Few things separate the women from the girls faster than the sight of 14 hands and several hundred pounds of untamed Mustang ambling over for a howdy-do. He's in no hurry, that horse, but there's little doubt about his destination as his gaze never wavers from the stranger in his midst.
He meanders through that invisible gap most civil beings maintain when engaged in polite social discourse, the better to body check his guest and reintroduce her to the pasture gate. It's an insistent push he gives but not a bullish one no more pressure than a man might apply when putting his hand to the small of a woman's back to guide her across a room.

The Mustang is one of the few living links to the American Wild West of yore, so one imagines that if that horse could talk, he would sound a lot like John Wayne. His disposition skews more toward the Roy Rogers end of the cowboy congeniality scale, but when the laws of man and nature are on your side, a nudge
is as effective as a shove at getting your point across.
"I admire your sand, Sister," that nudge seems to say, "but this is no place for you. Why don't you just mosey on down that same happy trail you rode in on."

Mercer Medical Moment: Alzheimer's disease dilemmas

As our population ages, diseases of aging are becoming more common, including Alzheimer's disease. Only during the last 100 years in human history have most people lived past 50 years of age. At age 60 less than one percent of persons are affected, but by age 85 a fourth to a third of persons have evidence for Alzheimer's disease.
Alzheimer's disease has been studied for many decades. We know the onset is subtle. Years may go by, knowing that mental ability is declining, but in denial that it is more than just "getting old and forgetful." It becomes more difficult to remember anything. It becomes more difficult to do things we take for granted, like finding our way around, getting dressed, eating and grooming. Doctors have ways to make the diagnosis from examination of mental function. The definitive confirmation of the diagnosis is made at autopsy by looking at the brain through a microscope. Under the microscope there are large amounts of damaged tissue called plaques and tangles. It looks like the brain cells fell apart into pieces with only debris left behind. This disease, and others like it affecting the brain, challenges our understanding of what it is to be human. Our bodies are made up from many different kinds of cells. We could lose the cells in a finger and still be ourselves. Loss of brain cells is the worst loss of all. Alzheimer's disease relentlessly destroys the cells in the brain that carry our memories, allow us to communicate, let us understand the world around us, and make us who we are. As brain cells die, personality dies, too. We still don't know what causes Alzheimer's disease, but we now know that there are genetic factors making Alzheimer's disease more likely to occur in some families, but still at an older age, and not in every family member. Genetic testing won't exactly predict the future. There are procedures to study the brain by imaging scans and by blood tests, but those procedures don't predict exactly what will happen next. We are challenged to decide what to do. There are medications for Alzheimer's disease that might produce moderate benefits for a few months, but drugs cannot stop the disease progression. Alzheimer's disease affects only the brain, not other parts of the body, so persons with this disease can otherwise remain healthy for a while. Or we can treat and cure illnesses like infections or dental problems or injuries from falls. We can temporarily prolong the life of persons with Alzheimer's disease, but we cannot cure them. At some point we must decide to let go. Letting go of a loved one is difficult. When the person with Alzheimer's disease is no longer able to talk, or is no longer able to recognize anyone, or becomes agitated to the point of harming themselves or others, or is no longer able to get out of bed, then it is time to let go. There is a price to pay for prolonged care of a person with Alzheimer's disease. The family members who provide care are put under tremendous stress. They experience anguish, become anxious, and may become depressed. The person with Alzheimer's disease does not suffer these consequences. As Alzheimer's disease progresses, care tasks take up nearly all of caregivers' free time, leaving little time for themselves or other family members. The stress leads to increases in levels of a hormone called cortisol. When cortisol stays elevated all the time from stress, it ruins the immune system and accelerates the aging process. This makes the stressed caregiver more likely to become ill. The stresses may take years off the life of a caregiver. In summary, we can't predict who will get Alzheimer's disease, we can't prevent it, and we can't keep Alzheimer's disease from progressing. Accept that no amount of care of any kind will change the outcome for Alzheimer's disease. Accept that the person you once knew can no longer reach out to you. What can we do? Live each day to the fullest you can, appreciate those around you as much as you can, and do as much for others as you are able to do while you can.

