PREP provides recipe for success in food business

At PREP Kitchens in Atlanta, Aaron Harris runs Molino Tortilleria, a family-owned business that makes heirloom corn tortillas and chips. As he talks about what goes into making tortillas, PREP's shared kitchen and their approach to helping small businesses like his has been a recipe for success.
Harris explained they were doing well in Chicago, but it was like starting over when they moved to Atlanta a few years ago. They had to decide whether to find their own commercial space or go with a shared kitchen.
"PREP just seems to know what we need. They have the amenities, they have the staff, and they have the connections to help us kind of succeed," Harris said. "They're very interested in our success. Obviously, it's good for them, but I've always felt like they genuinely have our best interest in mind."
Molino Tortilleria is one of 250 food businesses operating out of PREP Kitchens, just inside the I-285 perimeter near Chamblee. PREP started as a shared kitchen in one building in 2014. They have grown as the need

arises for members, as tenants are known. PREP 2 opened in 2017 with individual kitchens ranging from 100 to 6,000 square feet. In 2019, PREP Junction opened as a food court for food trucks, caterers, and ghost restaurants to offer walk-up service to customers.
Shared kitchens are not unique. There are about 60 across Georgia that are inspected by the Georgia Department of Agriculture's Food Safety Division.
Doug Marranci, who co-founded PREP with Mitch Jaffe, explained they work to make their members feel like they are not alone in starting a food business. On a tour of their facility, Marranci mentioned repeatedly, "If they don't succeed, we don't."
"We had the idea, and people didn't even know what it was at first, so it took us a while to get there to introduce people to what they could do here," Marranci said. "And our marketing still to this day is, `Hey, if you do this thing, you can

Inaugural integrative precision agriculture conference aims to address industry needs

Spray drones with pinpoint accuracy, produce-picking robots, autonomous systems to monitor broiler chicken health, and artificial intelligence to predict yield before the buds have faded from the trees -- these are some of the solutions integrative precision agriculture promises an industry that is embracing the power of technology to address both age-old and emerging challenges.
Students, scientists, and agrotechnology leaders from around the world gathered May 18-19 at the University of Georgia for the first International Conference for Integrative Precision Agriculture, a multidisciplinary assemblage designed to harness collective expertise to address the challenge of feeding a global population that is expected to exceed 9 billion people by 2050, bringing with it an estimated 70 percent

of the challenges our world faces," said UGA Senior Vice President for Academic Affairs and Provost S. Jack Hu, who spearheaded the effort to establish the university's Institute for Integrative Precision Agriculture in 2022 to recruit and bring together interdisciplinary researchers to develop next-generation technologies that will provide holistic solutions to problems defined by food and agriculture industries. "The institute provides a forum for ongoing interactions and brainstorming, ensuring that the connection between industry and academia persists beyond the initial identification of a problem."

Georgia group travels to Washington to talk about the Farm Bill

The debate over the next federal Farm Bill crosses state lines and different interests in agriculture. After a visit to Washington, DC, Georgia Agriculture Commissioner Tyler Harper said that he thinks a unifying factor is looking at agriculture as a means for national security.
"I think if we have a conversation around that and understand that agriculture, in and of itself, and ensuring its success, leads to our nation being able to be more safe and secure," Harper said. "Folks understand that, not only here in Georgia, but around the country. I think that helps bring us together, not only those in the ag industry but everyone across America, to ensure that we have a policy that allows our ag industry to thrive and be successful."
Harper led a delegation of Georgia agricultural leaders and elected officials to Washington last month to meet with US House Committee on Agriculture members. Congress sets national food and agriculture policy every five years through Farm Bill. The 2018 Farm Bill will expire on Sept. 30.

"Overall, our trip was a success, and it gave us an opportunity to discuss issues related
to Georgia and the importance of having a farm bill that works for Georgia farmers and
producers, as well as our consumers all over the state," Harper said. "I think our conver-
sation was received very well by everybody that we met with."
Part of the message the group delivered to members of Congress was that producers
were finding it more challenging to operate with higher input costs and lower revenue
generated from crop yields. Harper and others urged members to increase crop reference
prices in the new Farm Bill.
Reference prices are the set average commodity market prices for goods that factor
into insurance reimbursement rates, along with the previous year's planted acreage or
harvested crop yields. Farmers taking out insurance for crop loss are finding those re-
imbursements are lower than current market prices and cannot cover production costs.
Harper pointed out that reference prices have not been updated in a decade. During
that time, he said producers have dealt with cost increases for everything from seeds and
fertilizer to equipment and fuel.
"Thats the kind of the conversation we had in DC last week - doing more with less. Our
farmers are asked to do that every day," Harper said. "If you look at it on the financial side,
you're trying to make ends meet with less of a margin but still produce more of a crop to
ensure that you're offsetting the expenses you're incurring."
Daniel McMillan would agree. He grows peanuts on his farm in Enigma, located in
south Georgia. Representing the US Peanut Federation, he told the House Subcommittee
on General Farm Commodities, Risk Management, and Credit in April about producers'
financial pressures.
"In my home area, we saw fertilizer costs double from 2021 to 2022. Some prod-
ucts tripled in price. Currently, fertilizer prices are changing week to week, preventing
us from making informed management decisions," McMillan said at the subcommittee
hearing on April 26.
Will Bentley, president of the Georgia Agribusiness Council, who was on the Washing-
ton trip, said a key goal for Georgia is to make the state's specialty crops fruits and veg-
etables eligible for crop insurance. Specialty crops are not included in the current Farm
Bill, and thus, fruit and vegetable growers can't get insurance coverage for their crops.
"Traditionally, specialty crops were high enough in value" not to need such subsidies,
Bentley said.
"Our blueberry crop and peach crop have been hit by natural disasters," he said. "For
the first time ever, these high-value crops need help."

