry flocks from disease.
Birds that are raised under pastured or free-range management systems need added attention due to birds' increased exposure to environmental disease sources. Symptoms of avian flu can be found at preventai.uga.edu and agr.georgia.gov/avian-influenza.aspx. What is biosecurity?

Warmer, drier conditions are forecast for the upcoming growing season

On Feb. 17, the National Oceanic and Atmospheric Administration Climate Prediction Center released its latest three-month climate outlook for the United States. What does this mean for conditions in the Southeast in the coming growing season?
The Climate Prediction Center outlook shows a continuation of the current La Nia pattern of warmer and drier conditions across the Southeast that has occurred over most of the winter. La Nia is related to unusually cold water in the Eastern Pacific Ocean and often pushes the jet stream that steers low-pressure areas across the region to
the north, leaving the Southeast in warm and sunny conditions.
Despite the La Nia, however, there have been occasional storms that have brought cold and wet conditions to the region in January and February, causing frost damage to blueberries, vegetables, and other early crops.
Frost could occur again this year since most parts of Georgia and the Southeast (except for Florida) have not yet passed their average date of last frost.
The La Nia is expected to transition back to neutral conditions by mid-to-late spring. The outlook shows that the entire Southeast has a better than usual chance of above-normal temperatures for the March
through May period as the La Nia weakens. The upward trend in temperature over
time is also contributing to the likely warmer conditions. There is a slightly increased chance of dry conditions in southern Georgia and into Florida, especially in March.
Severe weather is also more likely in a La Nia spring due to the presence of warm air flowing into the region from the Gulf of Mexico. La Nia and neutral conditions are also associated with more active Atlantic hurricane season from June through November, but the paths of the storms cannot be predicted this far ahead.
Areas near and to the east of the paths of this coming year's storms could see a lot of rain, as occurred last year. However, if
the storms track west into Texas or up the East Coast instead, the Southeast could see drought conditions return to the region next summer. This is especially true if the current moderate drought and abnormally dry conditions in the Georgia coastal plain continue into the growing season.

Forestry Matters: Georgia's fire use/wildfire risk on the rise

It's that time of year when many Georgia landowners and managers turn to "good fire" for the numerous benefits it provides. Whether it's preparing lands for agriculture crops, removing accumulations of natural vegetation, increasing forage for livestock and improving habitat for wildlife, or just "opening up the woods" for aesthetics, prescribed fire is the tool that does it all.
While burn permits are no longer needed for the backyard leaf pile, they are required for prescribed burning. Certified burners now have a more efficient way to receive their permits through GFC online, up to 24 hours in advance, after an account has been created: https://gatrees.org/fire-prevention-suppression/certified-burners-early-permit-system/.
No matter what the purpose, anyone who strikes a match outdoors must be keenly aware of local weather conditions, because this is also the time of year when conditions can change rapidly.
Wildfire activity has increased across the state and the
short and long-term predictions for Georgia call for mounting wildfire potential over the next three months. Grasses, forest shrubs, fallen leaves/needles, and limbs from hardwood trees and pines are dry and have been cured out by frost and freezes. When high, gusty winds, low relative humidity, and infrequent rainfall combine, the risk of wildfire goes up. Many times, what starts as an intended "good" fire turns into an unwanted fire that may become uncontrollable, cause damage to property, and put burners and others at risk for injury. Other than lightning or naturally occurring fires, all other wildfires are caused by humans.
How can you stay safe? Your main defense is knowledge. These days, there's no excuse for not knowing the weather forecast. A variety of tools are available through a number of sources, including local and national media outlets and the Georgia Forestry Commission's fire weather system: http:// weather.gfc.state.ga.us.
Please take time to consider how you can take ownership to prepare yourself and your home and property from wildfire. Actively evaluate your surroundings and take necessary actions, with a mindset of what property would survive and
what could be destroyed, should a wildfire occur. Someone once said, "an ounce of prevention is worth a
pound of cure," and that's proven nowhere better than in the case of fire. We've all seen too many news stories about the human suffering caused by dead fire detectors, flammable materials piled too close to a house, and burning embers swept from a backyard leaf pile. Each of us can take some action now to make our surroundings safer in the case of fire.
The National Fire Protection Association's Firewise Program is an excellent resource for information about guarding against fire hazards. Being "Firewise" means understanding and applying basic practices on your property, which will increase survivability. With short and long-term fire predictions indicating an increase in significant wildfire potential for most of Georgia over the next three months, it's imperative that landowners and homeowners take note now. Plan ahead, take actions that will prevent wildfire, and protect property from damage. That "ounce of prevention" truly could make the difference of a lifetime.
Georgia Cooking: Strawberry cornmeal shortcakes
Georgia Grown cornmeal and Richland Rum's Almost Rum syrup make for a unique twist on this classic dessert. Try blending a local goat cheese or Sweetgrass Dairy's fresh, spreadable "Lil Moo" cheese into your whipped cream for a luxurious topping that is at once tangy, creamy and slightly savory.
CORNMEAL SHORTCAKES
Ingredients cup self-rising cornmeal 1 cup self-rising flour cup sugar 2 Tbsp butter cup shortening cup sour cream or yogurt cup buttermilk Zest and juice from one lemon
Directions Preheat oven to 450 degrees.
Whisk cornmeal, flour, and sugar in a large bowl. Make a well in the center of the bowl, and place butter, shortening and sour cream in the middle. Blend only these ingredients into a paste with your fingers. Add buttermilk, lemon juice and zest and combine with butter mixture. Work flour gradually into liquid mixture until a sticky dough is formed. Turn out onto floured surface, sprinkle a little flour on top of the dough, and knead a few times until dough is smooth and no longer sticky.
With a rolling pin or with your hands,
press or roll dough out to 1 inch thickness. Cut out 8-12 shortcakes with a 2-3 inch biscuit cutter, gathering up and re-rolling excess dough as necessary. Bake for 10-14 minutes on ungreased baking sheet until golden.
RUM-SOAKED STRAWBERRIES
(to top 8-12 shortcakes)
Ingredients 1 cup trimmed, halved and sliced
strawberries 2 tbsp sugar 2 Tsp lemon juice 1 tsp lemon zest 1 Tbsp + 1 tsp rum (optional)

