Fellowship Home at Brookside, an assisted living community near Valdosta that is part of a working farm, is bringing local food home in a unique way by starting their own beef label to provide beef to residents and staff.
The community is located on a 400+-acre farm in Brooks County that the LaHood family has operated for four generations. Agriculture production continues with row crops like peanuts, cotton, and soybeans.
In 1977, George, Jr., and Gonza LaHood had the idea to build a place where elderly members of the community could live and have their daily needs met in a non-nursing home environment. They opened Fellowship Home at Brookside. Over the past 40 years, the company has grown to six communities, five in Georgia and one in Florida.
Fellowship Home at Brookside senior living community is connected to the farm in several ways. Many residents either retired from agricultural work

Kenneth Hardiman, the executive chef at Churchill Downs, created this beef soup recipe for the Vidalia Onion Committee that he served at the Kentucky Derby last year.
Demi-glace is a rich brown sauce in French cooking used as a base for dishes or on its own on steak and pork. Making demi-glace involves a lot of simmering and straining. Thankfully, demi-glace is packaged for sale at grocery stores and online shopping services.
Yield: Twelve 10oz. servings
Ingredients
5 Vidalia onions, julienne cut cup vegetable oil cup granulated sugar cup Worcestershire sauce
cup sherry vinegar cup red wine cup roasted garlic, chopped 2 Tbsps soy sauce cup fresh thyme, rosemary, chopped no

Instructions
Place oil in a small stockpot or Dutch oven on medium heat and add Vidalia onions.
Season onions evenly with sugar and gently cook onions to release the liquid and continue cooking until caramelized and brown.
Deglaze the pan with wine, vinegar, soy sauce and Worcestershire sauce.
Add roasted garlic, thyme, and rosemary mixture.
Let cook for 5 minutes.
Add demi-glace and simmer for another 5 minutes.

The survey will collect information about hired labor from more than 1,700 farmers and ranchers in Alabama, Florida, Georgia, and South Carolina. NASS will publish the data Wednesday, May 24, in the Farm Labor report available on the NASS website at www.nass.usda.gov.
In the survey, NASS asks producers to answer a variety of questions about hired farm labor on their operations, including total number of hired farm workers, total hours worked, and total wages paid for the

Hello! I'm Georgie, the Georgia Grown mascot. I travel the state of Georgia promoting our #1 industry, agriculture! A couple of years ago, my family and I traveled to Ellijay to pick Georgia Grown apples. On the way, we saw a sign pointing to the Expedition Bigfoot!: The Sasquatch Museum. We just had to stop! Inside the building at the "Research and Reporting Center," there were all kinds of statues and sculptures created by researchers, fans and enthusiasts. The museum displayed evidence to the existence of a strange, elusive creature known as the Skunk Ape, Yeti, Grassman, Wooly Booger, Abominable Snowman or, last but not least, Bigfoot. We saw hundreds of sketches and stories, accompanied by lots of plaster casts of some of the biggest footprints I've ever seen and what was thought to be the skull of a Bigfoot found in Wisconsin. There was also a wall display of Teddy Roosevelt's own Bigfoot sighting from over 100 years ago. Displayed in the middle of the museum was plenty of Bigfoot search equipment. We had a lot of fun at the museum till I found a map of all the Bigfoot sightings reported and saw where one had been spotted near my house in 1994.

Residents are taken on tours throughout the farm on a Polaris Ranger where they can enjoy riding the wooded paths to the Little River or out in the pastures to watch the variety of livestock grazing. Residents can also pick fresh herbs and vegetables from the onsite garden with multiple raised beds. Fishing in the surrounding ponds is also a weekly excursion the residents enjoy on the farm, John LaHood said.
"Our mission here is to serve senior adults the same way we would want our own families to be served," he said. "We try to look at every single resident as unique and individual and look at them like they are our own mother or father or grandparent."
The idea to start beef production on-site was a reinvention of a cow/calf operation the LaHood's farm began in 2017 to use the acreage better. John LaHood explained prices were not good for the calves they had, so they had to decide what to do next.
"It just kind of clicked in our minds to raise them out and have them butchered to let Jaime (Peters, Fellowship's regional dining director) use them in the dining services program here, and it's gone very well," LaHood said.
The LaHood's created the Brookside Cattle Company a year ago to manage the beef operations. Peters said it has been a slow progression in developing the system to source their beef. "We began doing it one steer at a time and then gradually as the herd grew," she said.
Then there's the logistics of working with a meat processor and figuring out supplies to meet the needs of the Fellowship community. Peters said purchasing beef from a vendor would be easier, but the appeal comes back to their customers the Fellowship residents.
"Well, sure, we can purchase the best and serve the best, but how about if we do it in our own backyard and legitimately say we know exactly what the animals are being fed they're pasture raised on a variety of forages and grain finished to provide a healthy product that tastes great. We can attest to that. I feel a thousand times more confident saying that our food is at the top tier of what we can offer our residents versus just purchasing a high-quality product from a vendor."
Peters added she wants to make the food served at Fellowship as locally sourced as possible. Brookside Cattle is a Georgia Grown member, and Peters said she hopes to tap into the network of Georgia Grown for other menu items.
"We have established our Georgia Grown label, and then my sourcing became more attuned to Georgia Grown or locally grown products," she said. "So, I partnered with produce companies that try to source items that are more local and not just, you know, traveling across the United States for who knows how long in a refrigerated truck."
Fellowship dining offers traditional southern cuisine, and Peters said residents' dietary requirements are also part of the equation for supplying beef from the farm. She said they couldn't serve steak every night, but the prepared beef dishes are made with quality cuts.
Staff also enjoy the benefits of farm-raised beef. George LaHood, John's son and Fellowship Family executive director, said the farm provides meals to employees. The employees are also welcome to experience tending to the cattle. "On special days, they can come out and watch the cows get fed or when calves drop or get their hands dirty every now and then," George said.
George added there is extra interest from employees on days when Brookside cattle beef is on the menu.
"There is kind of a buzz with the cows, like, `Oh, they're grilling steaks today'," George said. "It's a seasonal menu that rotates and changes several times a year, and I always look forward to eating here."
John LaHood said the beef production is a pilot program serving Brookside residents as they consider ways to distribute to the other Fellowship communities.
John added that food is critical in their business and something they take very seriously. He said the Brookside Cattle Company beef is one part of that.
"In an assisted living and memory care setting, food is a big deal. Our residents have reached a point in life where they're not as able to get in their car and drive to the grocery store or go to the restaurant of their choice. They're depending on us to provide a good variety and foods that they are going to enjoy," John said. "So, they look forward to meals, and this is an opportunity for us to exceed expectations, you know, take it up another notch, and that is just what we are doing."