The burn ban runs during the summer ozone season from May 1 through Sept. 30. The ban prohibits citizens and businesses from burning yard and land-clearing debris. This is in addition to the rule that prohibits the burning of household garbage. Burning household garbage is never allowed anywhere in Georgia. Recreational activities such as campfires and grilling are exempt from the open burning ban, according to an EPD press release announcing the burn ban.
James Boylan, chief of the EPD Air Protection Branch, explained that small particles are released into the atmosphere during open burning. Other air pollutants are released that can form ground-level ozone in the summertime. Particulate pollution can cause chronic heart diseases and ground-level ozone can cause inflammation of the lungs, especially in children and people with asthma.

Some Georgia counties and cities have burning
restrictions that are more stringent than the EPD
open burning ban. EPD recommends that citizens
check with their local fire marshal before conduct-
ing any burning.
Open burning after the burn ban
For citizens seeking to burn hand-piled, natural
vegetation collected onsite (e.g., yard debris and
leaf piles) after the EPD open burning ban con-
cludes, the Georgia Forestry Commission (GFC)
no longer requires permits for this activity. Instead,
the following five safety precautions are required:
Burn location must be no less than 25 feet from
any woodlands, forestland or field that contains
brush, grass, or other flammable material.
Burn location must be no less than 50 feet from
structures, which includes homes, outbuildings,
sheds, and barns.

Georgia Cooking: Vidalia Onion & Grilled Corn Salad

Ingredients
1 large Vidalia onion, diced cup vegetable oil 1/3 cup sugar 1/3 cup apple cider vinegar 2 dashes hot sauce Salt and pepper, to taste 4 ears fresh corn, husks and silks

Instructions
To pickle the onions, combine vegetable oil, sugar, vinegar, hot sauce and salt and pepper to taste in a quart jar, cover and shake to mix. Add diced onion and pickle for at least 1 hour.
Drizzle corn with olive oil and season with salt and pepper to taste. Preheat grill to medium heat. Add corn over direct heat; grill 2 to 3 minutes on each side, rotating so that every side gets a bit charred, 10 to 12 minutes total. Remove corn from grill, let cool.
Once corn is cool enough to handle, cut kernels off cob and transfer to a large bowl. Drain onions and add to corn along with bell pepper, cucumber, avocado and cherry tomatoes; toss to combine. Drizzle with creamy Vidalia Sweet Onion dressing to taste, stirring to coat.

Precision Ag Conference: Attendees gather to discuss harnessing latest tech for crop improvement

Nearly 200 attendees heard from Georgia producers and industry members who discussed their most pressing needs. In contrast, U.S. and international industry leaders described potential solutions and ways for producers to learn about available technologies and how to adopt them.
Jessica Brim, director of food safety for Lewis Taylor Farms in Tifton, said that labor availability and labor costs are one of the primary areas where new technologies could help producers. Lewis Taylor Farms grows more than 6,500 acres of produce each year, most of which is harvested by hand.
"Helping farmers in the future be able to lower labor costs by having more innovation in the field -- having sensors on machinery to help us see if that product is ready to be harvested and to be able to pull it off the vine without losing the complete plant in the process -- there are so many ways we
can see that could be developed to make our systems better, lower those costs and make what we grow more marketable," she said.
Lawton Pearson, owner of Pearson Farm, a peach and pecan producer in Fort Valley, said that variations in weather require a lot of "guesstimation" on the part of farmers when estimating crop yield. "Until there is a radical shift in technology that allows us to do more of these tasks automatically, we have to continue to do a lot by hand."
Day two of the conference focused on the poultry industry, increasing production efficiency, and the evolving nature of consumer scrutiny on production, animal welfare and food safety.
"Technology is going to move this industry forward and, from my perspective, I think it's going to have a huge effect from a welfare perspective on how we care for birds," said speaker Karen Christensen, senior director of animal welfare for Tyson Foods. "We play a role in feeding the world, and we will continue to do that ... but we need help understanding
how we can do this using new technologies to allow us to meet this responsibility better, more efficiently, and faster."
Based on the challenges discussed, faculty from the Institute for Integrative Precision Agriculture and industry members will network and form grassroots research teams to address these problems.
"Our goal for this conference was to portray the problems that our growers are having in the state and across the Southeast and then have a list of experts from academia and from industry who can help us understand what the current stateof-the-art is in precision agriculture," said George Vellidis, University Professor in the Department of Crop and Soil Sciences at CAES and an organizer of the conference. "We want to identify how those technological solutions can be applied to the problems facing the state."