Hello! I'm Georgie, the Georgia Grown mascot. I travel the state of Georgia promoting our No. 1 industry, agriculture! This time of year with spring officially a month away Jack Frost still visits the farm from time-to-time. Did you know he subscribes to the Market Bulletin, too? I stopped by his house above Glenwood the other day, and do you know what we talked about? The weather, of course. As you may know, cold weather is important for Georgia agriculture. Freezing temperatures kill lots of insect pests and provide the chill hours trees need to produce fruit. But an unexpected freeze in late winter or early spring can destroy an entire year's worth of fruit, especially blueberries. Lots of farmers have added overhead frost protection in the form of water sprinklers to prevent their young fruit crops from freezing and dying. Other farms use a new version of an old farming staple, the windmill. For decades, farmers used wind power to run their water wells. Nowadays, wind machines are used to move warmer air hanging above fields down to ground level, preventing freeze damage to plants. Many of these wind generators are powered by propane and rotate 360 degrees, protecting up to 15 acres each.

Preparation: Combine all ingredients in a resealable bag. Add chicken breasts to brine. Refrigerate 1 hour.

Grilled Chicken with Basil Vinaigrette
Remove chicken from brine, pat with paper towels to dry. Grill over medium heat until internal temperature of 160 degrees. Let rest 5 10 minutes to allow carry over cooking to 165 degrees.
Slice chicken on a bias. Depending on size of breasts, serve 3-4 slices per serving. Top chicken with 1 Tbsp. each of cucumbers and tomatoes. Drizzle with basil vinaigrette. (Can be served atop green salad if desired.)

or clementine juice) cup cider vinegar 1 tsp. minced garlic Salt and pepper Sunflower seeds for garnish (optional)
Pimento Cheese Deviled Eggs
Ingredients: 6 eggs, hard cooked, peeled cup pimento cheese 2 Tbsps. chopped scallions 3 Tbsps. mayonnaise 3 Tbsps. plain Greek yogurt Salt and pepper
Preparation: Cut eggs in half, remove yolks. In a small bowl, mash egg yolks to remove lumps. Add remaining ingredients to bowl and mix smooth.
Using a pastry bag with a wide tip, fill egg halves, swirling to make decorative.
Preparation: In a large bowl, combine collard greens with cup pecan oil and kosher salt. Massage greens until they become wilted. Add onions to bowl and mix well.
Ingredients: 3 boneless chicken breasts
Garnish cup small diced cucumber cup small diced tomatoes
Brine 2 cups water 1 clove garlic, minced 1 Tbsp. kosher salt
Basil Vinaigrette
Ingredients: 1/3 cup white balsamic vinegar 2/3 cup Georgia Olive Oil Salt & Pepper cup fresh basil leaves
Preparation: In a food processor, combine vinegar and fresh basil. Puree until smooth. Gradually add olive

Hope grows in Georgia
There's no way to know if the 18th Century English poet, Alexander Pope, had just spied the first blossom of a coming peach crop when he penned the phrase, "Hope springs eternal in the human breast." But in the waning days of a dreary winter that slogged in on the heels of a torrid fall, hope for a better year for Georgia agriculture sprang forth on the bright pink petals of a midstate peach bloom.
The blossom greeted Georgia Grown members touring a Dickey Farms peach orchard in Musella as part of the 2019 Georgia Grown Symposium held in Macon and surrounding communities Feb. 12-13. Nearly 200 members representing the agritourism and craft food industries attended the two-day symposium hosted by the marketing arm of the Georgia Department of Agriculture.
In addition to the symposium, Georgia Grown spent the first two months of the new year promoting locally grown food and value-added food products and commodities at some 25 events held throughout the state. Some like the symposium and associated farm tours and the upcoming observance of Georgia Ag Week March 18-22 are planned and executed by Georgia Grown staff.
Others are external events that offer exposure to new markets and populations of consumers. The momentum will continue throughout the year with the goal of broadening knowledge of and interest in locally grown and manufactured agricultural products from Georgia.