Directions Combine all ingredients, cover and let sit for at least 30 minutes until strawberries release their juices. Refrigerate until ready to use.

Ingredients 4 oz softened fresh cow's milk cheese
such as Sweetgrass Dairy "Lil Moo" or goat cheese 1 cup heavy whipping cream 1 tsp vanilla cup sugar
Directions Whip cream on highest setting until cream
can hold soft peaks. Add cheese, scrape bowl while incorporating cheese, add vanilla and sugar and continue to whip until stiff peaks are formed. Refrigerate until ready to use.
To assemble shortcakes: 1 recipe cornmeal shortcakes 1 recipe rum-soaked strawberries 1 Tbsp Richland Rum "Almost Rum" syrup
per serving, or light molasses (avoid blackstrap) 1 sprig of mint, or 1 tsp of chiffonade mint leaves per serving
Cut each shortcake in half. Drizzle Almost Rum syrup or molasses on bottom half. Top with strawberries, cream, and a sprig of mint.

Ingredients 4 large Vidalia onions, sliced cup butter cup flour 1 qt chicken broth 1 cup heavy cream Salt and pepper
Directions Saute onions in butter until translucent and just starting to caramelize. Stir in flour, cook for 2 to 3 minutes. Gradually add chicken broth, bring to a boil. Season. Finish soup with cream, heat through.

Hello! I'm Georgie, the Georgia Grown mascot. I travel thru Georgia promoting the Peach State's No. 1 industry, agriculture! This week I'd like to offer you an ode to a Southern landmark born right here in Georgia:
Once upon a time, above the city of Rhine, there lived an enterprising young man. He had a thought, so pecans he bought, and sold them at a roadside stand.
He moved to Eastman to build on his dream, to sell snacks made from pecans, He worked night and day, out of his car with help from his friend named John.
Through the Depression and World War II, he built an empire of stores. Along the roads, you couldn't resist, his endless lineup of billboards.
From vacation spots back to their homes, the stores sat on the northern route. Selling candy, drinks, food, and maps, and clean restrooms to boot! Black walnut divinity, fudge, pralines, and the famous pecan log rolls,
Filled the shelves and filled the back seats of travelers' Buicks and Olds. He stretched his empire from sea to sea, from Florida to Gettysburg. Mile after mile, the signs counted down, the distance to just one word: Stuckey's.

Avian Influenza: Vigilance is warranted for backyard poultry keepers, commercial growers

Because of the destructive potential that a contagious poultry disease could have on the commercial industry and small flocks alike, poultry owners are encouraged to adopt the following: Prevent wild birds, particularly waterfowl, from mingling
with the flock. This may require penning poultry during times of heightened concern for the spread of avian influenza. Avoid contact with other birds and flocks, particularly birds with questionable origin, such as auctions and live bird markets. Purchase new stock from reputable dealers, preferably those that participate in the National Poultry Improvement Plan. New birds represent a greater risk to biosecurity because their disease status is often unknown. These birds may have an infection or become susceptible to an infection that is already present in birds that appear healthy in the existing flock. Quarantine all new birds away from the existing flock for at least three weeks. This will help identify birds recently exposed to disease, although it will not identify those that have previously been sick and have recovered and continue
to shed pathogens. Sick birds that survive such viral disease become carriers of the virus and can infect unexposed birds. Wear dedicated footwear that can be sanitized after every visit when attending to birds. Disinfectant footbaths may help to decrease the dose of organisms on footwear that can be tracked into poultry enclosures. Do not share equipment, tools or poultry supplies with neighbors or other bird owners. If you do bring these items home, clean and disinfect them before they reach your birds. If your birds are sick or dying, call your local University of Georgia Cooperative Extension office or the Georgia Poultry Laboratory Network located in Gainesville. Experts in these offices can use a disease diagnostic questionnaire to help identify the severity and level of concern over the symptoms your birds are experiencing. During this time of heightened concern over the threat of avian influenza, vigilance is warranted for backyard poultry keepers and commercial growers alike. To report a case or ask questions, contact the avian influenza hotline at the Georgia Department of Agriculture by calling 770-766-6850. As of Feb. 16, all poultry exhibitions, shows, sales, swaps, and meets in the State of Georgia are suspended until further notice. Highly Pathogenic Avian Influenza (HPAI) has been identified in commercial poultry operations and backyard flocks in several states. There have been NO cases of avian influenza (AI) identified in commercial or domestic poultry in the State of Georgia. The Georgia Department of Agriculture is monitoring the development of this situation closely. If you suspect your birds have avian influenza, call the AI Hotline at 770.766.6850.