Georgie's Drive Thru McRae-Helena
Hello! I'm Georgie, the Georgia Grown mascot. I travel the state of Georgia promoting our #1 industry, agriculture! Roadside attractions aren't just out west along Route 66. There once were several of them along the highways and in front yards around Telfair County, built by a local man named Charlie Grimsley. He took scrap metal, or any other suitable material, and created some of the most memorable creations around. One of his most eye-catching pieces was set up outside his shop near the Dodge-Telfair County line on Highway 341.
At the top of a metal pole that also rotated was a mannequin dressed in fishing gear and seated in a 12-foot jon boat fighting to reel in a huge, I mean huge, metal bass. Another popular creation of his is an eight-foot-tall Vidalia onion that once sat along Highway 441 at the fruit stand north of McRae-Helena. Just about the time his art was catching on, Mr. Grimsley had to have a pacemaker put in. When he was told by his doctor that pacemakers and welding don't mix, he had to give up his beloved hobby. Charlie died in 2017, but not before brightening up the county with his metal creations.

Is there a grace period for product returns?
Dear Consumer Ed: I had a tankless water heater installed two days ago. I signed and paid for the work, but later discovered that I paid $4,500 for a unit that retails for around $2,000. Is there a grace period that allows me to return the unit for a refund? Consumer Ed says: Georgia does not have any law that requires a business to provide a refund or accept returns. A business may set its own return policy and may offer consumers cash, in-store credit, exchanges or no adjustment at all. Many stores also set time limits during which they accept returns. While not required to post their policies, businesses must honor any posted refund or
return policy. Check the company's website or call their customer service line for more information on refunds.
There is a limited right to cancel a sales contract under the Federal Trade Commission's Cooling-Off Rule, but it only applies in very specific circumstances. When a sale is made at someone's home or workplace, or at a seller's temporary location -- such as a hotel room, convention center, fairground or restaurant you have three business days to cancel the purchase for a full refund under the Federal Trade Commission's (FTC) Cooling-Off Rule. PREP: Shared and individual kitchens offer small businesses chance to grow

across as a recipe. The PREP idea came from the Great Recession of 2008, when many restaurants closed in and around Atlanta. He said there was a demand for shared kitchens as the food sector recovered. Many people had good ideas for starting a business but needed help finding suitable commercial space they could afford.
PREP 2 was one more ingredient that came along as the need arose.
"We felt like people would outgrow the shared kitchen, and then maybe we would build facilities for them. But even when somebody is at about a year, they would start hitting their stride, and then they're growing, but they're not ready to make that kind of investment," Marranci said. "So that's when we realized we needed to find spaces where we could then provide those people kitchens that they could move into without breaking the bank."
That was the path Harris took with Molino Tortilleria. He, along with his wife Raquel and father Chester, moved into their own space at PREP, where they could install a large tortilla baking oven to increase production. The business started with them rolling the tortillas individually by hand. Now, the
masa can be rolled flat mechanically, placed on a conveyer belt and baked.
Harris explained they reached a point where they were ready to move out of the shared kitchen and started looking for their own place. One requirement was a 20-foot ventilation hood.
"We needed that kind of hood space, and I think there's not a lot of spaces that have that much hood space, even at PREP. As soon as that one opened up, Julia (Sheppard, PREP sales manager) reached out to us and took us there and toured it and everything, and they helped us create a scenario that would work for us to get in and get established."
Molino Tortilleria uses heirloom corn varieties for their tortillas and chips. Harris said they use a Blue Clarage heritage corn grown in Ohio, an Oxy Valley heritage corn grown in Michigan, and non-GMO blue, yellow, and red corn from a company in Illinois.
Harris said he got interested in making tortillas growing up and could not find good ones in grocery stores. He added that there is no secret to making tortillas. They have only three ingredients: U.S.-grown corn, water, and slaked lime.
"The only real difference is the variety of corn we're using, and that's what we're always trying to do to highlight is that
there's a lot of beauty in these different varieties. There's a lot of flavor and texture of differences between the different types of corn," Harris said.
Molino Tortilleria is building their wholesale business to grocery stores, but Harris said they are looking to expand to supplying restaurants and possibly retail.
"We want it to be a mix just because margins for retail are obviously better than wholesale for restaurants, but we also want to serve the community that we live in and make it accessible for other food entrepreneurs," Harris said. "So we want to start working with people at PREP, to begin with, and then expand from there."
Today, PREP Kitchens hosts food trucks, caterers, specialty foods, ghost kitchens and prepared meal services. Another ingredient in the PREP recipe is a business mentoring service where the staff works with entrepreneurs on the steps toward growing their businesses. Marranci also touted the sense of community at PREP, where members connect for business and advice.