Wild Horses: BLM adoption events help with herd management

The most important thing to know about Mustangs is that they do not suffer fools lightly or otherwise.
"You have a horse that knows how to survive on its own. It wasn't born into a world where it was reliant on humans for anything," says Elizabeth Montgomery, executive director of the Alpharetta-based Mustang and Wild Horse Rescue of Georgia. "When you start working with them, you have to build trust and a relationship with them. You have to get them to where they want to be with you, desire to be with you. You can't force them to be with you."
She punctuates that thought with a shout-out to the dog that decided of his own accord to make her farm his home. "Hey Franky!" she hollers, leaning out the window.
Karin rode Dutch Warmbloods as a girl in Holland "until something really disastrous happened." When she was about 17 years old, her family's barn burned down. Her horse died in the fire.
"I never rode or wanted to attach to any living being anymore after that," she says. "But of course, as I got older, it continued to itch."
Wild and free
Another important thing to know about mus-
tangs: by authority of a wistful indeed romantic act of Congress, Mustangs and wild burros are
protected "from capture, branding, harassment,
or death; and to accomplish this they are to be
considered in the area where presently found, as
an integral part of the natural system of the public
lands."
The 1971 Wild Free-Roaming Horses and
Burros Act calls these animals "living symbols
of the historic and pioneer spirit of the West," and charges the U.S. Department of the Interior
Bureau of Land Management with monitoring
and managing said animals in situ on 26.9 mil-
lion acres of public range land across 10 western
states.
In March 2018, the BLM estimated the popu-
lation of wild horses and burros on protected
lands at 81,951 nearly four times the bureau's

Elizabeth is one of three Georgia women ac-
tively engaged in rescuing, rehabilitating and training Mustang horses adopted from the BLM.
Each woman takes a unique approach to the hors-
es. Elizabeth and her volunteers take in Mustangs
from adoptive owners who cannot or do not prop-
erly care for the horses. Their mission is one of
rehabilitating and rehoming the horses to loving
owners.
Finding sanctuary
Karin Vonk and her husband, Erik, have de-
voted 80 acres of their 2,000-acre farm in Web-
ster County to serve as a sanctuary for Mustangs
adopted directly from the BLM or rescued from
negligent adopters.
"Mustangs are wild horses. They're supposed
to take care of themselves. I don't need to be
there every day to train them, to groom them,"
she says. "I am not planning to train the horses,

A matter of trust
Yet another interesting fact about Mustangs: They do not bow down easily. One must work hard to earn their trust and affection.
"It's very dangerous," says Sandra Williamson, a German-born horsewoman who founded Rackettown Mustangs outside of Lyons. "These horses are so smart. They look through you. They know exactly what you think."
With help from her husband, Stone, Sandra built a series of corrals and fenced pastures where dozens of Mustangs
and burros in various stages of training roam at will. It is there that Sandra trains the horses for export to European buyers.
"European people just love them," she says. "They go from English riding to western riding to trail riding. They use them for jumping, for dressage and therapy. One of these Mustangs became a therapy horse for a 7-year-old girl who was born without any feeling in her legs. She's in a wheelchair but the bond this girl and this Mustang have, it's just amazing."
Sandra's is the biggest training challenge, for the horses must be crated in jet boxes and loaded on cargo planes for Transatlantic flight to their new owners. Recently, Sandra and friend Ann Vander Horn flew Lufthansa nine hours to Frankfurt, Germany, with six horses destined for new homes there.
The horses Sandra receives from the BLM have never been touched by human hands. All are fed, watered and spoken to daily. They are slowly acclimated to human touch, trained to pick up their feet when asked by the farrier. They receive medical care. But some still huff and puff when Sandra walks by, running to the other side of the corral and eyeing her warily as she passes. "I've had to jump on the fence line to keep from getting run over, not because they want to hurt you, because they want to get away from you. You're a predator at that point. That's why we're here, to show them humans are not that bad," she says.
The opportunity to see a wild horse finally understand that message is one that all three women get often -- and cherish.
"I think that's when you see people like us and Karin and Sandra get so passionate about the horses," Elizabeth says. "A lot of it comes from when you see firsthand this horse who was once roaming free and has the choice to not be with you actually choose to be with you and want to do something that you ask them. Even if it's something they're not comfortable with doing, like getting on a trailer or going past a scary blue tarp on the ground. The fact that they trust you enough to set aside their instinct that says, `Don't go anywhere near that. Go in the other direction,' and say, `I'm okay with that. If you tell me it's okay, I'm okay with that.'
"I think that's where people get so hooked on the Mustangs. It's amazing, truly amazing, to see that transformation in them."
